Swiss Army Brands 40502 Paring Knife, 4-3/4-InchI have 3 of these paring knives and have used them daily for more than 10 years. They take and keep a razor-sharp edge better than more expensive forged blades, and the handles are great. Their big-brother 6-inch and 8-inch chef's knives are also winners.

Very pleased with the small Victorinox knives. I purchased 6 because they are super sharp with a very fine edge...slimmer than my more expensive ones but very easy to handle and they stay sharp. Some mornings prepping fruits & vegetables with a dull knife for juicing made me miserable. Now I can can slice carrots with ease, peel a lime in seconds and its a pleasure. The plus is they are reasonably priced. i can afford to have one always clean and ready to use. The only draw back is that with the old duller knives I had developed some sloppy habits for which I am painfully paying the price. These really are sharp!

The Ultimate Edge 12 inch Master Chef three sided sharpening steel with three different gritI had high hopes for this as a quick sharpener that would leave a fine edge. I'd previously used one of their single grit steels and liked it enough to give it as a gift. This one is a tremendous disappointment. I have tried to use the finest grit to get a very sharp finished edge on several knives. I believe that each one came out less sharp then when I started. I find I do not use this tool as I just do not trust it to do the job. A very disappointing purchase.

Victorinox Swiss Classic 15-Piece Cutlery Block SetWe just bought a new Airstream RV trailer to do road trips and rather than use old knives in the trailer, this was a great excuse to buy this set from Victorinox because my favorite knife is a Victorinox 8" chef's knife. That knife was highly rated by Cook's magazine. When I first got it, I thought it looked cheap because of the plastic handle, but I was wrong. Having used it now for several years, I love it (and I have other knives from companies such as Henckels, Hoffritz and Wusthof.)

I love to cook and rely on good knives. This set has been excellent. Good balance in the hand, very sharp, and a nice variety of types of knives. I really liked having the steak knives in this set, too. (The steak knives are serrated.) The cutlery block holds everything well, and has a couple of extra slots. The only knife I really need to add to the set is a boning and/or filet knife.

I had looked at other Victorinox knife sets, but this was a perfect variety of knives for what I needed.

This is a fantastic knife set. The handles are a textured, durable, hard plastic that reminds me of my Glock. The edges are very sharp as expected. I've only had this set for a few months now but they've been performing well as you would expect. The only reason I didn't give five stars is because my personal preference is that of heavier forged knives. Don't let that discount this set they are fantastic and the price can't be beat.

These knives are the sharpest I have ever used. Don't let the "strange" handle fool you -these knives are full-tang. Their edge is razor-sharp and will not dull if used properly. The set, including the steak knives, offer anyone everything they need in the kitchen.

I have to admit, when something is made well, -there is no comparison.

If you are serious about cooking or need to replace a dull set of "abused" knives, this set is your dream come true. Just remember: Any knife will eventually blunt if used on the wrong surface or in an inappropriate manner.

I have read many reviews on these knives individually, and was really interested in getting a set. If you search for each of these knives individually, you'll find that that some of the most popular knives on Amazon are in this set! I was a bit worried about the lack of reviews and a few low reviews, but with that little bit of research you can put your worries aside. I went ahead and purchased these, and I am SO very happy that I did. These knives are amazing! They are super sharp and very reliable. Just please please make sure that you handwash these! I had crappy knives from a famous retail store before, but with these I have pride in taking care of them. Hand wash them and dry them immediately and you will not have any issues. I would recommend these to anyone as the quality is unmatched.

Pizza Knife Twin Handle Rocker 20'If you like to make pizzas at home, or even cook a lot of frozen pizzas, this is THE tool you need. Forget those so-called round-wheeled pizza cutters. After the first 8-12 times, they become too dull and you always end up moving the cheese and toppings instead of cutting them appropriately. This twin handled, mezzaluna-shaped pizza cutter is what you need. It's what the professionals use (or should use). Yes, you might get by with some kitchen scissors for cutting, but even they are not as good as this baby. Cut pizza with this, and you'll throw all of those old pizza cutters in the trash.

I bought this knife some time ago to do exactly what it is that a tool of this nature is used for. It works as advertized, but as another reviewer has already noted, it takes some honing for it to work the way that it should. After about 15 minutes of working it with the honing steel, it was ready to go. Despite much use, I have not had to resharpen the blade.

Its noteworthy that this has the potential to be a very dangerous tool. I don't recall seeing any sort of sheath available for this knife at the time I purchased it, but if one can be found before or with your purchase, I would highly recommend it. The knife is really too large for most modern kitchen drawers, and the hanger holes are not in the best location on the blade to hang your knife in a pantry or other location out-of-the-way. I made a home-made sheath out of cardboard and elastic and stash it inside my cabinet beside the pots and pans. This is a great tool, and an absolute must if you like to make large homemade pizzas, but perhaps a sheath should come with (or an aftermarket version easily matched to) this knife.

The item they delivered was not precisely as pictured. Specifically, the one in the image has the nice, riveted handles, while the one delivered had the cheap, molded rubber handles. That being said, it's not a bad piece of equipment when all is said and done. The sharpening job is a bit half-hearted (had a bit of a wire edge when it arrived), but that's easily fixed.

This knife is wonderful!! I wish I had bought this item years ago. It is so sharp and cuts my pizza's in seconds. All of the toppings stay where I placed them and it's long enough to cut a 14 or 16 inch pizza. The pizza wheel drags everything to one side.

When it was delivered it had a little burr along the edge, but a honing stone took care of that in short orderjust 2 strokes.

I would definitely recommend this item.

I picked these knives up to replace another somewhat inexpensive set that I've had for years. I wasn't sure if I'd like the serrated edge as I've found that this just normally tears the food instead of cutting it. These knives however are incredibly sharp and the serrated edge works well without tearing your food to shreds.

They are pretty basic in terms of construction but I don't feel as though that will be an issue with longevity. They're also fairly light in your hand but again, I don't think it really has a negative affect on the product.

If you're looking for a basic set of steak knives, I think you'd be hard pressed to find another set that work as well as these for the money.

Cuisinart 14-Piece Triple Riveted Cherry Block Cutlery SetVery nice set of knives. Keep their sharpness and are in a nicely finished cherry wood block. Most sets are held in an oak-colored block, but this dark wood looks very good on the counter.

This set claims to have full-tang construction, meaning that supposedly a solid piece of metal should run all the way from the tip of the blade to the butt of the handle. After about a year of use, the handle of the chef knife completely snapped offabout 1/4" from the end of the blade while slicing a steak, sending the blade falling to the ground. The metal blade only extends into the handle for about 1/4". The rivets and metal butt are just for decoration and the cheap plastic handles become brittle quickly.

I bought a set of Cuisinart knives in 2007. Recently they developed large cracks in the handles. I contacted Cuisinart by email and was directed to another company who manufacturers the knives for Cuisinart. After a couple of emails back and forth, I was directed to a website and allowed to pick a similar set for replacement. (The set I purchased was no longer available.) In just a couple of days I received the replacement set. Can't complain about the warranty service!

Vegetable Cleaver

Vegetable CleaverInexpensive, razor sharp and stays sharp. Just don't leave the blade wet for more than a minute, it will rust--but that's just the type of metal used, no big deal. Light weight and decent balance. I recommend it.

This is carbon steel that will rust if abused, but it takes a very sharp edge. I sharpened mine once when I got it. Since then I havent sharpened it at all. Before every use I give it 5-6 swipes against a ceramic steel to true the edge. I also keep a wet sponge and dry towel by the chopping block so after every use, the knife is wiped clean and dry (takes about 5 seconds). Six weeks later, the knife still shines like new and is sharp enough to cut a tomato without bending the skin.

It really doesn't take any longer to treat a knife with respect than it does to abuse it. It is just a matter of training, my knife is always clean sharp and ready for action. I can wipe it clean and sheath it (in folded cardboard and duck tape) as fast as you can throw it in a dishwasher. If you want to leave it in the sink or store it in the dishwasher with food goo and growing bacteria, then this won't be the knife for you. In that case get a TV special ginsu or Ron Popiel stainless knife guaranteed for life against abuse, and take some drugs to combat the bacteria experiment blooming in your sink and dishwasher.

I needed a wok and bunch of other kitchen stuff for a new apartment so I ordered direct from Tane Chan at . The knife was the cheapest she had, but it is a great knife. I use it in preferance to my more expensive (and heaver) knives 95% of the time. It is light, sharp and easy to care for. What else matters in a kitchen knife?

I bought a couple of Japanese high-end cleavers (Shun and Tojiro) before I bought this thing, and I bought a stainless Forschner after. None of them measure up.

The Wok Shop cleaver takes an incredible edge in a minute or less. I can swing it through a paper towel held in my left hand and cut the towel in half. It stays sharp long enough to do a lot of work. The balance is good. The blade is thin enough to allow for onion slices so thin you can barely pick them up. It makes a good shovel. It squashes garlic so you can peel it. It minces things much faster and better than a chef's knife, which is something I can't explain. The back side tenderizes meat.

The only problem with this knife is the rust, but what do you want for ten bucks? I gave my Shun away because it was junk, and it had to be treated like a sick baby. The Wok Shop cleaver is so good, I don't mind hand-washing it.

This carbon steel cleaver will outperform knives worth 5 times its price. When properly sharpened it cuts vegetables as fine as you could ever hope to to get. It's solidly built and feels good in the hand. It also sharpens very easily. Now, as any good tool, it needs proper care. Wash and dry it soon after use or it will get a layer of rust. If you can't make that commitment to this great tool, then buy yourself a stainless steel one.

I received then knife really fast and they tossed in a bamboo back scratcher. One thing the add didn't say is that it is a #2 Cleaver(8"x4") I'm glad I didn't get a #1. There was a little rust nothing to complain about It cleaned up easy. The edge needed a little sharpening not bad at all. I used the box it came in to make a case/sleeve for it.

Shun DM0517W 7-Inch Ken Onion Hollow-Ground Santoku Knife

Shun DM0517W 7-Inch Ken Onion Hollow-Ground Santoku KnifeThe Knife came today, it arrived razor sharp and beautiful.

The Cutting edge material is not VG10 as described, but the new propriatary VGMAX steel that Shun has been converting their knives to. It is supposed to be a bit less brittle, but based on VG-10.

I bought a Shun 22 knife Block from Amazon and was suprised to find that the knife did not fit the wide slots. .Shun 22-Slot Bamboo Knife Storage Block It would fit the very wide cleaver slot, but thats already taken with my cleaver. I do not want that edge pushing against the hard bamboo and getting dull or bent over.

There appears to be no good reason as to why there could not be a wider slot, there is plenty of room to have one, so I'll be getting out a saw and enlarging the appropriate slot. I'm not yet sure if I should make a keyhole shape so that all of the cutting edge will fit into the block, or just let it rest on the bolster.

At any rate, its a wonderful blade, and I love the handle, it fits my large hand

Update I took a meat saw to the slot in my Shun Bamboo block the one under the kitchen shears and it was easy to widen the sloot to almost 2-1/2 inches. (A meat saw is basically a giant hack saw with a blade 24 inches long) However, the blade of the knife does not fully insert into the block, so I need to make the slot keyhole shaped so the top of the knife bolster will slide into the slot until the blade is fully inserted. Its very sharp, and not good to have 1/2-3/4 inch of blade sticking out.

Another Update: After just one use, the edge of the blade crumbled and broke away. It was only used to cut vegetables (tomatoes, onions, carrots and celery), and only a small amount of these. I use a nylon cutting board, and the knife has been babied.

I suspect that the steel was overhardened, which makes it extremely brittle. I have ordered a replacement, so hopefully, its not batch related, but is a individual thing.

I've now had the replacement knife and used it for a few weeks with no further issues. I've had to hone it a few times, once it was so dull that it wouldn't slice tomatoes, just crush them, but a few strokes with a ceramic hone and it was back to full sharpness. I'm pretty sure that the first one had a issue with the metal, I have another Shun vegetable knife and its had no issues either, and its also the VG Max alloy.

This Santoku exceeded my expectations in all regards. A wonderful kitchen tool. Kudos to Ken Onion for this blade. I reach for it before my Global or Wusthof knives.

This is my go to knife for everything now. Nice and sharp, and balanced. I can see this knife getting years of use and handed down. It is very well built and feels very balanced.

I have several of the shun classic knives and I love them. This knife was my Christmas present to myself and it's wonderful! Its a great size, and I love the slight curve in the blade. Its different from the classic shun shape. The curve makes chopping herbs and mincing so easy! I've used many other knives and Shun is by far my favorite! Thin and strong with an extremely comfortable handle.

I received one of these as a gift at my bridal shower it is actually one of the few things we use with any degree of regularity. Since its just the two of us, the small board is perfect, and the knife is for butter/soft cheese.

The only reason I gave it 4 stars was because the knife needs to be handwashed with a non-abrasive sponge even a "green" scrubby sponge will give it little scratches. I guess that's okay since you're probably committed to some time in front of the sink anyway as putting a wood board in a dishwasher is ill-advised.

Anyway, I love this little set and hope to have it for many years. I am looking forward to putting it out for dinner parties/holidays

Chef's Choice 120 Diamond Hone 3-Stage Professional Knife Sharpener, WhiteI was very suspicious of this guy, but having actually used it I can only recommend it.

We've had one in my house for quite some time. My mother bought it because she is not interested in learning the ins and outs of knife maintenance and read several great reviews of the 120.

I was suspicious, mainly from bad experience with cheezy knife sharpening gadgets, but also because my mom's knives, which had been through the Chef's Choice, always had crappy edges. I had made something of a habit of looking sideways at the Chef's Choice 120 on our kitchen counter.

I finally read one too many good reviews of this product (when I wasn't even looking for them, they just seem to pop up here and there if you read enough about cooking and cutlery), I decided to give it a shot on a Henckel's 5-star Santoku that had lost it's edge. I love the size and shape of a santoku, but it had gotten dull and was superceded by a Kasumi chef's knife I received as a gift. I figured the worst thing that could happen was that a knife I wasn't using would remain unusable.

First off, I Read The Freakin Manual. Do not underestimate the importance of this step. If I had just bought it based on good reviews and ripped open the box, I might have done this, but since I was already suspicious of it, I read through every word of their instructions. If you don't read the manual, the way you assume it works may be wrong (the big mistake might actually be overusing it). More on that later.

Next, before I turned it on, I did a few practice pulls with the power off. Get a feel for pulling the knife through smoothly and evenly. Make sure you keep the knife blade properly aligned with the wheel (i.e. if the knife you're sharpening has a curve, pull in a curve to keep proper contact with the sharpening wheels). Look at a clock, and make sure you're pulling at roughly the speed recommended for your knife's length.

Once I thought I knew how to use it, I made one pull through each side of stage 1. Felt the blade, as per the manual, and I had the burr they said I should feel for. Cool, it seemed to be working. I would recommend doing the burr check, because it does tell you that things are going according to plan. The same test is performed when knife sharpening is done by hand with a stone. After that, one pull on each side in the number 2 slot. Again, I had a burr, things seemed to be going well. Then I made 3 pairs of passes through stage 3, doing the left then right side, as recommended in the manual. Did a cutting test on some veggies. Wow, that thing was SHARP. Definately a better edge than you get from the factory on say, Henckle's or Wusthof's knives. I think my Shun and Kasumi knives were as sharp or sharper from the factory, but this was a nice, sharp, effortless, smooth-cutting edge, and it was equally sharp along the whole length. It's theoretically possible to get a sharper edge, but practically there is nothing left to desire from the edges I get from the Chef's choice, and I will happily be putting that knife back to regular use.

I asked my mom to have a go with the knife, and she was amazed at the edge I got from the same device she'd been using on her knives. It turns out she wasn't using it as recommended by the instructions. For example, she was making multiple pulls on the same side of the knife (you're supposed to alternate, left and then right side), and probably making too many passes. I redid the edges on all our knives, and now they are just awesome. I do feel like I got slightly better results the second and third time I used the machine. Splitting hairs, but it's safe to say it gets better as you get the hang of it. As other reviewers have said, the best thing would be to practice on something inexpensive or throw-away to be absolutely safe. I didn't really have anything that fit that bill, so I just jumped in with a good knife.

So, bottom line is this sharpener can do a very good job, but it's a tool. Like any tool, it needs to be used properly. It may be electric, and it may be a lot easier and faster than a whetstone, but it doesn't have a brain. That's what you're for, so read the manual, make some practice pulls with the power off, sharpen a cheap knife first if you can, and then enjoy. Don't worry about a reviewer who says the thing jams if you try to push the knife against the wheels and thus doesn't sharpen the knife. The manual says not to do that, just use enough pressure to make contact with the wheels.

I initially purchased a model 100 from a local Target store. It looked identical to the model 110 that is listed on Amazon's site. After bringing it home and trying it, I discovered that it did not sharpen the knife all the way to the hilt. After calling the 800 number for Chef's Choice, I found out that the 100 is different from the model 110 because of the inability to sharpen the full length of the blade. Both the 100 and the 110 use reciprocating flat stones to do the sharpening. I found that the model 100 had a tendency to leave irregular sharpening marks on the knife, They were sharp but purely on an aesthetic view they didn't look that good after sharpening. I then opted to go for the Model 120.

The Model 120 uses three sets of rotary stones that are controlled by springs that keep a constant pressure between the blade and the knife. It also has spring loaded slots that keep the knife at an exact grinding angle. It is an almost foolproof method of sharpening knives. As long as you maintain an even speed pulling the knife through the sharpener and you allow the spring to hold the knife at the proper angle, you should get the same excellent results that I got. The first stage only has to be used the first time that you sharpen a knife with the unit after that only stage two and three should be necessary.

One of my concerns about using an electric knife sharpener has always been about how much steel is removed from the blade during sharpening. The model 120 has a magnetic cleanout plug under the machine that collects the steel removed during the sharpening process. After sharpening eight knives the filings that accumulated on the magnet were almost non-existent.

I have always been reluctant to try an electric knife sharpener on our Henkels Four Star knives. We have had the knives for over twenty five years and the only sharpening that they have ever seen has been with the Henkel's fixed wheel pull through sharpener and steel along with an occasional "tune-up" by a professional knife sharpener. After using the Chef's Choice the edges of the knives are a good as the day they were purchased.

I highly recommend this unit.

Nothing beats a good whetstone, but you need to not only know how to use one correctly and hold your blade at a very precise angle, but you also have the time to do it right. I originally bought the (much) cheaper two-stage Chef's Choice sharpener which was great for quickly and accurately honing cheap kitchen knives. I've even used it on machettes, anything with a flat grind can be sharpened with these things...

Since upgrading to high-end Shun knives, however, I was uncomfortable with the amount of metal the old one removed and the rough finish it left. After heavy daily use, a manual honing rod simply isn't always enough to keep your blades razor sharp so you'll either need a whetstone or a mechanical device. Dull knives not only work poorly, but they are dangerous to use as well. I've tried the Lansky rod system but it's very hard to hold certain knives in the clamp, which also leaves scratch marks. Not an acceptable solution for $125 plus blades. Sooo, I've upgraded to this device to supplement my whetstone.

This one costs three times as much as the two-stage model, but it works at least three times better. Gradations between the hones is excellent and the third wheel leaves a nice smooth finish. After the initial sharpening you'll probably never use the first one again on any given knife but it's nice to have available. The guides work very well too, helping you maintain a consistent, accurate grind. The down side is that you cannot sharpen hunting knives, daggers, or other blades with a diamond grind or large center spine. Anything flat-, tapered, or hollow-ground works fine. Be cautious not to remove too much material with repeated use though--the diamond hone wheels are very quick and efficient, sometimes more so than you'd expect... They seem to hold up quite well over time too.

All in all I'm glad I bought it. Still need to do things manually from time to time depending on the type of blade and how delicate I need to be, but this really is a top of the line sharpener. Recommended.

The three stage strategy works very well. I've used many non-powered techniques over the years with mixed success. Rods, stones, gizmos... Most work fine under limited circumstances, but all fall short in either the time and effort involved or their ability to do a particular stage of the sharpening.

I have a mixed bag of knives, ranging from Chef's Choice trizor and Sabatier au carbone to no-name stamped junk. Of course, this sharpener had no problem bringing them back to an extremely fine edge, but the interesting thing to me, was how differently these knives progress through the different stages of the sharpening. This may account for some of the different sounding reviews here.

I also have a knife that has primarily been used for construction tasks including sheet metal, sheet rock and digging. Needless to say, this knife was a mess. The 1st stage of the sharpener reshaped the edge in no time.

Once your knives are in good shape, it takes very little time to touch them up with the last two stages. Stage 3 is for straightening and polishing the blade, and stage 2 is a very light sharpening. Someone else here mentioned using a steel between sharpenings which is always a good idea. It's also a lot quicker/easier to pull out and put away, and for some softer knives, I think I get a somewhat sharper edge. (BTW this is an F. Dick 12" fine oval steel)

There was also a comment about not having much success with serrated knives that I have to echo. It can help true an already sharp edge but it can't sharpen a dull serrated blade.

Overall, I've had great results. Both in the quality of the edge it produces and the ease of use.
