Kyocera HTNBK scissors sharpenerIt takes more time for some scissors than others. It simply depends upon the condition of the scissors.

I have sharpened all types of scissors with this, it works well. I have had trouble with other sharpeners in holding the angle correctly for the cutting edge of scissors. This simple small gadget does it easily. Kyocera ceramics (I also have several of their kitchen knifes) are much harder than metals and does a nice job sharpening.

I like the small size, it will be easy to store. I am quite happy with this purchase and anticipate using this for a long time.

The length of the blade occationaly caused difficulty in cutting the top sphinter muscle, but otherwise was adequate for the task. I recently obtained some oysters which were significantly larger than those previously purchased. Unfortunately, in trying to open the larger oysters, the blade snapped off. It was necessary for me to revert back to the old tool commonaly used by casual oyster shuckers; a large flat bladed screwdriver. I would recommend this knife, with a caveaut, to only use it when shucking small to medium oysters.

Architec Gripperwood Hardwood Cutting Board, 8 by 11-InchI felt I took a chance buying this board with no picture and no reviews to tell me if it was good, or if it was what I wanted. Well, I was pleasantly surprised, it was exactly what I wanted. It has non-slip gripper pads on each corner to keep it up off the counter, and to keep it securely in place. It has a very large cutting area (almost too big for my counter space), even with the grooves around the edges to capture juices. It is very sturdy and made of a nice quality wood. Overall a very nice and inexpensive board.

ORIGINAL 2/17/09: I purchased this cutting board almost two years ago and have loved having such a large work surface, and I prefer wood boards over plastic so I was glad to find this size at such a good price. At first I loved the feet kept the board in place, even with rigorous chopping. However, right now, the middle sags to the point that the board rocks when sat on the counter. Could it be from overexposure to water, like when my husband thought it should soak like our pots and pans do? Sure. It could also just be a flaw of the design, with a heavy wood board not properly supported in the center. Hard to say. Either way, I will probably not buy any cutting board with feet again. If you are solely looking for a cutting board that will not move around on your counter, just buy a roll of grippy (but not adhesive) shelf liner and cut a swatch to slip between your non-footed cutting board and your counter it keeps the board in place, and you can fold it up and shove it in your drawer when you're done using your board.

EDIT 2/22/13: I bumped up my review to 5 stars from my original review of 3. I have continued using this cutting board for the past 3 years. I do not notice the rocking anymore, but it was stored for about 9-10 months without any use shortly after my original review. Not sure if it flattened back out during that time seems ridiculous to think that, but the board really does seem flatter than it used to. Anyway, I have been treating it with mineral oil every few months and it is holding up very well, even with near daily use.

I love the size, and love the fact that it is easy enough (size and weight) to store in my cabinet when not using it (I had purchased a 2" thick, very heavy 20x24 cutting board to replace this one, but didn't like leaving it out and it didn't fit in my cabinet). Overall I am very pleased with the Architec board and I would recommend it to others. Just don't soak it in water and you should be fine!

My large gripperwood board developed two large cracks in the wood in only one month of use. The board was never soaked in water and I even used lemon oil on the board to prevent this issue. I will be returning it.

The cutting board is raised from the surface by the rubber grippers. The one I got was broken within a day. Not sure if it arrived that way or if maybe it broke after we used it once. The center really needs support; perhaps with another strategically placed gripper. More protection when shipping may also be in order.

Pass on this product.....I bought this for my wife for her birthday on Oct 6. The board arrived promptly and good condition...kudos for amazon. The appearance was like I expected and she was excited. We used the board a few times for steak, chicken, a turkey and it worked fine.

Hand washed. Split within the month. Crud. The old adage of "you get what you pay for" certainly is applicable here. Now I have to buy another one. I will certainly pay up to get quality that will last.

It is OK for lower end knives but never gets them as sharp as my Chefs Choice. The minosharp is simple and quick but so is the Accusharp which is close to 1/5 the price.

Ultimately, manual sharpening with a stone is slow but gets you razor sharpness.

Not recommended. You have plenty of other options.

I've used it for about a year. it gets a knife sharp enough for sushi work in about 2 minutes. Don't push down too hard or you might damage the stone wheels. Sooner or later you'll have to get new wheels. Don't know how easy that is.

The Hubby and I have an agreement. If he wants good vittles to appear before him on a regular basis, he must make sure my knives are sharp. To that end and because he loves gadgets & food, he owns several whet stones and knife hones that take way too much time for me to use. He bought me this to do quickie honing sessions on my knives that take the most abuse (santoku, paring and slicing knives). It is easy to use and generally does a good job. It is not all that good at taking gouges out of knives. Nor will it help you guys who think that just because those food network people drag their sharp edges across the cutting board to scape things into a pile that you can do it too (Read: it can't help you if you square off your edge). However, if you take reasonable care of your knives and understand proper knife care, this is an awesome tool to have. It is especially helpful for those inbetween knife sharpenings and when you are chopping a lot of food.

It makes dull knifes sharper, maybe not quite shaving-sharp, but reasonably sharp. Plastic construction feels fairly solid, though sometimes I wasn't quite sure if I had the angle right through the guides, especially on curved blades. There's about an inch toward the handle that the sharpener can't really get to with the cover on. Would be nice to have a 3rd fine wheel for honing (the two included ones are medium & coarse).

This is my first sharpener of it's kind, so I wasn't really sure what to expect and don't really have a point of reference.

These are the best knives I have ever used in the kitchen. I have purchased very expensive knives from home shows and high end department and kitchen stores but have never had a knife as good as these little $8.95 knives.

I bought one initially because I have a red accessorized kitchen and I wanted a red knife to match. So I bought it just because it was "cute". After using it I went back to the store and bought 11 more knives!! Now I have two of each color. Then I got worried that they would quit making them so I bought some spares for the future. Then my grown children used them at my house and wanted them so I bought more!! This is a truly great knife. Very sharp but with a safety sheath so you won't cut yourself while searching in the kitchen drawer.

I sent all my old boring black steak knives to the thrift store and now use these as steak knives too. If you are looking for a good kitchen knife you won't be sorry if you buy these!!

Proteak Teak Cutting Board Rectangle 20-by-14-by-2-1/2-Inch with Hand Grip, End GrainThis cutting board was beautiful right out of the box I oiled it up before use with mineral oil as I would with a normal wood cutting board, but it hardly needed it (but of course still do this occasionally for maintenance). I bought this for my parents, and was debating between this large, beautiful board or a smaller, more portable one (this is HEAVY). I went for this one and am so glad it is very nice to have the extra chopping space. I was also skeptical, since in my family if we don't use something often, it gets put in cupboard somewhere and generally forgotten about. Nope this one stays on the counter (which is saying something, because it does take up a fair bit of space). My mom is a food-sanitation fanatic and so I gave her a spray bottle with vinegar in it she sprays the board and wipes it down with a paper towel after each use (this keeps her from dunking it in the sink with the other dirty dishes, which would cause it to crack). So far (6 months later) the vinegar has not changed the appearance of the board at all. You can hardly see the knife indentations, for that matter ... it still looks new.

After having this cutting board for a few months I can honestly say I enjoy using it. That said, it does have some problems.

My background, I'm a professional chef who uses this board at home.

First the bad:

-slightly warped. It's not bad enough to notice while cutting, and has not gotten worse since it arrived.

-odor. It has an odor to it. Some of that is from the garlic and onions I cut, but I've used wooden boards that don't smell as much as this one.

-heavy, large. Makes cleaning more difficult. I'm not knocking the score because of this, I expected it to be harder to handle.

The good:

-solid knife strikes. This board absorbs my knife strikes solidly.

-blade friendly. The main reason I wanted an end grain board was to prevent premature dulling of the blade. It has not disappointed.

-heavy. It doesn't move around the counter while cutting our kneading pasta dough.

I keep it oiled with the recommended oil and hand wash it with a small amount of soap and gentle scrub pad. I use the sprayer to rinse it and dry it right away.

My biggest complaint is the warping. It arrived that way and I was tempted to return it. I decided to keep it since I couldn't be sure a replacement wouldn't be worse. It doesn't move while cutting so it isn't too big of an issue. However, for the money, I expect it to be better quality.

There wasn't a 20 x 14 x 1.5 at amazon so I'm putting my review here. I went to the Proteak site to see if there was a board I would rather have since 2" and above thickness was too thick for me. I found it with this board. I like the thinner board, yet it is still thick.

This is a gorgeous product. I imagine any board from Proteak is just as beautiful. If you love wood like I do, you will appreciate the variations in color...both light and dark. This is the only product that I found that has this natural coloring. It's truly beautiful and from all the reviews I read about Proteak, I would imagine it's a long lasting and quality cutting surface. You have to follow the directions for seasoning the board and treatment. If it's not seasoned correctly or treated the way the manufacture recommends, it can crack and deteriorate and lose it's beauty and function. Seasoning, from what I've read needs to be done as soon as you get it with mineral oil. 4-5 initial coats is recommended. This also brings out more beautiful luster. i just got the board so I will post another review after I've had a chance to use it and see how it holds up but I feel very good about it. The 20 x 14 size I believe is just right for my kitchen island. not too big but big enough to accomodate the cutting of more than one thing. The larger size would probably be the best if you use your board for alot of cutting, but the size does not fit into standard sink for rinsing and cleaning and this size does so that is why I got it. Plus it will stay on my island all the time and allows room for other things. Do your homework with choosing a board. They are not all created equal. Teak is very durable and attractive. I checked out all of the board sites I could including the John Boos and this got better reviews than Boos did all the way around. I don't want to have to buy another board for a long time so I hope this is as durable as everyone says. I will post an update after a few months to let you know how it is holding up.

Update: It's been a few months and the board is beautiful and stays on my island all the time. I oil it about once a week. You can tell when it's looking a little dry. Since it is a cutting board, you will have the wear of cutting marks, but you can't really tell that much with this board. Maybe after a few years, but so far I love everything about it.

Amway A101, E84, E-85, E-9225 Compatible Fit Replacement Water FilterWell....Amazon needs to provide more information because even though it is marketed as Amway compatible it is not the same as Amway's.

First the filtering surface area of the filter is about ½ of the real Amway filter. Also, the filter is good for 6 months where the Amway filter is good for a year. Last, there is no documentation or any paper indentifying who makes the filter, how does it compare to Amway's, and who assumes product liability. I was given the name of the company that makes it but there is nothing in the filter that identifies the manufacturer. For all you can tell, it could have been made in someone's garage in China.

In all, you pay ½ the price but you get what you pay for: ½ the time, ½ the filter surface area and no company willing to assume product liability.

Won't buy it again.

This product is O.K. as a replacement but a bit smaller than an actual Amway brand filter.

I will probably spend the little more and buy an actual Amway softener next time.

The water tastes great though. I'm just not sure it takes out all the impurities Amway claims theirs does.

Not terribly dissapointed though. As I said...it's O.K.

Should have read the other reviews. I guess it is filtering, but I plan to replace it in about 6 months. Besides being smaller, there was no carbon looking water that usually comes out in the first couple of minutes. No carbon means not the same filtering to me. The water doesn't have the nasty taste that is present without a filter. That's why I guess it's filtering. I sure don't have any confidence in this one. I won't buy another one.

Common sense will tell you

The beep you get is to "remind" you to replace the filter not a true test of the filter efficiency.

It is the Max Time length specified before changing, not gallons filtered.

Replace the battery and you'll get another year of service, may or may not be efficient.

1250 or 1000 gallons is the test and an estimate usage in a year.

No Filtration Specs to compare gives me Warning.

May give you good tasting water but the reason I bought this filter is to FILTER OUT THE BAD STUFF!

I guess my only option is to order one to read the specs & compare the ANSI/NSF Standards.

Mikasa Classico Satin 18/0 45-Piece Flatware Set, Service for 8I had bought this product in a Mikasa store a while back and was looking to add servings to the flatware I had. I was so excited to see Amazon had these, but when I got the box, it was completely different than those I had purchased from the Mikasa store. The original Mikasa flatware I have is made in Korea and is 18/10, the ones from Amazon I got were made in Indonesia and are 18/0, quite a difference in appearance, weight, etc... The Mikasa pieces I have came individually wrapped and in their box, these came all together in bags wrapped in a rubber band, and all together in 1 box. Very poor presentation and not to mention quality. The original flatware I have is dishwasher safe, these are not! So I'm definitely returning! I was looking in the Miksasa online store and they have this flatware, but again in 18/0 and they don't mention wether made in Indonesia or Korea... I assume Indonesia, but very disappointing to see they have lowered their quality standards.

I ordered this to replace pieces of this original flat ware made in Korea and it is 18/10 steel. This is low quality attempt that does not match. It is very crude and disappointing even if it was not a mismatch for replacement. They should give this another name since it is so different and low quality.

I bought a service for 8 at a Mikasa store in 2002 for our vacation home. It is beautiful, 18/10 flatware that has held up well. (I would rate that flatware 5 stars.) Now someone we let stay at our home has lost three salad forks and I am having difficulty finding replacements that are 18/10 and not 18/0. (I would not purchase 18/0 flatware because it won't match.) I looked on the Mikasa site where they still sell sets of 18/10, but did not find a way to purchase individual pieces. All of the replacement pieces I have found online are 18/0. The set is not serviceable with only five salad forks, so now I'm looking for a new set of flatware. Not happy.

Kai Wasabi Black Utility Knife, 6-InchMy mother-in-law wanted to replace her $40 multi-knife set because those knifes would not stay sharp. We purchased three KAI Wasabi Black knives for her (Santoku, 8" Chef's, and 6" Utility) as well as the Better Houseware 2404/12 Bamboo Magnetic Bar.

We find the knives to be sharp and comfortable. They definitely keep the sharp edge longer than her old knives. Plus, her counter looks much neater with the huge knife block gone. These knives come in nice boxes and would make a great present.

One thing that puzzles me is why Amazon calls these knives "SHUN Wasabi...". I did not find any reference to Shun on the knife boxes. I understand that the cutlery maker KAI that makes Wasabi line also makes Shun, but that is like calling Scion a Lexus.

I thought the handle was going be a cheap plastic, but I was wrong. The handle feels and looks great! The blade is incredibly sharp, and the whole knife is very well balanced. I'm very pleased with my purchase and would encourage anyone to make the purchase as well.

Just wanted a sharp knife larger than a paring knife. This is great for cutting up veggies. Can do some light chopping as it can rock a little like a chef's knife, but blade is too small and thin for much of that motion. More of a slicing blade. The handle is shaped with a bulge on one side that makes it feel uncomfortable for left-handers, but is good for righties. Sharpened easily with Accusharp.

Calphalon Contemporary 8-Inch Chef's KnifeI own many knives including several Wusthof's but I must admit that this one has been the true workhorse of my kitchen. Its a heavy but very versatile knife that possess amazing sharpness and balance that comes in very useful for just about any task from cutting up whole poultry to chopping up vegetables. I highly recommend it especially at this price.

This is a handsome knife with its heft and the full-tang full-forged stainless steel body, a great knife in the kitchen and value for the money. I have had this for over 2 years now (gift from my daughter). It has become my knife-workhorse in the kitchen because of its convenient weight, its size; that it is well-balanced and keeps its sharpness.

You could not get a better chef's knife for the price. Unbelievable. I have had mine for 6 years and never had to have it sharpened professionally. I keep it very sharp with a steel.

I would never buy any other knife now. I use to only buy Henkels. I must have had at least 6 Henkels throughout the years at about $100 bucks per knife. The Calphalon is way easier to keep sharp....and I like the weight better too. I guess there is more carbon in the steel. At any rate....the price is right and I actually love the knife more than any I have used before

I've been getting into cooking and was in the market for something better than the super cheap lightweight knives I've used my whole life, and decided before shelling out triple digits for a high end Shun or something, to take it in baby steps and try a mid range knife like this and see how it goes from there.

This is a GREAT knife for me to use around the kitchen. It glides through raw meats and vegetables alike; cleanly and effortlessly. It's got a good heft and feels very solid and reliable but is also well balanced. I'm still very careful and methodical with slicing and chopping, but this knife (plus the 5" and 7" Calphalon Santoku set) have taken the chore and effort out of it and made it a real breeze. At this point, I don't forsee a need to upgrade to the high end; these knives seem VERY well made.

my calphalon 8 inch chef's knife arrived about two weeks ago and i've been busy using it ever since. excellent knife. great balance. just feels right in the hand. and it comes from the factory very very very sharp. excellent value for the price. i only wish it were made in the u.s. not in china.

Vegetable CleaverInexpensive, razor sharp and stays sharp. Just don't leave the blade wet for more than a minute, it will rust--but that's just the type of metal used, no big deal. Light weight and decent balance. I recommend it.

This is carbon steel that will rust if abused, but it takes a very sharp edge. I sharpened mine once when I got it. Since then I havent sharpened it at all. Before every use I give it 5-6 swipes against a ceramic steel to true the edge. I also keep a wet sponge and dry towel by the chopping block so after every use, the knife is wiped clean and dry (takes about 5 seconds). Six weeks later, the knife still shines like new and is sharp enough to cut a tomato without bending the skin.

It really doesn't take any longer to treat a knife with respect than it does to abuse it. It is just a matter of training, my knife is always clean sharp and ready for action. I can wipe it clean and sheath it (in folded cardboard and duck tape) as fast as you can throw it in a dishwasher. If you want to leave it in the sink or store it in the dishwasher with food goo and growing bacteria, then this won't be the knife for you. In that case get a TV special ginsu or Ron Popiel stainless knife guaranteed for life against abuse, and take some drugs to combat the bacteria experiment blooming in your sink and dishwasher.

I needed a wok and bunch of other kitchen stuff for a new apartment so I ordered direct from Tane Chan at . The knife was the cheapest she had, but it is a great knife. I use it in preferance to my more expensive (and heaver) knives 95% of the time. It is light, sharp and easy to care for. What else matters in a kitchen knife?

I bought a couple of Japanese high-end cleavers (Shun and Tojiro) before I bought this thing, and I bought a stainless Forschner after. None of them measure up.

The Wok Shop cleaver takes an incredible edge in a minute or less. I can swing it through a paper towel held in my left hand and cut the towel in half. It stays sharp long enough to do a lot of work. The balance is good. The blade is thin enough to allow for onion slices so thin you can barely pick them up. It makes a good shovel. It squashes garlic so you can peel it. It minces things much faster and better than a chef's knife, which is something I can't explain. The back side tenderizes meat.

The only problem with this knife is the rust, but what do you want for ten bucks? I gave my Shun away because it was junk, and it had to be treated like a sick baby. The Wok Shop cleaver is so good, I don't mind hand-washing it.

This carbon steel cleaver will outperform knives worth 5 times its price. When properly sharpened it cuts vegetables as fine as you could ever hope to to get. It's solidly built and feels good in the hand. It also sharpens very easily. Now, as any good tool, it needs proper care. Wash and dry it soon after use or it will get a layer of rust. If you can't make that commitment to this great tool, then buy yourself a stainless steel one.

I received then knife really fast and they tossed in a bamboo back scratcher. One thing the add didn't say is that it is a #2 Cleaver(8"x4") I'm glad I didn't get a #1. There was a little rust nothing to complain about It cleaned up easy. The edge needed a little sharpening not bad at all. I used the box it came in to make a case/sleeve for it.

This is a decent knife because it keeps a decent edge and doesn't feel flimsy. The price is very good. I would say it has one flaw, but it is a major flaw. When you slicing something like a loaf of bread it doesn't slice evenly. I use my right hand and cut from the right and I always end up with the bottom half of the slice thicker than the top. I've tried cutting at different angles but I still get the same results. That is why I have rated this item 3 stars.

Shun DM0712 Classic 7-Inch Chinese Vegetable CleaverI've been cooking for over 15 years (I'm not that old), and I grew up in a Chinese family. A Chinese Chef knife is exactly that, it is not a cleaver, despite the resemblance. This is the one knife a Chinese chef will use in the kitchen for just about everything.

Trust me, I've tried cleavers, they are not a replacement for a real Chinese Chef knife. I've also used many of the Chinese Chef knives that you can pick up in many Chinatown shops and Asian specialty shops. (BTW, I'm from the largest Chinese community outside of Asia, so we are not lacking the "goods").

The Shun classic....is amazing. It is perfectly weighted, and the grip is fantastic. I can grip the knife with confidence even when wet or dealing with meats.

The blade is the sharpest I've used of _any_ Chinese Chef knife. The first time I used it, I was mystified why it took so much effort to cut (it was supposed to be sharp, wasn't it?). The reason was, I had already sliced through everything without noticing and was already pressing on the cutting board!

One problem is that it also cuts into my cutting board with relative ease. If I don't remove the blade straight up, I hear a sound which makes me think the thin edge is being knicked. However, so far, no real problem, the edge is still perfect.

I have still been a bit wary to use it to hack at bones, but I think that fear will go away. (When I say Chinese chef's use it for everything, I mean everything).

I don't care about a Damascus steel look, but I can attest that the surface has no problems with releasing food. Slides off easily.

I've used many different Chinese cleavers over the years. From the cheap no-name $4 cleavers to the higher end Dexters. While shopping I stumbled across the Shun Chinese cleaver and my jaw dropped at the inherent beauty of it. Once I picked it up and looked at it I knew I must have it. Everything about it screams quality. It's balanced beautifully, is thin, made from V10, has an resin fused pakka wood handle and of course had the gorgeous grain in the steel from the 16 layers they use to forge the blade (these are not stamped knives).

I ended up buying both the Chinese cleaver and the 8" chefs knife to replace my old work horse Dexter chinese cleaver and my 9" Henckels. Out of the box these knives are sharp. You could do eye surgery with them. They hold an incredible edge. These are hands down the best knives I've used or owned.

Do not be intimidated by the price. Yes, they are on the expensive side but these are, as I have stated, simply the best knives out there today. They will last a lifetime. You will not be dissappointed. The kick butt over the Wusthof Culinars (which I think are fantastic knives).

Shun has created a knife that stands heads and shoulders above the rest.

I bought this knife a year ago. It rapidly became my favorite cutting implement. I postponed reviewing it to make sure initial infatuation was not coloring my opinion.

The balance is near perfect, the blade shape works well for cutting, slicing, mincing, and chopping. The steel readily takes a sharp edge and holds it well. This cleaver excels at both moderate cutting and delicate work. The wood handle is warm and easy to grip even with wet hands. The strong blade allows using the side for mashing and as a spatula, the back as a scraper and tenderizer, and the end of the handle to pulverize.

Whether this knife is worth the price of admission depends on the depth your pocketbook and your intended use. For those wanting a fancy knife to display, the Damascus edge makes for a striking appearance. That did not rate high on my list, but I presume it does for some. I use this knife on a daily basis; it is a pleasure to work with and does the job with a minimum of drama. The build quality is such that I see this knife lasting for many a year to come. After having used, abused, and worn out a number of lesser cleavers, my only regret is not purchasing this one sooner.

Addressing several comments made by previous reviewers:

D. Symanski's cleaver came with a sharp spine. Mine did not, nor did ones I have handled in several stores. I do agree with the mention of the asymmetric handle. This knife comes in left or right hand versions. Using the Shun with your off hand is uncomfortable at best. If, like me, you are used to wielding two cleavers at once for mincing meats and veggies, you will need to pay attention to which hand holds the Shun. My cleaver came sharp for a factory edge. A few minutes with stone and strop brought out a wickedly sharp edge, but the out-of-the-box blade was serviceable. That's a rarity for most cutlery.

DAL notes that the edge notches when cleaving a chicken. This is a medium cleaver, weighing the shy side of 12 ounces. Heavy cleavers start at a pound and a half and go up from there. The VG-10 steel used for the cutting edge is not the best choice for whomping on thick bones. The Vanadium content makes for a fine-grained metal (i.e. easy to sharpen and takes a razor edge) but it can bend or nick, particularly with the thin working edge this knife has.

rl123 compares the Shun to a Dexter cleaver. Owning one of each, my preference is strongly for the Shun. If you are not going to use this knife often, a cheaper one should suffice. As a daily workhorse, I know of none better than this baby.

As Bobo mentions, this knife slices into soft cutting boards. A good end-grain wood block solves that problem.

I agree with the previous reviewer: this is the sharpest, most well made Chinese chef's knife out there. However, I guarantee you won't find this knife in any authentic Chinese kitchen because this knife is just too expensive.

If you want to get a good Chinese chef's knife, you should buy the high-carbon stainless Dexter-Russell cleaver (costs around $40). It is only slighly less sharp but the difference is not noticeable, especially if you are chopping rather than slicing.

There is nothing wrong with the Shun knife; it's just way too overpriced. It's just a knife, and no mass-produced kitchen knife is worth $170, no matter how sharp it is.

Many of the other reviews critique this tool as either too expensive or that it is inadequate somehow for cleaving bones and parting out. This is a misinterpretation of what the knife is designed for. The Chinese use two different blade designs in the cleaver pattern. One is a cleaver in the western sense, in that it is an impact cutter, this pattern has a blade about 2x as thick as a vegetable pattern (like this one.)

This knife is meant to be used more like a thin chef's knife, santoku or large nakiri. Once you get used to using it this way the method is very practical and flexible. Instead of the full block of various knives, you can reduce yourself to one of these, a 6" utility, a 3" paring and a meat pattern cleaver if you do a lot of parting out. I find that I use the cleaver for virtually everything, slipping back to regular pattern knives only when I need a sharper point for something. For those who critique it as too expensive, I would encourage them to take a look at what pro-quality forged tools go for on other sites, I've seen comparable tools going for over 2x what Shun is marketing these for.

The biggest drawback is that stainless steel tends to hold a rounder edge. By that I mean that the edge is very durable but slightly less sharp, and harder to sharpen than high carbon steel. However, that is the price one trades for easy maintenance. A sushi chef, for instance, will sharpen and wipe down his blades at the end of every day. For those of us who are less conscientious, this is perhaps a rational trade off.
