Joyce Chen 6-1/4-Inch Unlimited Seafood Scissors

Joyce Chen 6-1/4-Inch Unlimited Seafood ScissorsJoyce Chen does not make Seafood Scissors. It has not made Seafood Scissors for several years. To verify: Simply contact the Joyce Chen Corporation itself. I was sold these seller-described "Seafood Scissors"... and when the package arrived... I received the red Joyce Chen Original Unlimited Scissors instead. I was told, and I quote: "Yes, these scissors are one in the same and are advertised differently for broader appeal." Still, it took well over one month for an excellent, hard-working, and ethical Amazon representative employing earnest diligence to right this situation and get my money back. A word to the wise: Always read the exact product branding description and check to see if you are receiving exactly what products are described.

These are a God-send for jewelers who want to speed up production of jewelry. Rather than filing, the scissors cut metals and wire(silver, brass, copper) up to 18 gauge easily.

This pair of scissors was recommended to cut through copper at relatively thin gauges. I use it for up to 20 g and it works great. They are very sharp and do a fantastic job. I would highly recommend them. Keep in mind the metal will curl up as you cut; you'd need a guillotine cutter (at a MUCH higher cost) to get a clean edge.

I already have had a pair of Joyce Chen Scissors for several years. I used them for everything from hard plastic wrap to the most fragile meats. I thought I had lost them and quickly ordered another pair. I have since found them and doubly happy now to have two pair.

We live in the Pacific Northwest and bought these to help in cleaning Dungeness crabs. Instead of cracking the crab legs, we just cut them with these incredible scissors. They have a thin enough edge to get into even the smallest leg, yet are strong enough to not bend or break. Obviously, they can be used for other simpler cutting chores, but cutting a tough crab or lobster shell demonstrates how incredibly good they are.

Ergo Chef ER43 Pro-Series Diamond Oval Knife Sharpener, 12-Inch

Ergo Chef ER43 Pro-Series Diamond Oval Knife Sharpener, 12-InchThis sharpener is outstanding, with the exception of the non-slip tip. the quality of the edge it produces is excellent. The tip, however, seems very cheap, is not well attached, and really isn't all that "nonslip. I usually dont hold it against a surface, but if you do, just be careful, and maybe put the tip on a damp rag to further avoid slippage.

OXO SteeL Large Skewer Fork

OXO SteeL Large Skewer ForkThis may well be the perfect fork. I like the OXO series of cutlery, and this is no exception. This fork is very well balanced and has a wonderful handle that is secure and resists slippage.

The fork itself is made of stainless steel, and is dishwasher safe; a huge benefit not found on some high end cutlery today. The handle is in line with the other contemporary OXO utensils, with a stainless handle for superior durability and strength, but with rubberized fins on the sides to provide you with excellent grip, which is especially important on a fork of this size that can be counted upon to lift things like heavy roasts, etc. Another excellent feature is the barbed tines, which help prevent heavy items from falling from the fork during lifting.

There may be a greater fork somewhere, but I haven't found it yet. For all your forking needs, this gets a big thumbs up!

I almost bought a Good Grips meat fork with a rubber handle until I saw this one. I love Good Grips kitchen tools, and have come to depend on the brand when I'm looking for a nice, solid, reasonably priced kitchen tool. However, in the past, my one complaint has been that when I store utensils in a crock next to the stove, those non-slip handles that I love stick together, and it becomes impossible to grab just one tool you wind up pulling out 6. This handle fixes that problem. It still has the nice, comfortable handle with rubber on either side for grip, but the stainless steel is much easier to grab quickly out of the crock. I'll definately be looking for more tools with this handle. The fork itself is nice and sturdy, a good size, and handles well. I would reccommend this product.

I got this fork to replace a cheap but much loved fork I'd had for years but somehow lost. This fork is a good size and has a nice handle but compared to the one it replaces it feels bulky and fragile. I could shove the old one up the business end of a 5-6lb chicken or 10lb or so turkey and lift it out of the roasting pan with minimal other support. It felt solid and never felt like it was bending. Doing the same thing with the Oxo fork feels bendy, unsupported and at times I've been worried that it will actually break. I'm no engineer but it may be down to the fork not being one piece, the stem being flat and wide rather than a thinner cylindrical shape and the way the prongs are angled both in terms of them curving up and the slight "kink" where they meet the stem. In your hands the fork can be bent so it isn't rigid like some. If you are looking for some flexibility then this has it, if you aren't than keep clear. The handle is nice, it really does a good job of helping you grip the fork itself at any angle you want. It's just a shame that the fork itself doesn't feel sturdy.

Overall it does a decent job if you just want to hold a piece of meat steady for carving or move pieces of meat from place to place. If you want to do any sort of moderate lifting with it then you might want to keep looking.

Oxo Steel Fork

I was looking for a quality fork for lifting heavier meat cuts without having the meat item falling off the fork and I've found the best solution for my needs. With curved prongs and tips notched like fishing hooks, this 13-1/2-inch fork gets a solid grip on roasts, poultry, and big vegetables like baked potatoes. It easily lifts a corned beef, for instance, from pot to carving surface and holds it down firmly for careful slicing. Rather than being straight-sided, this tool's handle is tapered from heel to finger grip and has satin-finish, stainless-steel panels top and bottom. The handle's sides feature the same design as those in the Good Grips line, which are made of soft processed rubber for comfort, with "fins," or grooves, that flex under pressure, conforming to individual finger grips and providing control when the handles are wet or slippery.

Some of the product features are:

* Use to skewer and lift roasts, poultry, and vegetables

* Use also with knife as carving tool

* Tapered handle with soft, nonslip sides

* Safe to use in dishwasher

* Comes with a lifetime warranty against defects

* The steel construction will not bend easily when in use.

The tapered handle with the soft non-slip sides is great feature if you have a smaller hands, as you can control the fork much easier. The barbed tips prevent slipping of the meat or vegetables. Use the OXO Steel Fork to retrieve and secure hot foods, or for hands-free serving. Both elegant and comfortable, the OXO Steel line of kitchen and household tools feature brushed stainless steel handles for strength and durability and trademark flexible fins for ultimate comfort. I use the OXO Steel Fork for piercing potatoes, transferring a pot roast from pan to platter, and securing meat during slicing, great for transferring a turkey on Thanksgiving Day or that Christmas ham for carving. Also, those sweet potatoes can be handled far easier with this fork than any other that I've used in the past due to the barbed fish hook tips. Once you have your sweet potato where you want it then with a simple pressure from a pot holder or your knife, your potato is removed from the fork

It seems that the uses for this fork are as many as your imagination can come up with and it doesn't fail. It is very well-constructed not too heavy, but very versitile and handy in your hand. I enjoy the dishwasher safe as there are times that I generate many different pots and pans and items that I can get a head start on by popping them into the dishwasher.

I loved this fork so much I bought a second one just to help out with the holiday cooking and not only I, but whomever is cooking with me, can enjoy the same convenience, stability, and gripping power. Also, I use both forks for the bigger, bulkier meat cuts with confidence. The fork is long enough that when you fry chicken in the skillet you don't get the oil splatter on your hands and forearm.

This is an item that you'll want in your kitchen for the reason I've described. The fork is a bit more expensive, but the quality of this fork makes up the difference. I use it to get items off of the BBQ grill surface without fail. This is a very useful item.

An epicurean Bon Appetite

Slice 00124 Ceramic Blade Veggie Peeler, Green

Slice 00124 Ceramic Blade Veggie Peeler, GreenThis peeler works great. Blade is very sharp and makes peeling fast and easy. Very safe to use. I thought the handle would be too cumbersome as I have small hands, but it's fine. I like the fact that it stands on a shelf so it won't get out of my site and get thrown in the compost like my previous one.

You can use either hand: the blade can be popped out and reversed for lefties (thank you T. Scimone for pointing this out to me).

Love the ceramic blade (I also have a Kyocera Y peeler) which is very sharp. This one probably sacrifices ergonomics for design but since I don't peel 30 pounds of potatoes at a time, it's not that big a deal. Seams hardier than the Kyocera on which will probably break at any moment.

Lunch on the Go 1 Kit

Lunch on the Go 1 KitI have almost all of the fit and fresh lunch to go containers and they really make taking food to go a lot easier.

I handwash everything and do not have problems getting my containers to stack or close like another reviewer said. The two small containers only fit on top of the icepack. When I made a big salad in the bottom, I just put the icepack on top, then my two filled small containers and the outside lid. Easy.

I bought the first one a couple weeks ago at a brick & morter store and then bought two more this weekend so I can pack one for my husband too. Hopefully he won't mind the purple lid.

I wish it had a place to stow away cutlery, but for five or six bucks, it's just fine.

Believe me, I never complain about things, but I ordered two different stack and go containers from this company and they both experience the same problem. You will be very disappointed if you order these, and I can't believe SparkPeople is endorsing them.

Ceramic Combination Knife Set Santoku/Parer

Ceramic Combination Knife Set Santoku/ParerMan started out with sharpened stones for cutting. This ceramic blade completes the circle.

The santoku has a permanent spot on my cutting board. It's my 'everything' knife for chopping (no bones, natch!) slicing, dicing, etc.

A quick rinse under hot water, maybe a wipe with a soapy cloth and a rinse, that's what it takes to care for it. I've had mine for six months now and it's still razor sharp.

I first found these knives at The Blade Show in Atlanta, GA in 2010. I purchased one with a bamboo handle to try out. Loved the knife but the handle broke where the blade meets it after a few months. Called Stone River Ceramics and they sent me a brand new knife with the plastic/rubber handle and told me to keep the old one, no charge at all! I epoxyed the old knife and it was fine until the tip got broke. I have not had any problem with the replacement knife which is way I decided to buy more.

I bought 3 of these sets and gave 2 of them as gifts. Both of the recipients love these knives also.

As with any ceramic knife you need to take care when washing (NO DISHWASHER, hand wash only) and storing these knives. They stay sharp for a long time but will not bend or take being banged against other hard object.

Fox Run Brands Adjustable Cheese Slicer

Fox Run Brands Adjustable Cheese SlicerFinally found one that is adjustable. Had one for about 30 years just loved it but sadly it finally broke. Tried several different kinds none worked took them back. Glad I found this one hope it lasts. This has spare wire so hopefully it will be around for another 30.

I was disappointed in this product. The wire just won't remain tight... The slices get bigger and bigger, regardless of adjustment.

Inexpensive and held up in the dishwasher just fine. Was worried about not being stainless steel but it's fine. Would buy again

It will slice your cheese and even comes with a replacement wire. However, overall the unit is cheap. For instance, the backside of the handle is hollow (i assume to save on material costs) and the adjustable bit is a bit flimsy. I'd recommend spending a bit more to get a better quality product. However, it does slice cheese and has not broke yet. Just feels and looks cheap.

Want Fox Run Brands Adjustable Cheese Slicer Discount?

Came with a loose wire. I tried to tighten the wire, with no luck. My husband also tried to tighten the wire and was unsuccessful. The screw used to adjust the width of a cheese slice does not stay tight. I would not recommend this item.

I do not care for the aluminum set. As far as it being sharp... That is not a problem the knives are very sharp. I don't care for the texture of the handles as they feel a bit odd. Also the handles are tarnishing after only two uses. Perhaps they are not dishwasher safe but I don't recall a warning on that. All in all I am not a fan

MAGNETIC HOLDER 12IN

MAGNETIC HOLDER 12INwhat took me so long to get this magnetic knife holder? this is a great way to store knives, and have them readily accessible. Magnet is very strong, and I have about 6 knives on it now.

The magnetic holder is great. It does the job and keeps our knives off the counter and out of the drawers. It installed very easily, but we had to find different screws that were not as long to allow us to install it on the side of our cabinet at camp. It required a slight modification to fit the shorter screw heads. Would be five stars if it had options for the screws.

Childrens 4 Piece Cutlery Set - Stainless Steel

Childrens 4 Piece Cutlery Set - Stainless SteelThese are my absolute favorite flatware pieces for my children. They don't feel childish, are of good weight, and don't stand out next to the adult silverware, allowing my kids to feel like "big kids". The knife IS serrated, allowing my children to actually cut their own food. Many kids sets do not have this, quite a frustration if you are trying to slice anything more than applesauce. :)

I have had 4 of these exact sets for 3 years and they get used and placed in the dishwasher on a daily basis and have held up perfectly. They've been dropped, too..no harm done. No plastic to break, either! No fading, cracking, stains, etc...still look like brand new. I just had my 5th child, so I ordered these to have more of them. My kids prefer not to use the other sets we've collected over the years so we've thrown out everything else and are converting to only this flatware for the kids. Even my 10-year-old feels like these are perfect for her and she's not embarrassed to set them out when a friend stays for dinner! The friend uses them too. Highly recommended!!! And totally worth the postage from UK to America, as these are hard to find.

At first I LOVED this set of children's silverware. However, after several months of use and regular dish washing, I noticed that on all of the forks (I purchased 8 sets of this cutlery), rust began to form between the fork tines. It looks as those the stainless steel coating does not cover the surface between the tines. As if the coating was brushed on as opposed to being dipped in? I am now debating throwing out ALL of the forks. I don't feel comfortable having my toddler be exposed to the bare rusting metal surface when he puts the fork in his mouth. The two spoons and knife are fine. (A note on the spoons, the smaller of the two spoons is too small for a 2 1/2 year old. It is the size of a baby spoon you would feed pureed foods with. The larger spoon is the same size as the spoon in my adult silverware set). The knife is a great size and sharpness for a toddler.

Update (12/9/2012):

I contacted Grunwerg Ltd., the distributor of this flatware to ask about the rust between the tines, and below is the response I received. So, it looks like this set will require hand-washing and drying to keep rust from forming between the tines.

"Thank you for your enquiry regarding the above. We are an importer/distributor of housewares items, supplying the catering, wholesale and retail trades. We do not sell direct to the public. The Windsor carded range of cutlery is made from 18/0 Stainless Steel. The steel is not a coating as you suggest, but the steel is mirror polished. The nature and name of the steel means that it will "stain less", but does not mean that it does not rust. If the cutlery is left with food deposits on it for long periods, or is left to soak, or is cleaned in a dishwasher, over time this will cause rusting and possibly pitting of the steel. The cutlery should be hand washed wherever possible, and dried thoroughly before being stored."

Sekiryu Yanagiba Sashimi Knife 300mm

Sekiryu Yanagiba Sashimi Knife 300mmI think this knife is a good value if you want this specific kind of specialized knife.

You might want to know that I'm a bit of a sharpening geek, and I spent some time getting the edge just how I wanted, but now that I have it slices like nothing else in my knife drawer (of about 20 knives). I'm not sure I would be this satisfied if I hadn't known how to resharpen the edge to my satisfaction. Others have noted it doesn't hold up to multiple re-sharpenings which I'm sure means they haven't known how to restore the edge properly. The steel is just fine. It's not super high-grade knife steel perhaps, but it takes a keen edge just fine and holds up when ground at the right angle.

I'm sure it's not for everybody. I'm not sure how long the factory edge would hold up without some loving care. And it's a very specialized knife, really optimized for slicing fish into sashimi-sized slices.

But I wanted to try out this style of knife and the next price point for a knife of this style was about $100, more than I wanted to pay to experiment.

For those who might care about the sharpening details, I started by flattening and then polishing the back to 2000-grit (actually just the edges of the back get flattened and polished since the back is hollow-ground). This is a must-do step to get a really keen edge since the edge is only ground on one side (like a plane iron). Then I trued up the primary grind on the other side to 15 degrees (seemed like it was about 17 to start), then put a secondary edge at about 20 degrees when the 15 degree edge wouldn't hold up very well. With the secondary edge polished to 2000-grit, the edge cuts (slices, not chops) extremely well, better than any knife I've ever used, and seems to be holding up well with a gentle (ceramic) steeling before each use.

I feel like I have a good feel for this style of knife now and might invest in a higher-end model later if the spirit moves :)

Do note that this knife is shorter than described and as it appears in the picture. The blade length is 200mm, not 300mm, and the overall length of the knife, including handle, is 320mm. Knife length is properly described by the length of the cutting blade, not including the handle.

I purchased this knife for my son who is the executive chef at a private country club. He says the knife is unbelievably sharp and is as good as other Japanese style knives costing hundreds of more dollars. The knife resharpens easily and is the perfect length for most applications, not too long and not too short. It is a great value if you are looking for a good knife and don't want to spend a lot of money.

One note of caution. The knife is advertised as a 300mm or 12 inch knife. The actual blade length is 8 inches so if you are looking for a 12 inch slicer this is not the knife for you.

I bought this for a friend who makes very yummie sushi. Her old knife was just a basic chef style. She loves this knife! At one point, she barely touched the blade to the side of her finger and made a small slice. Not bad at all, just very sharp. The single-bevel blade and shaped handle make it fit well in the hand. Slice on!

We make sushi at home, but when it came time to cut the rolls they would get squished or would fall apart when using a regular serrated knife. After watching a dozen of youtube videos, I realized that I was using the wrong tool. Anyways, this knife is the bomb: it is very sharp and very long, so with one long stroke you can cut a perfect roll slice without pressing the rice and keeping everything intact. It also comes in a reusable box that is very handy as this knife is too sharp to keep exposed in a knife drawer. I would definitely recommend.

Want Sekiryu Yanagiba Sashimi Knife 300mm Discount?

For the price, you get a really decent knife if not great. Its a great beginner knife for people who are not sure if these knives will be the ones for them or not. Its still great if you are into it and just need a knife. Works wonderfully, keep it mind, the knife comes per-sharpen so there is no need to sharpen it out of the box. Also, the 300mm stated on the title is from tip of the blade to the end of the handle. So really the blade isn't that long, more like 170 to 180mm.

Wusthof 4066710 4" Paring Knife

Wusthof 4066710 4' Paring KnifeMy most used knife in the kitchen in my Wusthof 4" paring knife. This knife stays incredably sharp. It's blade is thinner than most other knives in its size, including the Henkle. The blade taper starts almost from the very edge. These two factors helps it slice through what you are cutting easier that thicker knives. I have found the blade thickness to be a very big factor when cutting. I have Henkle knives also, but they do not hold their edge anywhere as long as my Wuthof knives. Wusthof knives last a life time and are worth every cent you pay for them.

I love these knives and know they are well made from my years spent in Germany. This size is great for cooking; but, I added a couple more to make a set of steak knives and use the small, hand held Wusthof sharpener to keep them cutting with ease. Now I have extra knives handy for times when there are multiple cooks in the kitchen or multiple folks eating steak! Think multipurpose and save some money and storage space too.

Buy Wusthof 4066710 4" Paring Knife Now

Designed for broad kitchen use, the flat-ground spear-point vanadium blade is thin and semi-flexible, which allows it to pass easily through both soft and fibrous foods. It's ground from a high performance molybdenum and vanadium stainless blank to take and hold a long-lasting edge. The blade is tapered, starting thick where the blade joins the handle, thinning down the spine to a fine, uniformly ground tip. In the hand the knife conveys a unique feeling of balance, or "sweet spot." The sweet spot is due to the blade and handle being comparable in weight. This balance transfers into a feeling of steady control over the cutting edge.

As a result, I rate it second only to the 4.5-inch (Wusthof) utility knife, which carries the same blade with a slightly longer handle. This 4-inch paring knife carries high customer satisfaction over its lifetime.

Oneida Dover Steak Knife Set, Set of 4

Oneida Dover Steak Knife Set, Set of 4I was in need of new steak knives and decided to try and match a new set with my Oneida flatware. I own the Satin Dover but unfortunately the steak knives are only available in the Dover (shiny finish). I ordered the knives anyway and am very happy I did. I actually like the contrast of the satin finish vs the shiny finish. I know when the table is set that the steak knives are in use as opposed to the dinner knives. It's so nice having all my flatware patterns match. I'm fussy that way. I'm pleased with this purchase.

The knives are nice, but not the same shape as the steak knives that I purchased from Oneida many years ago. The blade end is wider and not as graceful looking.

Norton 24336 Japanese-Style Combination Waterstone 4000/8000 Grit, 8-Inch by 3-Inch by 1-Inch

Norton 24336 Japanese-Style Combination Waterstone 4000/8000 Grit, 8-Inch by 3-Inch by 1-Inch
  • Waterstone to create abrasive slurry for effective sharpening with less pressure than an oilstone requires
  • Combination stone has 4000 grit on one face for maintaining and refining and 8000 grit on the opposite face for polishing steel cutting edges
  • 1 x 8 x 3 inch (H x W x D) size is suitable for use as a bench stone for knives and tools
  • Cleans up easily with water as lubricant instead of oil
  • Blue plastic hinged box with no-slip rubber feet can be used as holder for the stone during sharpening

I like these stones, though like all water stones, they are quite soft, and require frequent flattening. The problem I had was that after soaking in water for awhile, my combination stone separated at the adhesive that held the two different grit stones together. They still work as two separate stones, but they are now each quite thin, and I don't expect to get as much life out of them. I wish I'd just purchased two separate water stones. You might also want to check out the Shapton stones. They are expensive, but are much harder than Norton or Japanese water stones, and so don't groove so quickly.

Excellent, I use this stone to sharpen my straight razor. I bought the straight razor at an antique shop which is where you can find the better ones made out of German material. brought it home used the 4000 then the 8000 which really gets close to a mirror finish, then stropped before using it. Big difference before and after the stone touched the blade. I'll reccomend this to anyone, especially for those who have the straight razor. The width of this stone is perfect for the blade and you can easily put it away after your done.

I use the Japanese style stones to sharpen all my knives, as well as straight razors I shave with. They are a little different than the standard stones, but if you want a truely 'razor sharp' blade, this is the only way to get it. Many people say, "my knife will shave hairs." Yes, but can it do it without razor burn? My kitchen knife will shave hairs off my arm, but that doesnt mean Id be willing to shave my face with that blade.

These stones need to be soaked in water prior to use. Only about 20 minutes. More than that can cause problems, they are not meant to be STORED in water. Too much soaking can lead to the stone degrading or the glue splitting the two sides apart as other reviewers mentioned.

This stone is meant to hone more than sharpen. That means you should ALREADY have a sharp knife before you use this stone. If your knife is dull, sharpen it by whatever method you would usually use, I personally use another Japanese water stone Steelex D1067 800-Grit Japanese Waterstone.

The 8000 grit side of this stone will polish the side of a blade to a true mirror finish if you wish. The edge gets the same, but obviously its harder to see. This level of finish causes the blade to be significantly sharper than a 'regular' sharp knife, plus it stays sharp longer and cuts smoother as well.

The only drawback to this type of stone is that they are softer and wear faster than other types. Thankfully, it can be made flat again by using 600-1000 grit sandpaper and a flat surface to rub the stone on. So I find it more useful as I can ensure my stone is always flat that way. It is not nearly as easy to re-flatten a traditional whetstone.

The price for this stone seemed fairly typical of what I have seen at other sellers. I have Amazon Prime membership so when I figured in the free shipping, it made Amazon.com the best place to purchase by a long shot.

All the reviews are accurate, this is a good stone.

I just want to point out that, as some of the other reviews mentioned, the stone will not arrive perfectly flat. If you are going to use it on a straight razor, or other ultra sharp blades, this is critical. Uneven stones will mess up your cutting bevel.

Mine had to be re-flattened on both 4000 and 8000 sides, wasn't even close. You don't sacrifice much material but I feel something that is meant for sharpening should be ready to sharpen when you purchase it new.

So if your like me, and not an experienced razor sharpener, do your research on a flattening method.

I went ahead and purchased the Norton flattening stone after the fact. I should just bought the whole set it would have saved some cash.

So if your after a fine honing stone, the 4000/8000 works great but be sure to pick up a flattening stone and Prep (Nagura) Stone.

These are, literally, Norton engineered stones: therefore different from more conventional Japanese waterstones in look and feel. As a dedicated straight razor combo stone it does wear flat. The 8000 side does not require prolonged soaking nor a slur. This, combined with a 3" width, makes for a convenient razor stone. This combo is the only stone needed for razor maintenance. (The often recommended twice yearly honing of a razor is inadequate.) Shopping around may save you a few dollars.

Wet 320 wetordry sandpaper on a flat (counter) surface can be substituted for a flattening stone. This can be done at each sharpening, and does readily produce a slur.

I have been in culinary school for 6 months and have had this bag, with normal everyday use it is falling apart! I was terribly disappointed with how this bag is FALLING apart. I'm not rough on my things so I was very surprised, the stitching around the zippers are all coming undone and the pocket and window for your id is falling off... sad bag. Spend your hard earned money on another bag! I took the normally good quality that goes with the mercer brand and made my purchase... not the normal quality!!!

Spyderco Fine Benchstone with Box, 2 X 8 -Inch

Spyderco Fine Benchstone with Box, 2 X 8 -InchI have one of these for about one year and just bought another to give as a gift.

-Comes in a blue plastic case, with rubber feet.

-Feels like it will break if you drop it. Treat it like you would your glassware.

-Cleaning with a paper napkin provides quick good results (removes metal dust, makes sharpening faster and cleaner)

-Brushing with an eraser restores it to near new appearance.

-Does not show any wear after a year of continuous use

-Requires some skill to use. Very easy and fast once you get the hang of it and are just maintaining an edge.

-Not suitable for using on a dull knife, sharpen it on coarser stones before trying this one.

-Sharpening with water makes a mess. I only did it once. It's not practical and may stain the nice blue case and make your stone ugly so you have to hide it from the visits until you clean it.

-Slower than the diamond stones. I estimate I need about 20 passes on each side (alternating sides, beginning with more pressure and finishing barely touching the stone) to bring a sharp knife to very sharp condition.

-From my experience, does not need flattening or "breaking in" of any kind. A brand new stone produced a hair shaving edge the first time I used it granted I already knew how to use it because of my old stone.

Safety issues:

-Knives properly sharpened with this will be sharper than a regular box cutter. They will shave hair.

-DO NOT LEAVE AN OPEN BLADE IN THE DRAWER, put it in a knife block or use something like BladeSafe.

-Warn people not used to such sharp blades before they use the knife. I use the box cutter analogy. I had two people hurt themselves more than once even after I warned them about my knives and even after they had already hurt themselves once. One of them still loves my knifes, though.

-Be careful not to hurt yourself while sharpening. Read or watch a good tutorial on the internet.

These stones (I bought the set, Medium, Fine and Ultra Fine) are fantastic! If I could, I'd give them 4.5 stars, the half-point loss is because of flatness. I called Spyderco regarding the stone's flatness and they reported that the flatness tolerances were "not known" and that they had received reports from some users that this was a problem, particularly straight razor users. I don't use those, but I do sometimes need to true-up parts (gun parts, etc.) and this stone isn't quite fit for that.

For use on knives for sharpening absolutely fantastic! Spyderco says to use them dry, but I've found that I can use them with water and get excellent results; it helps keep the dross (steel cut from the blade) from clogging the pores of the stone and that keeps the stone cutting longer without needing cleaning. I've had them for probably 9 months now and have cleaned one of them once and they still cut wonderfully.

Another quality Spyderco product. Made from the same material found on the Sharpmaker rods, these stones allow more surface area for those the prefer to sharpen free hand.

Review is for the entire Spyderco set:

Spent a long time researching and pricing different sharpening stones, steels, ceramics, etc., the Spyderco set is the best value, and is very high quality. They won't cut as fast as the waterstones, but are a huge improvement over Arkansas stones. Unlike waterstones they won't consume you in maintenance in lapping. Many folks have reviews out there where they lapped these stones, but I disagree. They are flat enough for everything I've tried including straight razors, and lapping according to some is not beneficial for the stone. If you are pressed for the absolute flattest surface available, buy a Shapton and spend 3x as much. I am a knifemaker and I do the bulk of my sharpening with my belt grinder, however I still like to sharpen by hand, and it's nice not to have to run out to the shop to touch up my kitchen knives, pocket knife, etc. Only complaint isn't much of a complaint but the limits of the medium stone. The medium is the coarsest but is still fairly fine and is too slow at repairing a truly blunt edge. This is where I turn to the belt grinder to re-establish the bevel, however when I'm traveling or don't feel like going to the shop, a coarse DMT is a must. Use the coarse diamond to regrind the flats on the bevel, then jump to the blue medium stone to smooth out your work and progress through the UF. I finish my edges on a homemade leather bench strop with a light touch of chromium oxide. This might be overkill for most considering you will get hair shaving (arm hair w/ pressure) with the fine stone.

Bottom line is you won't find a comparable range of sharpening grits in any other form for less $$$. That excludes the sandpaper system which is the cheapest but I'd rather sharpen on a stone than paper on glass, even if my stone is synthetic.
