Wusthof 14-Slot In-Drawer Knife Organizer Tray, Oak

Wusthof 14-Slot In-Drawer Knife Organizer Tray, OakThe product is exactly as pictured. It fits all my largest knives, including several types of chef knives. The raised slots are plenty wide to accomodate wider handles from an assortment of knives from various brands. Some of the other knife blocks brands have narrower slots for the raised section, but this one has plenty of room for all of my knives, including my Chicago Cutlery knives. The knife block fits well in my drawer when full. The block seems to be plenty longer than my longest knives.

Although it states it is an 11 slot knife tray, in reality it holds 14 knifes plus a sharpening steel.

My first impression from the picture was positive. A closer look when I received the item showed that on the bigger knife section, the edge of the knife is sitting on metal rods that are covered in rubber. In the one that I received the rubber did not completely covered some of the metal rods which left the blades of some of the bigger knifes exposed to the metal rods. I will still be concerned if the metal rods were completely covered with the rubber since with some use the rubber will wear out and the edge of the knife will be in contact with the metal rods which will deteriorate the edge of the knife.

I will have to look for another tray to store my knifes.

This is a nice knife holder, but Amazon is describing this as a ll slot knife holder, with smaller dimensions. I ordered 2 based on Amazons dimentions. What I received was a knife drawer, that holds 14 knives. It requires a 17" drawer depth, 9" wide and 3" high. The 2 knife holders, will not fit in the drawer as planned. This doesn't detract from the quality of the knife holder. But, please note the dimensions, what Amazon is describing is not this design model. The 29.99 is a great price for this item. I had ordered the version that Amazon is describing last year from an Amazon seller, and paid more for it with the shipping, than Amazon is currently selling this one for.

Ordered with Wusthof knives for my wife. The discription says "Oak", but the selection choice for ordering is either "Beechwood" or "Walnut" (higer priced) and the attached picture appears it is made of Beechwood. This unit is made in China and not sure what the species of wood is, but it is laminated with a lot (8) of knot defects in the wood. The indiivdual blocks that make up this organizer were out of alignment/crooked so that one of the large knife slots is unusable. Only 1 of the large knive slots was aligened with the end block. Wustohf knives are of excelent quality and I don't know why they would allow such an inferior product to have their name on it.

Although my Wusthof set of knives came with a knife-block, I wanted the ability to keep this fine set of cutlery in a drawer instead of on the counter top taking up my space. This tray fits the purpose to a "T". It easily holds my entire 11 piece set of knives plus the sharpening tool. The only piece it won't hold are the poltry scissors, which I just place in a tray next to it. It is not a big deal to me that the scissors won't fit. I was a little afraid that children could get ahold of the knives if left in the block. Being concealed in a drawer is "Out of sight, out of mind". The tray fit in a basic drawer and the knife blades are protected and secure. It was well worth getting. And yes, I would buy it again.

Alpha Stainless Steel Metal Handle 8 1/2 "Cleaver

Alpha Stainless Steel Metal Handle 8 1/2 'CleaverBig, heavy. I like it! Great price too. Gets right through the bone. Don't know why anyone would pay more for a cleaver.

This is a big knife. It is heavy and very sharp. I did not think it was this large from the picture. It took some getting use to it from my last cleaver, which I thought was big and heavy. This Alpha tops that last cleaver in the big and heavy category. I am not as fast with the Alpha on veggies, maybe with more practice. I have cut a whole chicken into pieces w/ bone-in and it worked fine. I would get the butcher to cut my ox tail. I don't cook with oxtail very often. If you want a sharp functional cleaver, this is good choice. It will scare those paring knife only people. Keep it away from the kids. I'm sure the Global or MAC is better, but why bother w/ the $$$.

Buy Alpha Stainless Steel Metal Handle 8 1/2 "Cleaver Now

This cleaver is fantastic. I bought it back in June and haven't sharpened it yet... it's still sharp enough to be painless on contact if one accidentally gets a body part in the way.

I use it to (primarily) cut up the whole chickens I buy from the Surprise Creek (Hutterite) Colony. I buy about 24 + chickens at a time and cut up approximately half that amount. I also use it to cut up whole turkeys (also purchased from the Colony) to debone them to make turkey burger.

This cleaver goes through the meat and the bone like a hot knife through butter.

Yeah, for some of the thicker bones I might have to whack a few times, or bang on the top of the cleaver with the heel of my palm to "help" it get through, but for the most part, it gets the job done in one swing.

I've also used it to cut up frozen beef, elk, and deer roasts, etc... Again, like buttah. Sliced through baby back pork ribs -no problem. :-)

I have not tried to cut up ox tail (as yet).

I think this is a fantastic cleaver for a really good buy (price is great). I'd take a pic of it to show how large it is compared to another recognizable item, but it's in the dishwasher being washed at the moment.

Yep. That's right. This sucker goes in the dishwasher, and the only thing I have to watch for is that it doesn't cut through the tines on the rack when I put it in (if I put it in upright instead of lying down).

I. LOVE. that it goes into the dishwasher. All stainless steel, handle included... bought it for this reason in addition to the chopping up stuff thing. I have a household of 6. The less stuff I need to wash by hand, the better.

The only mark down I can think of (and why the subtraction of 1 star) is that it doesn't come with some kind of slip cover or case for safe storage. I keep it propped upright next to my cutting blocks, but since it's *such* a sharp knife, I would rather it have something I can slip over the blade to keep myself and others from accidentally nicking oneself. I might move it to my magnetic knife strip. We'll see. I'll try to remember to take a pic and post it after the dishwasher is done.

To summarize: This is a good buy cleaver. It does what a cleaver is supposed to do, is dishwasher safe, and inexpensive. Recommend. :-)

ETA: I thought I'd uploaded the pics, didn't realize I hadn't. They're up now. :-)

Based on the two prior reviews I had hopes this was a decent item with good steel and no wooden handle that other cleaver reviews mentioned tended to be cheaply attached. Looked good when I got it--but upon first use (chopping oxtail into smaller pieces) the edge was pretty much a burred jagged mess. Since I don't believe an item like this should require getting out a grinder ever time it is used, I have to give this the lowest rating (I am hopeful it can be returned.)

Tablecraft Plastic Base 24" Magnetic Bar Knife Holder

Tablecraft Plastic Base 24' Magnetic Bar Knife HolderAnd you too will get what you pay for with this one. The holder is a notch above dollar store quality. Like many here, I spied this for its length of 24" and its price. The trade off is barely any performance or functionality. Its plastic housing flexes -be extra careful on your installation or you could end up with a bowed (less than straight) knife holder on your wall. It's not beautiful as someone suggested -it will add as much charm to your kitchen as your ice trays do. It does not contain very powerful magnets. A knife holder should basically "grab" a knife from you when you're busy prepping and cooking. This one doesn't. You'll have to carefully place your larger knives on it, lest you care to lose some of your toes!!! All these glowing reviews lead me to believe most of the reviewers probably have never had a magnetic knife holder in their kitchen. I had one in the kitchen where I used to rent and found it extremely handy and novel on first use, but that holder was a far better performer with more functionality than this one. If you really can't afford a more expensive holder, this one will do -just know you are getting what you payed for.

I don't think I've been happier with a small kitchen item. All my knives are off the counter and out of the drawers, creating space for prep work. I had forgotton about these somehow, after years of working in restaurants, but oh how handy they are.

I am in a rather small apartment and needed to clear up some of my limited counter space. I have used a knife block for years and wanted/needed something smaller. This knife rack is perfect. All of the metal kitchen items that I use frequently fit onto this magnet rack including knives, a zester, scissors, and a small wisk. Although it comes with hooks that extend below the rack, I find that they are not useful and are covered by the items on the magnetic strip.

It was super easy to install with the help of a level. I wish I would have bought this 3 years ago when I moved into this apartment.

Although it doesn't slam the knife against the rack with the force of the magnets, this rack will securely hold my largest knives. I picked this rack because reviews were astounding and the price per inch of knife rack was the second cheapest. I don't know what the review about flimsiness was talking about, as the rack is very rigid and, although it is plastic, looks good on the wall. After using it for about a month, I have no complaints. Will post again if I find any problems.

I bought this one because it is one of the longer ones. I think that it is perfect. It was easy to install. It also came with 6 little hooks that hang from the bottom which was a nice bonus. It was a bit heavier than expected, so I did have to use drywall anchors. I don't know what that review was talking about regarding the "bowing" because with its weight and rigidity I can't imagine how that would happen. And the magnets are plenty strong. Although they are exposed in the front, I think a thin strip of metal encasing it would be more attractive. But with all the knives on it, it still looks good. A little creepy with all the knives on the wall like that, but still attractive. And my counter is finally clear!

J.A. Henckels International Classic Forged Stainless Steel Steak Knives, Set of 4

J.A. Henckels International Classic Forged Stainless Steel Steak Knives, Set of 4You expect the Henckels name to presume quality craftsmanship, personal choices for everyone, and ultimately some of the most useful and reliable knives that you will ever own. I've only been using my new set for about a month and a half, but what I presumed has been almost entirely true. This set is great, and I certainly would recommend it to anyone so long as they understand the following two negatives that I've found while using them.

(1) The handles are smaller than what one might expect. My wife and I looked at these in the store and agreed that the size was acceptable to us, but I'm sure, and have seen other reviews, that some people will not like the slenderness and lightweight design.

(2) These knives survive best when not used in dishwashers, and Henckels even states that they should not be dishwashed. So I always clean, rinse, and dry one knife at a time whenever I use them. Thus they are a bit higher maintenance than that 29.99 16-piece set that you can get at Walmart.

A great set of knives but they require more caring owners.

I love Henckel knives, and I expect a lot out of them.

I paid 80$ for this set and I was dissapointed. The blade is a little thin. The handle is a bit small. The finish on the blade was a little rough.

These knives are manufactured in Spain, not in Germany and it shows. For 80$ you can find better knives than these.

I have an old set of these forged knives purchased many years ago. Henckels' Int'l line means they are not made in Germany. The steak knives I have are forged and made in Holland???? You can't even find them at Ebay, lol. The current knives are made in Spain. I don't know what type of steel they used, definitely not SG2 or VG10. But once they lose their edge, very difficult to sharpen. Using a Norton triple stone oil bath sharpening system will restore their edge with a bit of elbow grease.

Wonderful steak knives if you have small hands. Their Pro S triple rivet style, full tang handles are a bit on the wimpy side. But, IMO, great bang for the buck.

Before purchasing, head to a store like Sur La Table, Williams-Sonoma et al and determine their heft and balance, then decide.

You could always buy Wüsthof or Henckels steak knives.....real deal Made in Germany for twice the price, set of four.

Messermeister San Moritz Elite 5-Inch Rocking Knife

Messermeister San Moritz Elite 5-Inch Rocking KnifeI only use a few select kitchen knives and needed a smaller one for everyday use. I chose this knife simply because it was well-rated and a good value. While it's marketed as an herb-knife, it has a wider range of uses. It is very sharp and good weight. I am very happy with it so far. Only comment minor is aesthetic : the silver rivet on the bottom/butt of the knife (shown in the picture) is only on ONE side of the knife. I find that to be quite odd and silly looking. I noticed since I hang my knives and now I can only hang this knife facing left. Still think it's a good knife and a great value.

Solid, well built knife.

SHarp out of box, it can cut alot more than just herbs, great all round short knife.

I just purchased the Elite 5" San Moritz Elite Knife to add to my Messermeister set. This is a type of 'rocker' knife used for preparing veggies and fruits. You must use such a knife on an appropriate cutting surface.

I used to use Henkels but I have found the finer ergonomic design and higher metal quality of Messermeister to be more satisfactory. The Henkels has lost quality as it cuts quality chasing the mass market. Messermiester really pays attention to details and using them tells the difference. The Elite design is more contemporary and looks better to my eye than the usual two rivet design. There is an excellent selection of most all popular types of knives and accessories available. Amazon sells only some of them. The prices Amazon charges for the knives they do carry are about the lowest available. I received them very quickly. The Messermeisters stay sharp longer, do not stain and are very easy to clean. The factory printing does not wear off which keeps the cutlery looking fresh. Highly recommended.

J.A. Henckels Twin Four Star 10-Inch Honing Steel

J.A. Henckels Twin Four Star 10-Inch Honing SteelI cook for a livin' and I have many honing steels, some at 14" for my big knives and this one for my 8" and under knives. I got this one in an upscale set of 4 starz and I do love it. As previously reviewed, it's not for sharpening but used to maintain a sharp edge. If you use this PROPERLY every time you use a new knife then the factory edge will last for months if not years under normal usage.

If you are collecting the 4 star line then this is a must, it is one of the most attractive steels made, the Rockwell rating is harder than any factory production blade made, the grooving is crisp and it is a bargain compared to other brands. A must replacement for a lesser steel in most 4 star sets.

It would be worth your time and money to buy the knife care video and learn how to use this well...an investment for your future enjoyment of Henckels 4 star knives.

We hand out 5 mojo*z for this steel Magnolia!!!

As other reviewers have mentioned, this does not actually sharpen your knives in the sense that it won't put an angle on your blade that isn't already there. However, what this is great for is keeping your set of kitchen knives in good (and safe) condition.

Note to novices: make sure to ask a pro or an experienced cook how to use a steel. If you hold the knife at the wrong angle, you may actually be reversing the effect the steel is supposed to have realigning the blade to its sharpest position.

Note 2: a lot of blades these days are made with the higher-end cobalt alloy steel that is significantly harder than regular stainless. All this really means is that if you have a good knife, you technically won't have to use this every time you slice and dice, but it's still a good idea to keep the knife in the best condition possible.

Most of us know the importance of sharp knives for proper food preparation and gracious serving. Of course, I had to learn the hard way by mashing a tomato instead of chopping it, by "sawing" a roast rather than slicing it, and by cutting and pulling off a plump roast turkey leg rather than carving it. Those are just a few of the reasons I'm such a fan of my Henckels Sharpening Steel. After trying both a stone and steel, the steel is my favorite for ease of use and appearance. This steel is not only utilitarian but handsome with a ribbed handle that's easy to hold and silvertone handle guard and hanging ring. First off, a good way to test whether or not your knives are sharp is to hold a piece of paper by the top corner and then attempt to "slice" it. If knives won't do this head for the steel! You'll be amazed sometimes it takes only a few strokes on the steel to make your knife sharp, sharper, then sharpest. Remember to place the metal end of the steel on a sturdy surface, such as a butcher block table or cutting board then position the base of the blade on the steel and begin. This Henckels sharpening steel is certainly a cut above any other. Gail Cooke

If you bought good knives, like the Henckels Four Star series, keep them good by regularly honing the edge with a Henckels steel. A few swipes against my chef's knife keeps the edge keen and ready to cut. I struggled for years with cheap knives only to find that a good sharp knife is a blessing to a cook. So keep it sharp with a good steel.

Mundial Solid Wood Cutting Board, Small

Mundial Solid Wood Cutting Board, SmallI distinguish between cutting boards, for preparing foods in the kitchen, and carving boards, for carving meat at the table.

As a cutting board, this board would be good only for very small tasks like perhaps slicing a single onion. As a carving board, though, this is a good size for small roasts up to about two pounds perhaps half a beef tenderloin or pork loin, or a whole pork tenderloin. It's possible to fit a standing rib roast or part of a beef sirloin roast on it, but a bigger board would be better for those tasks.

The groove around the edge is nicely deep, but narrow. The small reservoir at the end will fill up quickly if your roast is at all juicy. Be prepared to dip it out after carving each serving, perhaps back on to the meat. If your surface is slanted, you'll want to put the reservoir at the low end to avoid overflow of the groove.

The quality of this board is good. It's thicker than most wood boards, and nicely finished on the top. If you need a carving board for small roasts, I'd recommend it.

Purchased this cutting board about 4 months ago but wanted to wait a bit before writing my review.

The great news is the board is easy to keep clean by hand and has not faded despite a few runs through the dishwasher. The feet are sturdy and I predict this cutting board will last a long time!

F. Dick 12" Chef's Knife Professional Grade - Forged Steel

F. Dick 12' Chef's Knife Professional Grade - Forged SteelI have owned one of these knives (as well as many other F. Dick knives) for well over 35 years. I used it in my restaurant and continue to use it at home since my retirement.

F. Dick knives used to be available only to professionals; now they are available to all. I prefer it to other brands (Henckels, Sabatier, Wusthof, etc.) because of its balance and blade shape (slightly less rounded than the others) which works better for my cutting style. If I lost it, I would replace it with the same knife.

A word to the wise: As this knife has a laminated wood handle, wipe it down and dry it IMMEDIATELY after you are done using it. Never allow the handle to remain wet; it will de-laminate if you aren't careful. If you follow that simple rule and keep it sharp, you, too will have it for 35 years.

Twin Profection 6' Prep KnifeWe purchased a whole set of the new Profection knives and have been very pleased with them. They feel very good in the hand and keep their edge really well. Cold Steel 92FTP FGX Tai Pan, Kraton Handle, Plain

Cold Steel 92FTP FGX Tai Pan, Kraton Handle, Plainok, i own several of the nightshade series with the tai pan included.reading many of the reviews on amazon really drive me insane when people complain about the lack of "cutting" ability.what are u trying to cut and more importantly why? these are plastic one time use self defense weapons, nothing more.why u would ever expect it to cut paper or anything else is beyond me.for what they are, they are excellent.light weight, pointy, tough, weather resistant and would cause serious damage in the hands of a determined user.thx for listening. :)

This is from cold steel I think this says more than I ever could about how good these are and exactly what you can expect from them. Cold Steel is the best!

Buy Cold Steel 92FTP FGX Tai Pan, Kraton Handle, Plain Now

I ordered two products from the "Nightshade series" (Tanto & Tai Pan) and was very diappointed. I tried to use it to cut paper. The edge was so dull that it tore the paper rather than cutting it. I realize it is plastic and will never match up to steel, but I did expect it to be a knife and actually have a cutting edge. When I called Cold Steel to complain the CSR I spoke to was no help. I explained that it couldn't cut paper and she said it wasn't meant to. I said when I buy a knife (even a plastic one) I expect it to cut things. She resonded that that it was not possible to get plastic sharp enough to cut things. I immediately took exception. From that point on she referred to the products as "not knives" but instead as "Personal Defense Items." I am dissapointed that no where in their literature is there a disclaimor that says "these are Personal Defense Items."

These products have no edge and very little durability. (I could break either with my bare hands without fear of injury). You would get better cutting results form a standard disposable plastic knife, like the kind used at picnics no exaggeration!

Cold Steel says they back only tested, quality products. My experience with this product line puts that claim in serious doubt.

The Ultimate Edge 18 piece Knife Case with Full Accessory Compartment

The Ultimate Edge 18 piece Knife Case with Full Accessory CompartmentAs a culinary student, I was required to purchase a knife case with triple zip compartments. I had two choices: Ultimate Edge or Mercer. From my understanding, Mercer supplies the majority of culinary schools with knives and tools. Since my school carries the Mercer brand, I was able to check it out in person before deciding which bag to purchase.

Although the Ultimate Edge case is a bit more expensive, I am glad I picked this bag over Mercer for several reasons:

Ultimate Edge's case feels more durable and holds its shape, whereas Mercer felt and looked floppy.

The interior of the Ult.Edge case is black and the slots holds knives firmly in place. In the Mercer bag, the interior is red, made of nylon, the pockets don't hold knives as firmly, and overall looked cheap.

The third zip compartment of the Ult.Edge bag has 3 mesh zipper pockets to hold additional tools in place. Mercer has its accessories compartment too, but I was too distracted by the tacky red interior to really take notice.

Although both bags are the same size, Ult.Edge's bag looks more sleek in my opinion. Mercer has 2 snap locks on the front to secure the bag, but Ult. Edge has a velcro padding to enclose the top handles.

If you're looking for a well designed, high quality knife case, then I highly recommend Ultimate Edge. I think for the price and the overall quality and functionality, this is the best one available.

I've been in the restaurant industry for over 13 years and have had a knife bag or two. This bag is by far the best one that I have ever seen! It holds all the knives and other tools that you could ever imagine putting in a knife bag. What I love about this bag is that it opens like a book, therefore being more compact and taking up less space on the prep table or on the line. Also, I love that this bag zips up, keeping all your stuff securely in the bag. Overall, I would honestly recommend this knife bag to anyone who has to bring a large number of knives and equiptment to work. Worth the money for sure!

Buy The Ultimate Edge 18 piece Knife Case with Full Accessory Compartment Now

This is a great knife bag. I made my purchase predominantly because this was one of the knife bags I looked at that had multiple reviews, so I felt like I knew what I was getting. And when it arrived I was not disappointed.

To me, what makes this bag exceptional vs. other bags is that it so brilliantly organizes all of your tools, gadgets, knives. With three fully zippered sections, this bag really does open like a book. And compared to my past knife bags, it's nice to be able to fully close it, as compared to the roll style that does not. The two sections for your knives for me, as I am a Pastry Chef, were more then adequate. But the 2 sections combined have room for at least 18 knives. One thing to keep in mind is that one side of each "page" of the knife compartment is intended for larger knives with larger handles and has 4 slots, the opposite "page" has 5 slots for smaller knives. So that's a total of 4 pages to put knives and other long handled tools; tweezers, offset spatulas, tongs, etc. The two knife compartments each have a protective layer in between with velcro attachments so your knives/tools won't rub together.

The third section is for smaller tools. Both sides are lined with mesh. It opens up and on one side you have a fully zippered subsection for the larger of your smaller tools; microplanes, candy thermometers, bench scrapers etc. The other side has two fully zippered smaller sections that each run the length of the bag. Small offsets, peelers, paring knives, sharpies, whatever you need, you have plenty of room. The only thing I would change here if I could, was to have used a clear mesh material instead of black. It's a minor critique I realize, but it would have made it a little easier to see everything. Organization is really important in kitchens, and with this bag you will be feeling great that all of your prized tools are neatly stashed away.

Overall this is a great buy for the price. The material is heavy duty, and any professional chef knows the importance of this. It's a good size too, large enough for all of your essentials and much more, but not so bulky that you can't bring it on the line. The zippers are very durable as well, and the shoulder strap and handle are well made too.

Great work Ultimate Edge People!

This case far succeeded my expectations! The case is very durable and offers many slots for all you knives!!

The only negative I have is if you put a knife with a big handle in the selected slot, it will stretch it out to the point where you cannot fit a knife with a smaller handle (e.g. Chef knife to paring knife) but it doesn't really make a difference that would change my mind on the case! You just have to designate certain slots for bigger knives, its really NO BIGGIE!! Good work Ultimate Edge, only if you made a case for my Sniper rifle, then we would be set!! haha!

The case comes with three zippered compartments, two compartments with slots/sleaves for knives, etc; and one compartment that contains meshed zipper compartments for smaller cutlery items such as garnishing tools. I like the fact that you can get alot of cutlery into this bag without having to unfold or open all of the compartments. The bag is made of a thicker nylon type material than the knife roll that came with her Wurstof knive set and seems like it will hold up very well.

I will update with my wife's comments once she receives it.

Wusthof Classic 2 Piece Santoku Asian Chef's Knife Set

Wusthof Classic 2 Piece Santoku Asian Chef's Knife SetGave this as a gift for my aunt this Christmas and she loved it. Wusthof is a solid brand and this is a great set. This set is great for any cook, not just those who make a lot of sushi or other asian cooking. The 5 inch knife is a great size knife for cooks who dislike giant chef's knives and the smaller knife is perfect for more delicate knife work. The knives are hallow edged, that simply means that the curves above the edge of the blade cause food to fall away rather than stick to the knife. Plus, the bamboo presentation box looks great as is or with a simple bow for gift giving!

i love my knives, i polish them when i can and i know their gonna last me a long time. its a great buy. its strange that their so light and small, but it does the job. they prob wouldnt be knives for any heavy cutting but for beggies and simple meat dishes its great!

Ergo Chef Universal Edge Guard (Narrow 10.5", Orange)

Ergo Chef Universal Edge GuardGreat knife edge guard, like all the other Ergo guards I have purchased this one does the job for long skinny knives.

This edge guard is good for thin blade like 1.5mm thick, but if you use this on 3.5mm thick blade it is very thight and hard to take it out. I gave three stars because it is too hard to put in and take it out for my 3.5mm thick knife, but everything ok.

Mundial 5100 Series 7-Inch Santoku Knife, Black

Mundial 5100 Series 7-Inch Santoku Knife, BlackI'm not a professional but this knife seems like a well constructed, heavy duty knife. It is extremely sharp out of the boxonly time will tell if it lives up to expectations. Thus far, it compares favorably to my Henckels 8" chef's knife. The Mundial 5100 7" Santoku is actually heavier though the handle is slightly smaller.

After picking up the 10 inch Mundial 5100 French-style chef's knife I was impressed enough with its quality to go with them again for a good utility knife for "in betweener" jobs.

Being 6"1' anything under 10" is too small as an all around chef's knife and I've found this santoku is a perfect halfway between a paring and chef's knife--the ever needed utility knife. If you prefer the smaller blades (8" chef's knife) this might not replace a sturdier French-style chef's knife but it's well worth the investment for the finer things.

I'm generally a minimalist as far as the knives I use but this was definitely worth the extra slot on my magnet.

As far as overall Mundial 5100 series quality, as I said in my French knife review, it stands pretty well with the knives that cost 3x as much. The little bit of sharpness you sacrifice is more than made up for by increase in sturdiness.

Wusthof Grand Prix II 5-Inch Boning Knife

Wusthof Grand Prix II 5-Inch Boning KnifeThis was purchased as I continue to build a better quality knife set. This knife does not disappoint. I love the ergos of the handle, and the weight seems really nice. And it is plenty sharp, I have used it for splitting chicken breasts and pork chops for stuffing and it works great. Love it!

Outstanding balance and feel to this knife. I use it to find and separate the joints of the legs and wings when carving Turkey and chickens. It does a great job and is indicative of the quality of Wusthof knives. Highly recommended.

I am very happy with the quality of this knife. I just started culinary school and this brand was recommended by several of the chefs for those that could afford them. I am glad that I made this investment in a tool that I use often.

This boning knife is of good qualifty, but I thought it would be more flexible than it is. The blade is rather stiff just like any other knife blade.

MIU Flexible Cutting Board, Set of 5

MIU Flexible Cutting Board, Set of 5These flexible cutting boards do exactly what I purchased them to do.

1. eliminate cross contamination by making it easier to keep the meat off the vegetable board.

2. keep me from scarring my counter or wooden board.

3. make it easy to transfer cut food directly into the pan without getting my dough blade dirty (I used to use this to move chopped items from the cutting board into the pan or bowl).

These boards are reasonably thin, which is why they are flexible. I have had two sets for approximately 5 months and will be replacing them soon because they are starting to show significant scarring which I am concerned is accumulating dirt. For those that aren't as obsessive compulsive the boards would probably last twice as long. My wear patterns are from extreme use. I cook everyday and usually for all meals for my family. Since we began concentrating on eating more fruits and vegetables, these boards have gotten a serious workout and have held up better than the other flexible boards that I have tried.

I use these so often that they never make it into the dishwasher. They are easy to wash by hand, and I like to soak them in a weak bleach solution (10%) every day just to be certain they are clean. I wasn't certain these would hold up to the daily bleaching, but they have.

My only complaint is that these slide around a little on the counter. I have found that if you place them on top of a wooden cutting board they do not move around so much. It also works if you place a silicone pastry mat (Silpat) or a couple of silicone potholders under the mat.

I highly recommend these to anyone that is concerned with cross contamination.

I thought these would be much more flexible than they are. We do use them regularly, but they are not nearly so pliable as just picking up and easily curling them to create a funnel for your food. They have a tendancy to snap back, and I wouldn't dare store them rubber-banded up as they would never go flat again. Indeed, our biggest complaint with these is that they just require too much effort to bend one way or another be it rolled up for moving items to the pan or flat on the counter for chopping.

And don't even think about putting them in the dishwasher, even on the gentle cycle, regardless of what the description says! They get even more brittle in the dishwasher and lose what little flexibility they have.

At the end of the day, I wouldn't buy them again.

Though these claim to be dishwasher safe, i can say that they are not. After one trip to the dishwasher these have curled so badly that they have become useless. To use these right now i have to put weights in all four corners of the board, and if i try to pick them up, they snap to curl shape so fast whatever rememnants are on the board fly into the air. Avoid these.

For the price these cannot be beat. I use these types of "cutting boards" to protect my nice wooden cutting board from bacteria when preparing meats. I have used several brands and they are all pretty similar, none of them last a long time. I wouldn't honestly recomend them for use on a countertop without something else underneath them.

All of this type of cutting board will curl with use, even more if you put them in the dishwasher. Some more than others though. If you buy the $10 version you might get better results, but when you consider you get 3 of these for $5, its hardly worth buying the more expensive version. Especially when you consider that even the best ones are only going to last a short while with regular use.

I really like the color coding on these mats. They also store easily (do not roll them, just tuck them behind an appliance such as your toaster) and clean up easily. They will definately protect your countertops from nicks and scratches. I often take mine out to cut a bagel or a piece of fruit, then lift it to prevent crumbs or food particles from falling on the countertop/floors and easily rinse them off in the sink. If you cannot afford a good set of wood cutting boards this set will definately do the job. I do not use these too often for meats since I prefer wooden grooved cutting boards, but they will work for that (although juices may run onto your countertops) but these are used multiple times a day in my household for at least the last 6-9 months and are just now needing to be replaced due to a couple of cuts through the mat. They will get a bit stiffer/brittle when washed in the dishwasher so I would not recommend it, but it can be done. What a fantastic invention!

Better Houseware 2404/12 Bamboo Magnetic Bar

Better Houseware 2404/12 Bamboo Magnetic BarI have been looking for a good way to store knives. I don't like blocks because they are impossible to clean. Stuffing good knives in to a drawer to have their edges knocked about makes my skin crawl. Other magnetic strip holders are metal and can also damage the edge.

The Bamboo Magnetic Bar works very well. It holds my knives and allows easy access. The strength of the magnets is a good balance between holding the knives and having to pry them off with a crow bar. The bamboo surface keeps my knives edges safe from nicks.

My only complaint is the way the magnets are placed in the bamboo block. There are some dead spots on the board. Annoying at first but I am used to it now. These dead spots suck the knife into a position that may not be optimal, with a little rearranging its works fine.

If the magnets were consistent across the board I would give it fiver starts.

This is a beutiful product. However, beuty is only skin deep. The knifes will not stay straight on the bar. They turn into each other. Also the heavier knifes slide down so you have to put them on with the blade point down so the handles will prevent them from falling completely off. This is not a natural inclination and I sometimes have to turn them around. I would not buy this product again.

Very sharp looking. Pun absolutely intended.

Only problem and this may be typical of these magnetic knife bars; i'm not sure is that the bamboo has five distinct magnetic points, and it is difficult to space the knives out properly; they all tend to bunch around the five spots.

Don't know if that makes any sense, but to put it another way, I only use it for five knives (one for each magnetic spot), even though it could easily accommodate more, in order to appease my obsessive compulsive sensibilities.

I was looking for a way to get my "most used" knives out of the drawer and readily accessible. But I also wanted to protect the edges, and to have them safely secured. I considered a block, but wasn't wild about losing counter space. I looked at other magnetic holders, but I was concerned about the chance of damage to the blade edges from striking the metal surface of most holders. When I saw this holder, I knew I had my answer. The bamboo not only looks attractive, it does a good job of preventing accidental damage to the blades. I had some concern that the covering would space the blade too far from the magnet to get good holding power, but that has not been a problem. I wish the price was a bit lower, but I still think this is a superior solution.

UPDATE:

It is six months later, and I just ordered a second one of these for my kitchen. I have been very pleased with the one I have, but the recent addition of a cleaver and a second chef's knife has exceeded the capacity of my existing bar, so a second one was needed.

I'd like to respond briefly to those who are bothered by the magnetic cogging which causes knives to have a preferred location on the bar. I have my bar mounted at an angle on the side of a cabinet. In this configuration it works very well, And I have no problem using the full capacity of the bar. Currently my bar is holding an 8" chef's knife, a 12" granton slicer, a 10" all purpose blade, a tomato knife, a boning knife, and a paring knife. In the angled position this is the full capacity of the block, and the full width of the side of the cabinet. I will be adding the second bar above this one, doubling the capacity of that space. Clearly I find the cogging to be a minor nit, and remain satisfied after 6 months of daily use. As always, your mileage may vary.

It looks cool. My knives look cool on it.

A couple problems though. It wont sit flush on my wall. No matter how much I try to play around with the hardware it still rocks when removing a knife.

Also there are only 5 magnets. So you cannot put any more pieces on it than that.

But its a pretty good price, and the magnets are strong enough, even for a pair of heavy shears. It works well in my studio so I dont have to take up valuable counter space with a knife block.
