As a chef for the Hyatt I tend to use a lot of knives and I spend a lot of time holding this one in particular. This knife does it all for me. Large amounts of prep, carving work on large as well as small delicate pieces of meat and fish and everything else in between. This knife along with its eight inch twin keep my kitchen work going smoothly. Easy to sharpen and they don't dull fast either! I only sharpen my knife once every month and a half other than that I run it across my honing steel each day I use it and I'm ready to go!
