Helen Chen's Asian Kitchen 7.5-Inch Stainless Steel Chef Knife

I am an avid cook at home, and I also own a restaurant. Needless to say, a knife is in my hand a good part of the day. This is possibly the best cleaver I have owned. It is beautifully balanced, light, incredibly sharp and stays sharp. I bought 2 so that I wouldn't have to be carrying it back and forth to work. I will be buying more as presents, and maybe another for myself so I can have it with me when I visit friends and end up cooking at their house.
