We researched a lot about chef's knives, especially Japanese knives. We have a Shun Elite and a number of kansui ink pattern knives,which are beautiful. But this knife is awesome. Sharp out of the box, it easily passes the paper test. Rockwell 62 and just gorgeous, it cuts beautifully. F and F are nice. Only complaint is it feels a little less balanced than the Shun.
