This slicing knife is a great addition to your set. I recently used it to carve up some beef roasts and I was able to carve paper-thin slices. I didn't experience too much sticking either, this may be due to the Damascus-style pattern that creates micro air-pockets. Therefore, I think this version without the scallops will do just fine.
The knife has a good length that's great for most roasts, a tip that makes it easy to maneuver and a sturdy construction that feels balanced and comfortable. The handle is sturdy and has a slight matte finish that keeps it from being too slippery.
On another note, I have seen this knife advertised on Amazon for about $60 (which is the price I bought it for). It was first listed at $110, then went down to $60, and now as of writing this review it is back up to $110. I am not sure if it's a supplier issue, but you should constantly monitor the prices of the Shuns sold on Amazon due to these fluctuations. In any event, I still think this knife is worth $110 and I believe you will like this knife as much as I have.Perhaps not as good looking as the paka wood classic version, this knife is nevertheless a superb slicer -just what you'd expect from the first rate Shun knife manufacturers.

I own other "Shun's"as always a world class knife-while more expensive than someyou can't find a better knifeI bought this knife for slicing meat into thin slices. Turns out, it works great for sashimi as well. This knife is sharp and cuts through raw or cooked meat effortlessly. It was the best $62 I ever spent. If you are cutting meat with bones in it, get the boning knife. This knife is great for boneless meat and raw fish.This knife was better than I imagined. It's one of the sharpist knives I have ever used. I will order more at a later date.
