I didn't need a full set of knives and only wanted a 8 to 10 inch chef's knife so buying a set seemed a waste, yet purchasing even 1 chef's knife from a big name brand would run me $80-100 with shipping. Mine cost under $25 and is sharp as a razor. I am thrilled with it and glad I saved so much. Would definitely recommend this knofe and thing I will buy a few more sizes in the future.

When I made the decision to upgrade my kitchen knives I had a difficult time settling on my large chef's knife or cook's knife as Dexter Russell calls this. I read as much as I could about kitchen knives at discussion forums like Chowhound and after reading the original review here and the handful of reviews of some of the similar models I rolled the dice on this.

I really like the light weight of this knife and having used a smaller 7" chef's knife for many years appreciate the nimbleness. The white handle provides a natural grip that gives you solid control over the knife. This cook's knife just has a substantial feel to it while not feeling heavy.

Update: The knife stained after cutting my first onion with it. Have since learned that carbon steel knives naturally stain to prevent rust. The product description describes this knife as stain-free and I ended up returning it. I stand by my comments as far as the handling of the knife but the staining may come as a surprise to some people who buy this.
