Messermeister Meridian Elite 8-Inch Kullenschliff Flexible Fillet Knife

I purchased this knife about a year ago to clean fish. I can't stand a dull knife, and I have yet to find a knife at a Wal-Mart or similar store that will stay sharp for long or sharpen easily.

This knife is exceptionally sharp, keeps an edge well, and is relatively easy to sharpen. I didn't realize most of my fishing holes were going to go dry when I ordered this knife, but I'm glad I did. I tried to catch and clean most of the fish out of my ponds before they went to waste, and I spent 3-4 days a week last summer cleaning fish. Bluegill, crappie, and bass are all a breeze. Even large bass (7+ pounds) I would not normally have kept were easy enough. I normally sharpened a little after each use, but the knife easily handled each days catch without going dull.

I was hesitant at first to spend this much on a knife. Now, I wish I had done this long ago.
