My wife really likes her twenty year old Chicago Cutlery Walnut set of knives, so when her paring knife finally made its last cut I found this knife as the closest looking alternative to what she had. The saying "they don't make them like they used to" is very appropriate. She likes the feel, she likes that it looks so close to her original. Well, it is Chicago Cutlery, so sharp is what you get!! I love the traditional edges on these and have never been a fan of serrated edges except for my steak knives. Due to the natural wood, you need to keep the handles oiled or they will dry out. They hold an edge very well, but keep your rattail handy for when it burrs down. I bought this to complement a comparable 25 year old Chicago Cutlery paring knife we have used daily for this time. There is no comparison. The new one has a wispy blade that bent immediately when I tried to pry apart some frozen goods. The old one did this hundreds of times without any problems. Clearly a "program for profit" at CC led to cheaper steel. Doesn't say so on the product, but probably Chinese manufacture. In a cutting device, this is not the way to go. Very disappointed.
