I own several knives, but I find that I use this one almost exclusively-it cuts through anything with ease and minimal force-I've used it on chicken, beef, pork chops, onions, peppers, garlic, ginger, carrots, broccoli, grapefruit... I could go on, but I suspect you get the point (and I wanted to emphasize-these are thought of as vegetable knives-it cuts through anything with ease, though I haven't-and won't-try it through bone). The only problem with it is that it cuts so well, I have to be careful not to cut things too small because its so easy to work with!
I also find that things I'd normally use a paring knife for, like mincing garlic, I'm using this. Additionally, per advertisement, nothing sticks to the side of the blade due to the hollowed out grooves. Not really sure how it works, but I don't really care. This is really a superb knife and has taken its place as my main all purpose knife.You need to make sure that you have the "PRO S" version of this knife as Henckels has several 7-Inch Santoku knives with hollow edge and they had been shipping wrong ones in the past. However, they might have straightened out their act after I reported the mistake to their customer service. So, please, please make sure you knife says "PRO S" and has a twin tribal men on the logo.
As some of the previous reviewers posted (and some had been deleted), Amazon had been listing the wrong item here. Many people were purchasing the Henckels International Classic 7-Inch Santoku Knife with Hollow Edge, not "Part of the Pro S series of cutlery" as stated in the Amazon product review by Cristina Vaamonde or the "J.A. Henckels Professional S 7 inch Santoku knife with hollow edge" as stated in the Amazon product description. And even though the photo of the product shows the double Henckels men, the knife being shipped only had one Henckels man...another indication that it's not worth $74.99-$84.99 Amazon price or the $110.00 retail price it's listing. The International Classic knife can be purchased at Target, JCPenny and a whole bunch of other stores for the retail price of $39.99. If you paid $74.99-84.99 for the wrong knife, please get your money back!!!

My husband purchased the Pro S Santoku knife as a gift. I had been drooling over them for a year, but thought the expense was too much to put out "for a knife". But, since I am always cooking, and we felt it was a wise investment,I finally received one. I do not look at knives in the same way any longer.First, let me say that without a doubt, the investment is WORTH IT. I knew this the first slice I made through a potato. It was as if I were cutting through butter with a hot knife. So smooth so quick. I was amazed.
Once I got used to how sharp it is (was actually proud of my first cut) and how to handle it, there is no stopping to what I can cut. I use it on vegetables of all kinds, cubing beef, and even slicing through thick sandwiches. I make sure I use the truing blade, and it's as if I just purchased it.
I am so pleased with Henckles, that I now own the cleaver, paring knife, and chef's knife. My husband and I have decided to collect the Pro S line for our kitchen. Great quality, solid handles, even weight and swift through anything you put them to. Would recommend to anyone who is looking to invest in their kitchen's hardware. I know I will be pleased with them for many years to come.

Unlike some reviewers, I did get the Pro S knife. It is an excellent knife. Good balance, feels good in the hand, very sharp and chops wallnuts as good as anything I have used. Just purchased this as another step towards the Pro S set I am building. I must say that I was extremely impressed with the ease this knife chops, cubes and dices. It is RAZOR sharp out of the box, and has the nice santoku shape.I can forsee this knife being the most used out of the entire set very versatile and easy to use.
Can't speak for longevity, but it is very well built, and I see nothing preventing this knife from lasting 40+ years.
