ZHEN Japanese VG-10 3-Layer Forged Steel Fruit Paring Knife, 3.5-Inch

This is one of three zhen knives I own. The quality is consistent. This is the one I use the most, daily. It holds its edge well. The handle shows no signs of damage from rinsing and drying. It is a nice looking knife, and unlike any other parer with its distinctive red handle. This is a good knife. If you are looking for a paring knife, this is a good one.

Cuts well. Sharpens up very nicely. Blade and handle both gorgeous. Solidly built. The handle just doesn't have a good "fit" in the hand: too short and poorly shaped. In the end I use my older and larger knives that fit well in the hand, even if blades are too big for the job.
