Victorinox Boning, Curved, Semi-Stiff, Black Fibrox, 5 in.I used to work for tyson foods. This is the exact knife that i would use for 8 hours a day cutting up chickens. I used the same knife for 2 years until there wasn't enough steel left to sharpen. A great knife and i do recommend it to every one i know.

This is my go to butchery/breakdown knife. The 5 in. blade is the perfect length, it allows you to be close enough for the best precision, yet far enough to not be touching the meat with your knuckles. The handle is made with fibrox and is NSF approved, the fibrox handle means that it has great grip, and made ergonomically. This is the knife I will always have on hand. If properly maintained, it will be easy to sharpen, and will be razor sharp.

I researched this knife from friends report's, in the BBQ world, and decided to give it a try. After 1 week now, and using it on numerous meats, cheeses, and other item's, I have found this to be an outstanding knife! It is smaller, and more managable than most, yet has a great blade and comfort to my hand, in all thing's I need to cut. Great knife, great price....it just doesn't get any better!! Thank you!
