Cuisinart CA-X Open Stock 3-1/2-Inch Paring KnifeI bought this knife for my mom for mothers day. Her favorite knife broke so this was a replacement. My only complaint is that the knife part is a little short and can make cutting difficult as it is handle heavy.

This knife just won't take a good edge, no matter how I sharpen it, and I blame poor steel and overly thick forging. The edge is also prone to dinging and what looks like pitting. The knife is quite thick and heavy for a paring knife, and heavily weighted toward the handle. This makes it less suitable for the fine work you normally use a paring knife for. Somehow my blade has also become bent to one side, although this may be my fault.

While it's not as bad as bad as some paring knives I've seen, there are much better knives for this price.

I did not buy this knife here, it was a gift, BUT today I was shopping for knifes and seen this here AND I thought I would leave a quick review.

The first 2 weeks the knife worked great, sharp and cut good. But that was it. After 2 weeks it dulled considerably, and after 1 month it became unusable and went into the no longer using bin.

Now Im not gonna say I went out of my way to sharpen this with an expensive knife sharpening unit. But the steel no longer worked on this and you could run this knife along your finger with Hulk Hogan pushing down and it wont cut nothing.

If you ever wanted to see the definition of dull you would run your finger along this knife. I did try sharpening it on a unit I have, Modestly priced but works OK on most of my knives, but not on this one.

I think the other 2 reviewers were way to generous. This is no more than a 2 star knife, because it did work for a bit. STAY CLEAR OF THIS ONE AND YOU WILL DO FINE.
