As for cutting noodles, be sure the dough has sat out a bit after rolling flat and is well-floured. The noodles will be fairly thin so make sure that's the kind of noodles you want before buying the product. If they made one with the cutting wheels farther apart, I'd buy it too.
Considering I was going to purchase a pasta maker for 50 dollars and bought this device for under 10... I'm extremely pleased and have saved money and storage space.I HAVE USED THIS TYPE MINCER FOR OVER 40 YEARS TO CUT NOODLES. FOR AWHILE THEY WERE HARD TO FIND. I NOW HAVE FIVE OF THEM AND I GIVE THEM AS GIFTS TO PEOPLE WHO WANT TO LEARN HOW TO MAKE HOMEMADE CHICKEN AND NOODLES. THEY WORK GREAT! YOU MUST ROLL THE DOUGH THIN AND USE LOTS OF FLOUR FOR IT TO GO SMOOTHLY BUT ONCE YOU GET THE HANG OF IT YOU WILL LOVE IT!

I wish I had read the reviews first. I always thought these rolling mincers would be great for fresh herbs, but this is a terrible item. It isn't sharp enough. It only mashed the herbs it doesn't cut them. A good sharp knife is much better. May be other brands would be better, but I don't have the stamina to try each one in turn.Read Best Reviews of Good Cook Profreshionals Herb Mincer Here
Tried to use to cut basil. Blades were not sharp enough, just mashed the leaves. Can see where they would work for home made noodles but not basil, oregano, cilantro, parsley, or mint. Did not try on chivesCould be a little stronger..I use this for cutting home made noddles it could be a little more narrow. but it works
