Zwilling J.A. Henckels Twin Signature 8-Inch Chef's KnifeI ordered this knife as part of a budding good-knife collection. I've used it for about two weeks now, to cut everything: chocolate, chicken, fruit, bacon, onions, and lots and lots of scrap paper (alas, even a curious man's fingernail fell victim to this knife). It's very sharp, and holds a blade as you'd expect a Henckels knife to do. It performs quite well.

However, I'm not sure it will become my favorite knife. An odd thing happens when I use it: I can't just grab the handle and control the knife like you'd expect to control any decent chef's knife. I end up laying my whole index finger along the top of the blade and crowding all of the rest of my fingers in the front 1.5" of handle space. I try to make myself use only the handle, but the knife feels unwieldy and strange. I'd chalk this peculiarity up to my own ignorance of how to properly use a knife, but here's the thing--the boyfriend, using it the other day to cut chocolate (okay, it was his fingernail that fell victim to the "test kitchen" trials), found himself holding the knife the very same way.

We might just be weird, and yes, Amazon is selling a great German knife for $33, but be warned--that grip just isn't as comfortable, nor does it provide the same power, as a more expensive Henckels knife.

I'm an intro culinary student working as a line cook at a country club. This was my first knife, so I didn't want to get something over-the-top, like a Mac blade (which is what the Exec Chef and the Sous Chef use), but I wanted something of good quality that I could use. This knife has a very comfortable grip no matter where I hold it, and cuts beautifully. It rarely needs sharpened.

When it comes to Henckels knives, you have to be careful what you buysome are made in China and are just plain terrible. This one is German steel and is light and durable. Very excellent buy.

This is an excellent knife. I had a J.A Henckel given to me years ago, and I soon found it to be the best of our kitchen knives. So I bought another, and now I have two "best knives". They keep their sharpening edge longer than the others. Easy to hold (I have smaller hands). And while I have several knives, if I can't find this one, (or the other J.A Henckel knife) I will search all the drawers, dishwasher and sink until I find one of the two we own, I will not grab one of the other knives. The price was very good and J.A Henckels are the only knife brand I will purchase from now on.

I received this knife as part of a set, as a gift. I've had it now for at least six years. It's not the highest end knife that Henckels makes, but it's a reasonably-priced, well-made knife that serves amazingly well in the kitchen of a serious, enthusiastic home cook. A good chef's knife can be used for almost any cutting task in the kitchen. I use mine for everything from chopping vegetables for salad, to mincing herbs, to slicing meat. Since I do a lot of home cooking, it gets a heck of a lot of use. It's held up very well over the years. Be sure to hone it on a steel frequently. I do this after every substantial use, or after 2-3 lighter uses. The knife is not as heavy as some, but if you're going to be doing a lot of cutting at one time, this can be beneficial. Its handle fits comfortably into my hands, which have about average palms but slightly shorter fingers than most women's. (Note: look up "how to hold a chef's knife" to be sure you're holding it properly, if you haven't specifically been taught). DO NOT put it in the dishwasher. Keep it in a knife block (one that rests the blade on its side, not its edge) or in a knife rack (like the magnetic kind), not in a drawer. Treat this knife right, and you will be able to depend on it to perform beautifully for years. It would make a great gift for a home cook who sees cooking as a hobby, not just a necessity.

My mother made a comment about three months ago about how she 'wished she had just one sharp knife.' (This coming from a lady that has a drawer full of Henckels and Wusthof.) So I filed that comment. I ordered this knife for her 65th B-Day. I gave it to her and she said it is the best gift she has gotten in a long time (maybe a bit over exaggerated lol). This knife is super sharp. It cuts through vegetables and meat like butter. She has vowed to to do unmentionables to anyone who touches it lol. It is a great knife, feels good in the hand, great balance, a good representation of the Henckels brand.
