Professional Kitchen Knife Sharpener System Fix-angle 4 Stones

Professional Kitchen Knife Sharpener System Fix-angle 4 StonesThis is an excellent product. Yes, you will need to upgrade the stones, but the basic construction is that of the Edge Pro, so you will get the same rig for less than half the price. Well worth the purchase. I highly recommend.

The platform works as it should, it will sharpen your knife, but takes time. The stones it comes with are pretty cheap. Not a bad system for 35 bucks. Replace the stones with some for the edge pro and you got a great sharpener for half or less the price of an edge pro.

I don't know anything about sharping knives, but this tool certainly made me a pro.

It is easy to use and You don't need to spend a lot of time with each stone.

I use the 180 first with perhaps 10 to 15 passes on each side of the knife, and I finalize it with the 400 with a few more passes that the first stone.

I usually wet the stone with hot water but I stop doing this because I broke the 400 stone. I am not sure if I applied too much pressure when I set it on the arm or if the hot water had anything to do with it.

From now on I will use only warm water or vegetable oil.

For the price it is a really good product!

Got the system yesterday... I am happy with the construction and operation. The only real downside, as addressed here and on other reviews, is the stones. They use a plastic backing, which may or may not be the problem, but if you lay two stones on top of each other you can see light where there is a slight bow in the middle of the stones. That said, they still put on an OUTSTANDING edge. Better than I have been able to get with the MANY other systems I have tried. They send 4 stones with the kit, and if you are new to sharpening you can set the lowest grit stone to the side. It will take off a lot of material and is prob only needed if you want to re-profile your bevel. Get this kit, use it, and if you really find the stones to be an issue, upgrade them later; I was more than happy with their results. Your mileage may vary, but I bet you will be very impressed.

**Many people have posted reviews stating that the stones are low quality. After a good deal of use this is what I have found; the stones will put on a keen edge. The only real issue I found with them is the bow in the center of all of the stones ie. lay one stone on top of the other and you can see light between them which can cause a bit of irregularity on your sharpened edge. I would suggest buying a small bag of 60 grit silica carbide (edgeproinc.com offers a 1/2lb bag that is very inexpensive). Get any piece of glass or a flat mirror, sprinkle it with a bit of water, then sprinkle a good pinch of silica carbide. Rub your stones on the glass in a circular motion to flatten them out. This will make them nice and flat removing any bow or wear from use. This will get you even better results when sharpening. Do this and you really won't need to replace the stones until you have worn them out with use.

With upgraded wet-stones this product is a winner.

The stock stone plastic backing plates are pure junk.

The course stone I received needed to be leveled on 120grit wet-dry sanding paper

The stock stones readily clog in part because the plastic backing plates prevent the application of enough pressure so the stock stones crack.

One option could be to make some aluminum backing plates of the same dimension with the stock stones.

A better option is to invest in some Shapton wetstones and this product will really perform well see: chefknivestogo dot com/shprostforep.html

I suggest 500, 1000 and perhaps a 4000 Shapton stone

Add an a angle cube AccuRemote Digital Electronic Magnetic Angle Gage Level / Protractor / Bevel Gauge and your knives will have an amazing precision-angle-edge
