YOSHIHIRO- NSW Hammered Damascus Japanese Chef Knife Gyuto Knife 7' 180mm Shitan Handle MADE IN JAPANThe YOSHIHIRO-NSW Hammered Damascus Japanese Chef Gyuto 7" chefs knife came a few days ago and it's absolutely beautiful to look at. It's light, well balanced, and very,very sharp. I also have some Shun, Global, and German knifes, but this is the one I will use for most of my work. The knife was obviously crafted by true artist of the ancient Japanese art of Samurai swords making, and I love it. Thanks

I use this knife twice a day and it is a joy every time. It is lightweight and VERY sharp. I like the fact that it comes with a saya as it would be rather dangerous to store without it. I use it for all manor of vegetables, bread, meat and even cheese once (you probably shouldn't use it for cheese). The Damascus steel is beautiful, and easy to care for. I simply wash the blade immediately after use, and wipe it with some olive oil, and it has retained it's appearance with no discoloration. The 7" size is perfect for me, but you may want to consider a larger blade if you typically prepare large portions. I have a family of 6, but we rarely eat the same things at the same time, so the 7" size works for the 3-4 stalks of celery, single tomato/onion/celery type tasks that I usually had to execute.

Also, I do not feel the need to have another knife. This one is pretty much all I need for chopping and light paring.
