I can't believe I waited so long to get one of these trussing needles. It's perfect and makes light work of trussing poultry. It eliminates the need for awkward skewers and lacing. Just stitch the bird together and you're done. It was especially helpful this Thanksgiving when I made a Hot Turkey Ballotine. That is where you open the raw turkey along the back, remove all the bones, fill it with a meat stuffing, then reconstruct the bird before flipping onto its back and putting it in the roasting pan. The trussing needle made putting the bird back together a snap, and saved precious time not having to use all the extra hardware to hold it together. It was as simple as sewing a straight seam, and since you only open the back, the turkey looks flawless for presentation. The best part of this recipe is that you don't have to be an expert carver at the table. Since there are no bones, you can simply slice it cross-wise and get good portions of turkey and stuffing in every slice.
The needle itself is quite sturdy, sharply pointed to get through the toughest skin or gristle, and has an eye that is big enough to easily thread the thick cooking twine without delay.
I would recommend this product to anyone who is serious about cooking, and to the occasional cook who just wants to make things a little easier in the kitchen.
