I buy, sell & sharpen knives here in Hawaii. I have been buying, sharpening and selling these knives for the last several months. They are forged steel from Japan & stainless steel. They are made in China which keeps the price down. Made in Japan meant junk when I was a kid. Now in knives it means quality. Same thing with made in China some is junk but this is not one of those type knives. They sharpen like much more expensive knives. I gave a paring knife to a bar tender at Ruby Tuesdays that I sharpen for every three weeks. I came back three weeks later and her knife was still sharp and did not need to be resharpened. She cuts the lemons and limes at the bar. That was a first. A knife that would hold up to that type of use got my attention. The knives come sharp out of the package although the package is dangerous. Be cautious not to get cut by the plastic covering. A couple of swipes on a ceramic wan (I recommend the big Joe sharpening stick) does a good job. The little ceramic wands break easy. I bought mine from Costco but they stopped carrying them so I may be buying some from this site if the price drops to $25 per set.
I have used them multiple times since then and the love affair continues.
