I gave this knife as a gift to a bartender that I sharpen for every three weeks. The gift was really a test for me to see just how good this forged, stainless Japanese steel knife really was. I have a mobile sharpening service here on the Island of Oahu. The first time I came back she said she loved this knife. Best lemon and lime cutter she had ever used. Yesterday I came back to sharpen the restaurants knives. I had also sold her a Wusthof serrated knife. Neither knife needed to be resharpened. This is almost to good to be true for this busy bar restaurant. For me. Oh well I did make some money on the sale of the Wusthof knife and I make money every time I sell the paring knives to other guest that come to my booth at Waianae & Kapolei Farmers Markets.
