I purchased this knife about a month ago, and really enjoy using it. It's sharper than my Wusthof parer! I bought it to replace a rusty carbon steel knife which I gave to Goodwill since the wooden handle was cracking. Ever since I gave that knife away, I could kick myself. I missed it's sharpness. That's what knives are for -remember! Forget all the hype and glitz of fancier brands. My old rusty carbon steel knife beat Wusthof's sharpness -hands down. (Yeah -it's hard to admit after I spent the money on the Wusthof, expecting it to be sharper). And the Dexter knife is heftier than my Komachi 8" Chef's knife -which felt too light weight for certain chopping tasks, such as cutting cantalope. Although sharp, the Komachi blades would sometimes flex. So I set out to find an updated carbon steel knife -I can't be more pleased. Dexter Russell got it right with the V-Lo -a nice compromise with just enough carbon steel to give it a razor sharp, durable edge, but it doesn't get rusty like my old carbon steel knife. My knife is still shiny. The knife has a nice weight, balance and grip. Just don't throw your carbon steel knives in the dishwasher -save that for your duller stainless steel knives. I prefer sharp over stainless! I would definitely buy another Dexter-Russell V-Lo knife. And Made in USA to boot!I just got this knife a few days ago for Christmas. I'm surprised at how sharp the blade is right out of the box. I've had no trouble at all cutting through some large steaks I made for dinner. The knife is well-balanced and extremely comfortable to use. The size is perfect for my needs at the moment however I think I'm going to buy some of the other knives that Dexter-Russell makes. I also really appreciate the fact that this product is produced here in the USA which is all too uncommon anymore. This is my second Dexter-Russell V-LO 7-inch Santoku knife, even though the first one is still in service. I've owned high-end, ultra-pricey knives, and this one is every bit as good if not better. It is a superb weight, not too heavy, not too light, and the blade is sharp straight out of the package and retains its sharpness for an incredibly long time. Surprisingly, I have only sharpened my first knife once, and I've had it for a couple of years and have used it daily. The handle of this knife is very comfortable too, with a pleasing grip. Take good care of your V-LO Santoku knife and always hand wash it -it will give you many years of excellent service in return.I have been buying Dexter-Russell since a wholesaler hipped me to them 30 years ago. GREAT value, they hold their edge, are easy and quick sharpening and well made. I have a bread knife that IS 30 years old and still going strong. We use this with our new cutting board. It actually cuts into the board pretty deep so we know this bad boy is sharp!. Wife loves the handle as she has small hands but it lets her keep a good grip on it.
