I've been using high quality cooks knives to cut vegetables for several years, but have never been completely satisfied with the results. The Nakiri knife finally gave me the results I wanted paper thin cuts on even the softest fruits and vegetables. This is what I've been looking for.This knife is very sharp and holds an edge extremely well with little effort. The thin blade makes cutting hard and soft vegetables a breeze even tomatoes and potatoes. The shape of the blade also makes it easy to scoop the vegetables up so you can move it to the bowl or plate or pan and it holds a lot.I am very pleased with this knife and plan on buying the special sharpener that goes with it, as I expect to use this frequently.

Where has this knife been all my life. Does a fabulous job slicing tomatoes so thin you could almost read thru them. Mincing onions is not a problem. This is my new go to knife. Have used it every day since I received it and it has stayed sharp and continues to do a fabulous job. Love it! I spotted a similar knife on the Martha Stewart show while she was demonstrating cooking and came here to search for one. I own several good quality kitchen knives, but this one has become my go-to knife.It is extremely sharp and holds its edge well. Slicing hard veggies such as sweet potatoes, cabbage, and carrots is easily accomplished. It is also the best knife for ripe tomatoes that I've ever used.
I highly recommend this knife.

I am very happy with this knife for the price. It is the lower end Wusthof but it is sharp and very nice for vegetables. The tall blade is not ideal for very hard vegetables because if you push down hard, if the blade does not land perfectly perpendicular, it will slide on the board and can cut you. It works beautifully with softer vegetables than a sweet potato.
