Great knife! Used it on gulf oysters to shuck about 3-4 dozen at a festival. However, if I had to choose I'd go with this other knife that seemed to open them easier: Dexter-Russell 2.75-Inch Carbon Steel and Beechwood Oyster Knife. Although, the long blade was very good at scraping the meat off long oysters. Also enjoyed the round style handle. Shucked for about 3-4 hours comfortably.

Bought two of them on the local oyster farm. I have owned several oyster knives before (including one from Oxo Good Grips), but this baby is definitely the best!First, the long and narrow 4" blade made from really unbreakable high quality carbon steel (it's hard to even scratch it) and works just right for any oyster size.
Second, nice and thick handle (1.5" diameter) is very comfortable and allows you to easily open even the toughest shells with a light twist
Finally, this knife is very well made it is one of those indestructible things that can be used for years and probably lasts forever.This was the perfect knife for oyster shucking. It was my first time. My friend showed me how to use the knife and I struggled with the first oyster but got the hang of it easily. I eventually was able to cut each one open in about one minute.This was a gift, I've had mine for years. From Wellfleets to York River Oysters, Kumamoto's and Olympias I don't leave home with out it.
