Calphalon LX Series Cutlery 7' SantokuI am a big fan of the Calphalon LX series as a whole. I started picking these up at a secondary store for much cheaper. I first acquired the 5 inch santoku and the paring knife, which is absolutely gorgeous, might I add. The five inch has what some consider a small handle. I can see what they are talking about, but it isn't too small, just seems small until you start using it. It is a small knife, and does not require a huge handle. The five inch was fun and lethal out of the box. It holds the edge reasonably well. I was craving something a little bigger. I searched over a few states looking for the 7 inch. Alas, I found it. It was worth the wait. This knife seemed to be the sharpest of the bunch, and has stayed that way since. The spine of the knife is much thicker than that of a regular santoku, which only aids in its mean bite. This knife is not for the faint of heart. It just feels like a hell of a knife in your hand, much different than the 5 inch or even the 8 inch chef knife. It is hard to describe, but you feel as thought there in no food that can stand in your way with this knife in your hand. In reality, it is a little heavy if you are looking for a lighter knife. If you don't mind a little heft, this knife is definitely worth every penny. This thing will hold an edge for a while and sharpens up like nobody's business. I promise you won't be disappointed if you are considering this purchase. If you are looking for something "exotic", I would go with an authentic Japanese knife. If you are looking for a knife to be the backbone workhorse of your kitchen, this would be it. Remind, the handle on this is much bigger that the five inch. It comfortably fits my Medium/large hand.

had been adding to my "expensive but worth it " knives slowly then saw one of these paring knives at an off price store and picked it up for 1/3 the price of my more expensive( starts with a W :)) knives as it was too good a deal not to try,. and found I actually love the calphalon weight and handling so much more the the other brand I bought the 7" santoku and bread knives in that same series...so got all 3 for less than I paid for one of the "W" brand and like them so much more. who'd have thunk it. someone mentioned staining which as of yet i have not had but i do hand wash right after use...the heft is imo wonderful, like the 7 " size as a nice all purpose knife and use it much more than the other brand's santoku ( which is a 5"). now i am looking for the chef knife ...the tangs go clear thru, they are riveted, and fully forged steel so really just do not see what more you are getting with the more epensive knife and the balance is imo better on the calphalon. didn't give it a 5 star just due to the possibility of a problem down the road since i have only had them a month or so. do make sure it's the lx series though as some of the other calphalon knives are not riveted etc.

I boughtt his for my wife thinking she would love it since she has a smaller version of this knife. The only problem was that she said it seemed to a little but to heavy for her taste.

This are not only extremely well made, they are actually very stylish! I have the whole set proudly displayed on my counter in the rare curved wood display case Calphalon made. I paid dearly for the last complete set I could find in the US before they discontinued the cool wooden block. Highly recommend.

A good choice for the chef who prefers the heft of a thick-spined knife--unusual in a santoku blade.

The blade is labeled "GERMAN STEEL MADE IN CHINA." Calphalon customer support advised that both the steel and the knife were made in China, but declined to identify the alloy. In my sample, the blade was sharp out of the box. The edge quality is easily maintained with a few strokes on a sharpening steel. The alloy is not a super-hard exotic steel, but holds its edge well enough in practical use. Hand wash and dry promptly after using.

Manufacturer offers lifetime warranty after user registration. Like most stainless forged knives, this one appears durable enough to last for generations and possibly survive as a relic for future archeologists.

The miniscule dimples appear to be a decoration for marketing purposes rather than a serious attempt to prevent food from sticking to the blade.

The LX Series knives have been discontinued. As of January, 2013, it was possible to find them at substantial savings in off-price stores.
