Schmidt Brothers Cutlery, SFOCH08, Forge 8 Inch Chef Knife

Schmidt Brothers Cutlery, SFOCH08, Forge 8 Inch Chef KnifeA cook by trade I read about this knife in a Food magazine, so I had to se what the hype was about. Extremely please with this knife, especially for the price. Would have been Happy spending $40 OR $50 on this Knie. I own few other knifes that i spent $100+ and this product comepares to those pretty well. Been using this knife daily for 2 1/2 months at busy place and it still has a great edge. still happier with my Whustof but it was 3x the price.

Got this as part of the set. My set has beautiful construction, good fit and finish. Good ergonomics, good balance. Excellent steel. They use x50crmov15. The same German steel formula used in Henkels and Wusthofs top of the line series (H&W use crummy steel in the knife series they sell to most people who own the respective brands). Schmidt Brothers uses only top grade steel. Teak is sustainably farmed in Indonesia.

I am a professional chef, and have a LARGE collection of knives, most of which are of the "functionally ugly" sort. These are my knives for my day off when cooking for family and friends at home. These look absolutely gorgeous on the counter-top in the home kitchen.

BTW, the Schmidt Bros Teak series was chosen by Oprah for her "Favorite Things".

It seems like it would be such a good knife but in reality it is HORRIBLE. the edges are so raw and rough. the handle is so uncomfortable and the knife is so dull!!! just realy really bad
