Sani-Safe Commercial Cutlery, Cook's Knife 8"

Sani-Safe Commercial Cutlery, Cook's Knife 8'I did HVAC for a long time and many clients were kitchens. Dexter and forshner knives were all most used. I like that I can put this knife in the dish washer. I also like the belly of the knife is a little larger than most. This is a good knife at a good price.

I've used Dexter knives since I was s short order cook in college, a very long time ago. They are great. They stay sharp, can be dumped in a powerful commercial dish washer, and they are light weight, so they are easy to use for long periods. I can't imagine using a heavy, cast "chef's" knife. Plus, in normal use a cook's knife gets sharpened so often that they only last a few months. Knives must be affordable, and this one is. The blade is nice and wide, too, so you can use it as a spatula rather than reaching for another tool. The fact that they are NSF-rated means that they can be sanitized in a dishwasher, whereas those wooden handled "chef's" knives have too many places for bacteria to hide, so they aren't NSF approved. The grip is easy to hold with wet or oily hands, and makes it easy to control the knife.

Forget the Henkle, etc, skinny, heavy, impressive looking "chef's" knives and get the real deal.

If you cook, you need a good knife. If you aren't rich, you prefer not to pay hundreds of $$ for a good knife. I love this knife. It accomplishes both missions.
