Ginsu Essential Open Stock Series Japanese 420J2 Stainless Steel 8-InchChef's Knife 5104This knife seems better than the heavier stainless version. I bought three knives at the same time, and this one seems good so far. Time will tell if it stays sharp and stain/rust free. The only down side is that you have to use a 'sawing' action to chop with it, unlike the older Ginsu we have and still use. With the older Ginsu chopping is a breeze, but with the new one, you have to saw all the vegetables in order to cut through them due to the scalloped edges.

I couldn't even cut a water melon with the knife. Great that amazon has such easy returns. I love the Ginsu non serrated set of four knives and thought this would add to the set.

I purchased this knife a year or two ago, and I have to say it's still going strong. I haven't sharpened it or anything, yet I can still hack through heavy squashes and watermelons with relative ease. I can't complain.

I have another Ginsu knife that I have had for 15 years and it is still sharp this knife can not compare should of stuck with the same old knife
