I wanted a knife that could easily slice steaks and trim meat this is the knife. Excellent for slicing and that is what I needed.well ive been cutting meat for about 3 years now, and i have got to say every single meat cutter that i worked with told me to buy forchner
and really maybe it is prefference forchners always have a thicker spine with a steeper bevel personally i think fdick uses higher quality steel they are a tons lighter every single time and extremely durable and can take very low angles they come stock with 20dg angle i use a 25 and it stays sharp for months
