I routinely cut through bone with the sturdy heal but, the tip is thin and works well for delicate cutting. I end up not reaching for other knives because this knife is such a good all around chef knife. It has not been prone to chips and it takes well to the stones. This knife is a versatile work-horse. Mine has taken on the most beautiful patina with some hints of blue. Beautiful knife.

If you need only sharpness on kitchen knife,

you should buy a japanese knife that is made of yasuki-hagane.

(For instance, if you are going to cut a tuna for sushi)

But If you want useful one ,I recomend you Bob Kramer.

In my opinion,Bob Kramer-henkel has two strong points.

Point 1

Is made of 52100 steel.

This steel was developed for bearings,so very high quality and will last long time.

(Of course,you should avoid stain)

Point 2

Has good shape and weight balance.

For instance,the center of gravity is in the border between blade and handle.

So, you can rotate easily and utilize the weight in cutting.

And long distance from edge to spine is useful to avoid touching your hand on the things cut.

In addition,

My knife was shparpend to clear Bob's 5 test in the factory.

But If you can hadle a japanese natural water stone,you can get more sharp edge.

At last...

This good knife is made in Japan,but not be selling in my country japan.

Just got this knife this week and love it. Really sharp out of the box, though it can be sharper, esp. since it's carbon steel. Handle is beautiful and fits like a glove in my hand. You can't neglect this knife; it needs to be washed and thoroughly dried each time you use it. But it doesn't need to be babied. A real pleasure to use.

Update: My opinion of this knife has dropped dramatically. Tried cutting a beef rawhide for my dog this week and not only did the knife fail, but the attempt left a gash in the steel! My much cheaper Forschner goes through these easily. VERY disappointing. Am returning the knife and not getting another.

this knife is not that great. no better than my calpholon katana chef knife. this is not a bob kramer knife. henkles is authorized to use his name and they make it. a real kramer knife is $300. per inch so this would be $3000.00 if you bought it from him. i didnt realize this till after I got this knife. it's not bad but nothing special about it over any other high quality knife. I still want a set of real kramer knifes but it will be a long time.

I have another knife similar to this one that I use every day making salads, etc so I got this one as a gift for my daughter so she might see how quickly salads can come together very quickly so it's more fun to make them everyday. I use it for celery, cucumbers, red-yellow-green pepper strips, for jicama, zucchini, radishes. Between this knife and a julienne tool I have made some of the most beautiful salads ever. and I do it every single day with my little helpers. I think it's a great item, use it a lot. Sometimes more than once a day, but at least once a day, every day.

Doesn't work efficiently. Food gets stuck in the blade and you have to stop to pull it out. It's easier to just use a knife for slicing or a vegetable peeler for peeling.

Mundial Future 10' Carving KnifeI purchased these stainless steel knives as Groom's Gifts. They are a perfect gift and absolutely gorgeous knives. I had the handles engraved with the date. I debated buying extras but now very glad I did. Now I may have one left over for me.

I have not used them of course but they perfectly balanced and just the right size for numerous uses, especially for craving.

Glad I found them. Sometime you never know when ordering online but I would highly recommend this company's knives. I usually use Cutco knives which I do love but I really like the looks/style of this one. Hopefully it will prove to be just as good in quality.

The only downside that one of my friends mentioned is that the fork and spoon are shallow. For me it is not a big deal and I didnt notice until he brought it up but if you like to eat soup or something like that it might be a little harder. Over all I really love this set, and the colors are fun and bright, better than a plain silver!

Sekiryu Yanagiba Sashimi Knife 300mmI think this knife is a good value if you want this specific kind of specialized knife.

You might want to know that I'm a bit of a sharpening geek, and I spent some time getting the edge just how I wanted, but now that I have it slices like nothing else in my knife drawer (of about 20 knives). I'm not sure I would be this satisfied if I hadn't known how to resharpen the edge to my satisfaction. Others have noted it doesn't hold up to multiple re-sharpenings which I'm sure means they haven't known how to restore the edge properly. The steel is just fine. It's not super high-grade knife steel perhaps, but it takes a keen edge just fine and holds up when ground at the right angle.

I'm sure it's not for everybody. I'm not sure how long the factory edge would hold up without some loving care. And it's a very specialized knife, really optimized for slicing fish into sashimi-sized slices.

But I wanted to try out this style of knife and the next price point for a knife of this style was about $100, more than I wanted to pay to experiment.

For those who might care about the sharpening details, I started by flattening and then polishing the back to 2000-grit (actually just the edges of the back get flattened and polished since the back is hollow-ground). This is a must-do step to get a really keen edge since the edge is only ground on one side (like a plane iron). Then I trued up the primary grind on the other side to 15 degrees (seemed like it was about 17 to start), then put a secondary edge at about 20 degrees when the 15 degree edge wouldn't hold up very well. With the secondary edge polished to 2000-grit, the edge cuts (slices, not chops) extremely well, better than any knife I've ever used, and seems to be holding up well with a gentle (ceramic) steeling before each use.

I feel like I have a good feel for this style of knife now and might invest in a higher-end model later if the spirit moves :)

Do note that this knife is shorter than described and as it appears in the picture. The blade length is 200mm, not 300mm, and the overall length of the knife, including handle, is 320mm. Knife length is properly described by the length of the cutting blade, not including the handle.

I purchased this knife for my son who is the executive chef at a private country club. He says the knife is unbelievably sharp and is as good as other Japanese style knives costing hundreds of more dollars. The knife resharpens easily and is the perfect length for most applications, not too long and not too short. It is a great value if you are looking for a good knife and don't want to spend a lot of money.

One note of caution. The knife is advertised as a 300mm or 12 inch knife. The actual blade length is 8 inches so if you are looking for a 12 inch slicer this is not the knife for you.

I bought this for a friend who makes very yummie sushi. Her old knife was just a basic chef style. She loves this knife! At one point, she barely touched the blade to the side of her finger and made a small slice. Not bad at all, just very sharp. The single-bevel blade and shaped handle make it fit well in the hand. Slice on!

We make sushi at home, but when it came time to cut the rolls they would get squished or would fall apart when using a regular serrated knife. After watching a dozen of youtube videos, I realized that I was using the wrong tool. Anyways, this knife is the bomb: it is very sharp and very long, so with one long stroke you can cut a perfect roll slice without pressing the rice and keeping everything intact. It also comes in a reusable box that is very handy as this knife is too sharp to keep exposed in a knife drawer. I would definitely recommend.

For the price, you get a really decent knife if not great. Its a great beginner knife for people who are not sure if these knives will be the ones for them or not. Its still great if you are into it and just need a knife. Works wonderfully, keep it mind, the knife comes per-sharpen so there is no need to sharpen it out of the box. Also, the 300mm stated on the title is from tip of the blade to the end of the handle. So really the blade isn't that long, more like 170 to 180mm.
