I am no master chef but my co-worker was a professional chef for 10 years. Quite a lot of them were as head chef. Here are a few of his simple statements of truth while guiding me to knife education.

1. Professional chefs in kitchens don't get fancy expensive knives. If the knives gets stolen, the restaurant is out a lot of money. This doesn't mean they're bad knives, but it does mean you don't need to spend a lot of money.

2. I don't trust any knife which says it doesn't need sharpening.

3. You want full tang.

Now, here is my take on these as a beginner, these aren't full tang but are sturdy. When they fall apart I can get to the bottom of it but for now, they're doing a great job for the price. I got mine at woot for far less. I test full tang by performing a conductivity test from the knife tip to the hilt. It failed there. A test from the tip of the blade to the back end of the blade where it meets the hilt succeeded. Now the set is great, I would've liked kitchen shears. The main reason this is getting four stars and not five is because the Santoku length is small. Everything else I can deal with.

The best information I can give is I have a $10 Mainstays (i.e. Walmart) 7" Santoku knife. It's full tang, loses it's edge fast but when I need it, it works and is a knife size.

Sure, the price is a little steep for a dish, but I consider this a special piece for gatherings. It always gets comments and compliments, and I love the way it looks. Out of the box, it required a bit of assembly, which was easy, and the ring at the top feels very sturdy. I can easily move it from countertop to table, fully loaded with tidbits, and not feel a bit uneasy. Well made, beautiful, this server is a piece I'll enjoy for a lifetime.

We live in Oregon so, we get Tillamook cheese. It's a medium cheddar cheese. I own a nice big set of Wusthof knives and I own all three of their cheese knives. None of them work very well. I've tried the stainless steel wire & wheel device and it doesn't cut smoothly or consistently. My wife for years has used a potato peeler but I think the slices are too thin.

This Boska cheese slicer is the best of all applications. It slices with very little resistance and it makes even, consistent slices. I love it!

The only thing I can say is you might want to get the one with a metal handle because my kids use this and it's going to one day end up in the dishwasher and I'm sure the wood will be shot!

Works great and looks great for the price you pay. I've had this for a couple of months now and I haven't had any problems with it. It gives me nice even slices of cheese.

This thing works just okay. It is not the one to use if you are cutting up a lot of cheese. For that you want the marble cheese slicer. I have tried them all and nothing comes close to the marble cheese slicer. Again, for a little snack, this is okay.

Vidalia Slice-It Compact Slicer with 3 Blades & Storage CoverI got one of these at a thrift store more or less "on speculation" to see if it would work better than my plastic mandoline. Yes, it does. I just sliced up some vegetables for my stew and it went right through them: a couple of onions, some carrots, and a stalk of celery. I'm delighted with it. When this one breaks (thrift store, y'know) I'll be ordering a new one. And my mandoline is going out for the yard sale.

If you're running a commercial kitchen, this isn't your tool. But if you want to slice up some onions for the frying pan, or assorted veggies for the crock pot, it's more convenient than a knife and better than any alternative I've tried. Having the sliced-up vegetables land right in a measured container isn't to be sneezed at, either; it's easier than scraping up handfuls of veggies from the cutting board and dumping them into measuring cups.

It's not going to replace a good knife (and if you're buying kitchen knives, buy GOOD ones or eat out!), but it's a very fast, very convenient way to prep large quantities of vegetables at once. Definitely worth the money.

I love the Vidalia Chopping Wizard, so I bought this, but I'm very disappointed. It's hard to line up the pressing mechanism with the blades, and when you pull up on the pressing mechanism, it brings the blades and other things with it i.e. the whole mechanism falls apart, and you have to carefully put it back where it belongs without slicing your finger.

This set of knives is a great value! They're so sharp that I have been using them on everything until I can get the paring set to prep food. They're very attractive and easy to maintain. I've been using them daily for almost two months. The handles are a little on the small side, but that is easy to adapt to with use. They are grippy due to the finish on the handle. The box it comes in is great for a gift. I only put these through the dish washer once. They came out looking new, but my apartment dish washer makes pre-washed dishes even more dirty so I haven't used it since. I also have the pizza cutter, cook knife, spatula, and the Kwik Kut chopper from Rada. They are all great quality and stylish.

Calphalon LX Series Cutlery 5' NakiriI'm a petite person with petite hands, and this nakiri knife has a nice weight to it while also feeling very balanced. It cuts very well and has kept a nice sharp edge for the short time I've had it. I do not know how well it will hold up over time, but for now I am quite pleased. I prefer it for cutting up fruits and veggies over my other knives which are stainless steel, because this one is slightly heavier yet smaller, and it feels like I have more control over it. The edge is nice and sharp and floats through veggies like butter. I love it. Considering how well it handles, it's a bargain at around an Andrew Jackson. If Caphalon's other knives are this good, I might just start a collection.

This are not only extremely well made, they are actually very stylish! I have the whole set proudly displayed on my counter in the rare curved wood display case Calphalon made. I paid dearly for the last complete set I could find in the US before they discontinued the cool wooden block. Highly recommend.
