King 47506 1000/6000 Combination Grit WaterstoneI would have given 5 stars if there had of been a small bottle that came with the kit that could be used to hold water for the stones. It holds up well IF you know how to use and care for it. Sharpening with a stone ( actually a series of stones ) is not natural. To use one you should readup on a couple of internet articles on knife sharpening. I use a low grit, say 600-800 to get the shape and bevel right and bring the edge down to a rough sharp. This is fine for an axe, but, not a knife. After the bevel and most of the dull edge has been ground down ( no light reflects off the cutting edge ) move to the 1000 grit stone. At 1000 grit you will remove a lot less material , but all you are after is to get the scratches off the bevels and refine the edge a little more. When the edge is sharp enough to cut notebook paper without snags it is time for the 6000 grit stone. WARNING, the 6000 grit stone is soft and you can gouge it out in a single stroke. Keep it wet so the metal shavings float on the surface instead of being ground into the stone and reducing the cutting power of some of the surface area. This is a polishing stone, not a sharpeniing stone. It polishes the edge you put on with the 1000 grit stone. It polishes the bevels to a near mirror edge as well as helping to remove the little wire edge that ends up on all sharpenings. Now strop the edge (fatigue the wire edge till it comes off), you will know when it is complete when you run a finger UP the bevel and do not feel a small lip at the top where the edge is located. If you still feel the edge then strop some more; in a pinch, you can even strop on the palm of your hand. Remember to strop both sides alternately till the wire edge is gone. Now back to the 6000 grit stone and with LIGHT pressure, refinish the edge again but stop short of putting another wire edge on the blade. The edge now should cut newspaper when only supported by one side. Just remember one rule, the higher the bevel angle the lower the "Feel" and fine cutting power of the edge in general and the lower the angle the sharper the blade will feel. There is a trade off with high bevel angles on an axe that will keep the axe sharp longer and the low angle of a knife where it will require sharpening more often.

Now, wash off the stone surfaces and use an old cloth to scrup the surfaces. Get and use a Nagura stone to do a final cleaning and leveling of the 6000 grit side. Never use a Nagura stone on anything less than 6000 grit or you will eat it up and prematurely wear out the stone. Just keep in mind, the Nagura is for cleaning and trueing the 6000 and higher grit stones and should not be used as a sharpening stone itself. The second use for the Nagura stone is to create the sharpening "lather" needed to speed up the sharpening process. Place the stone under water and then to the work stone and act as if you are working on the edge. This process may need to be done 3 or 4 times. You will note a foam form on the top of your cutting edge mixed with a lot of water. Now sharpen your edge. You will get a faster and sharper knife.

I have been a carpenter for almost 12 years. The first 6 years were mainly rough carpentry and my stone of choice was an oil stone. I have since moved on to finish carpentry and woodworking. Razor sharp chisels and planes are a must now! And this combination stone, along with a 800-1000 grit waterstone, produce mirror sharp edges that last a long time. And, unlike an oil stone, waterstones can be honed flat again and cut the metal much faster. And you don't have to worry about the stone cloging.

These King Stones are legitimate Japanese Water Stones made in, you guessed it, Japan. They are extremely versitile and are the highest quality stones I have used. However, there are a few more good companies out there. Water stones are true to the craft of knife honing and sharpening and is a useful skill to teach yourself. I highly recommend watching virtuovice (YouTube Name) on YouTube for excellent tutorials on how to sharpen with stones.

The lower grit stones like the 250 and 400 are great for taking out chips in the blades or reprofiling the edge to fit your needs or preferences. As a camper who beats on knifes and axes, I really need this benefit to take out those chips and these stones do so beautifully.

A good stone grit to breach the gab between the lower grits and the finishing stone is the 1000 grit. This will help smooth out the edge and give it some great sharpness. It also makes finishing the edge with a 3000 or 4000 grit stone an easier and less time-consuming step in the process. 6000 and 8000 grit stones are not needed at all in my opinion. Finally, you should use a leather strop with a green and black compound to really get a good edge.

Bottom Line and Reccommending Sharpening System:

1.) 250/1000 grit King Water Stone

2.) 3000 or 4000 grit King Stone

3.) Leather strop with compound

You only really need the 250, 1000, and 3000 (or 4000) grit stones with the strop. I have seen the strop put a better edge than 8000 grit stones. Keep in mind a strop is only 30 bucks or so, and you could almost spend $100 on an 8000 grit stone. This reccommended sytem will make a butter knife scary sharp if you wanted it too. However, the stones are expensive and will loose shape over time depending on how much you use them. But the time you use them will definitely yield better results than a spyderco Sharpmaker (I have one). I also reccommend some sort of a stone holder like the Steelex Sharpening Stone Holder. This works well and makes it easier to work with.

Very good whetstone for regular use. Will sharpen any kitchen knife without ruining its edge if you know what you're doing, be they German knives (I use it with my Wusthofs) or more delicate Japanese knives, such as Global or Shun. Highly recommended.

I have gone nuts with this thing. I have sharpened every knife in the kitchen except the steak knives with this awesome combo. The 1000 grit (brown side) is perfect for sharpening up dull knives and the 6000 grit (beige side) polishes the edge to a highly reflective, almost mirror finish.

HOWEVER, this combo is not good for an extremely dull edge or for a blade that needs to be re-profiled. It is possible to slowly re-profile with the 1000 grit, but for me it was an arduous and ultimately wasteful task. I ended up buying a 400/800 grit Norton tool sharpening stone from Home Depot for the knife I had to re-profile.

In conclusion, I am extremely satisfied with this combo King Stone, it does what it's supposed to do. I sharpen my knives at 15 degrees a side on 1000 then 6000, then I strop carefully with a paddle-backed leather strop and stropping compound from Bark River (not on Amazon). This results in crazy sharp knives.

The next step is Chosera stones, they are much more expensive, but I hear they are the cats pajamas :)

NOTE: I was not careful with the 6000 grit side at first and used too steep an angle, the knife actually bit into the 6000 grit and took off a small shallow chunk, the stone is still working great though.

J.A. Henckels International Eversharp Pro 3-Inch Stainless Steel Paring KnifeWhen I first saw this knife featured for a nominal price, I had to rub my eyes to be sure I was seeing right. The word Henckels for cutlery is synonymous with top quality...like Mercedes or Jaeguar is for automobiles. I own some of their premier line of cutlery, the Pro S series, and am spoiled for life. I have paid a young fortune for some of my Henckels knives. (By the way, Amazon is offering several Pro S series knives at a very sweet price right now. Check out their chef's knives.) Since I did not own a 3-inch paring knife, I decided to give this little guy a test drive and am happy to report that it went through the cones with flying colors.

Henckels simply does not make junk, so even with this knife, which is one of their lower end models, you are still getting a good knife. It fits nicely in the hand (especially if you have small hands), and it has good balance. The handle and rivits appear to be the same or very similar to my Pro S series knives; the only difference I see is that the blade is a little thinner. Since paring knives aren't intended to replace the larger utility or chef's knives, just be sure not to tackle large or thick objects with it and you'll do just fine. For the price you get a big bang for your buck. Oh, by the way, invest in the Henckels stone honing tool. Always hone your knife before each use, and clean it (by hand) immediately after use. This is essential to keeping your knives their sharpest and insuring their use for a lifetime.

This is a great knife. I had one for 5 years before the tip broke when my boyfriend used it to pry apart two frozen hamburger patties (which was "user error" in my mind). It stays sharp and was inexpensive enough that I don't fret about putting it in the dishwasher, which I would never do with higher quality, more expensive Henkles.

I have never bought a paring knife before and have always used a steak knife for small jobs. I decided to try a paring knife after trying one at a friend's house.

I am very happy with the performance and convenience that this knife affords.

Used to be Eversharps paring knife was smaller and it fit in my hand better. These work well for a larger paring knife. Love the fine serrations in the smaller knives in this line. The Chefs knife size was a tosser. The serrations were too rough.

Zyliss Pizza Slicer with Crust CutterI'm quite upset about this product, considering I bought it from a local hardware store and paid a premium for it, with misplaced confidence in the brand name. It lasted about 6 months (light home use) before the cheap plastic nut holding on the disc broke. (It's actually a small metal nut embedded in the larger plastic thumb-screw.)

This is a really incredibly shortsighted design decision on an otherwise nice product. Zyliss, stop cutting corners to save yourselves some pennies; It hurts you in the long run, as I will never buy another Zyliss product. Amazon shoppers, do not buy.

I agree with the other negative reviews. I bought due to advertising and Zyliss' reputation but have been very disappointed. The "crust cutter" is useless for my thick-crust, homemade pizza. It's duller and thicker than a table knife, so it merely smashes the crust; it cannot cut because there is nothing to cut with. The nut holding the wheel on is so shoddy that it disintegrated after only a few uses, and I've been unable to locate an acceptable replacement part. Buyer beware!

Whoever designed this thing needs to -in the words of Agent K -"go home and do it again".

The cutting wheel is wobbly, never aligns with the crust slicer (which doesn't really "slice" as much as "flatten"). Eventually, after tightening it so many times, the plastic screw just broke and I chucked the thing in the trash.

What we really love about this slicer is that it is perfect for our needs. We make our own protein bars. Part of our recipe uses egg whites as a binding agent so we have to bake them.

Well this slicer makes cutting them a breeze, and the "crust cutter" edger allows us to cut down right next to the edges of the pyrex pans that we use. A normal slicer won't get into those corners so this thing is GREAT.

This cutter solves the problem of not being able to cut all the way to the crust in a deep-dish pan or a box. It also comes apart easily for cleaning, which is great. But I wanted a more comfortable handle because I use such a knife for slicing and trimming rock-hard Kabocha Squash. I do not hack into the squash with this knife. For that I use an enormous chef's knife and a maul. After removing the seeds I slice the squash in sections and next use this fine knife to remove the skin & cut into chunks. I would like a fatter handle, but the handle provided is comfortable. I already had a 6" Messermeister Meridian Elite Santoku with the Granton edge, I cannot say enough about it. Shun Ken Onion 3-Inch Paring Knife

Shun Ken Onion 3-Inch Paring KnifeI have been hooked on Ken Onion knives since I first bought a Ken Onion Blur tactical folding knife. The lines are both attractive and functional on his knife designs. I then splurged on an 8-inch chef's knife about a year ago. That knife quickly replaced almost all my other knives for most tasks. The handle is perfectly designed to promote a pinch grip that gives you tons of control.

When I saw this knife come across on a lightning deal, I had no choice. For the first time I caught a glimpse of what the characters of Sex in the City felt like when seeing a killer pair of shoes on sale (never seen the show, but I assume that must have happened). Even though I had three paring knives, I had to have this one.

Glad I bought it. This angle is unique, for sure, but it's nice in that you can still get a nice full grip of the substantial handle while avoiding banging your knuckles into the cutting board. Years ago there was a line of Shun knives called Alton's Angles; this seems to be the rebirth of that concept, although Ken Onion gets the royalties this time rather than Alton Brown. This knife is great for handheld paring tasks, as well as work on a board. It quickly became my favorite paring knife.

Let me address the sharpness issue in a couple of negative reviews. If you're comparing this to a victorinox forchner (great knife, no disrespect) or a Wusthof or a Henckels, you probably already have an appreciation for great knife design. However, those are german-designed steels with Rockwell Hardness scores in the high 50s (58 or so). This means they will hold an edge reasonably well, but will also be reasonably easy to sharpen. They are ground to about a 22 degree bevel.

These Shun knives (and Globals, as well as certain Henckels lines, MAC, etc) are made from a harder steel. They have a hardness rating over 60 (as high as 63). This allows them to be ground to a sharper edge (around 15-17 degrees). That means they'll be less adept at crushing bones and processing whole chickens, but you'll get paper-thin slices of tomato or sashimi. You'll also mince ginger or garlic or shallots or chives with ease. However, with a harder steel comes more difficult sharpening. Once sharp, though, it will hold its edge longer.

I highly recommend this knife, and any in the Ken Onion line. I also recommend getting a magnetic strip MIU France Stainless Steel Magnetic Knife Holder, 20-Inches or knife dock The Container Store Knife Dock to hold them securely and avoid banging around in the drawer. I also recommend a wood, end-grain cutting board Proteak Teak Cutting Board Rectangle 20-by-14-by-2-1/2-Inch Hand Grip and Juice Canal, End Grain or polypropylene one OXO Good Grips 10-1/2-by-15-Inch Utility Cutting Board, Black Edge (the OXO fits in the dishwasher). Hand-wash your knife and dry it before storage and you won't have any issues with rust. Unlike carbon-steel knives, this is a very low-maintenance blade.

Lastly, to maintain your blade, I recommend using a honing rod after every use or at least every few uses Shun DM0750 Sharpening Steel the Shun has an angle guide for both german and japanese angles. Note this is a honing rod, and not a sharpener, although most honing steels are still marketed as sharpening steels, unless they are diamond or ceramic, they won't sharpen. I also recommend a dedicated sharpener for use once every 6-12 months. I don't like the rod idea for taking off metal to restore a blade too much room for error. I like one that gives you good control and low risk of damaging blades (i.e. a manual one) my favorite is this one: Spyderco 204MF Triangle Sharpmaker.

This is an extremely well shaped knife, nothing like your average paring knife. It is more like a mini santoku knife in the way it operates. It chops, dices and pares with ease and is extremely easy to handle. I had thought the weight of the knife would make it less capable, but it does not. It cuts through everything with aplomb.

As far as the rust report by another individual. We have not seen that at all. We, of course, do not wash it in a dishwasher. Not sure if they did. But ours shines like new.

Note that at times, some rust can poke through on a knife made of carbon steel. Usually a good scrubbing gets rid of it. But we have not seen that at all on these knives.

This 3 inch paring knife is easily 5 stars. It seems a bit pricy when you realize that for only a few dollars more you can get the much bigger Shun Ken Onion knives, but this is a very handy size and much easier to manipulate and cut stuff than some of the larger knives. Especially if you have not been trained as a professional chef. The blade is very nice looking with the Damascus looking ripples in the blade. It has a 3/4 shank. The bolsters are very well made and fit both the blade and handles very well. The handle looks to made out of some sort of dark wood, possibly Ebony. The feel of the contoured handle is very comfortable and the angle of the blade to the handle seems well thought out. Over all this is a very good knife and I think if you do a lot of cooking this one is well worth the money.

I bought three Shun knives from the lower end of the collection just to see if all the hoopla about Shun was just that or if these knives are for real. They're for real. Great little knife that is very sharp and fits my hand nicely. I shaved a soft peach of its skin and did so removing a minimal amount of fruit while the skin came away effortlessly. Much better than my Wusthoff.

I already had two paring knives (one German, one Japanese) but when I saw this one I had to try it. I have two (different) Shun knives already and so knew the quality would be great and it is. I love the design of this knife because I can use it for all those little jobs that one is "supposed" to use a chef's or utility knife for but in reality a 3" blade is quite enough: slicing or chopping pitted olives, slicing a few strawberries, halving cherry tomatoes, chopping herbs, etc etc. It's especially handy when prepping a small quantity of something for 1 or 2 people. The handle is instantly comfortable -great little knife! I have a feeling my other two parers are going to sulk in the knife block for quite some time, LOL.

Wusthof 3 Stage Electric Knife SharpenerThe Wusthof sharpener is easy to use, and the directions easy to follow. The result is a very sharp knife! However, our sharpener arrived with only three rubber feet and we had to put a towel under the other corner to keep it from wobbling during use. I emailed Wusthof customer service to order the missing foot, and about 10 days later got a generic reply back that "they were sorry to hear about problems with my knife", along with a detailed attachment specifying how to package, insure, and send my knife back to them. I then called customer service to tell them it was a sharpener issue (not a knife) and was told that they don't supply parts and that my only options were to package and ship the whole sharpener assembly back to either Wusthof or to Amazon. The missing rubber foot is at most a $0.50 cent part that simply pushes into place, and I think it ridiculous that their fix to this problem is a complicated and expensive re-packaging and shipment.

This sharpener is the best made. It matches my $700 wet honing equipment with ease. Follow the instructions and you will be very satisfied.Watch out for your fingers!

I found Rada cutlery after doing a search on Amazon for kitchen utensils made in the USA. These are great quality, and I am very pleased that I made the purchase. Christmas 2011 ABC TV challenged us to spend $60 on American made articles. If every American spent this much we could turn our economy around. I wasn't looking for spatulas only found these when I searched "made in America". I love these. They are small and efficient. Unlike their plastic counterparts they take up little storage space. I had purchased a set of steak knives and small knives in a specialty shop in Gatlinburg Tennessee years ago. If there were instructions to not put in the dishwasher I did not pay any attention hence the handles darkened. This did not effect the quality or performance of the cutlery. To hit the $60 dollar amount I purchased several other items made by Rada . After a year and 2 months usage and hand washing they are just like the day I opened the box. I am pleased.

Henckels International Fine Edge Pro 3-Piece Knife SetPurchased these to go with a 7 inch Henckels International santoku that I've been using for years, and the phrase that comes to mind to describe all Fine Edge cutlery is "good enough." No, it isn't restaurant quality, and yes, if you put these through the dishwasher they'll tarnish and probably even start to rust (any metal designated as "stainless" is rust resistant rather than rust proof, and reviewers of other Henckels products complaining about rust and tarnish probably aren't treating their knives very well). As a graduate student on a budget who enjoys cooking, but doesn't always have the time for it, these knives are an ideal compromise between price and quality. Be aware that they will occasionally require sharpening I've had the santoku for almost three years and run it through a commercially available ceramic disk sharpener every few months and it still cuts very nicely and should probably be hand-washed for longest life. With that little bit of maintenance, however, this three piece set can meet nearly all of your cooking needs (it meets all of mine, but then I don't often dress poultry, filet my own fish, or do much that would require a cleaver or really subtle boning knife) for quite a nice price.

Having sharp, quality knives in the kitchen is essential. I have owned this set for a couple years and it is still in great shape. Good form, easy to hold and they stay sharp with the right care.

I came across these three Henckels knives at a pretty decent price and decided to go with it. The knives are amazing I only wish I could find a good yet cheap knife sharpener to go along with it as they (like any other knives) will lose their fine sharp edge after continued use without sharpening. These knives are wonderful. When they are new they are extremely sharp. It is important to be very careful when cleaning them, because it is so easy to cut yourself. I have had my set for over a year now. They are still very sharp, however I notice they require sharpening more frequently now to retain their sharpness. If you are the average cook, these knives will serve you well.

Purchased two sets for heavy duty everyday use, and love the short paring knife. Replacement of SAME that had worn out from use. While the blades themselves are of the same quality, there is something off about the handle material. it looks a bit beat up and even with handwashing, it isn't looking so good. However, the knives themselves are of great quality and perfect if you like a smooth edge that you can sharpen.

I love these knives! They make my life (and food prep) so much easier. Two knives are straight-edge, and the other two are serrated. They're very sharp so I use them with care. To keep them sharp, even though it says you can wash in the dishwasher, I wash them by hand. Even though we have a set of steak knives, I find myself reaching for one of these when I sit down to eat any meal with a meat entree. Another thing which is nice is having a specific knife block just for these knives alone. Yes, this was indeed a good purchase.

I got my first service for 4 from Amazon years ago, and was frustrated to find it had disappeared when I went to order more. Looked everywhere on line with no luck. Then I spotted it in Walmart, with a slightly changed name, for about half what it costs now on Amazon. Anyhow, it's a great set. It's heavy and larger than most, that is the forks and spoons have longer handles. The design is very attractive, with the alternating shiny and brushed finishes. I have three sets now and will go for a fourth. When this flatware was last on Amazon, it was around $20. Fifty strikes me as steep, but I like this pattern so well I would probably spring for it if I didn't know where to get it for less. Highly recommended.

King 1000 Grit Whetstone with Plastic Base

King 1000 Grit Whetstone with Plastic BaseNo doubt the most used tool I carry with me daya to day is my pocket knife. A key issue with pocket knives is maintaining a finely honed edge. The Sushi Sashimi stone costs much less than other professional level sharpening stones, but performs equally well. It is rather portable, and seems to hold up well in field use. It is a wonderful alternative to +$60.00 competitors.

It has also returned the razor edge to all of my kitchen knives. Last night I sliced a roast into paper thin slices using an Old Hickory butcher knife. Great product!

I recently went to a knife skills class taught by Bob Kramer and of course had to go out and purchase whetstones and a 12 in ceramic hone like he had. I purchased this whetstone and a King 6000 Grit whetstone because I didn't think my knives were dull enough to require a 250 grit stone. Now that I have sharpened all of my knives, I think a 250 grit stone would be in order also.

Because I am very new to sharpening my own knives it is hard to review this whetstone too critically. However, I think it is a good stone for a good price which is why I purchased it and it has met my expectations. I am glad I purchased one with a base because it raises the stone off of the counter to more easily sharpen the knives. I didn' know when I bought it but the the stone is securely attached to the base.

I have used this stone exclusively on my kitchen knives which are mostly Shun and a few Henckels.

This is my first whetstone type sharpener. I have no idea how it stacks up against more expensive ones, but it works and the base does a good job of keeping it stationary. This is a 1000 grit stone, which sharpens (a 200-range stone is for blade repair, and the 4000-range stones are for polishing).

The whetstone is far better than the other types of sharpener I have tried. It only requires some basic physical coordination, and gives very good results with only a few minutes of work. There are many videos online that demonstrate good sharpening technique, and they did not guide me wrong.

Moreover, the process oddly satisfying. Anyway, whetstones can be used for any blade type: kitchen, utility, santoku, even an axe. This is the way to go for sharpening.

These King Stones are legitimate Japanese Water Stones made in, you guessed it, Japan. They are extremely versitile and are the highest quality stones I have used. However, there are a few more good companies out there. Water stones are true to the craft of knife honing and sharpening and is a useful skill to teach yourself. I highly recommend watching virtuovice (YouTube Name) on YouTube for excellent tutorials on how to sharpen with stones.

The lower grit stones like the 250 and 400 are great for taking out chips in the blades or reprofiling the edge to fit your needs or preferences. As a camper who beats on knifes and axes, I really need this benefit to take out those chips and these stones do so beautifully.

A good stone grit to breach the gab between the lower grits and the finishing stone is the 1000 grit. This will help smooth out the edge and give it some great sharpness. It also makes finishing the edge with a 3000 or 4000 grit stone an easier and less time-consuming step in the process. Finally, you should use a leather strop with a green and black compound to really get a good edge.

Bottom Line and Reccommending Sharpening System:

1.) 250/1000 grit King Water Stone

2.) 3000 or 4000 grit King Stone

3.) Leather strop with compound

You only really need the 250, 1000, and 3000 (or 4000) grit stones with the strop. I have seen the strop put a better edge than 8000 grit stones. Keep in mind a strop is only 30 bucks or so, and you could almost spend $100 on an 8000 grit stone. This reccommended sytem will make a butter knife scary sharp if you wanted it too. However, the stones are expensive and will loose shape over time depending on how much you use them. But the time you use them will definitely yield better results than a spyderco Sharpmaker (I have one). I also reccommend some sort of a stone holder like the Steelex Sharpening Stone Holder (If needed). This works well and makes it easier to work with.

I have never sharpened a knife before it was always my husband's job. I got into making sushi and decided to learn. After some research I went with this whetstone.It is inexpensive and has good rating and feedback.

I was surprised to find it glued to it's base.After I started using it I realized this helps to keep stone in place.

I watched few videos on how to sharpen knifes and was able to get my dullest knife very sharp again just with this stone and sharpening steel.Not quite razor sharp but great for any slicing I do in kitchen.I guess you will need a finer grit stone to make your knife sharp enough to effortlessly slice paper.

Soak it it water first for about 20 minutes,put paper towel underneath to catch water,as paper towel dampens it will also keep plastic base from sliding around your countertop.It took me about ten minutes and more then few hundred strokes on each side to sharpen my very dull knife.

Moisten your stone with water often and do not lose patience.Watch few videos to help you figure out right angle between blade and stone I find that very important as well as consistency of strokes.By that I mean always sharpen your knife with similar strokes in same direction.

Miyabi Kaizen 9 1/2-Inch Chef's KnifeIMHO a great knife must balance well in your hand above all else, then have a blade that can take, hold and renew a good edge. If the balance is wrong, the blade will suffer as you manipulate it. A good balance in your hand means fewer trips to the steel and to my local pro sharpener. Stretched, my hand is exactly nine inches from thumbnail to the end of my pinky, and as a man of regular height and modest strength, the balance was perfect for me. Way better than the Forschner, F.Dick, Global, and Shun 10" knives in my collection. It has a smaller, rounder but longer handle than most, perhaps the source of the balance. The angle to the tip makes it better for slicing into product rather than rocking back on it (more like a Sabatier than an F.Dick or a Henckles). The blade was as sharp out of the box as anything I have ever bought, and my local pro is certified to keep it that way. I particularly like the finish of the top of the blade, which is rounded rather than squared off, since I keep my thumb and forefinger on the blade itself. I can just imagine the callous at the base of my forefinger dissolving into nothing! Miyabi has a bunch of other models out there, and the blades all seem terrific. But the balance on them varies. If you order one, run through a bag of carrots before you decide if it feels right. If not, send it back and try another.

I just love this product! Very much worth the price while on sale. A bit steep for me otherwise. I will be able to keep these for a very long time. Not too heavy since i am relatively short and taking very heavy dishes out of the cupboards can be a bit cumbersome. They are heavy enough to last and not so heavy i will need to get a chair to take them down!
