I do recommend using a wood conditioner on the handle periodically to keep it in good shape but other than that, care is easy: just keep it clean and don't subject any part of the handle to water for extended periods (I hand-wash mine). If you treasure good tools and want a scraper that's nice enough to think of in terms of passing on to someone dear, look no further.Works wonderfully in cast iron, so much better than wood or plastic.
The edge can also be used to cut things up in the pan or on a griddle, watch next time you are near a short order chef cooking up gyros, philly steaks, or similar, I bet they use something like this to chop and maneuver the food on the griddle.
Keep it nice by only handwashing, don't let it soak either. Occasionaly touch the wood up with some food safe oil, like olive or mineral oil.
The sharp corners can be a liability, be careful not to gouge or stab.

I have owned this cutter for years and it is the only one to purchase. The rounded handles of other cutters look ergonomic, but don't have the wonderful feel of scraping or cutting dough as this one. Think about it. Round handles lose the pressure of your hand as you maneuver this tool to do its work. The handle is made of cherry wood and attached with brass rivets. It is simply a work of art. I purchased the Dexter Russell dough scraper since it is made in the USA. I was concerned due to the negative review about the product quality.The scraper I received has a nicely made smooth wood handle with the blade inserted without exposure on the ends of the handle. The wood is not walnut and appears to be the rosewood. However, this does not detract from the product quality as both woods are good.
There are some surface scratches on the blade, but this does not detract from the utility of this scraper.
I tried out the scraper with a batch of dough I was making into ciabatta bread and the blade cut my dough beautifully. I used a plastic scraper to clean up my countertop as the Dexter scraper probably would scratch.
The logo on the scraper I received is different from the one depicted. However, the same model number is present with USA and the stylized name Dexter.
