Messermeister 8" Chef's Edge-Guard

Messermeister 8' Chef's Edge-GuardI bought this with a set of Messermeister knives. I am a lead line cook and I use my knives and guards all day long for kitchen saftey. In time the guard starts to loosen up, I even had the guards slip off to the point where I had to use tape to secure my knife. In my opinion, get guards that have un/lock clips.

I've been using these for years and am very happy with these. They cover the knife blade very closely which keeps out dust nicely. They are very durable and I can't imagine them breaking anytime soon. Just make sure your knife is completely dry before covering. You should get years and years of use out of these.

Actually I am surprised with the quality and durability of this chef's knife guard. Notice that this guard is not closed from all directions but allows the top part (not the blade) of the knife to go a bit outside if required. It is a light magnetic feeling so it grips the knife very well. Protection is 100%. Great.

The only place for my Joyce Chen cleaver is in a drawer. I recently lost the guard I was using. A quick search of Amazon turned up this one. It fits perfectly and is sufficiently tight to hold it on the blade in the drawer. Just what I needed.

This cover is NOT 2" wide. It will not fit a blade more that 1 3/4" wide. Even the outside width is only 1 7/8". Worthless for my needs.

Lansky Sharpeners Knife Sharpening System Standard

Lansky Sharpeners Knife Sharpening System StandardI've owned the Lansky system for almost 20 years and they perform perfectly and enable me to get fantastically sharp knives every time with a modicum of elbow grease but without any actual skill. Lansky's system is a brilliant arrangement of a knife clamp with sets of holes that ensure consistent grinding angle for the stones that have long steel guides. This solves the problem of how to hold the stone to the knife at a consistent angle. Using stones to sharpen your knives gives you total control and allows you to achieve the finest edge (much finer than using a chef's choice, motorized bench grinder (which can overheat the blade ruining the temper), or any of those ceramic wheel/rod dohickeys). The available angle choices are 17 degrees (for Asian knives), 20 and 25 (for Western knives) and 30 degrees (for hatchets). Lansky offers various different stones (from natural Arkansas stones, to diamond abrasive). This particular set includes 3 synthetic stones coarse, medium, and fine. The stones are of good quality. The fine is fine enough to get your blades shaving sharp. The coarse one cuts quickly, but will be the first stone to wear out. They also give you a bottle of sharpening oil to help carry away the metal shavings to keep the stones cutting. I don't like using oil so I keep a wet paper towel handy when sharpening and wipe the metal off the stones and blade periodically while sharpening that that works fine for me.

To use the Lansky the process is simple clamp the blade into the clamp then scrub the blade against the stone with a consistent angle until you feel a burr (a thin raised seam) along the edge. The burr is your cue to flip the blade over and do the other side. When you get burr on the other side, move onto the next stone. By the time you get to the final fine grade polishing stone and get burr on the last side, then flip and give slight touch with the stone on the other side (to remove the burr but not raise another one) and you'll find your knife is literally shaving sharp (will cut the hairs off your arm).

Is Lansky the perfect sharpening system? For medium and small knives it probably is. Knives over 6"-7" long, however, require you to sharpen 1/2 the knife and then move the clamp and sharpen the other half because the edge angle changes too much if you attempt to sharpen too far from the guide hole. The stones themselves are pretty small (about as wide as your middle finger and as long as your hand) so it can take a long time to do a big knife. I can do a 5" utility knife in about 5-10 minutes, but an 8" Chef's knife can take more than double that which starts to become a bit of a big project. If you do a lot of big knives you'll probably want to spring for an Edge Pro Apex (same mechanical concept, bigger size for much much more money). If you only periodically sharpen then this can be lived with. You shouldn't sharpen your knives more than once or twice a year (or they wear out too quickly) since sharpening removes metal. You should use a honing steel frequently in between sharpenings to keep your knives sharp.

Lansky's system is the best way for normal regular people (non fanatics) to sharpen their knives. It's pretty easy, fun, satisfying, and extremely effective.

It's a little work to sharpen knives; not really sure if the electric one would have done the same.

Dexter-Russell V-LO 3.5-Inch Carbon Steel Parer

Dexter-Russell V-LO 3.5-Inch Carbon Steel ParerI bought this knife for its carbon steel blade, which should retain its sharpness better than stainless steel knives. The knife arrived with a very sharp blade; its handle is a comfortable shape. However, the knife is very light in weight, which makes it feel unsubstantial. I admit that, because it's a paring knife, functionally it probably doesn't need to be heavier. Still, I'd perceive the Dexter-Russell as a higher quality tool if it had more heft.

In fairness I should include also my wife's opinion: "I love the knife--it's so sharp." She notices the light weight, but it doesn't bother her.

Fork Spoon Chopstick Knife Silverware Drawer Organizer #8107

Fork Spoon Chopstick Knife Silverware Drawer Organizer #8107These little drawers seem to be of decent quality, they are flexible and seem durable. The three star rating is because the size of this product listed in the product description is off. On the bag the product came in, it says W68xD260xH42mm, doing a simple conversion gets you 2.67 in. for the width, the width listed is 2.25 in. This creates a problem for me when I want to put three of them side by side in a 6.75 in. space. Being off by a half inch for each of the three gets me something that is nearly 1.5 inches too large for the space I wanted to put it in. I can make it fit, but now it involves cutting the product, which I was trying to avoid by getting a product that met my requirements.

For the poor measurement I remove two stars, it makes it impossible to use for my purpose without modification.

For the quality of construction along with price, it maintains its other 3 stars.

The description says it's a fork, spoon, chopstick organizer. I don't know what kind of chopsticks they are talking about. Mine don't begin to fit in these. But they are reasonably priced and they do the job for organizing my silverware. I haven't been able to actually clip them together and I just have them sitting side by side. So I guess they are ok but I will replace them eventually with a better organizer.

Wusthof Le Cordon Bleu 3.5 inch Paring Knife

Wusthof Le Cordon Bleu 3.5 inch Paring KnifeThe Wusthof Classic 3-1/2-Inch Paring Knife is close to perfection as a kitchen tool. But how do you improve on perfection? In this case, by making a paring knife that's a little less idiot-proofed, and a lot more powerful.

Wusthof's Cordon Bleu line has the same handle as their Classic line. But:

The knives have no bolster behind the cutting area. This gives you a second point at the back of the knife perfect for things like pricking the skin of a tomato to insure a clean slice, or scoring an apple or potato skin as you rotate it against the blade. However, because there is nothing between your finger and the blade, you have to balance the knife properly as you use it, and pay attention to where the knife is resting in your hand. Yes, you can hurt yourself with this knife. Much more easily than with the Classic.

The blades are thinner, harder, and more highly polished than the Classic, with a shallower and sharper angle on the cutting edge. As a result, they will keep their razor edge longer, but you'll have to baby the knife more, and the edge will be harder to steel. (The metal is the same amalgam as the much older Wusthof knives were, before they changed the formula. I finally gave up on using my Wusthof steel, and I'm using a Kyocera ceramic steel rarely to keep my Cordon Blue knives sharp).

This is not an entry-level knife. But if you know what you're doing, it will become the go-to paring knife in your arsenal. Think of it as the turbo version.

I ordered this knife to replace one that had been used as an icepick (by a nameless spouse), and this design is even a bit better -good length and taper -than the one we replaced (which was part of "Emeril" Wusthof knives). We won't be testing its usefulness as an icepick, however.

I do not like serrated knives.

After I bought a set with one of these in it, I realized that I loved this as a steak knife as well as a paring knife. I have purchased a full set of these for just this use, but I end up using these for all kinds of knife work in the kitchen.

I like that it doesn't have the back catch for nice clean continuous cuts, and I have never come close to injuring myself with this feature.

Great look. Great handling. Allows precise control.

Great knife.

The Cordon Bleu series must be the pinnacle of the Wustof line. This knife is a joy to look at, a joy to hold, and a joy to use. If you, like me, like your sopressata sliced razor thin, this is the knife you need. The blade is very sharp and so far I've been able to maintain its edge with the finest grade diamond sharpener.

J.K. Adams 17-Inch-by-9-1/2-Inch Large Ash Wood Wave Knife Tray

J.K. Adams 17-Inch-by-9-1/2-Inch Large Ash Wood Wave Knife TrayWhen I open my knife drawer, my friends exclaim "ooh, Ahh" how beautiful. This product makes for a great quantity of knifes and looks terrfic. Also I have easy access to all my knves.

The item pictured is the J.K. Adams Medium Wave Ash Wood Knife Tray, not the large version. With the large, the steel sits in the middle of the tray with room for three large and four small knives on either side. It is also a lighter shade of wood than depicted. It can be seen on J.K. Adam's website, but even that one doesn't match what was actually delivered in one to me significant respect. The dowels that run cross-wise though the bottom of the product are not flush with the sides of the tray as shown, but rather stick out nearly one quarter of an inch on either side. This not only gives the tray a less polished, craft fair kind of look, it brings the total width to just under ten inches (as opposed to the 9 1/2 inches specified) which in my case made it just a hair too wide for the drawer I had picked out for it.

Overall the tray seems reasonably solid, though I was also disappointed with the quality of the finish and the way it was packaged. There are two small rough, splintery patches across the top that will require sanding. The item came in a stiff plastic wrap with a label that was stuck to the top of the product with what looks like the rubber cement type adhesive you typically see, but turned out to be some kind of semi-liquid goo that smeared all over the wood and was difficult to clean off. It had also oozed into the knife slots and it was a real pain to clear it out.

I like the overall design and the way it holds my large knives, so I'll probably keep it. But if I had to do it all over again I think I'd explore some other options.

Great product. Saves counter space and allows me to make a sharps drawer that's off limits for my children. I finally found one that fits perfectly and fits all of my knives (including steak knives) without wasting space. In my drawer (approximately a 10"x20") it allows a little extra space in the front for my scissors, other sharp items and a childproof lock. Handles are easily accessible given the design. Look at the picture carefullly. The black area next to the block is just extra drawer space covered by a felt liner (not part of the product). When it's in your drawer it's just the wooden part. Still, I love it and would recommend it as a must have to moms and a great kitchen addition to others.

Chicago Cutlery 8-Piece Wine and Cheese Knife Set

Chicago Cutlery 8-Piece Wine and Cheese Knife SetThis cheese knife set is great for the price. The knives are sharp and cut through cheese effortlessly. The wood handles have no finish, so they are a bit grainy, and light in color. However, some mineral oil treatment darkened the color and smoothed the texture.

The box and cutting board that came with the knives are a bit cheap, but for $15, who can complain?

This is a quality product. Nice wood, well made, good quality in all the pieces. Cutting board a little small, but such nice quality for the price still a good buy. Gave it as a gift without hesitation because quality was so high. Recipient loved it. Buying a second one for another gift.

Wusthof Grand Prix 10-Piece Knife Set with Block

Wusthof Grand Prix 10-Piece Knife Set with BlockAfter using a set of Henckels that I gave the folks, I found that my Gerber knives were too thick and didn't cut nearly as easily. Then I started researching the differences between the two top brands, Wusthof and Henckels. The knives are both nearly perfect in balance and cutting ability. The main differences are in the handle preference and finish. The Wusthof have excellent finishing, with no observed flaws. The handle design on the Classic Henckels isn't as refined as that of the classic Wusthof. The Grand Prix knives are razor sharp, wonderfully crafted, beautiful, and a real pleasure to use. They are pricey, but well worth it!

Global GSF-17 - 2 1/2 inch, 6cm Bird's Beak Curved Peeling Knife

Global GSF-17 - 2 1/2 inch, 6cm Bird's Beak Curved Peeling KnifeAmong my assorted bird's beak paring knives, this one has a special place. There's no hiding place for any transfer of salmonella bacteria from poultry to produce, for this knife is made of a single piece of steel, and the solid handle has good weight. (Not all knives in this line have a solid handle.) Furthermore, it stands up to use and abuse, unlike any other knife I've ever had.

I bought mine in a specialty knife store (which has since gone out of business) close to ten years ago. After a nameless family member helped out in the kitchen, it seemed to have disappeared, and I mourned for this little knife. Turns out said family member had accidentally dumped it in the composter, along with a small mountain of vegetable waste. I boiled it and it rejoined the household.

Comfortable to hold, it does a variety of paring tasks well in the kitchen. Slipperiness mentioned in reviews of other knives in this line has not been a problem. Weight and balance are excellent. I like the completeness with which it can be cleaned.

If you have a kitchen or flower garden, you'll find good uses for it outdoors as well. I grow edible ginger, as well as the kind with flowers. For cutting the rhizome from the plant, this can't be beat. I also use it when it's time to thin the heliconias and strip old leaves off lilies.

In perusing reviews about other knives in this line, there appears to be concern about sharpening the Japanese-made steel. I use a Chantry knife sharpener and find it brings this knife back to an acceptable edge.

BOTTOM LINE: If you like the bird's beak style of paring knife, you are likely to find a use for this one. Amazon's price is excellent. I paid about twice the amount and would recommend it even at that price. If you've never tried a bird's beak paring knife, this one is reasonably priced and especially versatile for the reasons mentioned.

First thing to note, if you've not used a bird's beak before, is that this is a specialty function knife. Don't buy it before you get (at least) a few other kitchen knives, especially a parer/utility and chef's knife. Some relatives have come over and tried to use it in conjunction with a cutting board and quickly set it aside--which is fine because they were getting ready to slice a finger off.

I've used it for fluted mushrooms, which is still more work than I'd like, and it does the job fine. It also works well with paring hand-held fruits and vegetables, but not being an expert, I still prefer the conventional gizmos for that.

Where it excels for my wife and I is in cutting up poultry. We usually buy our birds whole. The only time we carve is Thanksgiving. The rest of the time, whether before or after cooking, the knife of choice is this Global bird's beak. It is a veritable joy to disencumber our fowl of their appendages and such. "A hot knife through butter" as the saying goes, applies perfectly here. A whole bird is easily sectioned into six to twelve pieces in seconds. A cleaver can work as fast, but we're more joint-finders than makers, and the small knife and no-cutting board approach works great for us--less space taken, less washing, less mess. The curved point and shorter blade make the non-cutting-board approach such a good choice--I sure wouldn't recommend this technique using those 10-inch "broadswords." Of course a good chef's knife can work well too--you gotta have them, but this Global is perfection.

Sharpening takes extra time and care, but it rarely needs it--keeping a razor edge for at least half a year with about once-per-week use.

Buy Global GSF-17 - 2 1/2 inch, 6cm Bird's Beak Curved Peeling Knife Now

I'm not going to spend a lot of time discussing this knife as it is very much the same quality of knife that you would expect from Global. Just like all Global knives, it is a solid, one piece knife that has a razor sharp edge that stays sharp longer than most other brands of knives.

I originally bought this knife for use in culinary competitions, and it's one of those knives that really doesn't get a whole lot of attention, but sure is handy when you need it. I use it primarily to tourne potatoes. The shape is designed for that purpose, and the knife is therefore often described as a "tourne knife". Sure, you could use it to complete many different tasks from food to general house hold needs, but I wouldn't pay $30 to use it as an all purpose knife when there are so many cheaper options out there.

If you're less interested in the uses of the knife and more curious of the quality of the knife, feel free to read one of my other reviews on Global knives. I use them every single day at work, and I have very little interest in exchanging them for any other brand.

Proctor Silex Traditions 75288R Can Opener, White

Proctor Silex Traditions 75288R Can Opener, WhiteIt works ok, it's a little tricky to put the can in the right spot to open it, but after you properly place it, it opens it very easily. In regards to the "knife sharpener" that it's included, it's the worse, I actually though it didn't have it. It's manual, not electric, it's like a little splice on the back where you're supposed to pass the knife back and forth. I kept my old can opener just so I can use the electric sharpener that it has. Farberware Classic 30-Piece Cutlery Carousel Set

Farberware Classic 30-Piece Cutlery Carousel SetI bought these for an apartment up by college. It came with everything I needed and a easy storage unit. Very pleased.

The only reason for the four-star rating is because one of my steak knives broke it's handle while I was cutting cheese. I have had no other problems with this set, so I am assuming that was just a single defective knife. The only other "complaint" is that none of the spoons short of the ladle have any real concavity to them and are pretty much useless for serving.

For the price, this is a great set of essentials for a simple kitchen

If I could give this knife set zero stars, I would. The way these knives are sharpened, the blade is only angled on one side, this makes cutting extremely tedious. All knives are serrated, so no chopping. Also, the spatula melted the very first time I ever used it, and all of the other items are warped from using them for normal cooking duties. This set it complete garbage, save your money.

It looks nice on the counter and the swivel action is handy, however that's where my compliments end. Save yourself a few bucks and just use your butter knives to chop food, they will cut easier and wont rust as fast.
