J.A. Henckels International Classic 6-Inch Stainless-Steel Utility KnifeThis knife is one of the best products I have purchased as of late. The balance and superior feel of this knife puts it into a class of its own. Other than an occasional pass over a steel it has maintained a great cutting edge. The small size enables you to easily tackle many small jobs that a larger cooks knife is just not practical for. Due to the quality and price I don't place these in the dishwasher. But this is a small price to pay for a knife that I will use for years to come and pass on to my children.

The Classic series knife was the third individual henckles knife that we purchased. Previously we had purchased knives from the Eversharp line and were not happy with them at all. This knive was a pleasant surprise and led us to experiment with more of the Henckles line until we ended up purchasing a Pro S series set that we absolutely love. Although the Classics are not as sharp as the S series knives they are much more affordable and are very good strong and sturdy knives. The 6 inch utility knife is a great all purpose knive that I find myself reaching for more than any of the others.

I received my utility knife several weeks ago ande was so pleased with it that I ordered one more for myself and some for my family members. I first noticed the weight and suspension of the knife and felt it to be excellent. I find that when carving and chopping that is important. I also like the length of the 16 inch blade for all my uses.

It makes me upset when hearing people complain that a pricey Henckels is not as sharp as a $3.5 knife! It doesn't matter how much you paid for a knife, it needs to be sharpened! The difference between a good and a bad knife is the degree of sharpness it can hold and the duration it will last. A good knife should never be serrated so it can be sharped. A knife of $3.5 will never be as sharp due to the material used.

My guess is that some people are comparing a over-used, never sharpened Henckels with a newly bought $3.5 knife. The edge of a knife is a singular point and the sharpness is only determined by the way it is sharpened and the steel composition. A cheap knife after sharpening will go dull quickly and settle to a stable sharpness (much less shaper than a higher end knife). That's why you will see knifes have difficulties cutting through tomato and pork skins. A good knife with well maintained edge can last at least for a few weeks and even that is far better than a newly sharpened cheap knife. A few strokes of sharpening will restore its full luster in no time.

A over-used Henckels can be just as bad as a cheap knife unless being taken care of. Whoever thinks an expensive Henckels doesn't need sharpening deserves the suffering and frustration of using a $3.5 knife when cutting through onions, tomatoes and chicken skins.

I bought this knife set and used for 5 months now. It is pretty complete that it comes with the sharpener. The water got drain in the holder after used. However, the biggest knife tends have few spots of rust but there can be washed off easily. I am pretty happy with it.

Chroma 3-1/4-Inch Paring KnifeThe Porsche Chroma 301 knives are amazing. I have a paring knife and a chef's knife, and they are both the best knives in my kitchen. They're amazingly sharp and perfectly balanced. I do have to warn you, though, that the 3.25" paring knife has a hazardous tendency to ROLL on the counter. If you don't deliberately place it blade-down, it will roll so that it is blade-up, and that is certainly dangerous, if you value your fingers.

I purchased this paring knife for my husband in Nov. 2011. It was on his Christmas wish list. Although I personally found the handle design to be uncomfortable, he was pleased with the knife and he used it daily for paring and cutting apples. Based on the reviews, and the Porsche name, I believed it to be a quality tool. Unfortunately, the knife recently dropped on the floor and the blade broke in half. I have owned quality knives for many years and never seen a steel blade do that. I could see if it were a ceramic blade, but not steel. Our son is a professional chef and he has never seen a steel knife blade break just from dropping it. We are very disappointed, having spent nearly $50 for this small paring knife and to not even get a full year's use out of it. Since it is past 30 days from the purchase I doubt if I would be able to return it or exchange it for a new one, however I will contact the seller and see what he will do. I would not recommend this product.

Cuisinart CEK-40 Electric KnifeThe Cuisinart CEK-40 Electric Knife is by far the best ever, and I've used three other brands. The knife and blades store securely in the very attractive tray and the attached cord tucks away neatly behind the stand. I especially like the bread knife which works wonderfully on crusty breads. The blades slip easily into the knife handle and are just as easily removed. This is definitely a quality product and well worth the price.

I am very disappointed with this product. I was carving my Thanksgiving turkey yesterday when the knife stopped working after it got hooked on bone in the wing. The motor continued to work, but the blades stopped moving. The knife has only been used 3 times, but I had to throw it out today. I opened the plastic case, and found a metal worm gear coming off the motor shaft,and a cheap nylon gear attached to it to move the blades back and forth. The nylon gear was stripped and the knife was useless. My prior knife, much less expensive, lasted for 18 years. The Cuisinart knife is not well made and only works well when it is not under any stress.

I bought this knife and wanted to use it to carve up a roasted pig for a luau party I was having. The knife was a little under powered, it seemed to struggle when cutting larger slices. The pig was quite large (60 lbs) and after about 20 minutes of continuous use the knife became quite warm and stopped working. After a few choice explectives I handed it to my husband. Lucky for me my husband is a mechanical engineer who owns his own business which includes a metal working machine shop. Later that week he took it apart and discovered that there is a very fragile plastic Nylon gear that is part of the main drive. The plastic teeth on the gear were stripped and that is why the knife stopped working. He told me he did a few quick gear calculations (he is a smart fellow) and determined that the plastic nylon gear teeth strength was way underpowered for the design. He was able to make a duplicate gear out of stainless steel in his machine shop and assembled the new metal gear into the knife replacing the junk plastic one. Since that time the knife has worked flawless. I have since carved all sorts of roasts, pork, turkeys and no matter how long or hard the carving is, even if I hit a bone, it never stopped working. The Cuisinart engineers should be embarrased, this is such an easy fix to make (all they need to do is change out the Plastic nylon gear for a metal one, maybe cost them an extra 10 cents?), it is like they never did any research and developement on this product because I know if they tried to cut anything other then bread the dam knife would stop working after about 10 minutes of use. I would say that all the good reviews here are from people slicing bread, if you want to slice meat and use the knife for more then 10 minutes you will need to find an engineer and a machine shop to replace the plastic gear, after that it works great.

I bought this knife in November after reading the reviews here. I feed my large breed dog a "raw meaty bone" diet and wanted a reliable knife to cut pork shoulders and other large pieces of meat. This knife exceeded my expectations. Worked so great on the Thanksgiving turkey (not for the dog), that I bought three more as Christmas gifts.

It does make a peculiar burning smell for the first hour or so of use, and my wooden knife holder was thrown out after the third use. It rests in the drawer just fine with the other larger utensils.

I highly recommend this knife.

First of all, this knife is underpowered. It bogs down easily and the blades feel reluctant to slice into anything. But there is also a fatal design flaw. The internal mechanism of this knife uses a stainless steel worm gear to drive a nylon circular gear which in turn drives the blades. The second time I used the knife (on Thanksgiving) the blades siezed up on a piece of turkey bone. The nylon gear ceased turning because of that but the worm gear continued to spin. I took it apart to see why the knife blades no longer moved even though the motor whirred away. Result? The nylon gear is stripped and the knife is irreparably dead. It isn't that hard to design a mechanism with a safety cutout to separate the gears if one stops rotating (or alternatively, to build both gears out of stainless steel) and given the fact that this is by far the most expensive electric knife there is, Cuisinart certainly should have been able to do so. A knife that disintegrates as soon as it hits something tough is worthless junk. This one cost me $25 per cut.

Shun Ken Onion Chef's Knife

Ken Onion by Shun DM0500 8-Inch Chef's KnifeI got this knife as a kind of impulsive indulgence, I think it looked cool in its own holder and I had heard good things about Shun knives. However, all those good things are true. It is by far the sharpest knife I've owned, and I've got Henckel Zwillings (not the cheapo kind you get at Target) that have been sharpened to what I USED to think was the sharpest blade around.

I'm not dissing the Henckels if I had not indulged in the Shun I would have been very happy with their performance. But I did get a chance to make some observations on how the Shun shone (no, it's not the same "u" as in "Sun" but it's a borderline pun):

Ripe tomato: The Shun needed no sawing action whatsoever. It cut the initial waxy and soft skin like it was being dipped in water. All my other knives need to break the skin either with pressure, angle, or a teensy bit of sawing motion

Dish brush: While cleaning the blade side with a circular motion in sudsy water (safe for sharp knives) I found bits of the brush bristles in the water. Anything that touched the sharp edge was cut, and that has never happened with the best knife I'd had prior to that. I can normally touch a sharp blade without cutting myself, I am not going to try that with the Shun.

Tortilla stack: I make chips out of 8" flour tortillas by taking a thick stack and chopping it into diamonds or strips, then frying. I've always had to get over the knife and press it in because the multiple layers (20) would slow down the blade. Or I'd work in batches of 6-8. With this knife, I cut the whole 20-thick stack with less pressure than I've used for half that many.

Potato while hardly a test for a knife (anything cuts potato) the slicing was awesome. After cutting into the potato, it felt like the Shun DREW the potato into itself and the potato came apart like it was already sliced. If you've ever held a potato in your hand and expected to re-position your hand after you're halfway through, DON'T do it with this knife. It will be cutting into your hand before you even realize it.

If anything got close to cutting like a lightsaber, this would be it. I kid you not. I wonder how long the sharpness lasts, but I'm enjoying it while it's there.

About the Ken Onion design those used to the generous handle on Henckels might find the handle appearing to be a bit short (I have big hands) but that's until you find the thumb and forefinger position that fits almost over the blade. However, once you hold it, you realize it gives you an added cutting advantage. My only complaint is that the advantage is wasted. You'd have to wait till the blade goes blunt before the handle's design can actually help you cut better.

Did I mention I'm extremely happy with it? Happy indulging.

I own more than 100 knives made by most well known manufacturers of fine cutlery. I have a masters degree in food science and I worked my way through grad school as a butcher and instructor of meat cutting and meat processing at a major University. This is the finest knife I have ever owned. It is so fun to use I think up things to do with it as entertainment. Take it from an "expert" this knife cannot be beat. Read the other positive reviews. I have given this knife to my brother and my son (both are gourmet cooks) and they love it as well. Spend the money and have a ball. I have no use for a reviewer who holds a knife in a store and writes a negative one star review.

I have a whole set of these blades, so I'm breaking down my review to two parts: Review of the Shun Classic Blades, and the portion as it pertains to this knife in particular.

I absolutely love this knife and it's my main work horse knife. The 8" blade is perfect size for everyday uses for chopping, dicing, smashing garlic, etc.. In my daily cooking, I reach for this knife first, and may pair it up with the Paring Knife for smaller tasks. I love the look and feel of this knife, I love that it's so unique and beautiful, I love that it comes with it's own bamboo stand for disply when not in use. I don't hold this knife only by the handle though, I wrap my hand around the handle and base of the blade to give me a very steady hand. Many chefs do this with regular knives and that's where I got the idea from, it allows more control and steadiness (you really feel this when you're using the larger knives). I'm right handed and do rest my left hand on the curve on top of the blade to steady and control rocking motion when dicing. I found that it's very ergonomical and seemed to be designed just for me. I have absolutely no complaints about this knife, I wish they made more like it.

Shun knives are beautiful creations period. Since I'm Asian, I love the tradition look and feel of this Japanese knife. I love the beauty of the blade and the dark, polished, Pakkawood handle. The unique "D"-shaped, Wood handles are preferable. The shape fits my hand perfectly, and the wood does not get slippery when wet providing a very secure hold. The steel is of utmost quality and sharpness. Do not put this blade into any old electric knife sharpener! Electric knife sharpeners are made to put one angle on any blade. These blades come with a 16 degree angle and you don't want to be changing that angle. There are electric knife sharpeners that can sharpen these knives, but you'll have to do some research and find out which ones can be a fit with these knives. I prefer to hone with a sharpening steel and manually sharpen with a stone if necessary (and I don't see it being necessary to touch it to a stone any time soon). The blade is sharp straight off the factory and as Alton Brown says it's the sharpest straight out of the factory edge as he's ever seen.

These knives are more expensive than most, but I think it's definitely worth it. To have the sharpest, most beautiful knife around it's no contest. If you are on a budget, build your collection slowly. It's been said that there are only 3 knives that are the absolute basics for any kitchen: A 8" Chef's Knife, a Paring Knife, and a Long Serrated blade for cutting bread and larger items. I would add a thin utility knife and a boning knife to that list next. Then I would add those "in-between" sizes as I get more money flow in. =)

If you plan on spending any time in the kitchen, good kitchen knives are a definite must. Preparation is the bulk of cooking and when you have good knives, it cuts down on the danger of cutting yourself, it adds pleasure to the work, and it cuts down on prep time. Knives are also a very personal choice and it's best to at least go to a store and try it out for yourself first. Shun Knives are designed by the Japanese, so remember it's designed for small hands. This makes it fit most women's hands perfectly, but I've heard of guys with larger hands not like it so much and going back to the German knives. So definitely try it out. It's a personal thing, it needs to fit you.

Why spend so much money on a knife? Well, if you spend a lot of time in the kitchen, and you almost always have to bust out a knife to prep a meal from scratch why not use the best? Why spend that time with items that you love and brings you pleasure to use? Many times, it's the small things that brings us the most pleasure in life, and I consider my Shun knives as one of those things. Having something so beautiful and yet so sharp and perfect it makes my time cooking just that much more enjoyable.

Shun makes the best knives I've ever owned, bar none. They all come with a razor edge and are easy to re-hone with just a few strokes on the Kershaw-Shun steel (well worth purchasing to accompany this knife). It was scary sharp right out of the box. The damascus pattern and perfectly crafted profile slice through darn near anything (food-like anyway) with ease. This one took me a bit to get used to, but after a few tries I've come to really appreciate the ergonomic design. The stand is kind of nice too. The weight, balance, and shape of this knife are perfect for chopping (and heavy slicing). It rocks much better than the "classic" chef's knife design. The only downside is that it tore the heck out of my bamboo cutting board so I had to replace it with an end-grain, hardwood one. I've had it for just under six months and use it just about every day. It has proven to be a great chef's knife, one that really holds up to heavy use and abuse.

I received this knife for Christmas and recently broke it while doing a straight-down cut through cheese that was frozen in the middle.

The lead customer service rep at Shun, named Brittany, said "This is not a chef's knife it is ONLY for cutting fruits and vegetables. Not meats or anything else." Thus, they will not honor the lifetime warranty on the knife.

I'm extremely unimpressed and will not buy another Shun knife again, and although it was nice for the 3 months it lasted it doesn't seem to be as hardy as a true chef's knife.

I have used a few over the years and the ease with which I am able to separate the fruit from the rind with this one stands out. The knife is sharp enough and angled in such a way that it takes very little effort to work around each individual section. It's dishwasher safe, small, but feels sturdy in the hand. I have no reason to believe I will need a replacement for many years to come. Comes recommended if you need one!

I was surprised it was possible for a grapefruit knife to be markedly better than any I had used before. This one has a thin but strong blade with a serrated edge that cuts through a grapefruit like butter.

An absolute essential....since you have everything you need in the kitchen in one attractive organized unit. Quality is there also.

The utensils are cheap plastic that will melt while you try to use them. The knives will snap in half when you try to cut a slice of cheese or into a tough bit of beef. Six of the steak knives broke in half that way. I barely avoided impaling my palm right through the middle with the shaft of a knife when the handle snapped right off. I would never let anyone I love anywhere near the steak knives. The other knives just don't hold an edge. Truly junk.

I love the Ginsu Knife, its very sharp, and can cut thou almost anything! I have not had a chance to use this product yet, however, my expectations are very high in usability.

Can not wait to carve something!!!

Update, I have given this product a few chances. The knife is totally awesome as all Ginsu knifes are, but the fork is kindof "weird" at first I was extremly happy it was so sleek looking, but to actually carve something with it, there is a huge risk of slipping because there is no "finger" guard. So I use a previous "carving fork" and I use this fork to serve at the formal table. after everything is carved.

Otherwise I have been using my Ginsu since I recieved back in 2009 and its still extremly sharp, cuts thou any "tough" product and can slice a tomatoe with out brusing it or mutalating :O)

Mercer Cutlery Genesis 10' Sharpening SteelI don't know why it is called a sharpening steel when it does not sharpen. It is a honing steel for straightening an already sharp edge. As far as honing goes, it works very well. I use this right after I use my blades and because of this, I rarely have to sharpen my blades.

I have two problems with this honing steel: 1) When I first got it, there was a burr on the steel. Fortunately, my blade did not strike this burr too hard and it was fairly easy to get the burr off the steel. However, I am disappointed with the quality control. 2) The handle is an ovoid shape which forces me to hold the steel a certain way and therefore hone my blades on specific sides of the honing steel comfortably. This will lead me to use one area of the honing steel more than the other areas, causing unequal wear on the honing steel.

Other than those two gripes, this is a good honing steel and I am glad I purchased it.

This item is very well built. High quality! Very nice rubber handle that won't slip in your hand one bit. A little heavy in the hand but not over bearing at all! Sharpens very well! 5 Stars!

Pure Komachi 2 Series 9-Piece Knife Set with BlockI have owned these for about 6 months now. At first, they seemed a bit lightweight but after using them, they are perfect. They are well balanced and extremely sharp. So far, there has not been a single negative. If you are used to using cheap knives, you should be very careful when you first get these. We had company at the house who did some cooking and she ended up cutting herself at least six times! She never owned a knife that took so little effort to use and she kept slipping up and nicking her fingers. The knife block is a little large but it displays the colors of the blades very nicely. I tried putting them in a smaller wooden block but they just did not look as good. We use colorful Fiesta dinnerware in the house and these knives add a bold splash of color of their own to the counter top. I liked the set so well that I went back and bought all the remaining knives in the set.

I got these knives because my partner does not want me to put his precious knives in the dishwasher. WELL these knives are much better than his! They are super sharp -amazing when cutting vegetables. I also read that you can send them out once a year to be sharpened for free. I can't believe that! The only negative is the block. It is very big and bulky and the knives only take up like 1/3 of the area they sit in. The knives are too beautiful to be put in it-although it does show their colors off.

I ordered this set of knives as I'll be doing a lot of camping this summer and didn't want to bring my expensive Henckles with me and take the chance of losing them. So, after looking at customer reviews and listening to You Tube's "life regenerator" talk about how he loves his tomato knife, I decided to order this set to take along with me. I love, love, love these knives. They are very sharp and lightweight. As with most other customers, I did cut myself a couple of times due to their extreme sharpness.

The different colors help me to easily pick the knife I want. And the plastic storage case, though a little bulky, keeps the knives from bumping against each other and becoming dull. I've only had the set a couple of months, but the knives are still sharp after daily use. These are the knives I consistently reach for while preparing meals.

Like I said, I've only had them a couple of months, so I'm not sure how long the knives will keep their edge. However, for the price of them, I don't think I could ever be disappointed with them. At this point, I don't have any negatives.

4.5 stars. Sharp. Almost no effort to cut through anything. You better practice safe cutting. Ergonomic fit handles are great. Was a bit concerned with the light weight initially, but so far so good. A few knives will get more play than others. 6.5 inch Santoku is the perfect all-around knife. I like the 3.5 inch utility because it's so versatile. First time I had used sandwich knife. Who knew it'd be so awesome. Sliced thru a multi-layered masterpiece without squishing and making a mess. Fun colors. Very impressed overall.

The -0.5 star is for the huge acrylic base. Chews up a lot of counter real estate and when replacing a knife in the slot, you can get the scratchy metal on plastic action if you don't align perfectly.

This set is described as having a 6-1/2-inch Santoku knife (pictured in yellow), but the set actually comes with a pink 6-1/2-inch Chef's knife. I am surprised that nobody has commented on this before, as the user pictures show the pink Chef's knife as well. I contacted Amazon about this, and they have asked me to return the entire set for the second time now (I returned it the first time because there were only 7 knives). That being said, I do enjoy the small Chef's knife in addition to the larger one and the other knives, but I would have liked the Santoku.

Also, the pictures of the plastic knife block do not do it's size justice. This thing is HUGE! Yes, I did read the other comments and thought to myself that others might be embellishing a bit, but no it's a gigantic plastic block that is about 30% bigger than it needs to be. It's a good thing I already had a magnetic knife strip to use, as I don't have the counter space for the block.

I gave it 3 stars because of the issues above, but the knives are super sharp, lightweight, and visually appealing, so I would definitely recommend them!
