YOSHIHIRO- Shiroko-Kasumi Yanagi Sashimi Chef Knife 9.5' 240mm - MADE IN JAPANI purchased this knife for an entry level sushi chef knife. Knife sees 5-10 hours of daily use. Great feel, and preforms just as well as some of my co-workers masamoto white steel yanagis.

This knife however did take a fair amount of work on the stones to produce a seriously sharp edge. It is sharp at first but definitely would benefit from significant stone work if intended for serious use.

I would recommend this knife to any entry level yanagi user.

I use this knife full time as a sushi chef and it has never let me down. the edge has stayed true week after week...It does require some extra attention because the steel is very sensitive to oxidation, but once you develop a nice patina its not as much of an issue. just wipe after use with a damp towel. out of the box its sharp but after a little work on the stone it becomes a razor. all in all I am looking forward to many years of use out of this knife. hope this helps any future buyers.

I am a female sushi chef. I have been using some other sushi knives and I would say that this one is by far the best knife for slicing seafood and sushi. It's light and the size is just right for a female chef. It is well balanced and has very sharp blade. I strongly recommend it for both professional or non-professional use.

My wife got this for me as a Christmas present, and I've only had time to make sushi once since then, but that one use was enough to convince me to buy additional knives from Yoshihiro. It is neither too light or too heavy, perfectly balanced, razor sharp, and has more than enough length to fillet even very large fish. I have fished most of my 33 years and no knife has ever produced such beautifully clean cuts and fillets as this knife. It took the skin off of salmon so easily I wondered if the skin had really ever been attached. I plan to replace most of my current knives with Yoshihiro models. Worth twice the price.

WMF Manaos 5-Piece Stainless Steel Flatware Place Setting, Service for 1When I received this flatware, I was a little put off by the "made in Korea" stamp after WMF CROMAGNON, a famous trademark from this German company. But after using it for nearly a year now, I am impressed with the durability of the very highly polished surface and the strength of these slender and graceful implements.

This is a classic pattern, but the way it looks on the table is better than in photos because of the way they sit on a flat surface; very graceful. The pieces are a little lighter than my old Oneida, but the Oneida will bend if put to the test and these do not. Constant washing in the dishwasher hasn't dulled the gleaming finish and there are only one or two scratches (when steak knives were thrust blade down into the flatware holder in the dishwasher).

While they are made in Korea, they seem to follow WMF's tradition of quality and great design.

I bought this set to test and see if I was willing to invest in a whole set.

My worry was that they seemed small and light. Once I receive them and tried them for a few days I was very pleased at how they fit in my hands and how well balanced they were. I have since bought an entire set of 8.

TBCL Utility Knife  17 CentimetersI think $100 knives are hype so I took a chance on these more moderately priced knives and I believe it was worth it. They are the most expensive knives I have and now I have two of the utility knives (did give one away though), one of the boning knife, and one of the 15cm kitchen knife. You have to be careful with these knives because once they start cutting they will slide through, so you have to have good control and positioning or will cut yourself. The bad is that the one 17cm utility knife I'm using came with a not so perfect blade though it's still very sharp. It has like three tiny knicks that are hard to see. The blades are thinner then normal blades but I was hoping the material be harder then this. Another problem is that even after washing/drying the utility knife after every use there is a tiny spot on the blade with a small discoloration in the metal. I wonder if it was used for something it shouldn't have been used for or maybe the crafting was bad. The first utility knife didn't have the same problem and is slightly sharper than the imperfect one. Other reasons I chose these knives were their all metal construction and good grip. They are well weighted (on the light side). They have a sharp tinging echo to them when you hit the blade with a fingernail, different then most other knives. This makes me think the handle is hollow and maybe welded onto the blade. Comparatively, my mom has two dollar asian knives (extremely good knives) and those are almost as sharp as these and probably much easier to sharpen. So there is a question of value when I bought these but still think my purchase was well worth it. I hope they last a long time and I won't have to break out my sharpener. I have 15 dollar big company knives I bought at the local store and I thought I was rip-offed in terms of usability! btw the boning knife is thicker then the other two knives and none of the knives have the indentation pockets that reduces food stickage. I think for my next blades damascus steel or ceramic blades will be something i will look into.

there are chepper products out there that will do the same thing. i personally perfer a wet stone over these sharpeners. dose it work? yes, but not worth $70. for one you can get a good diamond steel for $30 and a sharpener of this style for less then $70; though i wsould recommend a wet stone and you learn how to sharpen it that way and a diamond steel is always good to have on hand for those quick edges.

But I quickly took it over and added it to my collection. :) Very nice weight to it. It is much easier cutting things than it was with my Chicago Cutlery set.

Be sure when dealing with this line to use the keywords :silver" to get the nicest quality. Unfortunately, "oiled rosewood" was a descriptor here and is not a nice feeling or looking handle, very rough to the touch compared to my other LamsonSharp "rosewood" knife. These are too pricey to not be happy with them it is going back.
