Mercer Genesis Collection 10-Inch Granton Carving KnifeThe price is roughly the same price as a basic JA Henckels carving knife, but it's arguably better than a Zwillings or Wusthof in performance. It's sharper than my Wusthof Classic, and its handle, which is thick and made of a tacky rubber, is far gripper than the Grand Prix II's, which is a resin and narrower. The balancing points on Mercers (I also have the 10" Chef) are on the bolster itself, while my other blades tend to be either handle (JA Henckels 7" Santoku) or blade (Wusthof Classic 8" Chef's Hollow edge) heavy; I feel more in control with these. The hollow edges are very deep and raw meats easily come off the blade. I wish they didn't use so much labelling on it though.

Outside of getting a sashimi knife, I can't imagine a better knife to make thin, precise slices of meat. I'd recommend Genesis knives for narrow ones like carving or bread knives, and their Renaissance collection for wider knives like Chef's knives and Santokus. That way, the bolster will not be an issue.

Shun Classic 8-Inch Ultimate Cooks KnifeThe knife edge has a very pronounced curve, the 'belly' of the knife doesn't transition to a straightened out 'edge' before ending up at the 'bolster'. This may be a great feature if you rock the knife alot mincing herbs and vegetables, but I personally prefer a more traditional chef's knife profile where the 'edge' of the knife is more flat creating a longer cutting edge that is actually in contact with the board. When you place the edge of the "Ultimate Cook's" knife against the cutting board, you will see that at any angle, very little of the knife's edge is in contact with the board.

What I noticed when quickly slicing, dicing, and chopping various vegetables (green onions, bell peppers in my case), was that I was not completely slicing through items that were closer to me. Because of the continuous curve of the 'edge', items closer to the bolster weren't getting cut completely. You really have to adjust your slicing motion to account for part of the blade / edge that you might say is missing from a traditional chef's knife or santoku.

Bottom line, I am happier with the 8" Shun Steel Chef's Knife. The U-Cook's knife is beautiful, sharp and well made, but it did seem a little blade heavy. The serrations on the U-Cooks seemed like a great idea, but when you have a razor sharp Chef's knife you don't really need them.

This is by far the best knife that I own. I wanted to buy a set of shuns for a long time and finally bought this one to hold myself over until I can afford a small set. AND I LOVE IT!

This knife is fantastic for 90% of the prep work that I do. I make a lot of salsa and bruschetta and this works perfectly. The top third or so of the knife is serrated which makes slicing through tomatoes and fruit skins a breeze. The bottom part of the knife is a flat blade which works really well for chopping veggies and dicing onions and tomatoes, etc.

I bought one of the Ultimate Utility (U-2) knives by shun instead of this one because an employee at sur la table said it would be the greatest thing ever. Honestly, it was just okay. When I used it the first night for making salsa I found myself wishing that 1, it was bigger and 2, that it had a flat section of the blade. So the next day I took it back and bought this one. Best decision I could have made. And sur la table was really cool about exchanging it even though I'd already used it.

And to top it off, it's a shun so it is insanely sharp.

The only con that I can think of is that it is not as sexy looking as the other shun knives. But you know what, that doesn't really matter. It is an amazing knife. It wasn't even THAT expensive because I got it on sale for like bucks.

Long story short, If you purchase only one good knife, make it this one. Even at bucks, it would be worth it.

I try to add a couple of high quality items to my kitchen each year that I will not likely have to replace in the future. I had grown frustrated with the tiny little rust spots that had formed on my cheaper silverware, so this year I decided my purchase would be finer flatware. However, upon pricing 18/10 stainless I was horrified. Most are in the range of $50 per individual place setting. Who can afford that? Obviously not a single girl on a less than glamorous paycheck. After searching the vast internet for something affordable as well as high quality, I opted for these. Initially, I couldn't afford them either. I added them to my wishlist and waited for a miracle. Never fear. Amazon always produces in the long run. So for $105 I got a 12 piece place setting of gorgeous flatware that is well balanced in the hand, beautifully finished, and a joy to own. As others have previously noted, I could have done without the small "china" stamp on the knife handle, but so be it. It is a small sacrifice for the price. Besides, I'm not really trying to impress anyone anyways. I highly recommend this item.

Buyer beware -I was disappointed upon receiving my set to see it is no longer 18/10. Reed & Barton stopped making this in 18/10 a few years ago. I called the company directly to confirm. If it was 18/10, it would be stamped directly on the flatware. It is not. It is only 18/0.

Well built, appropriately flexible. Arrived sharp. I made it sharper. The only question I have is how it will stand up over time. I plan to abuse it by taking it to the boat and filleting a lot of fish in a salt-water environment with it, and sharpening it constantly. It's not the environment for a fancy knife, nor will a cheap one survive. The issue will be the steel which needs enough nickel not to rust and a proper temper so I can keep it sharp. We'll see.

Wusthof 8001 Under-Cabinet-Swinger Knife Storage Block

Wusthof 8001 Under-Cabinet-Swinger Knife Storage BlockLike others, we found the holes in the template did not align with the holes in the mounting block. The holes don't even align very well with themselves if you measure their layout. (See comment about using the template). Also, after redoing the template to match the holes, it was obvious if we lined up the arrows with the front of the cabinet, the back of the knife holder would hit the wall when swung around. An easy fix was to fold over the edge of the template so the back of the arrow heads were in alignment with edge of the cabinet. You also need to remember when using the template that you realigned that if you drill upwards from underneath the cabinet that your template is a mirror image of the holes in the mounting block so use the template with the print side against the bottom of the shelf.

The screws supplied are kind of cheesy and the type that can break if too much torque is applied. We replaced ours with stainless screws (#8x1.25) and used a little dish soap to lubricate the threads.

After all that the install was a piece of cake, looks great and frees up the counter space.

A little more attention to detail and it would be a 5 star for us.

I bought one of these years ago and it has served me very well. However the current product is not the same. First of all the product is not made with any quality. The wood is green and the glue joints separate so badly that my son, who is a woodworker, said there was no way he could fix the last one I bought. Then we get to the knife slots. There is not one slot wide enough for a normal size chef's knife, basic to any knife set. The sharpening steel slot, which on my old block is on the bottom row, is on the top row of slots and, as every steel has a hanger ring, that falls in front of the knife slot below it. For a company as well know as Wusthof it is a disgrace. I sent a letter with photos to Wusthof USA to which I received no reply. Shame on Wusthof!

This knife block has a very nice finish, however it doesn't fit under any standard cabinet. The block that mounts to the underside of your cabinet is about 1" too thin to allow the block to swing out as it is designed. Also, the template does not match the mounting holes in the swivel block, and the screws are not the right length. I am returning mine for a refund.

Also of note the block holds the knife in place by magnets that can scratch/mark the blades of your fine cutlery when you pull the knife out or slide it in.

Altogether, this is a non-starter. Yes, I could modify it and make it work but when you pay this kind of a price for a block of wood with slots in it you shouldn't have to re-manufacture it to make it work.

Like the design--but make sure to inspect the block for cracks.

There was one small crack in this block when I received it. I didn't notice it at the time. After a week, four additional large cracks had opened at the right side of the block where the different pieces of wood are joined.
