I was amazed on how large this thing was coming out of the package..huge. I got this for doing large cutting job in the kitchen. Like I do with every knife I get, I had to put my own edge on the blade took an edge very easily. There is plenty of handle to hold onto while cutting, just be careful with slippery hands there is no hand guard.
I own several global knives and this one did not disappoint. I compete in kcbs bbq contest and must have a sharp knife for making delicate cuts on very soft tender meat for the judges. this knife does it and does it well. this works on roasts as well as brisket pork butts and yes even fish.
The bagel slicer is a well made product, but with one small problem. It's size is fixed, making it unable to slice smaller bagels in an even and equal manner. I found myself making some cardboard shims that I could insert on either side to address this problem. I recommend that the manufacturer recognize this problem and provide a set of wood or bamboo or plastic shims that could be inserted at will, depending on the size of the item to be sliced, and stored within the slicer when not in use. The shims should be a little shorter than the width of the slicer, but a bit taller than the slicer for easy use and easy removal

Extremely poor quality! The wood is not sanded or finished inside, so it could put splinters into the bagel or one's fingers. Poorly constructed, it looks like a high school shop project gone wrong. Don't waste your money on the Fox Run Bagel holder; it is flimsy and poorly designed. The lightweight wood box is unstable and difficult to hold when cutting a bagel. As an alternative I recommend the "Have Your Bagel" from Clever Concepts, a uniquely designed, sturdy, solid plastic device that slices bagels quickly, evenly and most importantly, safely.

I purchased this knife two weeks ago and I have to say it is one of the nicest knife I have owned. I have other knives but most of them I bought at one of the local restaurant supply stores. I am amazed at how thin the blade is constructed. I noticed right out of the box that it was sharp but not as sharp as I would have liked. I read on most of the reviews that these are very good and well made knives at a very reasonable price point but they need some work on the stones. So I got my stones out and sharpened and polished the blade edge. I did the paper test and it sliced very thin strips of paper. It cuts beef and poultry with ease and sliced tomatoes paper thin. The only draw back is that the blade is high carbon and will rust and stain. On mine, I have managed to keep it from rusting but not staining. The staining I can live with and I guess if you want high carbon with good edge retention and sharpening ease then this is what you have to deal with. I would recommend that this knife be purchased with a set of some sharpening stone. Over all this Yoshihiro Gyuto is an excellent knife and I plan to get me another knife, maybe a Deba or Santoku, to add to my collection.

This is the first knife set I've had, and it's been pretty good for the price. I've had them for about a year now. When they are brand new they are super sharp and amazing. Over time they get more dull even when you use the sharpening tool. If you don't mind sharpening them yourself a lot they stay decently sharp...but it takes time to figure out how to sharpen them well.
