J.A. Henckels International Classic Forged 7-Piece Stainless-Steel Knife Set with Block
Okay, so they are made in Spain rather than Germany...so what? These knives are a great starter set for anyone looking to "upgrade" from the dull knives they got as a hand-me-down or when they went off to college.Chefs say that a safe knife is a sharp knife, and you just can't get that with inferior knives. This line by Henckels probably gets overlooked because you don't find it on the shelves of Williams-Sonoma, but they are just as good. Cutting is also faster with a well-balanced knife with some weight behind it, which this set has as well. I've added kitchen shears since I bought mine, and I'll probably add the utility knife, carving set and cleaver before I'm done. The knives you start with though are all you need. I find myself using just about all of them (except the boning knife) almost every day.
Two caveats though...don't put them in the dishwasher and don't forget to use the steel either before or after you use your knives. My sister put her knives (not Henckels, but of similiar quality) in the dishwasher on a consistant basis and the edges got nicked from all the banging around that goes on. Also, using the steel will keep you from having to have the knives professionally sharpened.I have owned an overgrown set of these knives for about 4 (UPDATE: NOW 7 YEARS AND STILL LOVE THESE BLADES) years now and waited until I had significant use and comparison to write this review. I also own similar knives in Wusthof Classic and will compare directly. This review has been copied from other Henckels International Classic Reviews I wrote and has been modified slightly for the particular item being reviewed although I left comments about the other knives in.
Disclaimer: I enjoy sharpening knives so edge retention is rarely an issue for me as I probably sharpen even my best knives too much. Besides stone sharpening every 6 months or so, I also steel my knives just about every time I use them.
The bottome line: I really love this set of knives (although I got one dud in the bunch; the only reason I am not giving this line a 5 rating). The edges are almost if not just as good as the more expensive knives but the finish is lacking (although only somewhat). Relatively great value. I did not feel like these knives were very sharp out of the box but they take a scary edge quite easily and keep it for a long time (many, many months with regular steeling and home use).
8 Inch Chef: This is a very nice knife if you can get over the fact that the finish is not as nice as the higher end stuff. By this I mean that the edges on the handle and bolster are sharper than they are on my Wusthof Classic. It takes and holds an edge well. I also own a Wusthof 8 inch chefs knife and feel like this one takes just as sharp of an edge. I have yet to determine a difference in edge retention between the two lines, so that means they are at least comparible. As much as I thought I would be enamored with the wusthof, I really don't believe that the additional cost is worth the small amount of performance gain you might get by buying the Wusthof. In truth, I still enjoy using the Henckels International Chef's knife just as much as the Wusthof. The heft is wonderful and the curvature of the blade is ideal for chopping. I really like how the point is taperd to a very thin blade. Finish aside, this is right up there with the best of them and allows the user to slice with the point quite effectively.
6 Inch Chef: My wife swears by this knife and it is consistantly one of the sharpest we own. For some reason (perhaps the thinner blade), it holds its edge like the sharp little devil it is. This knife is a true pleasure to own and use. It is very effective and feels wonderful in my hand. I may be becoming a knife snob, but I see no reason to buy any other 6 inch chef's knife, as all you would be getting is a fancier name and smoother edges along the handle and bolster. We reach for this one multiple times each day and it retains its edge far better than expected for the price.
4 inch parer: I don't like this one as much as my Wusthof parers but my wife likes it much better. It is always the one she reaches for (many times per day). I personaly prefer the thinness and flexibility of the wusthof parer blades. This one is quite rigid and although it is very sharp, it does not seem to be as sharp as the thinner wusthof parers, nor does it hold its edge as long. On the other hand, its size is perfect for a parer, coming in at the sweet spot between the 3.5 inch wusthof and 4.5 inch wusthof parers I compare it to. I would love to own a 4 inch wusthof parer. Aditionally, the diminished depth of the blade is probably preferable to the deeper wusthof parer blades for tasks such as peeling toward you. I bought one of these for my mother and it is a good test for edge retention as she rarely sharpens and never steels. .
6 inch utility: I do not use this knife much. It seems to be quite redundant with my 4.5 inch Wusthof parer (which also does not see much use) or my favorite boning knife (a beat up and resurected chicago cutlery 5 inch utility that is scary sharp and a joy to use). In truth, almost every task in my kitchen is done quite well with either a parer or a chef's knife. I really don't see much use for a 6 inch utility. That said, this knife is sharp and pleasureable to use. Still, on this one, I would prefer a thinner and perhaps more flexible blade. It is quite rigid and that makes me not want to use it as much. For sandwiches, cheese, tomatoes, etc. it is quite appropriate, but I would still probably prefer my 6 inch or even 8 inch chefs knives for such tasks as they are thinner at the edge and therefore seem much sharper.
Bread knife: Aside from the fact that this would benefit from a longer blade, this is as effective as any other we have tried. You don't have to have a bread knife this nice, but this one certainly does the job well.
Boning knife: I have honestly never used this knife on more than a trial basis. It just does not stack up to my older chicago cutlery boning/utility knife. You can't really compare the two, however, since one is very flexible and thin(CC) and the other is very rigid and thick(HIC). I strongly prefer a thin, flexible boning knife. The finish on this knife was horrible in my particular set. It was rounded (not supposed to be) on the end and the blade had not been sharpened at the point, leaving a rounded and blunt tip (exactly the opposite of what you want in a good boning knife). I have never been able to get the point to where I want it. I am certain that I just have a lemon and will try to return it if possible.
So overall, I love these knives. Between myself and my wife, they get just as much use as my Wusthof Classics. Unless finish is critical to you or you like to have other people know that you spent a lot of money, do your pocketbook a favor. I think these knives are just as good for much less money.

Looks like there are three kinds of Henckels knives on the market: the ultra expensive kind (which don't have the word "International" tacked onto the end), the expensive kind (which do have the word "International" tacked onto the end and which are made in Spain), and the less expensive kind (which also say "International," made in China or elsewhere). I have the Spanish set and a couple of the Chinese knives, and I just don't think the Chinese ones are worth the price. The Spanish knives, on the other hand, are so amazing that I assume the only reason anybody might want the ultra high-end ones probably has something to do with snobbery. My spouse and I comment almost every time we use the Spanish Henckels knives, "Wow! Why didn't we buy these years ago? Who knew what we were missing?" These knives are absolutely superb and ultra sharp. And speaking of sharp, I've never had to sharpen the Spanish Henckels knives, even a year later, but I did make the mistake of buying a Henckels sharpener, the kind with ceramic disks inside that you're supposed to draw the blade through several times, and tested it out on another stainless knife I've had for years. It took off way too much metal. The sword-like sharpener that comes with this Henckels set is far more effective and gentle, if you ever need it.I bought this block set to replace my Chicago Cutlery chef's knife and paring knife, which I've owned for years. The Henckels are excellently balanced and construction is solid. Out of the box, they are not the sharpest knives ever. However, they're likely to be sharper than the knives they're replacing, and if you get them sharpened, they'll hold an edge with good maintenance. I've used every blade in the set and have been satisfied with them all. I have some slight discoloration of the blades, but nothing too terrible. I've been hand-washing them religiously, but a friend has the same set and tosses them in the dishwasher, and his knives have held up better than mine.Con:
1. Not the sharpest knives ever.
2. Require significant maintenance.
3. Shears should be included in this set.
Pro:
1. Excellent balance, highly functional.
2. All the basic blades are included.
3. They hold an edge well.
4. Block is utterly functional.
5. You will never be able to buy cheap knives again.
Overall, this block set was a fantastic investment. I'd recommend it to anyone getting into cooking. If you're a professional, you'll probably want something better (there are better Henckels, and Wustof too). If you don't cook much at all, this set is probably overkill.I love these knives. They are heavier than the Wusthof Grand Prix line that I looked at, and for not being made in Germany, they are remarkably well-made.
They are fully forged and razor sharp.
I compared these side by side to several sets of Henckels and Wusthof knives, particularily the Henckels Pro S made in Solingen, and I could not tell a major difference.
They might not be top notch, but they are certainly nice enough for anything I'll ever need them for.

After reading positive recviews on this knife, I decided to purchase it. It was everything the reviews made it out to be. VERY sharp and well balanced. At first I was concerned about the handle being slippery, but that went away the first time I was cutting a lot of wet vegetables.I will be buying some other knifes in this series.
Messermeister 7" Chef's Edge-Guard
This is my second purchase. Well worth the protection. I have a small kitchen cleaver which doesn't fit within my knife block. Using the Edge Guard allows me to safely hang the cleaver by the hole hook in the cleaver blade above the counter / beneath a kitchen cabinet. No worries about accidentally nicking something while the cleaver is displayed hanging. Why a second purchase? I had the original EdgeGuard for many, many years and recently replaced the original for asthetic reasons. Recently I tried to use the cleaver to crack open a coconut. I forgot to remove the Edge-Guard and made numerous hard whacks, wondered why the cleaver wasn't cleaving, then realized I hadn't removed the Edge-Guard from the cleaver's cutting edge. To my surprise, the Edge-Guard held its own. Although there were a couple of hairline cracks, the guard did NOT break through to expose the cutting edge--and I'm talking several HARD whacks! I could have lived with it 'as is' but decided to replace it anyway. It has a secure hold on the cutting edge. It would function very well for knife storage within drawers.Actually I am surprised with the quality and durability of this chef's knife guard. Notice that this guard is not closed from all directions but allows the top part of the knife to go a bit outside if required. It is a light magnetic feeling so it grips the knife very well. i purchased these knives a while ago and i have never been happier with a purchase. they glide through meat, veggies, cheese, whatever (oh yeah! and tomatoes, no matter how ripe). most serated knives rip and tear but these are without a doubt the best. you can't go wrong for the price. even though they are catagorized as steak knives, you will find that they serve as utility knives as well. you gotta get a set of these!!!We have had several of these steak knives for years and bought the 6-pc set to add more to our inventory. The design is great, especially with the flip-up expandability. The dishes stand up perfectly in the rack, and we like the utensil holder. At first we didn't think too much of the knife-block cover, but it actually works very well to help the knives dry faster (and more safely). I would have given a five-star rating, except for the poor quality control. One of the hinges for the flip-up section was bent, hindering the movement of the shelf. A plastic cover had to be removed to bend it back into shape. The nice part of having to do this was that I got to test the quality of the welds. I've seen too many spot-welds break when adjacent pieces had to be bent, but the welds on this unit are very high quality. The other negative was that the wine glass hanger (which we don't use anyway) is unusable because poor alignment when the plastic holder was molded onto the stainless wire. Again, a very nice design, but manufacturing quality is pretty bad.Expensive at $80 but one usually gets what you pay for...the problem? Appears that the wire grids are thinly coated with plastic; once that flakes off (took about 45 days of use) then the metal is exposed and then its Rust City. Very surprised because we've owned several of this manufacturer's products over the years without problems. We've had this dishrack for a little under 2 years and while it is the right design and size for our needs, the build quality of the plastic and rubber hole seals just isn't up to par.The plastic area that holds the drain spout is now cracking and the rubber hole seals are now yellow and hard.
This is likely why they offer replacement drain boards for $20.
I definitely recommend spending your money elsewhere as this dish rack is not a good value when you consider cost and longevity of the product.

I got this recently, after moving to an apartment without a dishwasher. So far, I love it.A few people here have asked why there are 3 hinges. This is why:
There is a drain on two sides of the plastic base. You can use one on the long side of the rack, as shown in the picture, or on the short side of the rack (next to the cutlery/knife holder). The bottom of the plastic base has legs on three corners (the hinges). These come folded up into the base. There is no leg in the corner between the two drains.
The legs on the bottom of the draining base are meant to tilt the base (and rack) so that it drains more easily. It's designed for only two to be used at one time: if you're using the drain on the long side, you fold out the two legs on the opposite long side. If you're using the drain on the short side, you fold out the two legs on the opposite short side. Either way, the whole thing is slightly tilted so that the side with the drain is lower and water will flow down to the sink instead of gathering on the base. That's why there's no leg on the corner in between the two drains: it's not about raising the whole rack, it's about tilting it.
By the way, this is one of the things that sold me on this rack. The plastic base for my last rack had a slight built-in tilt, but not enough for the water to drain well. I agree with somebody's comment about directions, though. It's funny to think of a dish rack needing them, but a picture could easily clarify the purpose of the legs. We bought this at a store that specialized in these sorts of things, so an employee told us about its various features.

Although the most expensive dish rack I have purchased, well worth the price. Had I purchased this 2 years ago, overall I would have saved money as I have thrown away so many inferior racks (mold and rust after very little time). Plenty of space available. The flip up shelf is great. A huge plus is the knife block. The ability to change the direction has opened up counter space. Because of the orientation we only use 2 of the cup "prongs". The only con is that it doesn't always drain without a little manipulation, but I think it has more to do with my counter not being level than the construction and design of the dish rack.Highly recommended!!!

.Okay Tuttle-fans. I haven't really encountered too many new things to review lately, so I'm going to take you back in time for a review from the past. This incident took place back in my short-lived "gothic" period many years back. If you remember clearly it was when I had a few gothic "friends" who I believe were in a cult of evil. We listened to a lot of Marylen Mansein, which caused me to change into quite a monster sometimes. I guess you could say that this is the second most outrageous encounter I had during this phase of my life. I've gotten lots of responsed regarding the Marylin Mansin review, with people wanting to know more about my gothic-phase, so I'll give you this little occurence, just sort of as a bonus review. It's not quite as wild, but hey, what do you expect?
Anyways, back after the incident where I got into a HUGE physical altercation with my parents and my dog (Morris), I was put under lock-down for a long time up in my room. I wasn't allowed to do much of anything. Just sitting up there in solitary-comfinment like a caged-animal. This one night I came to the table for dinner, and in my place was a paper plate and plastic utensils. My parents informed me that for the safety of everyone in the house, that i not be allowed the use of any hard or sharp objects at the dinner table. I thought this was the most ridiculous thing ever and thought that surely they must be joking. But, oh no, they weren't! I was to eat off of a paper-plate and they even had for me a red, plastic cup. the same color of my fury burning from inside. I told my parents that this was completely uncalled for. I screamed about it, very loudly for only like a minute. My dad just sat there staring at me, somehow remaining calm. He very sternly told me my options. If I wanted to keep up the attitude, i would have to go back to my room and only be able to feast upon the smells of what dinner was. I didn't even really like what Mom had made. She always makes up her own recipies and is constantly working on a really stupid catalogue of alphabetized "original dishes". She has this ridiculous delusion that she will one day get them published in a book, and she will appear on Oprah or Martha Stewart. That night I clearly remember she served Corn-Chops and Turkey-Ravioli. Not my favorites. But I was reeeeeally hungry.
So anyways, I just didn't say anything and sat down and ate my stupid meal. After finishing it, I figured they couldn't make me give the food back, so i gave them a good piece of my mind. I mean, what were they going to do? Send me to bed? I already had to go back in my room anyway. I told them that i thought they were acting completely unrealistic and that i shouldn't have to be subjected to such idiotic punishments. I told them how stupid they were, and that plastic silver-wear can be just as harmful as silver silver-ware. Then, my dad went on some stupid rant about how i better act right or they might have to "put me somewhere". He wanted to send me some kind of institution or something. A completely irrational threat, given the situation. I did not appreciate his tone one bit. Not being able to hold my rage in any longer, I unleashed all my fury and tore the ends off of my plastic silverwear off with my teeth, right in front of them. I took a HUGE handful of Turkey-Ravioli and flung it at both of them. Dad leapt up immediately, but there was a table between us, so he couldn't get ahold of me. I blind-sided him with a Corn-Chop in the face as he leaned over the table. Some of the garlic-butter must have got in his eyes because he reeled back for a second, leaving mom wide open. I proceeded to mash tomato sauce and Turky-Ravioli into her hair and face. Morris started a bark-jump frenzy so I turned my attention to him.
Now don't get me wrong. This wasn't as serious as the Maralin Mansin incident, but I really wanted to teach them a lesson. No sooner did I start to go at Morris, my dad recovered and held me in a really painful arm-hold. I realized he had gotten the better of me so I simply went completely limp and just laid on the ground in a sort of silent-protest. This really seemed to work, and I just laid there until they went to bed. As I cleaned everything up the next-day as a punishment, I just sort of started to calm down and change back into the real-me in the next few weeks.
In conclusion, this was the last time I really tried to use force against my parents. Like I have mentioned before, I really out-grew this gothic-phase of mine. There were a LOT more things that happened during this time-period, but I would much rather try to keep my reviews in the current-times, and not have to relive this dark-time in my life. Hope you guys liked it. I'm not proud of it in any way, just so you know. You can still e-mail me if you want more. As for the plastic silver-ware, I'll still hold my ground and say that it is just as dangerous as the real silver kind. Maybe even more, because people might let their guard down more. Later.
