Messermeister 8" Chef's Edge-Guard

Messermeister 8' Chef's Edge-GuardI bought this with a set of Messermeister knives. I am a lead line cook and I use my knives and guards all day long for kitchen saftey. In time the guard starts to loosen up, I even had the guards slip off to the point where I had to use tape to secure my knife. In my opinion, get guards that have un/lock clips.

I've been using these for years and am very happy with these. They cover the knife blade very closely which keeps out dust nicely. They are very durable and I can't imagine them breaking anytime soon. Just make sure your knife is completely dry before covering. You should get years and years of use out of these.

Actually I am surprised with the quality and durability of this chef's knife guard. Notice that this guard is not closed from all directions but allows the top part (not the blade) of the knife to go a bit outside if required. It is a light magnetic feeling so it grips the knife very well. Protection is 100%. Great.

The only place for my Joyce Chen cleaver is in a drawer. I recently lost the guard I was using. A quick search of Amazon turned up this one. It fits perfectly and is sufficiently tight to hold it on the blade in the drawer. Just what I needed.

8 Piece Knife Set with Tempered Glass BlockCustomer review from the Amazon Vine Program I do the cooking in the house, so I decided to try out this knife set. They are marketed as "professional", but I would say that they are better described as "high end", the sort of thing that makes a nice wedding gift. The knives are sharp and look good; the holder is stylish (but perhaps fragile), but the knives are not as balanced as other quality knives.

Pro:

There are a lot of nice knife designs here, at one fairly reasonable price. The knives are German steel, but made in China. The small instruction pamphlet says they are designed in Australia. They are very sharp, and have nice chrome accents.

The holder has a 30 day warranty, but it looks great and holds the knives well. It is designed such that it uses a lot of vertical space, unlike most wood blocks that take up more horizontal space but don't reach as high.

Overall, this is a stylish set, and would look good in any modern kitchen.

Con:

The kitchen sheers are not nearly heavy enough for the kind of work sheers are used for. They are more like scissors. There is a bottle opener on one end and (inexplicably) what appears to be a screwdriver tip on the other side of that end.

For a casual use knife, these are somewhat hard to maintain. Because of the high grade steel, they will need to be sharpened occasionally, and for the same reason they cannot be used in a dish washer (apparently they will stain, but possibly rust I didn't try it).

The knives are of a "1/2 design" the steel tang does not go all the way to the bottom of the handle; instead, the steel blade is inserted into the handle. A really good quality knife will have the steel go from the tip of the blade to the bottom of the handle. But that uses more of the expensive steel, whereas this design uses cheaper handle material in the entire handle. The knives work either way, but this is the cheaper construction.

I do not care for the balance of the knives, particularly the Chef's knife; they are weighted towards the blade.

The handles are designed for a casual rather than professional hold; the indentations work well when the knife is held improperly, but do not work as well when the knife is held according to culinary standards. The two exceptions are the bread knife, which works fine with this design, and the utility knife, which is only used for small cutting.

I was astonished to find that the very large box it comes in did not include an assembled block! Not only that, it has to be screwed together. They were thoughtful in actually providing a small screwdriver, but still, at the price point, to have to construct the block? I think this was done because the block is glass, and they wanted to make sure the sides did not break in shipment.

I am worried that the glass block may break. I think they would have done better to use acrylic or some other transparent material. It will last well, if nothing goes crashing into it at some point. Also, despite the sharpening that will be needed, there is no hole to hold a sharpening steel.

Summary:

The knives work well, and will provide good service for a casual chef. The nice design makes this good for a house warming or wedding present. Recommended for these uses, but don't give this to a trained chef!

Customer review from the Amazon Vine Program When you buy a knife set, the knives are what matters. And this is a very nice set of knives. I've always wanted the kitchen shears and these are really nice shears plus. The knives are a great assortment, they feel great in the hand plus they cut very nice (note: I have not tried the bread knife but will this weekend). So from this point of view, they are five star.

The one issue I have is the "knife block". The one I received does not sit flat on the counter. Second, it sits up and down, rather than at an angle. Therefore, it cannot be against most of the walls in my kitchen because you cannot remove a knife without hitting the cabinet above.

Due to the stability issue and having to leave the block in the open, I worry about accidentally knocking it over and either the glass breaking or the block breaking the floor tile. But this is a small issue that I will probably figure out. This is why I really only would knock off a half star for this.

Again, I want to stress that I love the knives and that is what you are buying.

One last thing. This set is well boxed for shipping. The knives each have a plastic blade sleeve with a hard plastic tip protector for shipping. And each knive is then in its own light plastic sleeve. And the knives have their own interior cardboard box to prevent movement while shipping. The block has everything needed for assembly including a pretty nice philips head screw driver! Just be careful when you assemble and make sure the sides line up so there is no wobble.

Customer review from the Amazon Vine Program As a professional chef I've worked with many styles, variations and quality of knives. As a basic set these knives certainly have a nice ergonomic grip and feel, but need to have better balance. You could tell that the tang doesn't completely go to the end of the handle yet they are not off balance so much so that the average cook would know the difference. I am basing this review from a casual to moderate cook with a good working knowledge of kitchen equipment.

I have professional sharpeners at my disposal plus a variety of steels so keeping an edge on these knives is not an issues as other reviewers remarked. I like the ease in which they sharpened and the longevity of maintaining their edge. The fusion aspect of the knives is a little perplexing in that they certainly seem similar to other knives on the market. The short knife (5 inch fusion wave) certainly seemed a bit awkward in its development. Is it a large knife trying to work as a small knife or a small knife trying to pose as a larger knife?

There are no excellent ratings due to the balance being off, the handles shaped more for casual usage, not professional, and poor rating for such lack luster workmanship of the shears. It's like the designers were watching McGyver and trying to come up with a tool that does everything in the kitchen, yet they really missed the mark.

In regards to the block, well, don't even bother putting it together, since the company never bothered to do so. I personally recommend a magnetic knife rack to hold your knives on the wall or cupboard. They stay out of the way, are easy to get too and clean. The gimmick of glass and steel is not worth the bother in putting together. Leave the case in the box and save your time and patience.

Overall, if you own a stamped set of cutlery or something from a bargain chain store then this set will certainly be a nice addition. If you've already invested in quality and are happy with what you have then stick with them and look no further. It's my hope that the company looks at these reviews and goes back to the drawing board and reworks the knives to better represent the professional aspect they were trying to reach. They are not far off, but certainly far enough to where I can't recommend these knives to serious culinarians.

Customer review from the Amazon Vine Program This is a pretty decent knife set. The scissors try to do way too many things (there's a bottle opener and even a screwdriver-like-thing sticking off the handles) and end up doing most of them badly, but the knives are good. In addition to the old standards chef's knife, bread knife, paring knife, and so on is the knife i especially like: the fusion wave. It's similar in shape to a santoku, but only 5 inches long, and therefore much easier for me to handle. (I find chef's knives and even most santokus a bit unwieldy.)

The knives are a little lighter than most others i've used, but not so much that they feel cheap or have terrible balance.

The knife block, though, is cheap, frustrating, and poorly designed. First off, those shiny metal discs in the corner are just cheap plastic covers for the screws. They scratch easily and don't even look that good to start with. The glass loves fingerprints, so be careful when you're assembling it. If you end up with fingerprints between the glass and the plastic, there's no way to wipe them off. And while the clean, vertical design looks nice and takes up less counter space, it also means you can't keep it under any cabinets on the counter. Ours are a pretty standard height, and the only knife we can remove without moving the whole knife block is the paring knife. Lastly, the knife slots are all different sizes, to perfectly fit each knife. That seems like a good idea, except that it's totally unnecessary and makes putting the knives away a chore. The chef's knife, santoku, and fusion wave are all almost the same thickness, so it's really easy to put one of the latter two into the chef's knife slot without realizing. The slots are only a millimeter or two different. Then you end up playing musical knives trying to get everyone into the right slots because the chef's knife can only fit in the chef's knife slot. In a word, annoying.

And while you do have to assemble the knife block yourself, it's pretty easy and comes with its own decent little screwdriver.

After using these knives near-daily for most of a year, they've all held their edges very well. In some cases, better than far more expensive knives.

Customer review from the Amazon Vine Program I've been having a lot of trouble with my hands over the past couple of years, so I was eager to try these knives with ergonomic handles. At first the handles feel small compared to the regular wooden handles, but that size and shape is what makes these knives so comfortable to use. After a couple of months of use, I find the most notable thing about the handles is that I don't notice them. With my old knives, I was always thinking about how much my hand hurt while I was chopping. Now I don't think about it at all.

The knife blades are wonderful. They're high-quality steel, and very sharp. I think your appreciation of these blades will depend on what you've been using. If you're used to very expensive knives, these may not seem all that special. I cook a lot, but I've always used a mismatched set of fairly cheap knives, so these new ones are a wonderful change for me. They're so sharp that I had to adjust my usual way of chopping to avoid nicking my fingernails and fingers. If you buy these knives, be sure to ditch your cheap knife sharpener and get one that's appropriate for these better knives. Otherwise you may see a reduction in performance over time.

The knife block has some good features, but also one thing I'm still adjusting to. It takes up very little space, which is nice. You can slide it flat up against the wall when you want it out of the way. It's more sanitary than the traditional wooden knife blocks. You can wash the entire block if you want to. It's also nice to be able to see which knife you're selecting before you pull it out.

The one drawback for me is the way the knives sit straight up and down in the block. Pulling them out and putting them back is a little awkward if you're used to the conventional angled knife block.

I'm generally happy with the set after two months of use. I think it's a good mid-range knife set for home use. I especially love the chef's knife, paring knife and bread knife, but I'm finding more and more reasons to love the serrated utility knife, which is one I've never had before.

No, it wont, my knife now has a nice ding in it. But if you dont use it on bones, it works very well. It will go through semi frozen meat and chicken easy. I have used it to quickly halve, peel and cube up cantalopes, pineapples, honey dew etc. Nicely balanced, doubled sided edge.

Cutting into squash and cutting through bones used to be difficult. Everyone should have an Asian-style cleaver in their kitchen. This one is good quality and is made in Japan. I almost feel like it should be on display, it's so pretty.

This is the knife that I always reach for when chopping vegetables. It has a good weight to it and it is not too large. It is so much easier to chop when using this knife. I'm glad I purchased it. It did not disappoint me at all.

I didn't try that to cut thick bones like leg bone but its absolutely a sharp one so you must be careful while you're working with. It's wooden handle is also good and made from a quality wood. Since the blade has decent height even my wife uses that frquently for normal kitchen usage like chopping grocers and so on. I reckon it's quite pricy but worthes to get a quality made in Japan cleaver.

1) dishwasher friendly

2) scratch resistant (for the most part)

3) great for everyday use, but stylish enough for formal entertaining

4) this set includes two very generously sized serving spoons (Table spoons), which I have found to be incredibly useful on a regular basis.

Cons:

1) the hold heat extremely well, so watch yourself after they've been run through the d/w or been accidentally left in a pan that you're stiring

2) if you eat spaghetti like a true Italian (which I'm not, but I still eat this way), and wind your noodles around your fork by using a spoon, this is not the set for you. The spoons' bowls get scratched by the fork tines too easily and you end up with a dull-looking finish. Otherwise, this set is very scratch resistant.

3) you won't get much use from the sugar spoon, unless you are a daily coffee drinker. Same thing applies to the butter knife unless you use butter sticks regularly, you won't get much use from this piece. However, both are still good to have on hand.

Overall, we are very statisfied with this set as a whole. They have gotten daily use for the last 2 1/2 years and have served us well and these serving pieces get frequent use.

We are a busy family that has used this stainless set for over five years, and have NO complaints it's beautiful, wears well, does not scratch easily, and matches a plethora of extra serving pieces. I get complements on this pattern all the time, it's comfortable to use, and looks great even after more than five years of hard use.

I originally got this knife when my roommate at my old apartment had one.

I actually got it as a gift for my boyfriend, because he just kept raving about how great it is! It's easily washable, sturdy, very sharp and cuts through just about anything. It's small enough to be less-weildly but large enough to cut through most things you need to cut through (meat, fruit, etc.) For the price especially (my roommate said she got it especially in a certain state, Ha!) I think it's a grade-A all-purpose knife.

Wonderful knife, the Wusthof Classic Ikon are excellent knives. I usually get a Creme handle bread knife for a set of regular knives so that the bread knife is easy to find. I have purchased several for myself and as gifts. I find the German knives are the best for gifts as opposed to the Japanese knives as the German are heavier and less delicate, slightly less brittle metal, easier to resharpen, hold up much better and will not rust when left wet. The damascus folded metal Japanese knives will slowly develop small rust spots over time as it is imposable to maintain perfect formulation and consistency of stainless steel alloys when doing the folding. The Japanese knives are unique and the more expensive brands are beautiful and truly excellent if cared for carefully however they are brittle and prone to tiny chips in the cutting edge and the mentioned rusting if not dried after use. Leaving them in the sink wet is totally unacceptable where the German knives will generally be OK. The best knife I have is a Japanese folded metal $240 for one knife, but the best overall and by far the best for gifts are German especially the Wusthof Classic Ikon. I have purchased many knives of many brands for gifts and am only trying to help others benefit from my experiences.

Wusthof makes outstanding knives. No question. But from online images at Wusthof and here, I thought these particular knives--the Classic Ikon Creme--would be a lovely addition to my kitchen. I liked the cream-colored look so much more than the standard black (or stainless) so ordered three of them: the bread knife, the paring knife, and the chef's knife.

I was unpleasantly surprised when they arrived to see that the handles (not the blades) appeared "dollar store" cheap. They had very little weight to them and actually gave the appearance of being cheap plastic. I was initially astonished, then dismayed, then bitterly disappointed. I have no doubt that the knives themselves are of excellent quality. Wusthof is known for that. But I was so disappointed with the look and feel of the handles that I didn't even bother to try them out. I re-wrapped them within a half-hour of receiving them and notified Amazon that I wanted to return them.

It's a shame really. I would have been proud to have a set of Wusthof knives in my kitchen. Probably another of their collections would have more than satisfied me, but I ended up going with the recommendations from ATK and got knives that are not only better looking and of equal quality but were much less expensive.

Wusthof has a good reputation for quality. And it has some lovely knives. What a shame this Classic Ikon Creme is not among them.

I bought this tea kettle elsewhere but I wanted to share my experience. I used this kettle daily. Steam came out of the spout and at the water lid (I couldn't get it too tight or I'd never get it off) thereby decreasing the power of the whistle, which ended up close to non-existent. The bottom had begun to rust inside and so I had 'floaters' that had nothing to do with my tea. I only had it for a couple of months so kudos to the Chinese manufacturers that have put together another fine product. It's in the garbage and I'm shopping for another kettle.

The first time we used this knife we were too aggressive and caught some of the rind. (I was using it in the way I had used inferior grapefruit knives in the past.) The second time I learned how to use it and it is wonderful.

I previously ordered a double headed grapefruit knife from Amazon...what was I thinking. You need to hold the blade to use the opposite side of the knife, it's just downright dangerous. This is easy to hold, cuts well and can be easily found in a kitchen draw by it's yellow handle.

This is a very hearty Clever. It's the best one that I've ever owned. Matter of fact, right out of the box I was able to handle a full buffet for Christmas and since then to now, I can still chop Ribs. Onions, Tomatoes, Steaks, everything. I checked the blade pitch and longevity and this is the best mechanically and overall I've owned. It's guaranteed you will not be disappointed, My wife doesn't like it because it's to big for her.

I've had it for several weeks and have found nothing wrong with it so far. I would rate this one as very high quality.

Victorinox 12-Inch Granton Edge Slicing Knife with Fibrox HandleFor years I've used an electric knife to slice turkey, roasts, ham, etc. No matter how well I sharpen a carving or chef's knife, I've been unable to avoid sawing back and forth to complete a cut, or worse, having the meat just tear apart as I cut. And thin, deli-style slices are just a dream, even with a sharp electric knife.

This slicer has cured all that. It's long enough to complete a breast cut on a 30-lb turkey in one stroke, and wide enough to make that stroke in a dead-straight line with little or no guidance from me. Thin ham slices for sandwiches are no problem at all. And it's sharp enough cut through the tenderest meat as if through warm butter. The small grooves on the blade seem to keep slices from sticking, making for an effortless cut.

I bought this knife on the basis of a review in Cook's Illustrated. You can spend more, or less, but I don't think you can buy a better slicer.

We too purchased this knife after a reading a review about in Cooks Illustrated and heeding the advice of Food Network's Alton Brown.

We were convinced that we wanted a knife that sliced paper thin and in one stroke, did not wander during the cut and thus produce non uniform slices, and did not leave cutting ridges on the face of our meat.

We roasted prime rib and set about carving it. Our first impression was that it was too flexible and too thin. The first few slices looked novice like. We were also disappointed that we could not seem to slice one piece of roast in one motion as demonstrated by Alton.

However, when we fished out our 10" chefs knife for comparison, we immediately appreciated the difference. The chefs knife could not cut slices as thinly, consistently, or as cleanly as the Victorinox. We then compared it to our Henckles knife that is part of a carving set we received as gift. The Henckles is 8" of forged steel and beautifully finished, but it left us wanting more flexibility and four more inches of blade. The Victorinox abundantly provides both.

As we practiced, we became proficient. We found we could slice cleanly despite having to reciprocate the knife, we could slice uniformly, and most importantly, we could duplicate the deli sheer thin widths we like so much.

Potential buyers desiring these characteristics will not be disappointed

I am the proud owner of a set of Wustof Trident knives. I bought a bulk piece of NY Strip Steaks (about 2-1/2' long) and decided to cut it into steaks, run it thru my Food Saver 2 steaks at a time and freeze them. I first tried my super whiz bang Wustof Chef's Knife (which I sharpened first). Hmmmmmm. Wasn't doing the job. Then I tried my Wustof Slicing Knife (which I also sharpened). Hmmmmmmmm. Wasn't doing the job, either! Last shot: My Victorinox Slicing Knife (didn't sharpen it). WOW! I cut 15 steaks off the rack or strip or whatever it was with ease. It held its edge, felt good in my hand, stayed relatively straight through the cut (not having done this before, the first 2 steaks were a bit irregular) and worked like a champ!! I won't give up my other knives, but I'm more than overjoyed at the smooth job this knife did. It did a great job on the Thanksgiving Turkey, too. Well worth the money. Oh, BTW, read about this knife on Cooks Illustrated. Great reference!!

I use this knife to slice beef brisket when I am competing in BBQ competitions. I need those slices to be absolutely perfect. No saw marks, completely equal and uniform, and no tearouts. This knife is unbelievably sharp and the length allows me to do a slice in one long pull. The hollows in the blade keep the meat from 'sticking' to the blade and messing up the cut. I love this knife and it was money very well spent.

I've owned this knife for a year. Excellent for general cooking, chopping vegetables. Very sturdy, comfortable, still extremely sharp after 1 year of use. I'm not a knife expert by any means but I like to cook and this is my favorite knife. I would buy more of this brand for sure.
