Lansky Sharpeners Knife Sharpening System Standard

Lansky Sharpeners Knife Sharpening System StandardI've owned the Lansky system for almost 20 years and they perform perfectly and enable me to get fantastically sharp knives every time with a modicum of elbow grease but without any actual skill. Lansky's system is a brilliant arrangement of a knife clamp with sets of holes that ensure consistent grinding angle for the stones that have long steel guides. This solves the problem of how to hold the stone to the knife at a consistent angle. Using stones to sharpen your knives gives you total control and allows you to achieve the finest edge (much finer than using a chef's choice, motorized bench grinder (which can overheat the blade ruining the temper), or any of those ceramic wheel/rod dohickeys). The available angle choices are 17 degrees (for Asian knives), 20 and 25 (for Western knives) and 30 degrees (for hatchets). Lansky offers various different stones (from natural Arkansas stones, to diamond abrasive). This particular set includes 3 synthetic stones coarse, medium, and fine. The stones are of good quality. The fine is fine enough to get your blades shaving sharp. The coarse one cuts quickly, but will be the first stone to wear out. They also give you a bottle of sharpening oil to help carry away the metal shavings to keep the stones cutting. I don't like using oil so I keep a wet paper towel handy when sharpening and wipe the metal off the stones and blade periodically while sharpening that that works fine for me.

To use the Lansky the process is simple clamp the blade into the clamp then scrub the blade against the stone with a consistent angle until you feel a burr (a thin raised seam) along the edge. The burr is your cue to flip the blade over and do the other side. When you get burr on the other side, move onto the next stone. By the time you get to the final fine grade polishing stone and get burr on the last side, then flip and give slight touch with the stone on the other side (to remove the burr but not raise another one) and you'll find your knife is literally shaving sharp (will cut the hairs off your arm).

Is Lansky the perfect sharpening system? For medium and small knives it probably is. Knives over 6"-7" long, however, require you to sharpen 1/2 the knife and then move the clamp and sharpen the other half because the edge angle changes too much if you attempt to sharpen too far from the guide hole. The stones themselves are pretty small (about as wide as your middle finger and as long as your hand) so it can take a long time to do a big knife. I can do a 5" utility knife in about 5-10 minutes, but an 8" Chef's knife can take more than double that which starts to become a bit of a big project. If you do a lot of big knives you'll probably want to spring for an Edge Pro Apex (same mechanical concept, bigger size for much much more money). If you only periodically sharpen then this can be lived with. You shouldn't sharpen your knives more than once or twice a year (or they wear out too quickly) since sharpening removes metal. You should use a honing steel frequently in between sharpenings to keep your knives sharp.

Lansky's system is the best way for normal regular people (non fanatics) to sharpen their knives. It's pretty easy, fun, satisfying, and extremely effective.

It's a little work to sharpen knives; not really sure if the electric one would have done the same.

This Santoku weighs almost 3 oz. less than other brands... a trend that I've found throughout this line. I've tested this one at work and I need something heavier.

No complaints on the blade, edge, and finish though, it's top notch.

Reusable Cloth Snack Bag - Red Polka DotI use these in my children's lunches instead of hundreds of ziplock baggies each year. They're pretty simple, and could be easily made yourself, but when would you ever sit to do that. They go through the dishwasher well, the velcro closure holds, designs are nice. They sometimes hold colors, like orange from cheetos, but wash out well with a good gentle scrub. I would buy these again, and just might. I haven't had them long enough to attest to longevity, but they look & seem like they will hold up well worth the price, and Im doing a little part for the Earth, while saving a little on those plastic bags.

I have four boys, and when I consider how many snack & sandwich sized baggies we go through...well, these turn out to be a great value. Use it for more than one school year, and you SAVE money.

Not to mention, they are easily washable -I've never put them in the dishwasher -usually, I just rinse or use a sudsy cloth to quickly wash them out. They hang out in the dish drain to dry.

The idea of a reusable bag is great but these are really only useful for things like pretzels or Goldfish. There's not a lot of room in there so you can't pack it in like you can a regular plastic bag. I would say if you are only looking for something for a dry and small snack, these will work.

This set is stamped metal. The gauge is heavy but Henckels is pushing the limits of how light they can get away with lightening the stock and portray it as Henckels Quality. I am reluctant to use the fork to lift a 20 pound turkey or roast. I believe the fork will bend under the weight. A well made forged carving fork will easily withstand that kind of application.

I need to remember this set is priced under $20. The knife has an interesting kind of serration. It isn't the usual wavy serration but a fine toothed cut. When I used it on a roast beef last weekend the blade tended to saw the meat rather than cut or slice. I must say I WAS able to cut clean, thin slices using the knife. I also should mention the serrations are cut into the blade on one side only. I used a very fine diamond wetstone to lightly hone the other side before carving. The honing did improve the slicing through the meat.

The knife feels good in the hand when slicing. It would have been nicer to have a blade a couple of inches longer though.

The set is wonderful for the price point (under $20). If you are like I am, though (a serious cook/chef), you would be happier to wait to save up for a high quality forged carving set (like a Lampson-Sharp brand for example). This set isn't really up to the Henckels name quality reputation.

King 1000 Grit Whetstone with Plastic BaseNo doubt the most used tool I carry with me daya to day is my pocket knife. A key issue with pocket knives is maintaining a finely honed edge. The Sushi Sashimi stone costs much less than other professional level sharpening stones, but performs equally well. It is rather portable, and seems to hold up well in field use. It has also returned the razor edge to all of my kitchen knives. Last night I sliced a roast into paper thin slices using an Old Hickory butcher knife. Great product!

I recently went to a knife skills class taught by Bob Kramer and of course had to go out and purchase whetstones and a 12 in ceramic hone like he had. I purchased this whetstone and a King 6000 Grit whetstone because I didn't think my knives were dull enough to require a 250 grit stone. Now that I have sharpened all of my knives, I think a 250 grit stone would be in order also.

Because I am very new to sharpening my own knives it is hard to review this whetstone too critically. However, I think it is a good stone for a good price which is why I purchased it and it has met my expectations. I am glad I purchased one with a base because it raises the stone off of the counter to more easily sharpen the knives. I didn' know when I bought it but the the stone is securely attached to the base.

I have used this stone exclusively on my kitchen knives which are mostly Shun and a few Henckels.

This is my first whetstone type sharpener. I have no idea how it stacks up against more expensive ones, but it works and the base does a good job of keeping it stationary. This is a 1000 grit stone, which sharpens (a 200-range stone is for blade repair, and the 4000-range stones are for polishing).

The whetstone is far better than the other types of sharpener I have tried. It only requires some basic physical coordination, and gives very good results with only a few minutes of work. There are many videos online that demonstrate good sharpening technique, and they did not guide me wrong.

Moreover, the process oddly satisfying. Anyway, whetstones can be used for any blade type: kitchen, utility, santoku, even an axe. This is the way to go for sharpening.

These King Stones are legitimate Japanese Water Stones made in, you guessed it, Japan. They are extremely versitile and are the highest quality stones I have used. However, there are a few more good companies out there. Water stones are true to the craft of knife honing and sharpening and is a useful skill to teach yourself. I highly recommend watching virtuovice (YouTube Name) on YouTube for excellent tutorials on how to sharpen with stones.

The lower grit stones like the 250 and 400 are great for taking out chips in the blades or reprofiling the edge to fit your needs or preferences. As a camper who beats on knifes and axes, I really need this benefit to take out those chips and these stones do so beautifully.

A good stone grit to breach the gab between the lower grits and the finishing stone is the 1000 grit. This will help smooth out the edge and give it some great sharpness. It also makes finishing the edge with a 3000 or 4000 grit stone an easier and less time-consuming step in the process. Finally, you should use a leather strop with a green and black compound to really get a good edge.

Bottom Line and Reccommending Sharpening System:

1.) 250/1000 grit King Water Stone

2.) 3000 or 4000 grit King Stone

3.) Leather strop with compound

You only really need the 250, 1000, and 3000 (or 4000) grit stones with the strop. I have seen the strop put a better edge than 8000 grit stones. Keep in mind a strop is only 30 bucks or so, and you could almost spend $100 on an 8000 grit stone. This reccommended sytem will make a butter knife scary sharp if you wanted it too. However, the stones are expensive and will loose shape over time depending on how much you use them. But the time you use them will definitely yield better results than a spyderco Sharpmaker (I have one). I also reccommend some sort of a stone holder like the Steelex Sharpening Stone Holder (If needed). This works well and makes it easier to work with.

I have never sharpened a knife before it was always my husband's job. I got into making sushi and decided to learn. After some research I went with this whetstone.It is inexpensive and has good rating and feedback.

Moisten your stone with water often and do not lose patience.Watch few videos to help you figure out right angle between blade and stone I find that very important as well as consistency of strokes.By that I mean always sharpen your knife with similar strokes in same direction.

Chef's Choice 100W Diamond Hone Knife Sharpener, WhiteI've been using the Chef's Choice for years now. I still use the one I bought in 1992 almost daily. My knives are still in wonderful shape and hold their edges beautifully.

The guesswork has been taken out of knife sharpening with this machine. I'm only so-so with a steel and in any case, a steel can't do the three stage sharpening that the Chef's Choice does. Since it holds the knife at the perfect angle for each step, it makes it easy for the fumble-fingered (like me) to create a perfect edge every time!

I'm buying one for my daughter now, mine is in perfect condition after more than 10 years and I imagine it will be for years to come yet!

I paid over 100 dollars for this very sharpener back then, which was a LOT of money at the time. They've come down so far in price that you haven't any excuse not to get one now!

I've had one of these sharpeners for several years, and I have to echo another reviewer's comments: This tool is fine for average household knives, but if you know the difference between a sharp knife and a SHARP knife, you won't want to use this on your good cutlery.

I was raised by a knife afficianado, and learned knife sharpening the old-fashioned way (with natural and diamond stones, steels and careful technique). The results with this unit don't hold a candle to a knife sharpened the "right" way. As mentioned by others here, the edge left by the Chef's Choice is pretty rough when compared to a razor-sharp edge, although it IS useful for utility knives or re-setting the edge angles on an abused knife.

I've used this tool to good results "fixing" other peoples' knives -you know the kind -the ones that have been loose in the gadget drawer for 20 years, used for everything from hacking through frozen meat to tightening screws, and have never been sharpened. That said, I'd never let my Henckels, Wustofs, ot Forschners get close to this thing.

It's a fast way to repair abused knives and get things started towards sharpness, but by no means does it produce what I'd consider a "final" edge.

I salivated over getting a Chef's Choice electric sharpener for at least 10 years and I am glad I did not take the plunge. I was at my sister's home on Saturday and tested her Chef's Choice sharpener. I can only say that I would never ever let this machine get close to my expensive kitchen knives. This machine, in my opinion, is designed for the vast majority of folks, who have not a clue what a razor-sharp knife is or how to keep it razor-sharp using just a steel. This sharpener may be okay for sharpening mediocre knives but it's a definite no-no for fine cutlery. Let me list the problems with this sharpener:

1. It will ruin your expensive Henckel's or Wusthof's finish. It grinds a highly conspicuous 1/8" to 1/4" wide set of bevels measured from the knife edge, using the rough diamond wheels, leaving very rough marks behind. The results are so ugly, you'll swear at yourself for being so stupid for testing your fine knives on this machine. The diamond wheels are coarse and rough. Gone will be the once beautiful satin/mirror finish on your knife's original edge.

2. Even with the 2nd stage fine-grit hone, the resulting knife edge is still VERY rough by my standards. Again, you will have to know what a truly razor-sharp knife is in order to put this into perspective. If you are one of the vast majority of folks who do not know what is a razor sharp knife, then you'll likely be very satisfied with the result that the Chef's Choice can give you. But once you know what razor-edged sharp cutlery is, you'll never let this machine touch your knives again.

Keeping knives sharp is no magic. First you need to treat your knives well by not letting the fragile sharp edge touch hard objects such as dinner plates, tile or stone countertop, silverware, kitchen sink, dish washer rack, etc. Learn to handwash your sharp knives. Use your knives only on a cutting board. Then learn to keep your knives razor sharp by using a steel on a regular basis. If you really need help, then a diamond-embedded honing steel followed by using a regular steel is still a much better solution to restoring a very dull edge than using a Chef's Choice.

Bottomline is this is basically just a glorified bench grinder on the countertop. Your choice to purchase it or not will depend on your need and your knife collection. For dirt-cheap knives that are sold at supermarkets or on TV, the machine may be a godsend. For fine cutlery, avoid it entirely.

I also have to echo the comments of other reviewers when saying if you have inexpensive, common cutlery this sharpener will work OK. If you have Chef's Quality cutlery don't bring it near this machine. It leaves a rough edge no matter which stone you use and simply isn't meant for good quality knives. If you paid a couple of hundred dollars or more for your set of kitchen knives, get them professionally sharpened. If you have run-of-the-mill cutlery this machine will do OK.

I bought this product 10 years ago for about $80 just so I could try to recondition my fading knife collection (mostly Forschner and an odd Henckel, Chicago Cutlery and it like). I was afraid that I would have to buy all new knives.

I didn't I am still using the same knives (and have one or two new ones in my knife drawer). Follow the directions and take your time. You can, after practicing, get your knives to slice paper, and that is certainly sharp by anyone's definition.

The directions could be easier to understand. Read them several times.Then read them some more. Sharpening does take patience and time. And you didn't learn to tie your shoelaces or ride a bike the first try either! For all you whiny-hinies who complained about 1/4 inch gouges and the like, I can only shake my head and wonder if you were holding the knife backwards or upside down...

For all of you who mentioned your "expensive cutlery" and it's "fine finish", I can safely assume that you don't understand why your $249 stock pot doesn't make fine soups automatically, etc., etc.

I have a selection of Global knives which I have collected over the years, after I asked a gourmet cook what kind he preferred. "Global" was his quick response.

Using the recommended sharpener, roughly three times a month, has kept them in excellent condition.

I love the design and they all look great on a magnetic rack attached to the wall in my kitchen.

When comparing price with other "fancy-schmancy" brands which I have bought in the past, and long since put them in the "spare" drawer, these have been the best overall deal.

It's Global, so between the high quality steel and the 10 degree edge, it is ridiculously sharper than any other blade on the market. Definitely not for the amateur home cook, but if you have to prep several pounds of product, this is the tool you want to have. Works fantastically for everything from parting poultry to julienne veggies. Highly recommend this blade to anyone putting together a serious set of work knives.

I'll be honest; I ordered this knife because I liked the looks of it, so fortunately it cuts pretty well. If I get the handle wet, though, I find the knife a bit hard to hold, with a tendency to twist in my hand. I get around it by wrapping a bit of paper towel around the handle.

I adore my global knife 4.5 inch GS-1 ("kitchen knife"?). So much so that we got a second one and am now thinking of them as christmas gifts because they are so wonderful. Definitely prefer the 4.5 inch to the 5.5 inch which we also purchased (it's much more comfortable and easier to handle).

Can't recommend this knife highly enough, for the feel of it in the hand, excellent cutting, the ease of use, great weight, easy to clean etc.

People actually comment on it when they are visiting.

This is a perfect small/mid-size knife. It comes razor sharp out of the box and has no difficulty handling any task appropriate for its size. It came sharp enough to thinly slice the seed of an avocado, not that you would ever want to. It fits well in my medium/large hands. This knife is fantastic.

Wusthof Classic Nakiri Vegetable Knife with Hollow Edge

Wusthof Classic Nakiri Vegetable Knife with Hollow EdgeWorks exactly as expected. I have a lot of experience with Wusthof and Henckels high end knives.

We use it as a rocking slicer, much like what was intended by a proper chef's knife, but the rocking motion is slight and, because the blade is thinner, it is easier to make thin slices of celery, carrots and other low diameter vegetables.

If used for large diameter vegetables (onions, most root vegetables), it has to be lifted for a forward slicing motion, so you might as well use the chef's knife. I don't believe in chopping motions with knives, especially with a knife like this with its thin Asian angle of edge.

Get it sharp, keep it sharp and it even does a great job on tomatoes.

We use ours for vegetable prep and find the knife to be stable, comfortable in the hand and easy to use. The curved end and overall depth of the blade facilitate a rocking motion that simplifies repetitious tasks and the hollow ground blade releases the sliced foods easily.

This is simply another great tool from Wusthof and our current go-to knife for daily use.

This knife gets the job done! However, it could be a little heavier for better control when doing fine cuts on carrots and stringbeans. The lighter the knife is, the harder you have to press down on it (and hope your finger is not in the way smile). There is another Wusthof Nakiri that looks almost the same, but twice the price. This may be the heavier model.
