Mercer Cutlery Genesis 4-Piece Forged Starter Set, Steel/BlackIf you are searching for fully forged, qualities knives on a budget, I highly recommend the Mercer Genesis series. I am a bit of a foodie and have used ceramic blades, Wustofs and Henkels in the past. On a functional level, these knives pair right next to those. Used in culinary schools, the blades are of top quality and the knives are well balanced in the hand. Some who I have shown my knives to have objected to the synthetic "soft" handle, but I think they were mostly just mad at the price I paid when they compared these to their much more costly German ones. Are they as pretty as a set of Global knives? No. But they are sharp, durable and won't break the bank. If you are looking for a show set, you might want to look elsewhere, but if you have some cutting to do, these knives should please.

Bought this as a gift for a friend for Christmas and he loved it. I'm a culinary student and I think my Mercer Genesis knives are great.

I'm not sure if I would consider this a cheese knife, but it is extremely handy nonetheless. I like this version over the other style (with a pointed tip) because it does not have the tendency to poke holes in pockets and such. After buying a utensil holder that was twice the price and not being able to close my shallow utensil drawer, I ordered this item and Copco 2555-7872 Large Mesh 3-Part In-Drawer Utensil Organizer Together, they achieved exactly the storage I needed and wanted simply. I was concerned I wouldn't like the mesh (rather than solid) but have found 2 advantages to it:

1. I can put instructions for kitchen appliances under and still see them.

2. Easy to clean because can just lift the trays.

I really see no downside to them, but if you are considering getting them, you should know they are pretty industrial and modern looking. For me, they don't match my kitchen style at all, but since they're in a drawer, I really don't care. Some people might though.

I prefer these to plastic (they feel more long lasting and well-made) and wood (easier for me to keep clean).

The price is great, especially with Amazon Prime.

Jaccard 45 Knife Meat Tenderizer

Jaccard 45 Knife Meat TenderizerAt first glance, this looks like a really great product. I purchased one and used it one time, and it really made the beef roast very tender. Then I went to wash it and discovered that the stainless steel on the prongs are just pot metal with a stainless steel coating. Some of the stainless steel coating had come off and bits of it were in my beef roast. I had to throw the roast away, for fear of eating pieces of metal that would most likely cut me up inside. I hoped and prayed that the beef I had eaten, did not contain some of the metal bits. Please beware of this product. Why couldn't they just used solid stainless steel prongs, which would not exhibit this problem. Again, beware because the stainless steel metal can peal off and bits of metal can be lodged in your food. VERY DANGEROUS.

After using this tenderizer for a few months, I have included it on my list of kitchen essentials. I have had other knife type meat tenderizers that were hard to clean, easy to rust, and not as efficient as this one. I like this one because it has thin flat blades as opposed to some that have the thicker prong type blades that basically poke holes in the meat. Norpro Professional Meat Tenderizer I thought it was doing a decent job until I switched over to this one. The thin blades on the Jaccard slices through the tough connective tissue rather than poking holes in it. The Jaccard also covers more surface area than the other tenderizer. It seems that by having the three rows of blades and slicing through the tissue, the meat doesn't draw up and become tough and chewy.

For my first use, I put this to the test on 1 1/4 inch bone-in pork loin chops (see comments for recipe). I tenderized twice on both sides and put them in the brine for a couple of hours as opposed to the 4 listed in the recipe and grilled them. They were superb! Tender and juicy without any chewy pieces in the center. I was really impressed with the results. I gave the recipe to one of my guests who tried it and said they turned out good but weren't as tender as the ones I did! I guess I should have told him to buy and use one of these first!

I have also used this on split chicken breasts. I normally cut them in half lengthwise and then pound them down a bit to guarantee tenderness. I decided to try the tenderizer on them instead of cutting and pounding, and it worked like a charm. I seasoned them first with salt/pepper and a little onion powder. Then I rubbed them with an oil/garlic/chopped fresh sage mixture and let them sit for about 15 minutes before coating them with bread crumbs to oven fry. They were tender from the thickest part down to the tip, seasoned all the way through, and it didn't take that long to cook them all the way through.

To clean the tenderizer, I took it apart and hand washed it with my nylon kitchen brush and set it on the counter to dry. It cleaned up easily and the blades didn't rust. The case that comes with the tenderizer is a plus as it provides protection for the blades.

The Jaccard Meat Tenderizer is an excellent tool to have, and it gets my recommendation.

This is an excellent item. But I still pound skirt steaks with a "tenderizing" mallet first. The combination make the steaks truly "melt in your mouth" tender. This cleans easily by just putting it, intact, into the dishwasher.

I ran this thing over a tough chuck roast a few times and I could cut it with a fork. A great Item in the kitchen. As with any sharp object, be careful, especially when cleaning it.

Norpro 18 Inch Aluminum Magnetic Knife BarI was a bit hesitant to order this after reading some reviews that said it was hard to install properly/evenly. I had visions of a wobbly knife rack, but decided to order it anyway.

Well, here's how NOT to have a wobbly knife rack (and it's Norpro's fault for not including any instructions whatsoever): the black plastic parts at each end which eventually hold the screws, COME OUT! Yes, they slide out from the back of the bar. So what you should do is remove those plastic end pieces, measure the correct distance and put the screws into the wall, then slide those plastic pieces around the screws, and snap the magnetic bar back on.

That's what I wound up doing, and the bar is perfectly mounted on the wallnot at all wobbly or loose.

The product itself is nice, heavy quality, and a good length. Totally happy with it, and would buy it again.

The knife holder is very nice. It works well, tension is just about perfect for keeping the knives secure and not being too difficult to pull off. Looks good, and unlike the other reviewers i found the wall anchors and screws to be perfectly capable. Good buy.

I received my order about an hour ago, it is hanging and full of knives, and I love it. We had one similar to this years ago and I only thought about not having it when I moved into a tiny apartment. Because I read through the reviews I was able to hang it right in a couple of minutes, The black end caps come off to make mounting it to the wall a snap.

I definately recommend this item.

The problem with the mounting system is that it's too easy for the endcaps to slip off of the screws. Instead of the screws going completely through the endcaps (or the bar itself, for that matter), the endcaps slide onto the screws. Basically this means that you have to mount one endcap to the wall, tighten it, slide the bar over the endcap, and then slide the remaining endcap both into the bar and over the other screw (meaning you can't tighten the second screw). Unless you get them exactly right, the bar has about 1/4 inch of play and slides back and forth, and because the endcaps are not particularly tight, this means that pushing one end can push the opposite endcap off the screw. I was tempted to drill holes through the bar and use some very long screws with heads that I could make flush with the surface. This was a little more work than I wanted today, though.

And yes, the mounting hardware is inadequate. They provided the weirdest, most useless wall anchors I've ever seen. They're not tapered, so they can fall into the wall quite easily if your drilled hole is even slightly too large. Even after using my own screws and anchors, I was uncomfortable with the amount of movement, so I hot-glued the entire thing to the wall; that won't keep it from falling, but it did reduce the wiggling.

It holds knives perfectly, but Norpro should come up with a different mounting solution. I took off 2 stars for the poor mounting solution and hardware.

Wusthof Classic 6-Piece Chef Knife Set

Wusthof Classic 6-Piece Chef Knife SetI normally do not like knife sets no matter the quality because you get stuck with a bunch of knives you simply do not need. As this set was given to me as a gift I am sort of stuck with it. I must say though that I have been quite happy with everything and really do not have that many complaints. I did find that the 8 inch bread knife was a bit sort for my particular taste; feeling as I do that these particular knives should be at least 10 inches long. I also immediately replaced the sharpening steel with a better grade ceramic one as they do such a better job.

These knives are without bulging bolsters which is good as they are a waste anyway and do nothing but interfere with the sharpening process. The balance is good and they came very sharp. They are rather easy to keep sharp. I did not like the visible tang that runs the length of the handle as that is just another bit of steel that has to we watched for rust and corrosion and is a bit of a gathering place for grunkies to breed.

The grip is comfortable and the knives to the job they are paid to do. The company certainly has a good reputation and these are certainly not bad knives per se....its just that had I purchased them I could not have purchased the entire set.

Overall I have to give this set four stars but please not that the removal of one star is more from personal preference than anything else. I think that most home cooks would delight in this set.

NOTE: They say these are "dishwasher-safe." No, no, no! NEVER EVER place your good cooking knives in the dishwasher nor should you was them in a sink with other utensils or dishes. This is a fast way to end up with dull blades. This is very, very bad and basically bad advice from the company here.

So sharp my wife almost cut her finger off! Not kidding! But she loves them irregaurdless. These are quality knives that are razor sharp and get the job done. Great Christmas Gift (except for Lorena Bobbit) haha!

Shun DM0705 Classic 9-Inch Bread KnifeMy experience with bread knives had generally left me feeling that they are never particularly sharp, but make up for it with a toothy serrated edge that digs into food. When you're talking about bread that counts for a lot. Bread isn't exactly the toughest thing a knife has to deal with.

Based on that previous experience, this breadknife didn't look terribly impressive. The serrations are smooth and rounded rather than aggressive and toothy. It didn't look like something that would bite into bread. But I'd read a rave review of it, and everything else I read about Kai knives was overwhelmingly positive. I've also had very good luck with Japanese cutlery, so I thought I'd give it a shot.

It cuts like a laser. Slides right through breads and salami (which I end up using it for all the time) very smoothly and with very little effort. The blade is razor sharp, which I learned when I got a little careless (didn't used to have respect for breadknives, remember) and it sliced off the end of a fingernail without the slightest resistance. THAT left me very respectful. The gentle serrations let it dig into it's target without tearing or throwing loose a crumb. It also has a nice, meaty asymmetrical D-shaped handle that really fits in the palm. This may not be for everyone, so give it a whirl before you commit to buying, but I think it's great.

If you need a breadknife and want a quality piece (and if you get a good knife and take care of it you should only need to buy one, ever) this is the hands down obvious choice. It's a bit more expensive than the Major German Brand cutlery, but easily worth it.

As a general comment, I think anyone looking for good kitchen cutlery should consider the Japanese brands first. I've used knives from Global, Kai and Kasumi, and up against Henckels and Wusthof there is just no comparison. We have the Kai breadknife, a Kasumi chef's knife, a Henckel's 4-star chef, Henckel's 4-star santoku, Henckel's 4-star slicer, Wusthof Grand Prix utility, Wusthof Grand Prix parer, Wusthof Classic granton slicer, and a Kyocera ceramic chef's. When I look at the knife block I really just see the Kai breadknife, my Kasumi chef and Those Other Knives.

Any knife shopping I do in the future, I will be looking at Kai first. Kasumi is also an incredible brand, and a bit finer and sharper than Kai, but they run about 50% more. I got my Kasumi chef's as a gift, and it's a treasure, but if I were laying down my own money it's such a close call I'd probably go with Kai, especially since I prefer their handles.

I am not hung up on Japanese knives I use both Japanese and German manufactured ones, depending on the task and which kitchen I am in. But I only use two bread knives, the Shun Classic and the Shun Elite. I don't know if either knife is particularly "pretty", there are blades around that have more layers than the Shun Classic and thus look nicer, and the (much more expensive) Elite has just a few layers and the blade is not any more attractive than others. The "D" handle of the Classic is nice, for right handed people. All I know about these knives is that whenever I have one of them in my hand no bread is safe I look for excuses to slice bread. It feels that good to use, and boy can you cut a thin piece. I have not had that feeling with any other top quality bread knife made in Germany or Japan. I bought others, tried them, and they do not compare. I don't know anything about longevity, ask me in ten years.

Shun knives are beautiful creations period. Since I'm Asian, I love the tradition look and feel of this Japanese knife. I love the beauty of the blade and the dark, polished, Pakkawood handle. The unique "D"-shaped, Wood handles are preferable. The shape fits my hand perfectly, and the wood does not get slippery when wet providing a very secure hold. The steel is of utmost quality and sharpness. Do not put this blade into any old electric knife sharpener! Electric knife sharpeners are made to put one angle on any blade. These blades come with a 16 degree angle and you don't want to be changing that angle. There are electric knife sharpeners that can sharpen these knives, but you'll have to do some research and find out which ones can be a fit with these knives. I prefer to hone with a sharpening steel and manually sharpen with a stone if necessary (and I don't see it being necessary to touch it to a stone any time soon). The blade is sharp straight off the factory and as Alton Brown says it's the sharpest straight out of the factory edge as he's ever seen.

These knives are more expensive than most, but I think it's definitely worth it. To have the sharpest, most beautiful knife around it's no contest. If you are on a budget, build your collection slowly. It's been said that there are only 3 knives that are the absolute basics for any kitchen: A 8" Chef's Knife (or some kind of similar, large-ish chef's knife), a Paring Knife, and a Long Serrated blade for cutting bread and larger items. I would add a thin utility knife and a boning knife to that list next. Then I would add those "in-between" sizes as I get more money flow in. =)

If you plan on spending any time in the kitchen, good kitchen knives are a definite must. Preparation is the bulk of cooking and when you have good knives, it cuts down on the danger of cutting yourself, it adds pleasure to the work, and it cuts down on prep time. Knives are also a very personal choice and it's best to at least go to a store and try it out for yourself first. Shun Knives are designed by the Japanese, so remember it's designed for small hands. This makes it fit most women's hands perfectly, but I've heard of guys with larger hands not like it so much and going back to the German knives. So definitely try it out. It's a personal thing, it needs to fit you.

Why spend so much money on a knife? Well, if you spend a lot of time in the kitchen, and you almost always have to bust out a knife to prep a meal from scratch why not use the best? Why spend that time with items that you love and brings you pleasure to use? Many times, it's the small things that brings us the most pleasure in life, and I consider my Shun knives as one of those things. Having something so beautiful and yet so sharp and perfect it makes my time cooking just that much more enjoyable.

Another good thing to know is that although the Shun Knives are usually offered for right-handers, you can get these knives for left-handers. You just need to find the guys who stock and sell those ones as they are less known, and less common.

This is a great knife. It is far and away the best bread knife I've ever had, so good I just replaced it with itself.

Shun Classic is my brand & line of choice for "ancillary" knives (I'm happy with all of them. I just prefer a more exotic, and thus expensive, primary knife.).

Pros:

+ Really sharp. Most bread knives just saw at food, this is more of a serrated slicer.

+ Tip of the blade comes to a hook-ish point. This is amazing for getting through the bottom crust of "artisanal" breads.

+ Great length. It's long enough to really slice with but not so long that it's awkward in a small kitchen.

Cons:

The character on the blade is painted on. It will come off eventually and look dirty/bad as it does so. (True of all knives in this line).

The handle has a very strange smell when new. I've noticed this with all my Shun Classic knives; however, this one was the strongest. It goes away after 8 weeks or so.

Once it's dulls it is much less useful. Serrated knives can be sharpened in principle. I cannot do it and I'm yet to find a place that will. The shape of the teeth on this blade are such that once the cutting edge is dulled the knife really has very little to work with. This makes it a bit of a "disposable" knife. On the plus side it dulls much more slowly than a heavily used knife (chef etc). I got 3 years out of mine and replaced it with the same exact thing. If you deal primarily with sandwich loaves I suspect you'll get a much longer service life.

Suggestion:

I hate to speak use Amazon to prompt the competition, but I've found Shun knives are often less expensive at Bed Bath and Beyond using their 20% coupon (also true of All-Clad).

Shun FYI:

If you are considering a large Shun investment you should know that as of 4/1/2011 they are discontinuing their lifetime sharpening/replacement program. This was one of the big selling points of the line in my mind.

I noticed before I bought this knife that ALL its reviews were five stars, and this one rates it that way, too. Bakery slicers always produce slices too thin or too thick, so I do it myself. Before I used this knife, I had to view this as a necessary but moderately difficult chore. Not any more! As one of the previous reviewers remarked, now I look for opportunities to slice bread!

Victorinox 8-Inch Wavy Edge Bread Knife, Rosewood HandleI've owned several brands of bread knives, from Henkels (brittle blade broke) to Farberware (dangerous junk) and for the past 20 years I've owned and loved this exact bread knife. In fact, I've used it so often that I wore off the serrations resharpening it and I called Victorinox to discuss this with them. They indicated that ALL of their knives have a Lifetime Warranty and that if they couldn't fix the issue, they'd replace the knife for a $10 flat fee. Can't go wrong with that!

I also own their 8" Chef's Knife, Santoku and 5 of their bird beak paring knives, all with Rosewood handles and have NEVER had an issue with the handles smelling as another poster mentioned.

BTW, I also own a half a dozen of their Swiss Army Knives. Victorinox makes the BEST STEEL in the world. Period!

Keep 'em sharp and they are the best tools in the world. Bar None & I'm really picky!

Good knife. I have four of these already, they are 15 years old and are my standby knives. The bread knife just just adds to the collection. I am sure it will last as long as the others. For those that need a little extra detail, the knife's blade is polished, very sharp, and flexible. The handle is solid. Good seller, shipped quickly. Good to go.

Blade is sharp. Packaging caused blade to be curved from handle to tip -couldn't straighten out. There's a large gap where tang enters handle (I was surprised at that, given its NSF certification). VERY lightweight (some may prefer that).

After the wooden handle gets wet it smells like a porta potty (literally). The oder is so strong it will actually stay on your hand after using the knife. Other than this issue the knife is great. Unfortunately, the amsomeness of the blade is a mute aspect because of the smelly handle. In case you're wondering, I hand washed the knife as directed by the packaging. I returned the knife, and will most likely order the same one with the plastic handle.

This is my favorite knife for home use. It is hard to find in stores (and even on Amazon) and comes only in the Classic line (not the Classic Ikon line). Most residential counters are too high for those of average height to use the rolling wrist action that professionals use. Thus, the length of a cook's knife for home use is less important. (That said, the 4.5 inch knife is too short for rolling the wrist, but the 5 inch is just long enough, when I need to roll along.) The handle of the blade rides high enough off the cutting surface to permit easy chopping without finger contact. The 5-inch length is perfect for the most common every-day tasks. In short, buy this knife if you can find it. I own one and have given two as gifts. You cannot go wrong with this one.

They were thinner than I expected, although they are sturdy enough and don't bend. In the picture it looks like the handles are a brushed satin finish and the rest shiny, but in person you can barely tell the handles are a different texture. And there is a ridge between the handle and stem, which ends up just looking cheap. Looked like diner flatware. Nice enough if that's what you're looking for, but I was looking for something classier and more high-quality. I was a little peeved at the high-end case with the combo locks that the flatware came in didn't want the case, would rather they had put all that money into improving the quality of the flatware.

Thank GOD I ordered it early because when I saw the set, the silver is spotted with dark spots and it looks like it was already used even though the packaging makes me think that it has to be brand new. I'm torn about returning it so I'm going to try to clean the silverware and hope I can get it clean enough to look nice and shiny in my pictures....

This was purchased for my Wife's Sister's wedding. We read the one review about the tarnish on the silver coating, but since the other reviews were ok we took our chances. Well, what a mistake. They arrived fully boxed and wrapped in tissue paper, but when opened were found to have dark blotches all over both peices. We tried to clean them with a silver polish, but after an hour finally gave up and packed them for return. Luckily, my wife was able to find the exact item in Macy's today for the same price (expect for sales tax added). She explained to the sales person at Macy's our experience and asked to open the box before making the purchase. The items were perfect, and so the story has a happy ending. The only thing I can think of is that Amazon is selling seconds, items that are not up to retail standards. I never had a problem before with anything purchased at Amazon, but this was a disappointment.

I've had some good quality German cutlery for over 25 years. However, the 'factory' sharpening steel wore out long ago. I replaced it with a 'diamond' type sharpening rod, however, I just couldn't seem to produce the type of edge I really wanted and needed. Furthermore, after purchasing some new knives that had poorly ground edges, which didn't cut like I knew good quality knives should cut, I decided to reseach various sharpeners on-line to see if I could find a reasonably priced, good quality sharpener to help me get my knives "back into shape". That's when I came across this one. Even though no reviews had been given on this model yet, I purchased it because I liked the fact that the manufacturer specialized in cutlery sharpeners (of many different types) and that this manual sharpener specified it used diamond sharpening wheels that could sharpen serrated knives as well.

The night it arrived at my house I went to work... I resharpened every knife I had in my kithcen (Cleaver; filleting knives; serrated bread knives; 6", 8", 10" cook knives; specialty meat slicing knives; boning knives; and so on...). I began with the dullest of my knives to see just how well the sharpener would work on a knife with a poor edge. Well, it took a few trys and some additional re-reading of the instructions for me to get the feel of the sharpener and to produce the results I desired.

The "bottom line" is... this sharpener will do just what the manufacturer says it will do. Those 28 year old German knives are, once again, in daily use right along side with my newer knives.

I'm very pleased with my purchase... I also like the compact size of this sharpener which makes it easy for me to take it wherever want, and that it stores conveniently in one of my kitchen drawers (also, I don't need electricity to make it work).

I wasn't hopeful when I got this knife sharpener. I'd had a similar-looking sharpener before, and it had done a terrible job. For years I've been sharpening my lives the old-fashioned way, with two different grades of stone and two different grades of steel. Time consuming, but effective. But this sharpener seems to be just as effective and a whole lot quicker. I'd recommend it to anybody. I haven't tried it on serrated knives and am skeptical about what it'll do to one. The serrations pretty much demand a complicated sharpening process that is best done by the factory. But if you keep your straight-bladed knives really sharp, the only serrated knife you'll really need is a bread knife, and they rarely need sharpening.

We had a Wusthof that worked well for many years. We also have the Chef's Choice 120 Diamond Hone which works very well. But for everyday use the Chef's Choice 464 manual sharpener is perfect. It keeps the knives sharp longer than the Wusthof use to do. Highly recommended.
