Zwilling J.A. Henckels Four Star 8-Piece Knife Set with Block

Zwilling J.A. Henckels Four Star 8-Piece Knife Set with BlockThis is the 3rd set of Henckels I've owned. I sent the first set to the local cutlery store for sharpening and they came back with a different personality. Didn't cut like Henckels anymore. Really disappointed. In search of a replacement set, I got the lower end Twin Signature 11pcs set. It was stamped, not forged. They cut well, but the knife felt cheap compared with the real forged Henckels.

I am really satisfied with this Four Star set. Feels solid, even weight distribution from front to back, and cuts like butter. My friend has a set of Twin Crusine which is so well built that ended up being too heavy in the back. Feels like I am just about to lose control and dropped the knife. Gives me the insecure feeling that I might cut myself trying to overcome the Twin Crusine under control.

One thing I learn this time.... make good use of the sharpening steel. I finally got the courage to learn how to use the sharpening steel with the correct angle and position, it worked so well. Sharpen my other Henckles knife back to nearly new condition.

I bought this knife set after reading many positive reviews. It has been two months since I received the set from Amazon and I'm impressed with its overall quality. Each knife is still sharp and beautiful. Seven-inch Santoku and 8-inch Chef's knives are my favorites.

My complaints:

1. Blades for two peeling and paring knives are too short to handle a variety of small cutting tasks. For example, I tried to cut apples but the knives are too short to cut the fruits in one stroke. I had to use a bigger utility knife from my old Chicago Cutlery knife set.

2. Five-inch utility knife has a serrated edge, which I believe is useful in certain tasks, like slicing tomatos, but it is not really versatile. As one of the previous reviewers pointed out, you will need a regular utility knife. Six-inch utility knife would be great although it costs $65 if you buy it from an open stock. Update on 12/1/09: Cutleryandmore.com started its holiday sale... Henckels 6-inch sandwich/utility knife is now $49.95 w/ free shipping. I ordered one to make this set more complete.

3. Each knife comes with an ergonomic handle but it is a little too small for my hand. I wish Henckels knives had slightly bigger handles.

Overall, I'm impressed with the quality and the affordability of this knife set. However, I have a 20-year-old Gerber stamped knife set (12 piece block set) that is as sharp as this Henckels set, but costing merely 1/3 of the price. As such, look elsewhere if you're a budget-conscious chef. Perhaps, Victorinox three-piece stamped knife set that sells for $61 would be an ideal alternative.

I'd recommend this knife set to anyone who is looking for excellent and relatively affordable forged knives from Germany.

The knives themselves are fantastic, but the set really needs a regular unserrated 6-inch utility knife. Since buying it separately is outrageously expensive, I've had to pull a poorer-quality knife back out for now since this is a knife I used frequently. I love the santoku, had never used one before, but it's amazing for chopping. The handles are a perfect size for me, a woman with larger hands, and a man would probably appreciate them as well (although the five-star series knives have even more substantial handles). I see other reviews saying they prefer the Twin series, but these are the higher-end knives, forged instead of stamped like the Twin knives. Overall I would recommend this set as a good starter, and suggest you buy other pieces like the utility knife, bread knife, and steak knives as you come into inheritances....

I ordered this block set already having a couple of pieces of 4-star from some years back. These are not the same. The metal is _much_ thinner and the knives are correspondingly much lighter. For example, my old 6-inch 4-star chef's knife is significantly heavier than the 8-inch included in this set. This change in weight completely changes the feel of the knives to my mind, not for the better.

This product helped me reconfigure and organize my kitchen cabinets. Although my husband doesn't understand it, it works for me! I can see all my spices with one open drawer instead of spinning various lazy susans and trying to shuffle through bottles to find ones that have slipped to the middle.

I got this rack to organize my spices, but once I loaded it up with my (standard, 4" high) spice jars, I found that it's too tall for my drawers. They have 3.25" of clearance, and the rack with jars in it is 3.75" tall. Other than that issue, it seems well made and easy to clean.

so glad i found this organizer! I don't like to have things on the counter, but installing a special spice drawer was out of the question. now i can have both. the organizer fits in half of my drawer, and i keep my spoons etc in the other half so i have everything i need to cook right there. it's very handy and i like that it keeps clutter out of sight. i would recommend that you check dimensions carefully and make sure you check the height of your spice bottle so that your drawer will close.

I bought 2 of these initially and placed them side by side in my kitchen drawer. Loved them so much , I bought another pair that stacks right on top of the two. Definitely require ample and DEEP drawers which is what I have.

Wüsthof Gourmet 14-Piece Deluxe Knife Block SetI've owned this knife set for a year now, and I'm 100% satisfied. These Wustof knives are great they keep their edge, they are razor sharp, and they hold up very well to daily usage.

I was hesitant to buy the Gourmet set based on reviews here on Amazon and elsewhere. The Gourmet knives are stamped, not forged like the Classics. There are very minor design differences that make the Gourmets look slightly different than the Classics. Otherwise, these knives are exactly like Classics. First, the stickers. The Wustof emblem is a sticker on the handle. The emblem is a sticker on the Classics, too, so if the sticker really bothers you that much, go with a different knife manufacturer. My stickers have not faded, worn, or shown any sign of coming off under heavy usage in one year. Take that as you will. Second, rusting. These are carbon steel knives, people. Steel rusts if you let water sit on it. My knives have not rusted in the least. I hand wash them, wipe them off in one swipe with a paper towel, and air dry after use. Not a spot of rust. If you want to stick these in the dishwasher, or want to let them soak in water, you're going to get rust. Take care of these knives and they're fine.

I give these knives five stars. Unless you really feel you need forged, ground carbon steel Classics for hundreds more, buy these Gourmets.

Forged steel was out of my price range, so I had to go with stamped. ($200 is enough for me, thank you.) The set is nice, a bit light, but good... EXCEPT FOR THE STICKERS. Yes, the red logos on the handles are--in fact--red pixelated laser printer stickers that get ruined in the wash. Get some Goo Gone and spend 20 minutes taking them off before washing the set. Of course, if you were paying for the brand... there is still the logo etched into some of the blades. :)

They are not the top of the line but respectable for a budding gourmet. Proof of their effectiveness can be found underneath the several bandaids I have had to wear since accidentally mishandling the bed knife once and a steak knife once.

What a joy to have decent knives to use in the kitchen. It helps to inspire me as a cook.

Great for the price and definitely do not put these in the dishwasher. I am proud to own, even if it is on the lower end of the spectrum, one of the finest knife collections currently on the market.

I did some research and saw that these knives had good reviews. After using them for a few months, I noticed a little rust and the rivets were eroding!!! (I washed these knives by hand only, no dishwasher) I would not have believed it if I hadn't seen it for myself. I didn't expect such a good company to have such poor quality. Maybe Wusthof has better knives, but these are no good.

Farberware Classic 17-Piece Tool and Gadget SetI cook as a serious hobby and own plenty of turners, spoons and measuring cups, mostly in stainless steel. However, I have a son who recently married and I have been buying some basic kitchen gadgets for them. I thought that this set would be useful and it seemed like a good value (they complain that I am always spending too much on them each time that they see me.) Farberware is a name that I recognized, not high end but not the worst, so I decided to give it a shot. Here is my take on each item included here:

* The spoons and the turners: Fairly well-made with a nice feel to them. The handles feel weighted and are well balanced. The turners were a little more rigid that I would like but over all I give them 4 stars.

* The can opener: It's okay, not really well made but it should hold up for a few years. 3 stars.

* The measuring cups and spoons: Again, not great but usable. They look like something you would pick up at the dollar store, however they are well marked with their respective sizes. 3 stars.

* The spatulas: They seemed to be pretty cheaply made and were overly soft. 2 stars.

* The vegetable peeler and the pizza cutter: Junk, I don't even think that they would work more than once. They were so cheaply and poorly made that I would have been embarrassed to give them to anyone. I threw them straight into the trash can. 1 star.

Overall, the set is just barely acceptable and if I had it to do over again I would have bought something else.

I picked this because it has nearly everything you need to start building your kitchen. We are moving into a new apartment and are bringing nearly nothing from our previous places. So, this was the perfect choice. You cannot find something that includes such a variety at this price in the stores. By no means are these super thick top of the line items. But, you will find sturdy tools that you can use daily and you won't cry for your wallet if something breaks.

OXO Good Grips Silicone Cookie Spatula, BlueI love this little spatula. I do not do cookies. I was hoping it would do for turning eggs in a small pan. Oh, yes, and how! It is just great.

I just used this spatula this morning to turn 3 eggs in a very small pan. Since it is small, it can get under the individual egg without disturbing its neighbors. Since it is silicone, the spatula does not stick to the pan or the egg or carry any, what shall I call it, frying pan debris, with it. It works perfectly. I've only broken one egg since I started using it (2 times a week for about 2 months). The handle is short and curved just right for my purposes.

You can see the "base", which is metal, through the silicone. I don't think it will break through, though, as long as you don't leave it resting in a hot pan, maybe not even then. I think it would take a tremendous amount of use for it to wear through. By then one probably needs a new one anyway.

This is a terrific small spatula and I would recommend it to anyone who needs a small compact spatula.

I can't believe I didn't purchase this sooner. I am a lover of gadgets that work well and this is surely one of them. I make a wicked chocolate chip cookie and have been struggling with a full size spatula for such a long time. You know, the ones that you have to navigate into and around the other cookies, while trying not to mash the others set around the one you are trying to get off. This is just the handiest little spatula. Perfect for the job of getting under small pastries or cookies. Oxo did a nice job on this tool. A definite plus in the kitchen of any cookie maker.

I would've given this low stars as a spatula/turner. Too small, even for eggs. Too flimsy for me. Tried it a couple of times and then it just sat there unused. ****BUT**** I needed a rubber scraper in a hurry and they were all in the sink while this was hanging on a utensil hook so I grabbed it and -oh my! It is the *****BEST***** scraper!! It scrapes a bowl or pan clean. Perfectly CLEAN!!! (Assuming the pan has soft stuff in it; in my case it was an eggy casserole kind of thing I needed to scrape out of a pan quick before the egg overcooked.) I've hated the thick-edged silicone scrapers that are all I could find in recent years. But now that I know *this* baby works so well as a scraper, I'm buying a couple more and the all the thick-edged scrapers are going to get exiled the back of the junk drawer.

For the price, you can't complain. The spatula appears to be durable, but we've only had it for a couple of months.

My only complaint is that the handle isn't silicone (nor material that can handle frying pan temps, like metal), as it melts when it comes in contact with the edge of the pan. But, by factoring in the price, I'm okay with it but gave it only 4 stars.

Core Bamboo 6-Piece Utensil Set, NaturalIn an effort to be more environmentally friendly, I've begun to purchase more products made from environmentally sustainable materials. This includes bamboo. I liked the concept of Core Bamboo products. They are attractive and supposedly designed for everyday use.

I cook a lot so I need utensils that can hold up. I've had my Core Bamboo utensil assortment for about six-seven months. After hand washing them only (these are not meant for a dishwasher), the utensils are showing considerable wear. The pretty shine that the utensils had is gone in places. Where the shiny varnish has gone, I do not know. Probably in my food. There are also cracks forming throughout the wood on several utensils. While the utensils seem stable now, I know that I would not be happy if I found wood splinters in my food or mouth.

So my assessment of these utensils is very much mixed. They were gorgeous for the first four months of use and still are practical. If you use them frequently, however, they experience significant wear and tear. I have plastic and metal utensils on their fifth or sixth year of use. I don't know if these will make it to one year let alone two years.

I purchased my Core Bamboo utensil assortment at Big Lots for around twelve dollars. Big Lots also sells individual Core Bamboo products.

These utensils are made in China.

Purchased these to replace our well-worn wooden utensils that had seen better days. Overall, it's a great set. A few of the items were a bit rough in areas--small splinters around slots, for example, so I've docked a star there. Otherwise, though, they're sturdy, function as expected, and clean up easily. Too bad they're not dishwasher safe, as well, but they're worth the effort of handwashing.

After counting only five from the originals, we needed to fill out the set. This newer version is longer, has a thinner handle, and has a much more serrated edge than the originals. We had purchased forks from another seller and found those also were longer. Obviously a later cast. Considering the age of our set, we are not complaining; it's just good to have a larger, more-matching set.

This is not the same as the original. It is a cheaper manufacturer and materials. The serrations are bigger and sharper, so the knife is less elegant.

grab. It is a tad thin and lightweight so I worry that it will scratch easily, but time will tell. It looks nice and is a nice size for small cutting tasks.

John Boos Cutting Board Mystery OilFirst let me say that this product arrived to my home faster then I expected, especially since it was right before Christmas. The product itself is great. I had just purchased a new, very expensive wooden cutting board and I wanted to be sure to protect it. Someone at the store where I bought the board suggested that I get a "food grade mineral oil". I really had no idea about this type of product but once I started searching the web for info, I found that it is the best thing to use to keep your wooden boards like new for years. I was unable to locate any of this oil at the stores that I go to normally so I turned to my tried and true friend, Amazon.com Sure enough, they had this product. Once I began using it, I could tell right away what a difference it made in how my new cutting board looked. I typically use my board every day and have been using the oil once a week. The board has stayed "fresh" looking with no lasting cut marks and no water damage after wash ups.

Boos Mystery Oil is not just typical food safe mineral oil. I have butcher block counter tops and the Mystery Oil helps keep them from drying and cracking and over time gives a warm shine to the butcher block. I purchased the recommended treatment for my counter tops and it was a mess, the Mystery Oil is far better. The best accidental discovery that I found is that Mystery Oil makes my stainless steel appliances look like factory new. I discovered this my first time out when I spilled some on my stainless steel cook top and went to wipe it up. The streaks from the cleaner and all finger prints just disappeared and the stove took on a deep rich shine. All you have to do is put a few drops on a paper towel and start polishing. Don't get it too thick or you just wind up wiping up way more oil than is necessary. Experiment with this a little. I use it on my fridge, dishwasher, ovens, everything to polish stainless. You do need to clean your stainless with Windex or other cleaner first to get any soiling off, then follow up with a light polish of mystery oil. You will be amazed at how beautiful your stainless will be. One word of warning however, it does cause a little dust to cling to flat surfaces, so you may have to give it one more wipe down the next day to clean any excess.

The only things really wrong with this are the suggestion that wood oils are a mystery and the price of this item. The oil is certainly fine stuff if you don't mind the price. Both Joyce Chen Bamboo Wood Oil, 8 Ounces and Snow River Wood Oil are a lower priced when you consider that they are available with free super saver shipping. Wood and bamboo oils are simply food grade mineral oils. You should use a wood oil in your kitchen instead of vegetable oil because mineral oil does not break down or become rancid. Wood oil gives sheen and water and stain resistance to wood items such as butcher block, cutting boards, pizza peels and wooden salad bowls. You can use wood oil to darken and restore the appearance of faded wooden knife handles or dried out wood cutting boards. Wood oil is a must have for any kitchen with wood items.

I actually use mineral oil laxative on my wood kitchen items ($2 for 16 oz. at many drug stores) which is the same thing. Clearly the laxative bottle is less than aesthetically pleasing and is embarassing to leave around the kitchen. My wife keeps hiding the bottle in fact. But No it won't have a laxative effect if you use it on your cutting boards or knife handles.

The John Boos website says Mystery Oil is formulated from "...a mixture Of mineral oil, linseed oil & orange oil." I have no reason to doubt the statement. I can say it certainly isn't just food-grade mineral oil; I've used mineral oil alone on chopping blocks for 40 years. Mystery Oil is thinner, penetrates better, is less messy to apply and cleanup, leaves minimal oily residue, and looks great, with less yellowing than I'm used to seeing with mineral oil alone. I wish I'd discovered it decades ago. Like everyone else, I wish it was less expensive. I'm not sure I'd bother using it on a $20 cutting board made in China or Indonesia. Which leads me to observe that John Boos is an American company, in business in the same town in Illinois for 120 years. Explore their website. It's clear they're proud of what they make, and put quality and long-term value ahead of price. Frankly, I'm happy to they're still here to remind me that price isn't everything.

I bought a Boos block about four years ago and didn't have the chance to buy the oil at the time. To save money I used some cheap food safe mineral oil. I noticed my board was drying out and I had tossed the mineral oil. After going on line and looking at all sorts of food safe block oils, I decided to go with one provided by the manufacturer of the board. They know what they are doing and they created an oil that will make their boards last longer and look more beautiful. It absorbs quickly, has no unpleasant odor, and makes my board look great. The spring that sits in between the handle falls out with great ease, and without this tension being provided, I would have been better off buying kids scissors. Try eating a lobster with kid scissors, and that's exactly the experience these provide.

Additional, the red plastic tab, broke off 3 of the 5 units before even using them. So even if the springs lasted (more than one meal), you cannot close the unit for storage. Its so cheaply made, that they practically disintegrate at the dinner table before use.

This makes eating crab or lobster so much more ejoyable. So much easier and faster when the cutter and the cracker are both in one tool. These work especially well on crabs. There could be a problem getting through a large lobster claw. I usually crack them with the back of a heavy meat cleaver. All and all you can't go wrong with this for the price.

Of course you are still going to get messy eating crab or lobster, maybe a little less using this tool. But than I guess that goes along with opening and eating most shell fish.

This would be a fantastic knife if it had a better blade. Like all OXO Good Grips products, it is ergonomically designed and would be good for long use. Unfortunately, the blade is light and made of shoddy metal. It will not hold a good edge. Of course, I normally use good German knives, so I may have been spoiled.

I own three of these knives and use them daily. I think it's fair to consider myself an experienced home chef and I do also own several very good pieces of cutlery, including some Wusthof, Global, and Shun.

I have long hands (no arthritis) and enjoy the grip of these handles and find myself grabbing them all the time for paring, peeling, and various other small knife-work kinds of tasks. I particularly like that the handle doesn't get slippery when I'm trimming vegetables as I rinse them.

The main criticism I have about the knives is also something that I've personally found to be easily fixed. Several people have commented about the quickly dulling edge true, but using a regular old honing steel on it every few months or so (as all well-used knives need from time to time to stay in top condition) keeps them perfectly sharp and maintained.

So far I've really liked all of the Good Grips equipment I've tried (paring knives, bread knife, veg peeler, zester, and can opener) except for the chef's knife not enough heft for my taste.

I'm a big fan of most of OXO Good Grips products, but after having purchased two of their knives, this one and the 5" mini-chef's knife, I feel compelled to warn people not to waste their money on OXO knives. To be blunt (that is the OXO knife's fate in life sorry about the pun), the quality and intelligent design for which OXO products are well known does not extend to their cutlery line. First, the handles on these knives are a very sloppy ribbed rubber that provides no more firm of a grip than a dog's rubber squeaky toy. The grips aren't particularly ergonomically shaped, either. Even worse than the grip is the blade itself. Honestly, this knife would have a difficult time cutting cold butter taken straight from the refrigerator. The blades when brand new are dull and have not been ground, sharpened and honed to a useable edge. However, I seriously doubt even a professional knife sharpener could do much with this. Made from cheap stainless steel, this OXO knife's blade is simply not meant to obtain or keep a sharp edge. Avoid this and buy one of the plastic-handled $3-4 Heckels or Victorinox paring knives instead they are vastly superior and cheaper to boot. Or, for a real change, try one of the Kyocera ceramic paring knives. They are obviously a lot more expenisive, but you still should be able to pick one up for around thirty bucks on Amazon and you will be amazed at how incredibly sharp they are. I was able to slice a section of a grape that was transparent and a mere fraction of a millimeter thick with my Kyocera.

Love this knife. It is so easy to hold, particularly if you have any arthritic or other problems. It is also great for small hands. It does not slip and cuts beautifully. This is my second one: the last one was accidently damaged by someone who used it to pry something and bent it. It is meant for cutting food,not cement.

I was impressed by this small knife which is excellent for cutting soft foods such as tomatoes. The knife is quite small and easy to handle, and the serrated edge is very sharp. Naturally I wouldn't recommend it in place of a Chef's knife, but it does a great job when you do need a small serrated knife. It's a bit too small for slicing bread, but works very well for small vegetables. The included sheath was a nice touch.

The blade while stamped, appears well made and like other Komachi knives, has a colorful coating which among other things, makes the knife easy to find and identify.

I gave this knife four stars instead of five because of the build quality, I wasn't all that impressed with the plastic handle. At the price though I think that the plastic handle is more than acceptable. Overall, i'd recommend this knive, and would say that it provides excellent value.

Epicurean Kitchen Series Cutting Board

Epicurean Kitchen Series 15 by 11-Inch Kitchen Cutting Board, NaturalI also have black bits coming off of my board onto my food. I have had the board a couple years and put it in the dishwasher. I have since started hand washing it. I know that cutting boards need to be replaced over time, but I feel this product fell apart too easily.

I purchased the black epicurean cutting board 4 months ago. Originally we were very pleased with it. Easy to clean, no odors however over the last few weeks we have found that the black coating is peeeling and you can find traces of it in the food. Example, black specks in the chopped garlic. I believe this a serious concern. I do not recommend this board to anyone.

Honestly, this is a great board for cutting.

Unfortunately, I also have a sense of smell and a sense of taste.

The board reeks of chemicals when washed... hand-washed.

Also, if you leave something on the board for more than a minute or so and the board is wet (for instance, cutting onions, fruit, or anything that leaves a liquid), the food tastes like the cutting board smells.

Make sense?

I won't buy this again. There are other cutting boards out there that don't have this issue.

At first I thought this cutting board was a bit pricey. I've paid less for wood, plastic, and bamboo boards that were larger. That being said, this is the only board I've owned that has been worth the money I spent on it. It has held up remarkably well to hard use/abuse in my kitchen. I use it multiple times daily, and while it's starting to show a little wear (I've had it for around 6 months), it's far from needing to be replaced. It has far fewer gouges/scratches than a bamboo or wood board easily 1/10th its age, which means it's far less of a bio-hazard. You can also put it in the dishwasher, which is a plus (though I use it so often that I rarely wash it in the dishwasher). I also like the slate color... that way it won't be stained by curries and other such items that eventually left my white plastic cutting board looking like someone did something unpleasant on it.

Quite simply, this is the best cutting board I've ever owned. It's lightweight but very sturdy, it doesn't dull my knives, it's resistant to bacteria, and it's DISHWASHER friendly the board fits into the bottom rack of my dishwasher without a problem. Try doing that with an old wooden board! The Epicurean is also really good looking, even after months and months of hard use, and has a pleasant feel as well, not rough and scored like wood or plastic can get. I don't think I could ask for more from a board (unless it could wash itself, but that's just wishful thinking...).

Shun Classic Chef's Knife

Shun DM0706 Classic 8-Inch Chef's KnifeI'll start by saying that I own both this knife and the Wusthof Classic 8" chef's knife, and I love them both to death. I tend to use the Shun more for cutting up poultry and such, because the steel is harder (less steeling when doing heavy work); and I use the Wusthof more for mincing and dicing veggies (much easier to use the bolster grip when doing these tasks). Quite frankly, in my humble opinion, when you are in this price range, comfort and aesthetics are going to be bigger factors than relative sharpness. Provided you clean and maintain the knives properly, you will be putting them in your will to a deserving heir.

Note to sharpness snobs: NO stainless knife can touch an old-fashioned carbon steel knife for sharpness. If you don't believe me, go and see what your butcher uses. The problem with old-fashioned carbon steel knives is that they are very highmaintenance and will look ugly after a while no matter what you do.

Personally, if I had to choose, I'd take the Wusthof solely on the basis of my personal feel and the fact that the blade is a little easier to hone than the Shun. I am just glad I don't have to choose, but if you do, I can't recommend strongly enough getting out to a store and handling the knives before you buy. When you're in this neighborhood, about the only way you can choose badly is by not buying the knife that feels best in your own hand. You're going to get a top-quality product whichever way you go.

After using a few of the Global knives, with the 7" oriental chef's knife being my everyday knife, I decided after a marathon day of chopping that I wanted someting a little heavier. After holding a few 10" chef knives, I decided these were bigger than I needed, and settled on the 8" chef as my new workhorse. It came down between the Global GF series 8", a Ryussen, and the Shun. After holding and test-driving all three, I settled on the Shun. It is by far the best combination of sharpness (wow!), weight (slightly heavier than the Ryussen and the Global), handle comfort (you don't notice the offset handle when you hold it, until you pick up the Ryussen or Global and it's not there, and then you miss it terribly), and price. In fact, for the rather small price difference between this beauty and the Global, I wouldn't even consider not spending it. Of course, it doesn't quite have the balance of the $1300 Hattori they also had on hand, but this is a great knife that makes me want to stop writing this review and go out and slice something. Highly recommended.

I'll get this out of the way: I love Wuesthof and Shun knives. I prefer Wuesthof and Shun over Henckels and Global because the handles of the latter two brands don't fit my hand well. The MAC 'Ultimate' series feels good in my hand (their other lines don't), but I can't justify spending double of what a Shun costs if I'm not a professional cook.

These are my personal needs. Try different knives, and choose what fits your hand, budget, and cooking style. If you do like the way a Shun feels, I guarantee that you'll like it.

Despite the pleasure one gets from turning a mound of raw ingredients into a beautiful meal, that prep is a b$7@h! So, having a good knife (or knives) is essential for making things go quickly and smoothly, counter-side.

I have to admit that I was a total kitchen-hypocrite, in that I had THE BEST knives for my outdoor activities (I worked as a fishing guide in Alaska, so I filleted a lot of fish and just plain cut up a bunch of stuff), and I always preached about having the best tool for the job, but all I had for kitchen use were REALLY bad knives. I would tirelessly sharpen my work knives so that I could literally shave my face with them, but I would rarely keep my cooking knives keen.

I recently inherited my grandmother's Wuesthof 8" chef's knife. It was sharp, but so old that the wood (yes, wood. It was _that_ old) handles were splitting off of the tang, and her white, mechanical, counter-top sharpener from hell had ground out the belly. I wanted to get another chef's knife to keep it company, and after a lot of research settled on this 8" Shun.

The Shun has a slightly thinner blade, so it's not uncomfortable to forego the bolster-grip that I feel is required for the heavier Wuesthof (unless you're hacking the crap out of something with a Wuesthof) for a whole-handle grip. Each knife has it's place in my kitchen, though, so I'm glad that I have them.

This knive is beautiful to look at, beautiful to hold, and beautiful to work with. It does what it's supposed to do -slice and chop thingsreally well.

If you're not the type of person who will properly hand-wash, sharpen, hone, and all-around love your knives, you should go with a knife that has a serrated edge and a synthetic handle. If you treat your Shun knife well, though, it will make cooking fun... trust me. This thing is a work-horse, despite it's beauty, so be prepared to let it chop as much as IT wants to.

WARNING: DON'T USE BASIC MECHANICAL OR PRE-ANGLED SHARPENERS ON YOUR SHUN! Shun knives have a smaller-angled edge, and this will be ground down to a wider angle if you use most standard sharpeners. Wider-angled blades are less prone to getting dinged edges (and the bane of any knife: a chipped edge) and their sharpness will "last" a little longer (for what we can tell, comparatively), but they'll never be as blisteringly sharp as knives with smaller-angled edges. Be careful, or your razor-sharp knife will become plain-ol'-sharp.

This was a difficult knife to rate, because on the one hand it is a very nice knife, and on the other, I can't recommend that you buy one.

1) This is a beautiful knife. I don't prep with it, but it has a permanent place on my magnetic strip, because I just like looking at it. If you want a Damascus-pattern Japanese knife that looks pretty, this is a good choice. You must also look at the Hattori HD (different Damascus style, black Western style handle with visible rivets), and the A.G. Russell Damascus (better Damascus pattern with white Eastern handles and visible rivets). They are harder to find, but nothing a quick Google won't fix.

2) Do not buy this knife unless you have held it, and preferably used it. This is true of any knife. Handle comfort and balance are extremely personal issues. My love affair with this knife ended as soon as I took it out of the box. I'm a right hander with large hands and I use a pinch grip. I like my knife balanced exactly on my working fingers. With its curved, offset bolster and ridged handle, it's specially designed for a right hander with small hands, using a pinch grip, and even then it's mediocre. Using that grip, the balance is 2cm (3/4") nose heavy. My $25 10" Forschner Fibrox embarrasses this knife in term of handle comfort and balance. The only Shun knife with a real handle is the Ken Onion custom.

3) This knife is razor sharp out of the box. But really, any good knife will take a 15 degree edge, you just have to be willing to put it on yourself (or find a pro you can trust to do it for you). My Wusthof Grand Prix has a 15 degree edge and is as sharp as this knife, and gives me at least 50 hours on the board before I need to touch it up with my Sharpmaker. The same goes for my Forschner. VG10 is better steel, but you will still need to hone it with a sharpening steel, and it will still go dull on you. It's only 7% harder than the average good knife and the Vanadium helps but isn't going to change your life.

If you just want a light knife with a thin spine, you can get the same thing for a quarter the money from a Forschner or some other industrial (F. Dick Pro-Dynamic or Messermeister Four Seasons, etc) If you want a light, razor sharp Japanese knife with a hard blade, you can get the same blade performance and a better handle for half the money from a Tojiro DP.

4) If you're in the market for a Japanese knife and want a complete set of Eastern and Western shapes, your only real options are the Shun or the Globals. I'd rather have a Hattori, but they don't make a bread knife, or a western boning knife, or a Chinese cleaver, or a paring knife (although the petty knives will do most of the same jobs). But unless you're really attached to the idea of a matching set, buy this knife and the 3.5" paring knife, and go industrial on the rest. A $15 Forschner boning knife will spank the $90 Shun boning knife. The same goes for the bread knife. All pimpery aside, if you ask Alton Brown, he'll tell you that a $100 bread knife is a waste of money (but he'll still be more than happy to sell you one).

5) The 9" Shun sharpening steel is too short for this knife. Find a nice 12" sharpening steel, or buy a 12" fine ceramic steel. The ceramic steel will take off metal, so if you don't really know how to use a steel, stick with metal; it's more forgiving of bad form.

All that said, this is a good knife. The edge is flawless, the steel is good, it's pretty, it has a nice blade shape, and the price is reasonable. If you like the hand-feel and don't have any trouble paying the mortgage, it will be money well spent. But I still prep with my Forschner, and leave the 10" Shun on the strip next to the 10" Global and the 10" Wusthof to impress any foodies that happen to wander through my kitchen, and as a silent testament to Brown, Bourdain, and my dream that Rachel Ray will someday learn how to use a real knife.

I got into Japanese knives via Shun, and they are fine knives in general, but in the case of their chef's knives I think there are better alternatives. The Shun 6" Chef is lightweight, to my way of thinking, and the radical shear of the blade is not the most useful on the cutting board. The 8" doesn't suit me either, the handle too long and the edge of the blade too curved to provide a good chopping edge.

I've done better with the 7" Hattori HD, also of the "Damascus" type, though more discreetly banded. It's a less exotic-looking knife than the Shun, with a conventional Western handle, but makes for a more useful cutting tool and, for me, is better balanced and more comfortable in the hand. The blade is sharper too, but may be more fragile. Finer still are the somewhat more expensive Misono UX 10 chef's knives, among the best short of truly serious-money Japanese masterpieces. The Misono is still more Western-looking than the Hattori--no Damascus effect, not a single Japanese ideogram on it, and even the steel is Swedish, although the cutting edge is honed 80/20, nearly one-sided, rather than the Western 50/50--but it's as fine any reasonably affordable knife I've seen and it's sturdier than the Hattori. The edge differential shouldn't scare you off unless you're left-handed, in which case you need the appropriate model.

Shun makes good knives, but can be faulted for going for exotic looks above all--a marketing move that has worked well for them, but showy. On the other hand, the blades are good, and the D-handles have a special ergonomic appeal. I think their santokus and utility knives provide good value. With the chef's knives, though, I'd suggest investigating other possibilities, though it will cost you a few dollars more in the case of Hattori and nearly 50% more for the Misono UX 10s.

For less money and greater sharpness than anything I've mentioned, you can hunt up the Hiromoto AS series. Their downside is that their high-carbon edges require more care against corrosion, and as Japanese knives go, they look crude, even ugly; but you can split an atom with them, easy.
