Oneida Colonial Boston 20-Piece Stainless-Steel Flatware Set, Service for 4

Oneida Colonial Boston 20-Piece Stainless-Steel Flatware Set, Service for 4My order just arrived today, 12/26/07 and the steel was 18/0 NOT 18/8. The difference is huge, the /8 means 8% nickel, which improves the finish, but more importantly gives stainless dishware its corrosion resistance. 18/0 will corrode in the dishwasher rapidly, 18/8 or /10 will last many many years. If you aren't sure what you have, 18/0 is magnetic, 18/8 or 18/10 aren't.

I grew up with Oneida Colonial Boston silverware. When I was setting up my own house I found there were a myriad of choices. Yet, I kept coming back to Oneida and this pattern in particular. Here's what I love about this my set:

1) It's a simple pattern, not fussy but classically beautiful.

2) Even though the name of the pattern is "Colonial Boston" this flatware goes with ANYTHING. When we moved into our new house we decided to update our furnishings and chose a decidedly casual contemporary look. I changed out our plates but kept my flatware!

3) The brushed finish on these keep them looking great, even after years of use.

4) Oneida is good quality. I've never had these bend, warp or rust (of course this is with normal use). I've had mine for about 14 years but admit I've had to add to my set throughout the years -but only because pieces keep disappearing (Where DO those teaspoons go???!!).

5) They wash in the dishwasher beautifully.

6) Great for everyday or special occassions & holidays. I am not a fussy/ornate type of person. I use my set for every occasion. I've looked at "special occasion" flatware and it's all too scrolled, flowery or busy for me.

For me, the Oneida Colonial Silverware is where it's at. I never get sick of looking at the pattern and overall I just love 'em.

I bought a set Colonial Boston MANY years ago and have been EXTREMELY happy with the 'Original Set'. As you can see from the images I've added, I STILL have many of the original documents. The original 18/8 Set has served my daughters and I well over the years. It's design was perfect. Simple to hold for kids, No sharp edges other than the fork points, and no fancy, pertruding designs. REALLY, they are perfect.

But over the years some spoons and forks have disappeared. To the rubbish with frozen dinners I suspect. Only one that ran ever returned, but it was injured beyond repair from it's fight with the garbage disposal. This is when I decided to 'refill' the set. I was happy to find they were still in existance and picked up a set of 4. The differences were slight but noticable. The writing on the back. The bend in the forks. The joint of the knives. But what REALLY made them noticable, was when they came out of the dishwasher with rust spots. I didn't want my kids putting cheap, rusty silverware in their mouths. It took me a while to find out what had happened, and as others mentioned, it was Onieda's 'Bait and Switch' tactics. I was duped into the purchase of the immitation 18/0 set as well.

If a liar lies only 1% of the time, are they not still a liar? Oneida may not have done this with EVERY set, but they did it to the one I own. This immitation of the original Colonial Boston should NEVER have been called 'Colonial Boston' Or 'Minute Man' (a name this set was also known as at times). If anything, MAYBE Colonial Boston II. Still deceptive, but at least they would have told of a difference. The way it is now, it's pure deception.

I DO still love my set, and believe it's the best design and quality for a family. But I would NEVER purchase from Oneida again. My kids have heard me enough, so I doubt they will buy Oneida either...

To the person putting down Amazon, I disagree with you. They don't control the Products descriptions and Deception done by companies such as Oneida, But at least they allow purchasers to fairly display their concerns through these reviews. I feel it may affect selling prices, but I see less manipulation by Amazon on good and bad reviews that other sites who seem to only show positive reviews... Kudo's to Amazon!!!

I did my searches, and I found someone who sells individual pieces on a bay and I was able to get some in GREAT condition, matching my existing set perfectly and out of the ones I got there, only one was not labeled 's.s.s.'

Buyer Beware!!

To replace many pieces of mixed/matched economy Oneida flatware that have served me well for 15 years, I bought a 20 piece setting of the Oneida's Boston Colonial flatware, as well as, a 20 piece setting of the Paul Revere flatware. The two designs look very similar but the Paul Revere costs 3 to 4 times more. Both designs are plain and understated but of high quality and the difference between the two is minimal. The Boston Colonial pieces have more areas of a shiny finish, while the Paul Revere flatware appears to be a very slightly heavier weight. Both are 18/8 stainless, look great, and fit nicely in Oneida's stylish acryllic flatware caddy. They will serve you well for both casual and formal dining and go with just about any kind of dishware. The only reason that I can think of for the for the price difference between the two patterns is that the Paul Revere line is classified by Oneida as one of its Lifetime patterns.

Bottom line -buy the Boston Colonial from Amazon.com ASAP because I believe that Oneida now produces its latest version of Boston Colonial (shown on Oneida's website) in lower quality 18/0 stainless.

I bought this set to replace lost pieces in our old Colonial Boston set. Unfortunately, Oneida has changed the pattern of the knives. The picture shown on this page is not what I received. I did notify Amazon of this change. Hopefully they will change the picture. But be warned if you have an old set of this pattern, don't expect this set to be a perfect match.

MinoSharp 220/GB Ceramic Wheel Water Sharpener, Grey/Black

MinoSharp 220/GB Ceramic Wheel Water Sharpener, Grey/BlackThis is a great aid to sharpen Global knives. I disagree with the review that said it dulled the knives. The tool has ceramic wheels set at the proper angles to get the correct Japanese set to these knives, which have different angles to each side of the blade. After 8-9 passes with no pressure on the knife through the rougher and then the finer wheels, the knife is ALMOST back to factory condition. Then, it is necessary to use a fine DIAMOND hone to get that last degree of razor sharpness. And make no mistake, a properly sharpened Global knife is that sharp, and this tool makes it easy to keep them razor sharp. Instead of a diamond hone, you can also use a very fine waterstone to hone them, but trust me, the diamond hone is easiest, although it does not leave the edge quite as polished as the finest waterstones. This tool and a diamond hone let me return my Global knives to scary sharp in less than 5 minutes each. They are so sharp that whenever I sharpen them, I warn my wife that they are super sharp (as opposed to very sharp!), just to make sure that she is extra-careful when she uses them.

Now, having said that, the package states that it is recommended for Global knives, and no one should use this tool on anything other than Global knives, or similar Japanese-style knives. It is not meant for European-style knives, whose blades have a different set.

I'm not sure how people are banging up their knives using this simple, effective sharpener. Slow down, folks. Take your time.

I own a number of Global knives, and sharpen them all using the MinoSharp with tremendous success. I've even had luck sharpening Henckel and Wusthof knives with this. I enjoy using it, and when I'm done, my knives are like new.

Buy MinoSharp 220/GB Ceramic Wheel Water Sharpener, Grey/Black Now

Before you buy the Shinkansen Sharpener for your Global knives you must understand that it doesn't return the blades to their factory sharpness.

When I first bought my Globals I was warry of using my old ceramic stone on their extremely acute edge, so I bought the Shinkansen Sharpener to go with them. When they arrived, the knives' sharpness lived up to everything that's said about them, but after I ran the chef's knife through both slots several times... the knife got DULLER! Repeated use did not do any more harm to the blade, but it never improved either.

It seems that, because of it's simplicity, the Shinkansen Sharpener is best for returning very dull blades back to a servicable edge, but it will never get them really sharp.

I picked this up as a quick and easy knife sharpener for work. It managed to scratch up the side of the blade of one of my Global knives with the plastic guide.

the slots/guide to run your knife blade through are narrow, some larger knives may not fit into it if the blade is thick.

after about 1 year one of the stones broke, however you can buy replacements.

For the home user, this will suffice. If you use your knife all day long like I do, I recommend the good old tri stone instead. Ok to have as an emergency knife sharpener in your knife bag.

I was never was able to get a good enough edge with this product to do fine chiffonade and other cuts that require good knife skills.

Want MinoSharp 220/GB Ceramic Wheel Water Sharpener, Grey/Black Discount?

I bought this to sharpen several Global knives after comparing it to the confusing and expensive arrays of sharpening stones out there. The sharpener is easy to use and made of high quality materials. To operate Simply fill the small tray with water and run the knife thru the offset grooves over a course and fine ceramic wheel. After a minute i was done with several knives. Comparing the globals afterward I had mixed feelings because the knives were already pretty sharp to begin with. The revelation though was how well it worked on my Wusthof Grand Prix Knives. In fact they restored them to better than new as i was always dissatisfied with them because they were never very sharp which led me to Globals to begin with. Now the Wusthof's are of comparable sharpness. This is a great item and well worth the price.

J.A. Henckels International Eversharp Pro 5-Inch Stainless-Steel Utility Knife

J.A. Henckels International Eversharp Pro 5-Inch Stainless-Steel Utility KnifeWhenever my husband and I are in the kitchen together preparing dinner, one of us waits until the other is finished cutting to use this knife. It slices through tomatoes without ruining them. We use it for cutting everything.

I sometimes wonder if these reviews are all about the same item. This serrated knife is great. It isnt like it was $100 so while you cant expect $100 value in a $9 knife, I think it is worth 3x the price. I love serrated knives for some reason. I read some reviews and saw someone say they could cut veges thin with it. I have to think she was using a different product because I have zero problem cutting things to a transparent thickness. I actually love it for cheese. I also love it for meats. I hate those little steak knives that come with the sets. At least this one feels like you have something in your hand and it gives you great leverege or however you spell that word. I use it for everything from cutting a tomato to cutting rolls and meats and cheeses. I actually liked it so much that I just bought more of them. I dont see how the tip breaks off like a couple people said. I do clean mine by hand and dont put it in the dishwasher but I dont see how that should matter. I never had a very expensive serrated knife and now I dont see why I would ever need one. I would just as soon buy another one for the lousy $9 if something happened to the ones I have. These reviews make it so tough to rely on as I am looking for something in a different area and things have 300 5 star reviews and than 10 people give the product 1 star and it throws off your thinking. It makes it very tough to buy things based on reviews. Not many things have all 5 star reviews, if any. So when every product has both 5 star and 1 star reviews, you have to wonder if they are talking about the same product. Not counting the broken out of the box problems because I suppose that can happen. Oh well! I think this knife is fabulous especially for the price

Buy J.A. Henckels International Eversharp Pro 5-Inch Stainless-Steel Utility Knife Now

It's hard to go wrong with any Henckels knife. That said, I read other reviews and thought that this knife would be an improvement for cutting vegetables for my salads. Wrong. The serrated blade tends to shred mushrooms rather than cut them thinly, and my tomatoes, also fairly soft, get mushy in the cutting. So, for softer items, this knife loses a star with me. On the other hand, it slices firmer items just fine, such as bread, sandwiches, meats, onions and celery and semi-ripe avocados. Again, though, I had no luck slicing anything thinly with this knife. Here is information from the tag which is helpful: (1) micro-serrated edge; (2) heavy weight stamped; (3) triple riveted handles with stainless rivets; (4) fully visible tang construction; (5) breakproof, dishwasher safe (handwashing recommended); (6) made in Thailand; (7) contour black polypropylene handle and (8) fully guaranteed against defects in material and/or craftsmanship. The label also includes a website if you have other questions. I like the weight of the knife in general, and the handle is substantial, balanced and easy on my hand.

In the event that there are any material problems with the knife, I know from personal experience that Henckels has a terrific guarantee. I recently contacted them about a paring knife that was over 25 years old with a bent blade. I mailed the knife back to Henckels, and they sent me a new knife; all I paid was the cost of the postage back to them; they gave me the new knife and paid the postage back. So, I already know that if this knife does not hold up over time, Henckels will stand behind their product.

This is my 2nd one of this specific knife.

I bought a second because it is the ONE knife I use for almost all my cutting and prepping.

Interestingly, my first one I purchased about 7 yrs back was from Japan.

I have never had to resharpen this knife. EVER!

This one is from China. I tried to compare and find a flaw but the knife is perfect.

Super sharp and extremely well balanced in the hand.

Japan vs. China.... I don't see any difference.

They must still be following the Henckel manufacturer's strict specifications.

I would recommend this to any intermediate and professional chef.

It is very sharp and unforgiving for a very beginner cook so be careful.

Mikasa Sophia 65-Piece Flatware Set, Service for 12

Mikasa Sophia 65-Piece Flatware Set, Service for 12The size seems to be about 1.5 times larger than a normal set. The size of the teaspoon with this set it almost the size of my regular serving spoon! If you have children, this would not be a good set for you. I really liked the design, but I had to send it back for being so ridiculously large.

Was looking for an elegant flatware set, stainless steel 18/10, service for 12-18, reasonably priced. Did a lot of looking online and in stores, and found most sets were at least $200 so this one was reasonably priced. It is however, somewhat more rugged looking as opposed to elegant looking. And the teeth of the dinner forks are so long I'm afraid I might hurt my throat with them. The salad forks are about the size of standard dinner forks so we've been using the salad forks as our dinner forks.

I am furnishing a second home and have been on the market for things I haven't purchased in a very long time. I was shocked to see how few high quality 18/10 Stainless Steel flatware sets were available, and those I could find were at very high prices. A previous poster complained about the large size of the flatware. I believe this is "continental size" flatware. I tried to post a link that explains the various sizes of flatware available and the differences in size, but apparently Amazon deletes external links.

This set works for me. I have Le Creuset stoneware. My dishes are large (dinner plate 12") and small flatware would look strange.

Meat Grinder #32 W/Pulley, Meat & Sausage Stuffer

Meat Grinder #32 W/Pulley, Meat & Sausage Stuffer
  • TD Industrial Meat Grinder # 32, W/Pulley, Meat & Sausage Stuffer
  • Easy to grind fresh meat, vegetables, fruits, nuts and more
  • Make your own ground beef, meat loaf, deer and pork sausage, turkey stuffing etc
  • Grind Capacity up to 600 pounds per hour
  • Includes one knife and one grinding plate (5mm, 3/16 in. holes)

I returned this device without even trying to use it. While it is made of cast iron & weighs about 50 lbs, it is coated with an unknown silver metallic material that was already partially worn off as a result of shipping. It may be paint, or it may be a thin plating. But whatever the coating is, it will eventually end up in the food that passes through it. And since the device comes from China, it's quite likely that it includes Cadmium and/or lead, both of which are highly toxic.

The importer, PRI Industries, promptly issued a return authorization number, but the sum of the shipping cost & restocking charge exceeded the price I paid for it in the first place.

This grinder is very powerful it chews up pork and beef with little effort. I was amazed after dealing with small hand cranked models or even my kitchen aid. A manual would have been great, it was a pain to figure out how to put it together and take it apart for cleaning. I haven't used the part that allows you to motorize it but it seems pretty easy if you need that much power. Make sure you have a way to bolt this down it needs a solid base.

I was surprised at how fast this grinder chewed up meat. After a more expensive electric grinder with a small auger, this equipment was a welcome relief. The prior comment about solid mounting was well taken, as it could well grind 500 pounds of meat an hour. But that is a lot of force, so mount it securely. Don't try this clamped to the kitchen table.

Want Meat Grinder #32 W/Pulley, Meat & Sausage Stuffer Discount?

I love this grinder, but after stuffing sausage for the first time with it, I realize why it has a wheel that can be motorized. My arms were tired!!!

Good grinder, just make sure you mount it securely and keep your arm muscles in shape.

I am from Missouri on this product. (It is going to have to "Show Me".

The first grinder came and the main bearing at the business end of the grinder was off center. I thought I could fix it myself but upon examination saw the casting itself was off center.

There was also a 3/4 inch crack through the grinding end of the casting. I sent it back.

PRI industries Inc. was EXTREMELY helpful in returning this product. I received a return shipping label the same day I inquired about a return. A new unit was promptly shipped and arrived within days of return of the original unit.

Now the problem: The new unit is also cast off center, one side of the casting is 1/4 inch thick, the opposite side is 5/8 inch. (a cheap charlie Chinese product for sure [no offense Charlie!])

I have not used this product for grinding but other reviews praised it's grinding capability so perhaps it will do the job it was bought for even if the quality of the product is not as good as I was hoping for.

Overall I will wait and see so far I'm not impressed.

I purchased the set at Sur La Table for $99. It was a great value because I wanted a long lasting knife set to start with. I was between the 6" and the 8", but the value for the 6" was much greater and it still had some weight to it. As far as the blade goes, everything I've cut through, cuts like butter, from lettuce, vegetables, chicken, etc. As long as you have the blade sharpened regularly and take care of the knife and hand wash, not dish wash it, it will last forever. I highly recommend this for new home owners or as a gift to someone special. Its a great set and a great gift idea at around a hundred bucks. Its an investment that lasts forever, that's how you need to think about it when buying these knives.

Classic Chai Dao Knife - 7"

Classic Chai Dao Knife - 7'This is a well-made knife. I expect no less from Wüsthof, and I'm pretty sure the build quality isn't your primary reason for reading a review. What you want to know is: how is it to use?

For comparison, I'll bring in my Shun santoku and Victorinox Forschner Fibrox chef's knife. The chai dao weighs just about the same as the santoku, and more than the Victorinox (everything weighs more than the Victorinox--but that's not a complaint). The balance at the bolster is excellent. The blade is just a shade thinner than that of the santoku, and wider than that of the chef's knife.

For dicing an onion or other softer vegetables, all three knives do a great job, and choosing one of them is a matter of whichever you find more comfortable to hold. I give the chai dao an edge on this (okay, pun intended) because I find the santoku a little uncomfortable to hold at the bolster, and the Victorinox definitely wants to be held by the handle. For dicing carrots, the Victorinox doesn't work as well as the other two because it's lighter, and the heft of the santoku and chai dao knives helps one get through the carrot.

For slicing chicken breast for stir-fry (or whatever you're making), the chai dao shines. When I slice meats I usually have a little wrist action involved as I pull across the flesh, and the curvature of the blade keeps the edge where it needs to be. The santoku's lengthened curve tends to pull away from the board for that, as does the chef's knife; the shorter blade length of the chai dao also seems better suited to this task.

For chopping herbs I find that I'll choose either the chai dao or the chef's knife. I think I like the chai dao somewhat better for this, but I'll need a few more trials to firm up that opinion.

I used the chai dao today to de-bone a pork shoulder I roasted, a task I wouldn't try with the santoku or chef's knife because they're just too long for the task. For the detail work I did finish with a boning knife, but the chai dao did a superior job taking the larger meat chunks off the bone with little effort involved.

So, in my kitchen at least, this is a very useful and usable knife from which I expect to get years of service.

Set of 2 Cast Iron Sizzling Steak Plate #5294

Set of 2 Cast Iron Sizzling Steak Plate #5294These plates came with no instructions. It is unknown whether they have to be seasoned or not. When I washed the plates, the water beaded on the surface of the plates. I am not sure if this means the plates have a coating or if cast iron always beads like this. I am assuming they are cast iron with no coating and seasoned them. The plates work perfectly and the meal on these plates was excellent. I cooked the steak, placed the plates in the oven (with no steak on them) at 450 degrees until they were very hot. Then placed the plates on the table, rubbed butter (I know, fattening) to the surface of the plates, and placed pieces of steak onto the plates. The steak sizzled in the butter. The meal was excellent. Not something I will use every day. But when I cook steak, these will work out well. Have always wanted to make a steak meal like my favorite steak restaurant. Now I can.

I gave this product four stars instead of five because: Where are the instructions?????

At least a paper saying they have to be seasoned or not.

Searched for a while to find the right "sizzzle plates". Always wanted to have our steaks served on hot plates just like the restaurants do. Now we got 'em.

KitchenArt Pro Measuring Butter Knife, Champagne Satin Finish

KitchenArt Pro Measuring Butter Knife, Champagne Satin FinishHandy little gadget. Butter that comes wraped in marked paper is not very accurate as the butter often does not line up with the wrapping measurements. the measuring butter knife is very easy to use and is also useful for unmarked butter wrapping.

I thought this measuring butter knife would be great, yes it's a great idea to get exact measurements of butter for recipes....however, the claim that it is "satin finish" leads one to believe that it is indeed satin finish metal....but, I used it one time, washed it, and much to my surprise on one side the "satin finish" came off leavinga blank area. I was pretty surprised when I realized it's just paint....the other side still shows measurement guide, but I assume it too will eventually come off. What a waste.

International Culinary Carving Set 22 Piece, Wood Case

Nicely organized in wooden storage box. I wasn't overly impressed by the quality of the actual tools. Handles are made of light weight material and probably will not hold up well.

Cambridge Clarity Sand 30-Piece Flatware Set, Service for 6

Cambridge Clarity Sand 30-Piece Flatware Set, Service for 6We needed flatware pronto and seeing walmart online prices worried about prices for a decent set. So we (I) decided to get them from Amazon. I read a lot of positive reviews. They arrived quickly enough and we put them to use. We figured set for 6 would be sufficient. However, the steel work is not top notch, as the spoons especially had sharp, chipped edges. A friend later gave us two Oneida sets for 4, we took one back to the store (Walmart), and I personally much prefer the Oneidas for their heavier weight and lack of chips. I also don't think that 6 would be enough for a small dinner party; eight or ten would be better. If you must, you must, but I'd recommend paying a little more if possible for what I've perceived so far as higher quality.

I didn't review these when I first got them, because I didn't know how their longevity would fare. It's been over a year now and they look as new as the day we bought them.

Kuhn Rikon PushPan

Kuhn Rikon PushPan, 8-InchI make cheese cake often since I LOVE it. And I have three springform pans a 10", a 9" and a 7". One of my recipes calls for the cake to be baked in a hot water bath but first the pan must be wrapped in a double layer of heavy-duty aluminum foil to keep the water from seeping into the cake. I've made this cake a half dozen times and the foil wrapping is such a pain in the butt and also if you do not do it correctly, the water seeps in making the cake a soggy mess and wasting a lot of very expensive ingredients.

I saw in a catalog a new-fangled cheesecake pan that did not have the spring latch on the side. It has a rubber gasket rimming the pan bottom to seal it tight. To remove the cake it said to place the pan on top of something sturdy that was taller than the cake pan and then push down on the sides of the pan. No need to use a knife to loosen the edges one little push and the pan bottom with the cake on it would slip right out. I doubted that this would work but still I wanted to try it and so I ordered the Kuhn Rikon PushPan on amazon.com for $30.

I was very nervous about using this pan and so I first tested it with a normal (no hot water bath) cheesecake. I made the recipe posted below. The pan worked just as they said it would cake slipped right out. Even better there was no dripping of butter onto the bottom of my oven. Loved that. One problem however I ordered the 9" pan and made the same recipe I've been using in my old springform 9" pans for 30 years. The Kuhn Rikon pan was too small to hold all the batter so I put the overflow into a small bowl and baked it too.

The yesterday I got brave and decided to test its water-tight claim. Made the chocolate-swirl cheese cake that gets baked in the hot water bath 4 cream cheese $8; sour cream $2, and sugar, eggs, chocolate an expensive endeavor. Once again though the 9" recipe I have made many times before did not fit in this pan. The overflow this time almost filled my 7" cheesecake pan. But both cakes looked great when I took them out of the oven. Then the waiting three hours to cool and then the overnight refrigeration.

I could not wait until suppertime and so I decided to have a piece for breakfast. Cake slipped easily out of the push pan and wonder of wonders the cake was not soggy or wet at all.

So the pan works it's just not big enough for normal 9" recipes. Rather than try to redo all my 9" cheesecake recipes, I am going to write to the company and ask that they exchange this one for the 10" pan.... or give me my money back. I like the pan just not the size.

I am an accomplished baker; I bake everyday and am currently working on a cookbook. I have made hundreds of cheesecakes using a traditional springform pan. Whenever I make cakes using a water bath I have always wrapped the pan in 2 layers of foil. This has always worked for me.

I was excited to try the new Push Pan and did so for the first time yesterday. I made Junior's New York Cheesecake. You cannot imagine how disappointed I was when I removed the ring from the Push Pan. The base of my cheesecake was entirely WET! All around the sides, where the red silicone ring is, was completely drenched!

I followed the instructions completely; pushed down the base into the pan, made sure it was secure and even. The cheesecake came out delicious, however, the crust was soggy; I do not recommend this pan to be used without wrapping it well in foil before putting in a water bath.

However, I must say that the unmolding of the cake was very easy and the sides were nice and smooth; the bottom wet, but smooth...

Buyer, beware. If you do decide to buy this pan, WRAP the pan with foil in the traditional manner!!!!!

I used this for a really squidgy chocolate cake and a Vanilla & Ginger cheesecake. I didn't trust it at first so I ran water into it and nothing leaked so I dried and greased it an hoped for the best.

It worked perfectly. I'd love this in different shapes such as a PushPan Heart Shape.

Customer review from the Amazon Vine Program 9" pan

I have a large collection of well used springform pans from cheap tinned steel to LaForme's expensive "leak-proof" enameled steel. They all get the job done but leak. Even double wrapping the bottom of those pans with heavy foil when baking cheesecakes in a water bath would be no guarantee water would not find a way in. So I was very anxious to try this pan and immediately put it to the test by baking a cheesecake in a water bath with no foil wrapping. It worked like a charm, the cheesecake was perfectly dry.

This pan also is also constructed from very heavy weight metal; 19 oz. versus a typical 9" tinned steel pan at 9 ounces. So you don't get over-baking at the edges that you do with a thinner pan. My cheese cake was evenly cooked and perfectly flat from edge to edge. Removing it from the pan was no problem and if you line the bottom of the pan with some buttered parchment it makes it easy to remove your dessert from the bottom piece.

I also used it to make a quiche and when blind baking the crust I didn't get melted fat leaking from the bottom of the pan like I do with traditional pans.

Although this pan looks like it has the exact same dimensions as a standard 9" springform pan; 9" x 3" because the bottom of the pan when fully seated rests 1/2" above the bottom you get about an 8 cup capacity versus 9 cup in a traditional springform pan. So if your favorite recipes tend to fill up your pan I would size up to a 10" or plan for a separate pan for the overflow.

I love the pan and hope at some point they also offer it in a 4" size for individual portions.
