a few things to consider 1. this is not the top shelf Wusthof, this is an economical line, and as such the quality is above most knives but if you are looking for the best break out you checkbook because they cost alot more. 2. You should use an asian blade sharpener for sharpening this and other asain style blades you have. the angles are different and the blades are thinner so it dulls more easily but also sharpens faster. 3. overall I love this knife and even though I have more expensive blades I reach for this one first. I use it everyday!Know what you are buying and don't blame a product for not doing something it wasn't designed or intended to do. This blade is not a cleaver and it is not a can opener. Wusthof makes GREAT knives and this is an inexpensive way to get a great blade.I was recently introduced to the Wusthof Santoku knife while visiting my daughter. It didn't take much time for me to use this as a "go to" knife while helping in the kitchen. I was so impressed with her Wusthof knives that she purchased with gift cards as wedding gifts (5 years ago) that I decided to treat myself to a set after 40 years of having misc. knives in my own kitchen. I purchased a block set of Wusthof Silverpoint 2 knives and added to my set this wonderful Santoku knife. The Silverpoint 2 knives are not as heavy as the standard Wusthof knives but I feel that they are equally good. I decided on these knives because the handles are comfortable to hold, they quality of the steel is good, and their weight (slightly lighter than the upgrade models) makes it a lot easier to spend time in the kitchen preparing meals without fatigue to wrists. I would not be afraid to buy these knives. I personally felt that they were so good I purchased a set as a gift and added the 7 inch Santoku knife to go with it.

I like the way it feels in my hand. It is a good fit in that regard and it the lenght of it is perfect for me. I love it for chopping up veggies and meat.
Watch out, however, it is very sharp. I accidentally cut my finger slightly with it because I was careless. You don't want to be unattentive while using this knife.

I think reviewer Pam from Nebraska perhaps clicked the wrong star rating since her text provides a glowing review, with which I agree, but her star rating is a one! This knife is razor sharp and makes mundane salad ingredient chopping easy and fun. One side benefit is that the knife is also adept at slicing cheese. I own the Wusthof Classic 3.5 inch paring knife and this Silverpoint seems sharper, although its size makes it a little less maneuverable. This knife comes shaving-sharp, and the steel will hold an excellent edge, but it's nothing like the solid, forged knives Wusthof is known for. The blade is thin, light (4 oz/113g), and clearly stamped; if you expect the heft and durability of the look-alike Grand Prix II, you will be sorely disappointed. The handle is lightweight plastic, which was brittle enough to chip slightly in shipping. The blade-heavy balance leads me to believe the knife uses a small rat-tail tang, which means the handle may crack and separate from the blade.This is definitely a cut above the cheap stainless knives which plague many home kitchens; the razor-sharp edge and quality X50CrOMoV15 steel merits 3 stars, but the Victorinox 47529 Fibrox 7-Inch Granton Edge Santoku Knife is a much better buy. Both use stamped blades and plastic handles, but the Victorinox knifes are full-tang, and the plastic used in the handles is denser, more durable, and grippier. Finally, the Victorinox knives have excellent balance, and can survive a remarkable amount of abuse in professional kitchens.

This product is wonderful! I wanted something I could place on my fridge and use as a shopping list/memo pad. After reading a few bad reviews of some other similar products on Amazon, I was hesitant to go this route but decided to give it a try. It was worth it!The magnet is very powerful and sticks to the fridge with no slipping or movement. The white marker that is included with the purchase works great. It doesn't drip or run when writing and easily wipes off with just a damp cloth or paper towel. As I've read from some other product reviews, it doesn't leave any ghosting behind and cleans completely off with no hard scrubbing or chemicals.
I highly recommend both the chalkboard and the marker and will be looking into getting additional marker colors from this same brand.Sticks to the fridge and doesn't fall off. Fine to write on, but takes some effort to erase. I have to take it off the fridge and wash it in the kitchen sink. If I use a wet wipe, prominent white streaks are left on the board, which looks messy and makes it difficult to see anything else I write on top of it. Also, please note that this surface does not adhere to regular chalk! Only the chalk markers will show up. For the price, I'm willing to make these adjustments. Plus, it's been very useful in our house for keeping up with the chores.

We were going to buy a 'bagel guillotine' but were swayed by the great reviews to buy this instead should have gone with Plan A.This device is very bulky and clumsy. Yes it handles big bagels, but at the cost of being hard to use. Also because it's so big, young hands (and even grownup hands) have PLENTY of room to contact the very sharp blade should anything ever slip.
The sharp blade is protected but the only way the slider works is to hold the other end in your hand and cut DIRECTLY toward your hand. A very BAD idea to teach the kids and very disconcerting.
Plus, depending on the bagel, your hand gets very messy. Was hoping I could put the bagel on a plate or napkin and slice, but it needs to be held more firmly because of the clumsiness of this slicer.My wife and I have been using the Brooklyn Bagel Slicer for about a year.

I purchased this knife for an entry level sushi chef knife. Knife sees 5-10 hours of daily use. Great feel, and preforms just as well as some of my co-workers masamoto white steel yanagis.This knife however did take a fair amount of work on the stones to produce a seriously sharp edge. It is sharp at first but definitely would benefit from significant stone work if intended for serious use.
I would recommend this knife to any entry level yanagi user.I use this knife full time as a sushi chef and it has never let me down. the edge has stayed true week after week...It does require some extra attention because the steel is very sensitive to oxidation, but once you develop a nice patina its not as much of an issue. just wipe after use with a damp towel. out of the box its sharp but after a little work on the stone it becomes a razor. all in all I am looking forward to many years of use out of this knife. hope this helps any future buyers.

My wife got this for me as a Christmas present, and I've only had time to make sushi once since then, but that one use was enough to convince me to buy additional knives from Yoshihiro. It is neither too light or too heavy, perfectly balanced, razor sharp, and has more than enough length to fillet even very large fish. I have fished most of my 33 years and no knife has ever produced such beautifully clean cuts and fillets as this knife. No need to worry about the blade flexing on you as you cut or chop or dice or cleaver. I purchased this knife for my wife who, after using the first time, proclaimed the knife to be quite sharp and then show me the bandage on her finger. She has often told me how much she likes this knife's carving and slicing abilities as well as how it has reduced hand fatigue & labor when preping food(we have a catering business). I was worried about buying this online without a review but boy am I glad I did. I wanted the stainless steel look first of all and I got more than I wished for.I know I sound like a geek getting all excited about a can opener but compared to the Black and Decker one I had that took forever to get it to line-up and open a can plus the noise on it, this one is a dream.
The magnet on it searches for the top, you don't have to stand on one foot and hold one arm up at the same time to get it to line-up. Plus one of the nicest features is that it puts crinks in the top of the can, so when you throw away the top it's not sharp. I worry about that since my dog loves to get in the trash can, I'm afraid she'll cut herself.

1)Inferior tempering. Cutco is stamped instead of forged. All best knives are forged (with the exception of Henckels Twinstar which is using a new technology called sintering) because forged knives make a better edge among other reasons. All the worst and cheapest knives are stamped because it is cheaper and easier. The forging process randomises the metal particles for a slightly tougher knife. It also permits the differing thicknesses of metal which is necessary for a heavy raised bolster between the knife handle and knife blade. Forged knives have more metal than stamped knives and thus are heavier. The forging process enables extra metal proportioning to give the knife perfect balance. Most prefer the weight of a forged knife. It feels heftier and more substantial. Forged knives generally are thicker, have more heft, hold an edge better, provide bolsters which brings better balance and safety, and obviously have been made with a lot more care and craftmanship. The forging process enhances the flexibility (making it less likely to snap to break), density, and hardness, and better solidifies the structure of a knife.
2)Steel. Cutco claims they use the highest quality steel money can buy. They call it high carbon surgical grade steel. While this is subjective Cutco uses 440A grade steel while most top of the line knives (which is where Cutco is priced at) uses 440C, which is higher in carbon. 440C is more expensive to make, buy, and manufacture with. 440C also makes a sharper edge, and holds it better. Because of it's grain structure 440C is also more stain resistant. And while 440C steel is generally only found in top of the line kitchen knives, 440A is often found in the cheaper, run of the mill type kitchen knives. Where they got the surgical grade label is beyond me, 440A steel doesn't have a regular grade and a surgical grade. When you think of surgical instruments you think sanitary, expensive, and high qualityit's just sales hype.
3)Lack of bolsters provides for inferior balance and less safety.
4)Double-D edge. Most cooking enthusiasts prefer a straight edge which the double-d is not and you cannot sharpen Cutco edges yourself whenever you please. Salespeople use the ol' rope a dope trick when giving a presentation because the serrated pattern cuts tougher objects better, but any chef or cooking enthusiast will tell you that kitchen knives are made to cut through food like meat, bread, and tomatoesnot rope or leather. For that a utility knife is bestand there's are plenty of utility knives that cut through rope and leather better than Cutco's.
Cutco's salespeople swear up and down double-d edges are neither straight, nor serrated but unique (don't all salespeople?). The Double-D edge is in fact another type of serrated edge. Cutco calls their serrated edge "Double D" just like Spyderco calls their serrated edges "Spyderedge." Except Spyderco isn't trying to fool anyone and markets their as a superior serration pattern while Cutco tries to claim theirs is different.
But anyone who knows anything about knives can tell you the ^^^^ pattern on the edge (take a look at the cutco.com website for an explanation and drawing, currently at: makes it a serrated edge. The whole double-d thing is just hype like everything else about the knives. The Double-D edge is not patented and never was.
The problem with the serrated pattern is that it doesn't make a clean cutlittle nicks and tears in the food is made. Serrated knives are generally only good for fibrous vegetables and breadwhere it is needed. Cutco reps may claim that it makes a clean cut, but this is only true for cutting stuff you can press straight down on (like butter), but for things you need to slide the blade back and forth on (like meat) the teeth will tear it up. Serrated edges are also somewhat more difficult to clean.
As for sharpness, you may think they stay razor sharp but in reality only the crevices of the blade edge are. You see serrated edges like the Double-D's look like this: ^^^^^^ when contacting the food the points get worn down rather quickly but the crevices stay sharp, so it may seem like it is razor sharp but in reality only the crevices are. It can never be as sharp as a well maintained plain edge, the edge preferred by cooking enthusiasts and professionals. Maybe a serrated edge is better at cutting rope (the rope a dope trick), but the best kitchen knives are not made to cut through rope, they are made to make a good, clean cuts on food. Master chef Wylie Dufresne just recently told GQ magazine in their Sept '03 edition, "I have plenty of friends whose parents have Cutco in a knife block. You pull them out and they're all as dull as can be."
Other knives you can sharpen yourself whenever you want, but with Cutco knives you need Cutco to sharpen them for you. I will refer you once again to Cutco's own website: at cutco.com, currently here:
"For resharpening of Double-D® or straight-edged knives, send them along with a return shipping and handling fee of $5.00 (1-3 items) or $8.00 (4 or more items) to the CUTCO address below."
You have to pay for them to be sent in and sent back all the while without your knives. I've heard of representatives of the company coming out and sharpening them for you, but this is by no means guranteed to happen so there is obviously good reason they don't state this on their website.
5)Handles. Of course this is subjective but the handles are different from any of the others and some people find them uncomfortable (especially those with extremely large or small hands since they were designed for the average hand), some others find them dorky looking and wouldn't want to set them out on the dinner table. Sure the handles were designed to be comforableall handles are designed that way! And like all good salepeople, Cutco even has a good story to tell about it. That doesn't mean they actually ARE comfortable. Consumer Reports, the leading consumer magaine, also found the handles to be uncomfortable. The handles are made of what Cutco call "Thermoresin" and thermo=heated and resin=plastic, injection molded plastic is the absolute cheapest material cost and method possible. And the type of plastic the handles are made out of, celluloid plastic, is highly nitrated and self-oxidizing like the gun cotton in smokeless gun powder (to a lesser extent) thus highly flammablenot good for a kitchen knife. Although the rivots are made of what they call "nickel-siver", there is no silver in them. They call it nickel-silver because it has a silver color to it. The handles have no current patent on them, other companies could copy them but choose not to. Wear Ever cookware had handles designed by the same person in the 30's and 40s, they have since dumped this design.
6)Corrosion. Many people (including Consumer Reports magazine) believe that Cutco blades corrode a little easier than most. Consumer Reports seemed to hint that it may have to do with the type of metal used, polishing, or coating.
7)Restrictions when buying. Since you can only buy from a Vector rep, you are forced to select your rep with care because a flock of amateur sales reps can and will include a range from the best professionals through the worst rip off artists.
8)Price. Many will agree that Cutco is not best for commercial use but it is priced for commercial use. You can get a 7 piece block of top of the line hand-forged, bolstered, well balanced Wusthof-Trident Grand Prix for $249. A similar set of Cutco can easily run you $300-$400. Tramontina Professional is supposed to be the best value having the same features as the best knives but at about 1/3 the price. There may also be hidden costs added (such as shipping & handling, C.O.D., sales tax, etc.) that make the actual price much higher that the displayed and originally discussed price.
Cutco is sold at prices very similar to knives that are top of the line yet are not as good as them in almost every way except they do have comparable rockwell hardness, are full tang, and have a good guarantee. I wouldn't spend my hard earned money on guarantees though and the other qualities you can find in much cheaper knives.
The average household has very cheap, low quality knives that generally only last 5-15 years. So when they hear there is a forever guarantee it becomes the main selling point. What they don't know is all knives in that price range are built to last a lifetime and with proper care they definately will. The only way they won't is if you abuse them, which Cutco's guarantee doesn't even fully cover. Also, in case it doesn't last a lifetime, many top of the line knives carry a lifetime guarantee.
Cutco's money back guarantee is for 15 days. Most large retail chains like Sears and Walmart carry a 30 day money back satisfaction guarantee. The forever guarantee is nice, but a couple nitpicks: "Should you damage your CUTCO through misuse or abuse, we will replace the item for one half of the current retail price." it needs to be sent in to Cutco "with an explanatory note" and Cutco is the sole determinor of what is misuse or abuse (such as chipping your knife), also the "guarantee is intended solely for consumer/in-home use." Don't believe me? Check out the Cutco website yourself:I you are looking for the guarantee, Henckels Twinstar and Messermeister (among many others) both offer similar lifetime warrantees and are of better quality (in many people's opinions). If you must have the best kitchen knives available, Wusthof Trident Grand Prix is highly regarded as the best kitchen knives money can buy and the prices are similar to Cutco's. If you are looking for brand name, Henckels is considered the #1 selling brand in the world, been in business since 1731, and they will replace their twinstar knives that have a "diamond edge" with new ones if they get dull. For the best value, you can find high quality, forged, full tang knives with bolsters at a very reasonable price (about 1/3 that of Cutco's) you might want look into the Tramontina Professional Series which is regarded as the best value in the knife industry. If you don't want to spend very much money on knives, the Forschner Victoronox is made by the same people who make Swiss Army Knives and considered the best of the very cheap kitchen knives. If you don't want to sharpen your knives, you might want to look at the Regent Sheffield Infinity Edge or Henckels Twinstar depending on how much you want to spend. Most retail stores have a 30-day money back guarantee.
My opinion is that Cutco is not worth their price and I'm sure most professionals would agree. In fact you would have great difficulty finding one culinary arts school, master chef, or knife expert that recommends this brand. Norman Weinstein, a nationally recognized knife skills instructor who's taught since 1995 at the Institute of Culinary Education was quoted by the Baltimore Sun newspaper as saying "Why, why, would you buy such a knife?"
Cutco is able to sell their knives at such a high price because they are being sold to people by their sons, nephews, and granddaughters (basically people who care for them and trust them, or their friends, and know very little about knives). Consumersearch.com looked over all the professional reviews available and while 11 professionals liked Wusthof Trident the best, only one liked Cutco and that one only liked Cutco compared to other stamped knives:The bottom line is that no brand or set is best for everyone and you should check them all out and compare to decide which is best for your needs, wants, and preferences. The retail store is probably the best place to do this, unfortunately Cutco is not sold there.

I got this because it would fit on top of the Breville800XL Smart Oven perfectly! I may add some metal tacks on the bottom as feet just to ensure a cool distance between the wood and the hot oven.The only complaint is that someone must have marked the back by accident with a permanent marker.. just a few strikes... but enough to be annoyed. Out of the box, I was very happy with the knives. They were wonderfully sharp and effective in their intended purposes. My one concern (and it's not a small one) is that when we remove the knives from the dishwashwer, they've been coming out with small rust spots. WOW. WOW. WOW. Do the prices of some things sky rocket from week to week or what? I got this set for LESS than HALF of what it is going for now. I paid -$54.76 (About 2 weeks ago!)At that price, it was a steal. Guess you have to put things on your wish list and really check them daily...or buy it outright.Now, maybe this new price of $120.00 is still a good deal for the quality, but I feel really lucky at the moment having paid what I did.
It IS beautiful. The wood has many striations and is heavy as a cinder block. The knives seem to be sharp and balanced and have a good weight to them. All one piece of metal from handle to tip. Very contemporary. The blades are not skimpy or thin and they fit into the block perfectly.
One of the photos shows a set of 6 knives laying flat in front of some boxes. You get FIVE knives in this set, not 6. I imagine this photo is to show you the 'line up' of the Forme knives they have ?? In any event FIVE NOT SIX.
I cannot review the usage of these knives as they are a 'starter' set for my daughters first college dorm/apartment. But given the normal history of this "name" brand, I expect the usual great quality. I will update if anything goes amiss.
The knives were extremely well packaged in an original "off the store shelf" looking box, within another box. The wood block was well wrapped and each knife was protected in a thick cardboard sleeve and then in a plastic bag fitted to each knife.
Let me add that when WE look at the block, we don't see a "heart". Not in the sense it jumps out at you and you say "Oh look, a heart". We just see a contemporary looking curve.
Wish I had these during my first 'apartment' days. All I had were those thin, cheap knives that you could flex between two fingers like a spatula.
I will remind my daughter, again, how lucky she is.

My knives were old and cheap and it was time for an upgrade. I found this wonderfully colored set and the price was quite reasonable, so I decided to give them a try. Not only are they colorful and liven up the kitchen, they are SHARP! They have a nice ceramic non-stick coating AND each one comes with a matching plastic sheath, to prevent accidents in the drawer. They are dishwasher safe, too! I am very pleased with the price, the speed of shipment, the colors, and the sharpness. A great bargain!UPDATE: 4 months later I'm still quite pleased with my knives. They've survived "the kids" and that is saying something!Picked these up at Sam's Club at a great price a year ago. Excellent quality and they really do the job with little effort. I would recommend this product. Love the blade covers. They cut nice and clean and easy. Easy to store and keep safe.I just purchased a 14pc set at a wholesale club although it had some different knives but the 8" chefs knife and 3.5" paring were the same.. It also had an 8" bread knife 7" santoku 5" tomato knife & two 5" cheese knives hard/soft in place of the knives shown here.. ok, i own several of the nightshade series with the tai pan included.reading many of the reviews on amazon really drive me insane when people complain about the lack of "cutting" ability.what are u trying to cut and more importantly why? these are plastic one time use self defense weapons, nothing more.why u would ever expect it to cut paper or anything else is beyond me.for what they are, they are excellent.light weight, pointy, tough, weather resistant and would cause serious damage in the hands of a determined user.thx for listening. :) This is from cold steel I think this says more than I ever could about how good these are and exactly what you can expect from them. Cold Steel is the best!

I ordered two products from the "Nightshade series" (Tanto & Tai Pan) and was very diappointed. I tried to use it to cut paper. The edge was so dull that it tore the paper rather than cutting it. I realize it is plastic and will never match up to steel, but I did expect it to be a knife and actually have a cutting edge. When I called Cold Steel to complain the CSR I spoke to was no help. I explained that it couldn't cut paper and she said it wasn't meant to. I said when I buy a knife (even a plastic one) I expect it to cut things. She resonded that that it was not possible to get plastic sharp enough to cut things. I immediately took exception. From that point on she referred to the products as "not knives" but instead as "Personal Defense Items." I am dissapointed that no where in their literature is there a disclaimor that says "these are Personal Defense Items."These products have no edge and very little durability. (I could break either with my bare hands without fear of injury). You would get better cutting results form a standard disposable plastic knife, like the kind used at picnics no exaggeration!
Cold Steel says they back only tested, quality products. My experience with this product line puts that claim in serious doubt.

YOSHIHIRO- Shiroko-Kasumi Usuba Chef Vegetable Knife 7.7" 195mm - MADE IN JAPAN
I'm a restaurant cook and over the years, I've had a number of Henkels and Wusthof knives, but have gradually been replacing them with Shun and Miyabi.After having bought this usuba knife, I will gradually replace all my knives with Yoshihiro brand knives. I really can't emphasize how great this knife is. It arrived very sharp (and with fast delivery) and after a few runs on my waterstones, it was literally as sharp as a razor. I took it against the top of my arm and it took off every hair the same way a store bought shaving razor would. My Shuns and Miyabis can do the same after sharpening, but they don't maintain that edge for nearly as long as the Yoshihiro blade. The design, shape, and build of this Yoshihiro also makes it much easier knife to sharpen than the Miyabis I have (7000 Pro series). You can tell it was built for someone who would be sharpening it by hand. Just looking at it side by side with the Shuns and Miyabi, you can tell its a vastly superior knife. AND ITS IN THE SAME PRICE RANGE!
I was slightly hesitant to buy a shiroko knife because I was worried about rust stains, but it hasn't been an issue at all. I just dry it off immediately after washing and its been in perfect condition.
So like I said, its the best knife I've ever had and I will soon replace my whole set with Yoshihiro.
P.S. You know that thing sushi chefs do with a daikon where they rotate it against the blade and turn into into one translucent sheet? I've tried that before with my other knives and it wasn't very easy and my product wasn't all that clean. I did it with this usuba and came out with some very professional looking results. It something that obviously needs practice, but you need a knife like this in order to make similar delicate cuts.

Chef's Choice Commercial Model 2000 Diamond Hone Knife Sharpener
I have finally ordered a replacement sharpening cartridge for my Chef's Choice 2000 model, after nearly ten years of good service. I have used this in a commercial kitchen, before my retirement, and for keeping my home knives sharpened. Amazon was not even on the horizon when I purchased my unit, and I do not remember where I bought it, but the sharpener has served me well over the years. This unit may not have the flexible strop of the newer unit, and may not produce the true razor sharp edge of it's younger brother, but this is a great unit. Finally wore out the sharpeners enough that they are not producing the edge they used to, but they have lasted over ten years. I figure this unit has saved me several thousand dollars, plus quite a few knives, and of course time lost driving back and forth to somebody to sharpen my knives, and generally get them back a week later.Great investment! Probably give this to the grand kids when I can no longer cook!
