No need to worry about the blade flexing on you as you cut or chop or dice or cleaver. I purchased this knife for my wife who, after using the first time, proclaimed the knife to be quite sharp and then show me the bandage on her finger. This flatware is really a fine bargain. It has the look and feel of a more expensive set of flatware (There is usually some trouble figuring this out from photos). They are not flimsy at all. The pattern is simple and contemporary and they are also very well-balanced. They are just slightly larger than standard flatware which is a feature I like, i.e. the tablespoon ladle seems to be slightly larger than the ones I've been using. I was afraid they might be too shiny and although they have a nice bright luster it is just slightly muted so they don't have the tacky look of cheapo flatware. It does have "China" stamped into the metal near the bottom of the knife blade by the handle. It doesn't bother me at all but make sure it doesn't bother you before buying.Just beautiful! It's not easy finding an HDPE cutting board! And this one comes in a few different sizes and colors. (Pay attention to that, because some sizes may not fit in your dishwasher (like this 15x20 version).HDPE is not quite as soft on your knife as wood, but it's pretty easy on the knife. And it's certainly not as beautiful. But, while there seems to be some studies that show antimicrobial properties of some types of end-grain wood, you really need to have discipline and diligence to keep that highly porous surface sanitary.
And if you choose a composite like an Epicurean that you can put in the dishwasher, it's harder on the knife and some are manufactured with some nasty materials. Glass is without a doubt the best material from a health & ecological point of view, but it is also the worst on your knife.
And as an important aside, while wood can't go in the dishwasher and composite, acrylic and plastic can, that is somewhat of a red herring, as some dishwashers will not get hot enough to kill all microorganisms in what is likely a scarred surface. The truth is, if you are dealing with raw meats, you really just need to either spray/wipe OR soak in water with a little bleach and let air dry, then rinse. No matter the material.
Which brings me to plastic, if you have to sanitize with dilute bleach no matter the material, then you might as well use material that is both easy on your knife and that can place in the dishwasher. But most plastics will warp in the dishwasher. To avoid the warping you need high density polyethylene over just polyethylene. The former will hold up to heat while the latter will warp.
For me the pros:
+ Easy on your knives
+ Food grade material approved for use in commercial kitchens
+ Easy to clean and maintain for most jobs
+ Won't warp in the dishwasher
+ Not as bad for the environment as some composites
Outweigh the cons:
Not as good for the environment as using sustainable wood or glass
You need to watch for scarring over time and replace
It needs to be designed with a lip to catch overflow fluids
Overall, I would use this board for most jobs in the kitchen, unless you are a diligent and committed wood lover.I had been looking for a nice white cutting board of this size for a while. I have been sharpening knives for more than 60 years. I require my knives to be sharp enough to shave my arm. This sharpener has done that with every knife I own.I own a Gerber Chef's knife. It is no longer made. The Gerber food knives had the hardest steel and were a devil to sharpen. Because it was so hard, I could not get this knife sharp so it just sat in the knife safe. WilI am somewhat of a craftsman and have been addressing knife sharpening with stones (manually) for many years. This was an arduous task as honing is an art that requires time, patience, and most importantly, precision to maintain a 20 degree angle. To be frank, I elected to give up knife sharpening by hand. I did my homework and read many product reviews before purchasing the Chef's Choice model 1520. It was expensive but, no more so than buying multiple stones of varying grit plus my time.
Upon sharpener arrival, I immediately went to work on our knife sets. Was I impressed with this tool yes!! It was fast. The sharpener took only 20 minutes to do my entire drawer. It was precise as it held both the 20 degree (German knives) and 15 degree (Soduku knives) angles by virtue of the tool's design. The finishing hone provided the edge which the diamond faced stone had prepared. I warned my wife that the paring knife was sharper than new but, she cut herself anyway.
I also had a Gerber 7" knife which was 10+ years old. Gerber is out of business now but, they were renowned for manufacturing knives which had the ability to retain an edge. That is, their knives were made from very, very hard steel. However, all knife edges succumb to time/use and my knife died years ago. I could not sharpen the Gerber knife with my stones so it mostly sat in the drawer. The Chef's Choice made short work of the Gerber's dull edge by returning it back to the sharpeness I remembered and wanted.
I then did my neighbors knives and, on the following weekend, my daughter's household knives. Very fast, very sharp. I justified the sharpener as an heirloom for the daughter. In the meantime, I will keep the neighborhhod sharp.

I cook for a livin' and I have many honing steels, some at 14" for my big knives and this one for my 8" and under knives. I got this one in an upscale set of 4 starz and I do love it. As previously reviewed, it's not for sharpening but used to maintain a sharp edge. If you use this PROPERLY every time you use a new knife then the factory edge will last for months if not years under normal usage.If you are collecting the 4 star line then this is a must, it is one of the most attractive steels made, the Rockwell rating is harder than any factory production blade made, the grooving is crisp and it is a bargain compared to other brands. A must replacement for a lesser steel in most 4 star sets.

We hand out 5 mojo*z for this steel Magnolia!!!As other reviewers have mentioned, this does not actually sharpen your knives in the sense that it won't put an angle on your blade that isn't already there. However, what this is great for is keeping your set of kitchen knives in good (and safe) condition.
Note to novices: make sure to ask a pro or an experienced cook how to use a steel. If you hold the knife at the wrong angle, you may actually be reversing the effect the steel is supposed to have realigning the blade to its sharpest position.
Note 2: a lot of blades these days are made with the higher-end cobalt alloy steel that is significantly harder than regular stainless. All this really means is that if you have a good knife, you technically won't have to use this every time you slice and dice, but it's still a good idea to keep the knife in the best condition possible.

Most of us know the importance of sharp knives for proper food preparation and gracious serving. Of course, I had to learn the hard way by mashing a tomato instead of chopping it, by "sawing" a roast rather than slicing it, and by cutting and pulling off a plump roast turkey leg rather than carving it. Ergo Chef ER40 Pro-Series Knife
This is a fairly large, quality knife with an interesting (and, I think, very functional) angle between the blade and the handle. This is not a "hollow ground" knife, which would have a very fine (and relatively easily dulled but extremely sharp edge, like a straight razor); it is perhaps more appropriately referred to as a "Granton", or maybe "scalloped edge" knife (the last designation referring to the ground-out indentations that run along the edge). These indents are called "hollow grounds" by the manufacturer, and they do seem to effectively assist with discouraging food from sticking to the sides of the blade as you're cutting, which is what the manufacturer claims they will do.I'm no connoisseur of knives. I've always been mostly a 'cheap set of serrated knives' kind of guy, with the possible exception of a Chinese cleaver I bought when I was in my twenties, which I've since found to be of limited utility. But I was intrigued to give this chef's knife a try, and so far I've been very pleased with the results.
I'm no gourmet chef either, but I do like to cook, and experiment with different dishes (mostly made-up or plagiarized from somebody else's recipe book) and I've historically done the bulk of the cooking in our family. More and more my wife and I have tended toward meals of fresh fruits, grains, etc. We'll make a large salad of about 1/2 greens and the rest fresh fruit, nuts and whatever we have we can add: big enough that we'll get at least a couple of dinners and a couple of lunches out of it. We love melons, fresh pineapple, berries, kiwi, apples, pears, mangos, etc. Needless to say, we spend a lot of time cutting up fruit.
This knife has been a champ with all the fruits and vegetables that go into our dishes. Mincing garlic, chopping onions, slicing carrots, quartering strawberries: no problem. I really like the way it makes quick work of slicing up a whole watermelon (the wife's favorite). Where I used to pick out my longest serrated-edge knife and try to saw my way through the rind, then switch to a smaller knife to cut the meat away from the rind and into cubes, this one knife does it all, and quite effortlessly. I would have thought the knife was too big for the latter parts of the job, but it's so nicely balanced that it feels quite comfortable doing the finer work as well as the heavy duty stuff.
We also regularly buy eight or so boneless/skinless chicken breasts at a time (our grocer sells them every day for $1.99 from behind the meat counter), immediately bake and freeze them, then pull out one or two at a time when we want to make a stir-fry, pesto, jambalaya, curry or whatever dish, or add pieces heated with seasoning to add to our salad. So I'm all about a minimal amount of defrosting on a quick microwave cycle, then cutting the still mostly-frozen breasts into pieces and getting on with what I'm doing. This knife makes that job sooo much easier than any knife I've used before, and gives me the flexibility to get the meat cut up and into the pan in much less time.
I've noticed a few times that the tip is really sharp, but I've not actually cut myself with this knife, and I feel confident already in using it (I have a nasty scar on the side of one finger where my favorite serrated knife pierced it). The handle of the knife is super comfortable: absolutely smooth, with no hint of a rough edge where the (full length) tang and handle parts and rivets come together. I really do like the angle of the handle to the blade: it feels very natural and well-balanced, especially for such a large tool. The forged German stainless is flawless in appearance and cleans up so easily. It seems like there's an awful lot of cutlery out there to choose from, designed for all sorts of specific uses. As a moderately-priced, quality-built utensil that fills a lot of needs, I highly recommend giving this knife by Ergo Chef a try.As a chef I need and use a good knife. I have purchased many knives over the years of varying qualities and prices. I have also recently had some issues with carpal tunnel like symptoms.

This opener brought to an end our practice of buying and wearing out traditional, hand-held can openers. We're a big family and open a lot of institutional sized cans. I have no complaints. This opener can handle them all--even little tuna cans. Since we're not a restaurant, our biggest issue was deciding where to mount the base plate. We opted for a corner of one of our countertops in the area with the least foot traffic. Mounting the base plate required drilling holes through the countertop, then installing machine screws and nuts (provided). If we want the extra counter space (e.g., when hosting), the opener can be removed from the bracked and stored in a drawer or cabinet.
Turning the crank sure beats trying to turn those little handles on the hand-held openers we've used all these years. My wife has recently been diagnosed with osteoarthritis in her fingers (sadly so, because she is so young), so this is a real hand-saver for her.All around a pretty good opener. I am very pleased with the quality of these spreaders. They match my silverware set and are a good hand weight (i.e., feel balanced in the hand).These have no heft to them at all. The posted product description for size is: .5 x 1.6 x 7.9 inches (copy and paste). I just measured a knife--it is a tad less than 6" in length. Very thin. I'm keeping them because I need them. Will shop for more later after thorough research. The local Bed, Bath, and Beyond has been carrying and I have been buying odd pieces of stainless cutlery--but no butter type knives. They are not expensive and have a real heft to them: iced tea spoons, tiny spoons, shrimp cocktail type forks, and the best soup spoons I have ever had my hands on. And yes, they have regular knife, fork, and spoon etc. pieces. When I checked the BB&B website I found no stainless cutlery accessories.R H. I love these knives!!! I received some of these knives years ago as a gift from someone who went to Switzerland, and I loved them,so I thought I would order some more. They are very sharp, lightweight yet extremely durable and look good enough to use at the dinner table.6 Piece Spear Tip with Wavy Edge Steak SetI bought these knives along with the 3 piece chef set and could not be happier with their performance. They are sharp, light weight and not expensive. They are the best knives I have ever owned.These are the best knives I have ever used! They are super sharp and don't have any problems cutting through steaks or any thing else you may want to cut with them! (We use them on everything!) When I have food to prep and chop I find myself reaching for these vs our other, larger Victorinox knives (smaller and easy to handle)I bought the victornix 3 piece set with the butcher knives and paring knife first. Then i bought their santuko knife. I am hooked! The steak knives work terrificly and cant beat the price!I picked these knives up to replace another somewhat inexpensive set that I've had for years. I wasn't sure if I'd like the serrated edge as I've found that this just normally tears the food instead of cutting it. These knives however are incredibly sharp and the serrated edge works well without tearing your food to shreds.
They are pretty basic in terms of construction but I don't feel as though that will be an issue with longevity. They're also fairly light in your hand but again, I don't think it really has a negative affect on the product.
If you're looking for a basic set of steak knives, I think you'd be hard pressed to find another set that work as well as these for the money.
Shun Carving Fork
Would I have purchased this if I didn't own other Shuns? No. Is it worth the additional investment? Yes. I've had three previous carving forks. The only one that has survived is my All-Clad.You can really tell the difference in craftsmanship. This fork has a substantial weight. As with all Shun's, the design is simple, yet beautiful. It feels good in the hand. The handle does not have the famous D-shape.
Use this fork to make a beautiful impression.A beautifuly crafted item and awesome to use. Hope they always keep to high standards.

Over all this is a wonderful knife. The out of the box sharpness is easily the best I've ever seen. Balance and weight are fantastic. Extremely light and delicate for such a big knife. My only issue is cosmetic. The fit and finish is really well done except for a small gap on the top where the blade meets the handle just enough to fit a fingernail in. Not enough to be any real problem but for the price I expected better.I will order more Yoshihiro knives in the future but I'll make sure they are their higher end Hongasumi series.If you know how to care for carbon steel, This is a nice knife that will serve you well if you take proper care of it.
This knife has a forward balance (blade heavy)that allows for effortless slicing through most anything. Don't think that this has a bulky or awkward feel to it. It fits nicely in my hand using a pinch grip and is very light for a 270mm blade.
The fit and finish on the handle is acceptable. Not done poorly at all, however for $240 it honestly could have been a tad nicer. I would like to try their Yo Gyuto (western) handle 270mm gyuto just to examine the handle quality.
The blade is where your money goes. It has a terrific profile. I was concerned from the pics that the blade height would be to low. This gyuto stands tall enough to mince anything. It can become very sharp on whetsones and has good edge retention.
*** Don't Forget This blade has a clear coat of lacquer out of the box. I removed this with
1. acetone to create a haze to better see clear coat during removal
and
2. 1500 grit wet/dry automotive sand paper (use it dry)
The saya comes with the blade which helps to justify the price. Saya fits well and the pin is wooden which also fits well.
Overall, great knife! This may not be the "Best Value" but if you know what you're looking for, (and willing to put in the work) I recommend give this or possibly the Yo-Gyuto a try.
