Kyocera Revolution Series 7-Inch Professional Chef's Knife, Black BladeI bought this knife recently as a work knife at my job. I am a professional chef and I am experienced and well educated on cutlery. This is the second ceramic knife I have bought, the first was dropped by a co-worker and that knife shattered. I love working with ceramic knives because they are the sharpest knives around,period. Nothing is sharper. It glides through food. It requires a bit more care, but if you take good care if it ,it will last a lifetime. This knife is very versitile in the 7" model and very resonably priced. Perfect for meat and fish, slicing, fruit and vegatables. I can cut perfect slices, juliannes, and very fine dice. I laugh when I hear people talk about " my shun knife" or the extremely over-rated "my henckels". They are good all right but very expensive and they will NEVER be as sharp or hold it for as long as a ceramic.

Now, I will say this knife has one thing I don't care for. While the handle is extremely comfortable and feels oh-so-natural( it actually helps cutting in a mechanical sense by design),if the handle is greasy or oily (when cutting steaks from large cuts or dealing with certain fish it can get oily from handeling) it becomes slippery. Not good for a knife as razor sharp as this. Just keep it clean, protect it from abuse and you will have a knife like no other for alooooong time. In a home I suspect it will not be subject to the rigors I put it through, therefore this knife is a great value for the home chef. I would put this knife up against Shun or Henckles or Wusthof any day.

I'm not a professional chef.........I just have a bad case of "chef envy". Recently got this knife based on the chef's recommendation LOVE it. Extremely sharp, as are all the Kyocera knives. Very well balanced and comfortable to use. I have a full set of top of the line Henckels love them too but I find myself reaching for the Kyoceras for most jobs because of their sharpness. This knife allows you to slice through large onions and get really thin slices with ease. Goes through meats like butter. This 7" knife is a new addition to the Kyocera line, and I'm glad they added it. The Revolution blade is a little heftier and the black blade is very cool looking.

Don't be fooled by cheaper imitations if you're going ceramic, go Kyocera. I was given a less expensive starter set from Linens N Things. They weren't Kyocera and they were a disappointment and waste of money.

In my opinion, this knife, a paring knife, and 5" slicing knife are must haves for serious cooks. Expensive but worth every penny. In the case of Kyocera, you get what you pay for top quality.

I prep for a large restaurant 6 days a week and use this knife for nearly everything. It has stayed sharp for well over a year of hard work. Considering the store pays a company almost 2 bucks a week to sharpen each steel knife, the knife has "DOUBLE"

payed for itself already and I have yet to send it off to get sharpened. Yes, some people complain you cant use it like a steel knife with prying open things or that its fragile. Really people.... its a knife! you should be careful not to drop it, and using ANY knife to pry things open will cause damage to any knife. all in all a great knife, kinda cheap handle, that has a potential to lose grip when wet or oily.

I'm kind of reluctant to write this review. Particularly since a professional chef seems to favor this knife in a previous review but I have a particular issue with this knife that I feel I have to point out for others. I like the quality of the knife. It feels very nice in the hand, very well balanced though obviously feels a bit fragile since it's made out of ceramic. I have no issues with the quality or the fragility of the knife.

The issue I have is that the sharpness of the blade is not all that impressive to me. My favorite steel for blades is VG-10, which I think is the best all around steel since it is very easy to sharpen and also holds an edge for a decent amount of time. I have a few knives made out of VG-10. I tested this knife out after using a VG-10 kitchen knife for a long period of time time and I have to say that for the cost, the sharpness just isn't all that impressive to me with this ceramic blade. I sharpen my own knives from home and while I'm not an expert by any means, I've been able to achieve the same sharpness just using some Arkansas sharpening stones. This is as sharp as the knife gets obviously so as it dulls down it will be even less impressive to me.

My test consisted of cutting celery and basically the knife made fairly clean cuts but they weren't smooth. I'm not getting hair splitting sharpness or a razors edge cut. I expected the knife to be much sharper than this so I can't say it was worth the price to me.

Kyocera ceramic knives are a work of genius but very different from steel. They are unbelievably sharp and hold their edge for many months of daily use. You should know however that there are two significant drawbacks. When the knives finally become dull, you cannot sharpen them yourself but must send them to factory service in Los Angeles. The Kyocera people return them quickly, and in fact will sometimes replace broken items with brand new ones free of charge without being asked, but of course it is still inconvenient. Second, the ceramic is brittle and fragile so the edge chips easily. If you try to pry with it, it will break right off.

Overall it is more practical for everyday to use quality steel knives you can sharpen easily yourself. I do recommend having one or two ceramic knives in your collection for items like tomatoes.

Tsubaki knife oli

Tsubaki knife oliWould love to know the science behind this oil and why it works on knives. I thought that vegetable oil would suffice in protecting my carbon knife, but this works so much better, and curbs the rusting so that it forms a nice patina on the surface of the blade. Feels pretty dry, similar to the "dry" oils my girlfriend uses on her skin. No wonder Tsubaki oil is used in skin-care products too. It's not a once and for all, full proof protection from rusting, but I'm glad I made the purchase as it provides a very good resistance for the knife, against all the acids and liquids and corrosive compounds it comes in contact with.

I bought this to keep my Japanese sashimi knife looking pretty while I wasn't using it. After a while, the metal of carbon steel knives will darken and turn dark grey as it oxidizes. This black rust isn't bad it's Fe3O4 and it protects the knife (as opposed to red rust) but does not look as nice. Putting some of this on a rag or paper towel and rubbing it on the knife before putting it away will keep it looking bright and shiny, protecting it from any corrosion.

I recommend cleaning up your knife with a "rust eraser" first to get rid of the oxidization and then rubbing this oil into the metal to show off your expensive knives.

This is the only oil I would use on my High Carbon knife. It doesn't leave any funky residue on the blade and is completely food safe. A little goes a long way too. This bottle lasts for a long time. Highly recommended for anyone who needs to protect their knife from rust.

It has a different feel than cooking oil. A drop on the knife and it looks shiny and slick but does not feel "oily" at all. The only negative: all the info is in Japanese so I do not know what is the composition and if I am supposed to remove it from the knife prior to its use

Mac Knife Professional Paring/Utility Knife, 5-InchMac knives are simply the best knives and the best value for high end knives without spending thousands of dollars. I have had several for years and have never had to sharpen one of them, We use them daily. All that is needs is to run them over a steel 2 or 3 times a year.

They are very sharp and don't need constant sharpening. We have the Chef size and needed something smaller for paring and cutting fruit and smaller food items. This fit the bill perfectly and find that we are using this sometimes more often then the larger Chef size (8 inches) because its size. Shun Classic 3-1/2-Inch Straight Vegetable KnifeThis is my new favorite paring knife. I lived in Germany a while back and brought home a handful of kitchen knives from various manufacturers. Until now, a couple of those German knives were among my favorite kitchen tools. However, last week I sliced up some mangoes, bananas, and limes with this little Shun paring knife, and I have already given away some of my old German knives. This Shun knife cuts quickly and cleanly, and the rounded handle was very comfortable to hold in comparison to the rectangular handle on some other knives.

I bought the larger chef knife for my mother in-law last year. This year I bought her the pairing knife and went ahead and bought one for my mother and myself. This knife is razor sharp. It easily cuts through paper and seems to hold an edge fairly well. I am not sure how well it will resharpen, but I think the blade will do well on my sharpmaker. I think I will start to add a few more shun blades to my kitchen knife collection. I would highly recommend this series of knives.

We just added this little vegetable knife to our shun block it's a perfect addition! As per usual, this Shun product is sturdy, sharp and truly beautiful. The paring knife has always been our favorite "go-to" knife in the block, and with all of the action that one sees, we felt that the straight blade vegetable knife would complement our set well. It's great for quick prep of even the toughest veggies the knife slices and dices a carrot as if it were warm butter. Be super careful with your fingers! As with all knives, Shun products require sharpening occasionally, but we cook nightly and are just at the point where the rest of the set requires attention and it's been 3 years since purchase.

Although these knives are pricey they are sharp, solid and really gorgeous... worth every penny! I can't imagine cooking without my Shun knives!

One reviewer suggests using a "sharpmaker". That could throw away a large part of the reason you pay more for a Shun. The steel has alloys that make it possible to sharpen the edge to 16 degrees and have the edge hold. Most knives are sharpened to around 20 degrees because they are not capable of holding the narrower edge and must be blunter. If you use a standard sharpener with your Shun, you may end up wondering why other people make such a big deal about how sharp a Shun is while yours is not much better than your other knives. Shun makes an electric sharpener and whetstones. There is a discounted sharpening service through kershawknives.com for Shun owners. If you use a local knife sharpening service, make certain they understand proper angles (bevel).

Satin Finish Champagne Flutes & Cake Server Setthis is the most beautiful set i have seen and i spent a lot of hours looking!! i was impressed with the customer service, as just a few days after i placed my order, someone called me to ask me about the custom engraving I wanted on the flutes and the cake knife. the set is for my daughters wedding. the satin finish is pretty, but its been in the box for about a month now, as the wedding is still a few months away, and the finish is a bit oxidized looking. i am not worried, i think that a soft cloth and some elbow grease will shine them up without a problem. the engraving is nice, though on the flute it is a little difficult to differentiate some of the letters due to the specific script used. it will probably be easier to read when there is something in the flute. as far as being a keepsake that my daughter and her husband will have for years to come, i think they will be pleased with these.

It's manual, not electric, it's like a little splice on the back where you're supposed to pass the knife back and forth. I kept my old can opener just so I can use the electric sharpener that it has. But overall it's a good value for the price

A constant fight to get the can on the opener, big cansforget about it. My wife has gone back to the manual opener. Honestly, I had a better can opener in the 70's.

It is difficult to get a regular can placed correctly, but once that it is done it usually works just fine. However It is extremely difficult to open larger cans. I don't know if it is the weight or what, but it will not open, for example, a 28oz can without a whole lot of effort.

Yamazaki Gone Fishin 43-Piece Flatware Set, Service for 8I purchased this set for myself to replace a 19 year old Oneida set I had gotten tired of. I couldn't be more pleased. Each piece is shiny, attractively designed, and amusingly shaped. Just as important, each piece is well balanced so that the utensil does not tend to flip off the edge of the plate or cereal bowl as sometimes happens with other handle-heavy utensils. The forks are slightly bowl shaped which facilitates holding food which is not pierced. I have not found the fish lips on the soup spoons to be a problem during eating as long as you are not so rushed that you carelessly shove the spoon against your lower lip, as some reviewers have complained. When handwashing the utensils, some attention was given to check that no food particles are retained in the fish eye holes in the forks and knives; however, this was not an issue if a dishwasher is used. The included wooden caddy is utilitarian and plain, and was too tall to fit in my drawer, so it was replaced with a sleek bamboo utensil tray. This flatware is great for casual or party entertaining, and I really like it!

This is an awesome set of flatware that inspires lots of fun at the dinner table. It's functional, the highest quality, and most of all FUN!! I want another set.

Progressive International Set of 4 Chopping Mats

Progressive International Set of 4 Chopping MatsPrevious to purchasing this set of chopping mats, I had one fairly large chopping block and one quite small chopping block (both porous) which seemed to always be dirty. If they weren't dirty, I needed to cut all the vegetables before I cut any meat, and I'm not always that organized. These solve the problems, don't stain, and hang neatly on a nail inside my pantry. The flexibility is an added plus, as vegetables and meats can be swept into pots/pans of any size with ease.

These are handy mats that don't take up too much space, and the quantity of mats saves me the chore of having to wash the sole cutting board I used to have every night after dinner. They're also a good large size, which I like.

The main drawback is that the edges of these things curl a lot. I've tried flattening them under cookie sheets and heavy pots, but even after a couple years they still curl, which occasionally makes chopping awkward and messy. I've since bought mats that stay perfectly flat from Sur la Table, and which have a grippy silicone side to keep them from sliding around on the counter, and I'm much happier with those.

Bottom line: they're okay, and I use them, but I'd probably recommend something else.

We don't use these color-coded chopping mats to separate our meat and vegetables. Our extended family gets together every week for make-your-own-sushi dinner, which can be messy. We use these reasonably priced chopping mats in lieu of plates. We each have our own mat on which to construct and cut our sushi roll using very sharp knives -which do not leave any visible scratches on the mats. The mats clean easily and take little storage space. We wash and dry the mats by hand so haven't experienced curling problems mentioned by others. The hole at the edge of each mat is perfect for storage on a hook or nail in the pantry or cupboard. Several sets of these mats have really taken all the mess out of what used to be a rather messy process.

These are great. You can chop more than one thing at a time, and the flexibility allows you to bend it up and slide it straight into the pot. These are just heavy enough to be durable but still very flexible.

Be prepared for these to curl up after the first pass through the dishwasher. It's not a complete nuisance, but it can be a little annoying.

They curl to approximately the arc of a hula hoop not quite a burrito, but certainly not flat.

Also, the photo (due to the corner of the red mat being folded up), makes these appear to be a floppier, silicon-like material, but they are actually a semi-rigid plastic.

All in all, at ~2 bucks apiece, they'll do the job, and I won't feel bad when I toss them in a year or so.

What a well made little cutter for the price. Actually, I shouldn't say little. I didn't notice the 4" wheel size when I bought it. Never seen one this big. I use it mostly for cutting pastry and it works great.

Calphalon Katana Cutlery 8-Inch VG Chef's KnifeMy name is Dave, i have been a professional Chef for the past fifteen years, in that time i have used about any high end knives you can think of. This Katana series really does keep pace with the best of them. I spend six to ten hours a day cooking or prepping food in a high end restaurant so this knife has seen some serious use (far more use in a few weeks than a home cook could put in if given a year), and hasn't let me down yet. I've been primarily using these knives at work, (they don't offer a ten inch chef, so i have to use my Miyabi 7000d 10" chef for some of the bigger jobs) and haven't had to do any real work on the edge of the knife except to use the ceramic hone before each use, just one swipe down each side of the blade at a twenty five degree angle. I hope this review is helpful for you and I'm sure you will find this knife to be worth every penny!

Holds a nice edge and easily sharpened. I also own another knife in this line and will be adding more to complete the line. the finish on the knife is beautiful and the way the handle tapers really feels natural in your hand.

This knife has been used enthusiastically in my hands for about four years now. I also bought the 3 1/2" parer, but wound up only really using the 8" chef as I can easily use it for all my chefly duties. The steel sharpens easily and holds an edge well. After much heavy usage the edge only has some very minute nicks. I have always washed and dried it by hand. A couple of times it was left dirty for a long while that caused a bit of pitting, typical of any steel and easily cleaned using lemon juice.

I have large hands (to match the rest of me, I'm 6'2") and this is the most comfortable grip I have encountered on any knife. Recommended!

Epicurean Gourmet Utensils Nylon Spoon, Natural with BlackIf it only lived up to the standards of what is stated in the product listing this would be a *good* spoon, but this spoon goes the extra mile and does so in such a lightweight, eco -friendly, utterly stylish way that my other cooking spoons never stood a chance of keeping their place in the countertop crock.

I read the measurements before ordering but was still impressed with the generous size when it arrived see photo. Two of my favorite design features are handles that don't take up much room in my crock and the embossed measuring guides. Never owned a spoon with a fancy paper pedigree before a *certificate* from the Forest Stewardship Council for use of green materials. Made of non-porous, bacteria resistant materials too. And heat resistant to 400*F degrees. Oh, and made in USA.

Yup, my other spoons are seriously bummed.....

It seems odd to say that I love a spoon, but I gotta admit I love this one. The bowl is large and deep and the shape is just right to gather up a lot of food when I'm serving. And unlike ordinary ladles, the bowl lies flat enough to hang very neatly on my pegboard.

And did I mention that it's simply beautiful?

Cuisinart 3-Piece Ceramic 4-Inch Parer with Sheath and Board

Cuisinart 3-Piece Ceramic 4-Inch Parer with Sheath and BoardI bought this knife and cutting board set because I needed something small to keep at work when I'm prepping lunches on site. I'm not a fan of ceramic blades because they are prone to chipping and honestly; a high quality knife with a high carbon blade is sharper. The problem there is you have to sharpen it and I'm not going to keep honing stones at work where they're likely to get lost or damaged.

The knife is very sharp and you should use the cutting board to protect the blade as well as your work surface. It's very light overall so it's not well balanced. But, it's a task knife. Ergonomics are not crucial for this kind of cutting. The handle feels like a rubber / silicone composite. It remains fairly tacky when dry but if juice or wetness hit the handle, it gets slick.

The sheath is cheap but it does the job protecting the user from accidentally slicing the Hell out of himself if it's stored haphazardly in a drawer. My one significant complaint is the blade color. It's matte white and unlike steel or anodized blades, you can not distinguish the slicing side since it doesn't shine. If you left this knife lying out an adult will think it's plastic and probably lacerate themselves if they mishandle it.

I'm happy with the quality, especially given the price. There's room for improvements but they are based on my personal preferences more then any detraction of the product.
