I have used this paring knife for years and then discovered that I had accidentally thrown it in the trash with the peelings. I then searched the local stores for a similar paring knife but to no avail. This knife is a perfect size for me and one that I can easily handle. This is one nifty knife. No sooner had I unpacked it and popped it into my block than it was put to task, along with my carpenter's hammer covered with a plastic bag: "lobster acquisition" for salad, from claws and knuckles. I have been doing this for over twenty years and never has a blade been so elegantly suited. It sliced right through the small shells and its small profile just searched into all the narrow spaces. It really is unique, I think, in its daintiness...but with fairly substantial, and nice looking handle. I have other Chicagos and believe that the walnut is equal or better than the new rubber stuff, when wet. I started using these knives a few years ago because I happen to see them in a local hardware store. They worked so well for so many different usages that I actually wore them out. I spent almost a full day going from store to store trying to find the EXACT brand, shape, and color but could not. I finally checked out Amazon and found them. I can't say anything negative about this product because it WORKS WELL FOR so many things.Seems like the handle is too thin or the blade too short or something! Zyliss Serrated Paring Knife, Red
Every other knife in our knife block is either from the forged Chef's Choice Trizor line of knives or the forged Wustoff Grand Prix line of knives. In other words, our other knives are pretty darned expensive, with the 3.5 inch paring knife running close to $40.I'm not saying that to brag, but as a means of comparison, because this $9 stamped steel knife is every bit as delightful to use as any of our other knives. Great ergonomics/handle and the thing cuts like a dream on everything we've tried it on. Incredible on tomatoes, great on sandwiches, and outstanding on cheese, vegetables, you name it. It's a wonderful cross between a 4" paring knife and an all-around go-to utility knife.
Most serrated kitchen knifes suck. Either the serrations are too aggressive, like on a Ginsu knife, serrations that basically turn the knife into a glorified hack saw rather than a genuine cutting instrument, or the serrations are nothing more than the wavy pattern you see on most bread knives or restaurant slicers, which hardly ad much to a blade's cutting abilities. Zyliss got the serrations right on this knife aggressive enough to make short work of a tomato or crusty piece of bread, but not so choppy as to turn the blade into a saw. The only other kitchen knives with serrations this good are Cold Steel's old K5 and K7 line of knives and Spyderco kitchen knives, both of which have been discontinued.
If you're looking for a great paring or utility knife and especially if you want one with an included cover/sheath that's ideal for camping, tail-gating, and picnics, then this is your knife. For $8 you really can't go wrong.The Zyliss Serrated Paring Knife is one of the best knives that I have ever owned. It is incredibly sharp and is truly a do every thing knife. At four inches it is large enough to do jobs that your three inch knives can't handle. It will even cut bread. The grip surfaces on the handle are in the perfect places, especially on top for the thumb. The sheath fits good and tight and is a great plus.
For eight dollars this is an outstanding deal. What can I say but I love it.

The first time we used them, we cut the ribeyes with this set fresh off the grill and everyone commented how wonderful the knife felt in our hands. The balance of the knife as well as the ease of use and the quality of the incision made us feel like skilled surgeons. Lately, I grill steaks just to have an excuse to use them! The presentation case is impressive to guests and they serve as a safe place to preserve their edges, tips and overall beauty. I bought them on amazon.com and was very pleased with the product for the price paid. I will probably purchase a second set so that I have service for eight.I like this set of knives. I got this set since it had the larger block which allows me to easily add additional knives easily. I've had them for over a year now and they are still as sharp as when i got them (haven't needed to sharpen yet).My biggest gripe is the silly sticker on the knife handles. I have been carefully hand washing the knives and the sticker starts to get gummy and peeling off after about a month. Seems very tacky and low quality to put a sticker like this on a quality knife. The blades are just great and well worth the price. The metal coated paper sticker used as a label on the handle is a disappointment while the instructions recommend hand washing and not using a dishwasher, sorry I'm going to use the dishwasher. However, the cheap label comes off eventually. The blades remain superb, however.I suggest getting a companion Henckels or Wusthof manual sharpener (about $20); I haven't found anything better. My blades needed sharpening after a year of use 3-4 times a week, and 3 to 4 draws through each side of the sharpener did the trick, far better than the steel rod I had.Needless to say, these knives are sharp and well balanced. My use has been only for a month, so I will reserve judgement on how long they remain that way. I do hone after each use, but so far, it has been a pleasure to use them. The only change I would have preferred is a 6" chef knife, rather than an 8" inch.
Mikasa Flatware 18/10, Satin Loft 65 Piece Set
I've had Mikasa flatware before and really loved it. The Satin Loft is quite beautiful, with a highly reflective surface. It also feels very good in your hand. Unfortunately, it is slightly longer than my previous Mikasa set. In fact, it is slightly longer than any other flatware set I've owned. This makes it more challenging to fit the flatware easily in the wooden caddy I've been using for years or fitting the flatware in the dishwasher.The real problem however is how delicate the silverware is in response to water. Even the included care instructions warn you that "While Mikasa stainless steel is dishwasher safe, we recommend stopping the cycle prior to drying and removing the knives; hand-drying the blades." Really? I might as well hand wash them! Which is what I now do since my first tries at a full dishwasher cycle left me with black and marred knife blades. Yet even with hand washing, you need to thoroughly dry the blades immediately to prevent marring. And it's not just the knives. Some of my spoons and forks are also showing black marks after five dishwasher runs. Keep some silverware polish handy.
There are other warnings in the care instructions as well:
"Do not allow flatware to soak...or remain unwashed."
"Dry immediately with a soft cloth to avoid spotting."
"Make sure stainless steel is completely dry before storing."
Excuse me, but I'm quite careful with my flatware. The problem here isn't me, it's Mikasa. If I wanted to go through this much trouble to keep my flatware looking good, I'd just go with actual silver and not stainless steel. No other flatware set I've had, including prior Mikasa sets, has required this much care.

This knife is smaller than it appears in the picture. It does have a lot of utility, it is very sharp. Since the blade is black and ceramic, and therefore pretty cool, it was possibly made by ninjas. This knife is good for small cutting tasks or slicing open packaged meats. The handle is slightly wierd, I think a conventional and wider handle would be better. It is a bit expensive, but good. This is a very nice unit. Compact, yet fairly heavy and very stable while in use. It is primarily meant for use with the Shun knives, but will sharpen any knife, while changing the blade angle to 16 degrees. You cannot use it to sharpen serrated edge knives. It pops apart for cleaning and is fairly easy to use.It will take a little practice to get the "stroke" down pat. You don't want any down pressure and a steady,staight pull thru the machine. I find that two passes usually do the trick.
This machine will not restore your knife to that factory edge that Shun is famous for. This machine is meant to get you close. You must hone the knife to get that finished edge. I use a water stone to finish with, but there are other methods.
This sharpener is not meant to replace using the steel either. I steel my blades each time I use them. I only resort to the sharpener when the steel will not restore the edge. Sharpening too often is as bad as not often enough.
I find this machine is very good at restoring the factory angle and getting the knife very close to sharp. I don't mind the extra few minutes it takes to put that "razor" edge on with a stone. I think it is well worth the price and recommend it.I've had a set of Shun knives for 3 years now and hadn't had them sharpened. You are supposed to have them sharpened once a year. Shun used to provide sharpening service for free if you mailed your knives too them, but they have discontinued this service. I found this out just as I was getting sick of my knives been dull. The electric sharpener worked well, it took two passes on my 9" chef knife to get it perfectly sharp, it was 90% of the way there after one pass. The sharpener is very loud, but I guess that is to be expected. The unit is fairly compact, which is good since I don't plan on using it more often than once a year. Overall I would say it is a good investment especially since you can't get the knives sharpened for free anymore.

I sharpened my Shun Ken Onion 7-Inch Santoku Knife with two light swipes just to tune it up and was a little more agressive with a set of 3 Henkel knives (lower end classic series) and a very inexpensive large santoku knife.A couple of passes with my Lansky 8" Ceramic Sharp Stick http://www.amazon.com/gp/product/B000B8FW0O/ref=wms_ohs_product?ie=UTF8&psc=1 and the lower quailty knives were cutting almost as well as my shun knife... almost... :)
It's quick and easy to use and small to store. Victorinox Cutlery 4-Inch utility Knife, White Polypropylene Han
For many of my cooking tasks, I find I need a sort of "in between" knife. I love the Victorinox chef's knife, but often the task at hand doesn't require a knife that big. I love the paring knives, too, but often am chopping or slicing, so the paring knife is not quite enough. The 4-inch utility knife is my Goldilocks knife -just right!The first time I used it, I was chopping sweet bell peppers, something that's often frustrating; if the skins are just a little bit tough, many knives don't deal with them well. I end up having to rearrange the slices I've cut with the inside facing up to chop through them readily, a hassle and a time-waster. Not so with this knife! Its super-sharp blade sliced through cleanly and quickly with almost no effort. It was also a handy size for cleaning and cutting up the peppers to prepare them for chopping. From there, I moved on to the onions, then to the finely chopped garlic (I was making chili), and it performed equally well with all. The handle is a little small and light, but fits comfortably in my hand, and in combination with the thin blade, it makes the knife very maneuverable.
At first I wasn't sure I liked the white color, but now I appreciate it because it makes the knife stand out among all the black handles in my knife block, which is just what I want, since it's become the first one I reach for almost every time. For the money, you really can't beat this knife. Get it along with the Victorinox chef's knife and you just might find that instead of a drawer full of so-so knives, you can become a 2-knife cook. I bought three Victorinox knives based on a recommendation from "Cooks Illustrated" magazine. I am so pleased! I got the 3" and 4" utility knives plus the chefs knife. All three are the best of their kind I have ever used, and I have always considered myself a bit of a knife snob. The polypropylene handles are very comfortable and non-slip, and the blades are just right. They are really sharp and they stay sharp. I purchased these knives and companion forks during several visits to dehillerin in Paris in 2003 2004. Originally found them by chance during my annual visits to this culinary supply store on Rue de Toqueville near the Bourse in Paris. And we are still using them! They are very sturdy and the serrated edge blade on the knives retains its original sharpness. Following recommended directions, we do not put these in the dishwasher and wash them by hand. Diswashing sometimes causes stains on stainless steel flatware and I would guess that the diswashing detergent is not as kind as normal Dawn with regard to the knife blade cutting edge. We store the knives and forks in an ordinary kitchen drawer wooden organizer by IKEA and have seen little scratching in use. Recommended! Copco 2555-7872 Large Mesh 3-Part In-Drawer Utensil Organizer
After buying a utensil holder that was twice the price and not being able to close my shallow utensil drawer, I ordered this item and Copco 2555-7873 Mesh 5-Part In-Drawer Cutlery Organizer. Together, they achieved exactly the storage I needed and wanted simply. I was concerned I wouldn't like the mesh (rather than solid) but have found 2 advantages to it:1. I can put instructions for kitchen appliances under and still see them.
2. Easy to clean because can just lift the trays.
I really see no downside to them, but if you are considering getting them, you should know they are pretty industrial and modern looking. For me, they don't match my kitchen style at all, but since they're in a drawer, I really don't care. Some people might though.
I prefer these to plastic (they feel more long lasting and well-made) and wood (easier for me to keep clean).
The price is great, especially with Amazon Prime.

Having tried diamond various diamond hones in the past, I was looking for a good set of hones for my kitchen knives. most particularly I was looking for a super fine grit hone for the final sharpening stage. Most of the hones I found cost upwards of forty dollars for a single grit or were too small to be useful on large knives.This set seemed to fit the bill perfectly and at a reasonable price. When I got it home, I tried it out on my best butcher knife and got a really good edge in a very short time. Within a days time I had a sharp edge on all my kitchen knives and even on all my scissors. I was even able to resharpen a used #11 exacto knife blade.
I used the 200 grit side to quickly remove all nicks then used the 300, 400, and 500 grit sides to get a progressively finer edge. I then stropped the blades on a piece if leather charged with white diamond rouge. finally, I tested the edge by using it to shave the hairs off the back of my hand. A blade sharp enough to do this is sharp enough for any purpose likely to arise in the kitchen.
I esecially liked the fact that all four hones are locate on a single block and are held by the good sized plastic holder, which lets you place the set on the table and use both hands to guide the knife.
Note: knives this sharp need to be carefully stored both for safety, and to protect the edge from nicks. I use a wooden knife block for this purpose. Also, I never place my knives in a dish pan full of soapy water with other metal utensils. It's too easy to nick the carefully made edge or cut yourself. So every knife is washed separately immediately after it is used and placed in the block.
I recommend this set highly for anyone who needs a really sharp set of knives. For those people who are frightened by very sharp knives (and I have known several such persons), try some other system.I normally a Lansky system, but decided to try this. I worked on a kitchen knife to two days trying to sharpen it. After eating away a third of the blade, the knife was very dull. I even tried to work on an already sharpened knife, being careful to maintain the angle and the knife got duller as I worked on it. I think the surface is uneven with all the holes on it, and pushing a blade across it chips off the sharp edge. A waste of money.

I can't remember why I bought this tool for my kitchen; whatever the reason, it turned out to be one of the best things I've bought.This is the best, and easiest to use, steel that I've ever had in my hand. Most steels require you to maintain a pretty precise angle for decent results. Not only does this on not require precision angles, but much less pressure and not so many strokes are required.
I just wish everyone would stop calling these tools "sharpening" steels. They're all STRAIGHTENING steels. All they do is straighten an already sharp knife edge after it's been used on a cutting board. This is great steel, makes a huge difference in keeping my knives razor sharp.
For everyday use I just take 2-4 strokes as light as I possibly can touch the steel almost just the weight of the knife itself and edge stays razor sharp.
when knife starts to dull just a wee bit I increase pressure across the several grooves which usually brings edge right back then a couple very light strokes and viola.
I sharpen my knives to a 15/20 double bevel edge then strop them to a high polish.
Using this steel I only need to re-sharpen with a stone maybe 2-3 times a year at most.

F. Dick makes the only real sharpening steels. I use their "micro" which is a very fine steel designed to realign not remove the edge. Under heavy use I steel every 15-20 min to maintain a razor edge. All their steels are the best on the market and should be used. They are hard enough to align even the high speed tool steel cored japanese knives, which your Henkles or Wusthoff can't do. Always hone a knife the same direction you steel in and never force the ground material back into the edge. I could make a piece of pine bark lethal and F. I've had this steel for almost a year now, and have been very pleased with it. I use it in a home kitchen, competition BBQ, and when feeding large groups, so it gets quite a workout with a variety of knives. A lighter hand when steeling is called for with this piece than with most others.I would highly recommend this tool.

Back when I attended the Culinary Institute of America (03-05), this steel caused quite an uproar. It allows your knife to hold its edge for extensive periods of time without stone or grinder sharpening, and is invaluable to the professional or serious cook. That said, if you are a novice or beginner cook, you should probably skip this steel.From my experience owning and using this steel, this is the best procedure:
1. Have your knives professionally sharpened once or twice a year (depending on use).
2. Use this steel before and after each use of your knife. Steel the knife with moderate pressure. I go at least 10 swipes on each side.
3. While cutting, steel your knife every 10-15 minutes, or more frequently when butchering raw meat or slicing cooked meat.
4. Wash the steel with warm, soapy water after every use.
Nothing will ever eliminate sharpening altogether. And while it is pricey, this is quite simply the only steel you will ever buy.
Global G-5 - 7 inch, 18cm Vegetable Knife
This light-weight and stunningly sharp knife is outstanding. As other reviewers of Global knives noted, the exceptionally acute angle of the edge makes them effective at cutting. The size and balance of this knife are well suited to working with most vegetables, fruit etc. Cuts such as brunoise become much easier to accomplish using this knife.
As a first time user of a Global knife, it took me a few minutes to get used to how light it is. But once I got the feel of it, it became a real favorite.
Take the advice about care and sharpening this knife seriously. You can't just hone it on an average steel. But the funny thing is, when it comes to an alternate knife for more precise cuts where perfection is mandatory, this is the knife in everyone's kit. I always have to be careful where I lay my knife so that no one confuses it as theirs, but it just goes to show you how great of a knife this is. The shape of the knife allows you to line up the food for a perfectly straight cut that is made simple with the thin design and ultra sharp, low maintenance blade. It definitely shouldn't be the first knife for your collection as it's not the best choice for the variety of tasks commonly associated with a chef's knife, but it sure makes a remarkable addition to any set.

This is one of my most used knives in the kitchen. It's the best from cutting garlic to slicing up melons. You'll find that the deep blade is a real joy to control, and that you can make short work of major chopping and slicing jobs easily.The blade keeps its edge for a long time, but eventually you will have to sharpen it. I invested in a good coarse stone, a good 1000 grit water stone, and the $5 clamps you slip over your blade to keep the sharpening angle constant. Good stones are expensive though. I think it's worth it for such a fine knife!

This knife excels at slicing and dicing vegetables. Since I learned to cook, I had always used an 8-10" french chef's knife for this task, then about a year ago, my spouse bought a Global G-46 Santoku knife. It quickly became my "go to" knife for vegetables. I wanted a Global knife to keep in another kitchen and purchased this knife, based largely upon D. E. Hardy's Amazon review. I like this knife better than the Santoku for slicing and dicing; its ergonomics seem better, and I prefer the flatter angle of the handle relative to the blade. I also use Global's MinoSharp Ceramic Wheel Water Sharpener and keep one at each kitchen.I love this knife but after a couple of years it needs to be sharpened and I don't know where to send it. The machines don't work on this metal. The only down-side to these knives. I use the Global diamond steel which is great.
