Mundial 5100 Series Red 6-inch Light CleaverI've had this cleaver for about 2 years now and the end came yesterday. A good whack onto a porkchop snapped it right off at the handle. The blade is not as sharp as it should be but then again, I bring this blade out strictly for the purpose of breaking bones and use it with authority. Look somewhere else for a cleaver with a little more heft.

This small cleaver makes short work of a cabbage or a pineapple as well as a chicken or a rack of ribs. It has a satisfying heft, and it cuts what I aim for, cleanly and quickly. I will admit, though, that if I had realized that I could get a similar at a much lower price elsewhere, I would not have treated myself to this one.

The stainless-steel blade and the attractive red handle are dishwasher safe, and that is a big plus. As time goes on, I may congratulate myself on acquiring a tool that lasts well and keeps an edge without requiring a lot of tedious maintenance. A favorite kitchen tool grows on me. This one has made a fine first impression, and for the rest, time will tell!

Shun Premier Santoku Knife, 7-Inch

Shun Premier Santoku Knife, 7-InchLike almost everyone who buys this kind of implement, I have many examples of quality cutlery including Wusthof, Henckels, Shun, and Kyocera as well as assorted Chinese and German examples. As this was a birthday present for myself, I wanted something really special. I was first attracted to the Ken Onion Santoku and then to the Shun Premier 8 inch chef's knife. The Ken Onion design is obviously beautiful, but I found its balance awkward and its handle surprisingly small and uncomfortable. It came down to the Premier Chef's Knife and the Premier Santoku. It was a very close call, but I found the santoku to have a slightly better balance. The hammered finish on top of the blade is not just attractive, it effectively releases thin slices from the side of the blade as you work. The handle is also very distinctive and beautiful, slightly bulkier and more contoured than the Classic Shun and providing excellent comfort and control.

In my judgment, the Premier Shun santoku is just about a perfect chef's knife. Is beautifully made for practical use. As a bonus it is simply beautiful to look at. I have plans already to buy a slicing knife in the Premier line.

The Shun Premier Santoku Knife is a great knife. It is well built and very high in quality. I bought it to thinly slice items like onions--and it works well. I can make near paper thin slices that fall right off the knife. It is exceptionally sharp, which for me is great. My wife, however, nearly cut the end of her finger off because she didn't give this knife the proper respect. So, like all great knives, you need to be careful.

First off, let me start by giving a little background on myself. I am a chef by hobby and a tech guy by trade. I did extensive research into German or Japanese knives and I am very glad I went Japanese! This knife is AMAZING! It is extremely sharp, right out of the package. For the 4th of July I made my first gumbo which took A LOT of slicing and chopping. This knife glided through everything I threw at it. I am in love. This knife will be an heirloom I will pass on to my children.

I also highly suggest getting the Shun honing stone because it has a guide that helps with honing it. The Shun knives are angled at a 16 degree edge where most other knives are at a 22.

BOTTOM LINE

This knife is made with the similar technique as traditional samurai swords. After months of moderate use on the toughest items, my Shun Premier Santoku hasn't dulled, chipped, scratched, or otherwise marred its initial perfect finish. I know what I want daily in the kitchen and by my side in the Zombie apocalypse. However, consider looking for a better price elsewhere.

SHARPNESS AND STRENGTH

I use my Shun Santoku to debone poultry, and it cuts through skin, muscle, and ligaments with ease. I also use it on harder to cut things, such as pineapple, which I would normally use a serrated knife for. Cutting through the outside of a pineapple is like cutting through wood, and this does it with only gentle application of force no sawing required. After months of use on only the touch stuff (I use different knives for pairing, etc), this knife still hasn't dulled noticeably.

BEAUTY

This knife is a thing of beauty it has a beautiful wooden finish on the handle, and the knife has this pretty blotted ink look, referred to in the description as Damascus. I love to show off my $160 knife to all of my friends.

PRICE

Surprisingly, the price on Amazon is not the best price I've seen for the blade. You may want to check your local high-end home-goods or kitchen-goods store like Crate and Barrel. I received mine as a gift, so I don't know where my sister bought it, but I've seen it for as low as $160 or possibly even $150. Still, I would consider ordering from Amazon, simply because shipping to my door is so convenient.

SHARPENING

Shun allows you to sharpen their knives easily by sending it into a discounted, professional service center for professional sharpening and restoration. The price is cheap (25% off of $3 per inch of sharpening). Just google "Shun Sharpening."

I won't risk sharpening my knife at home because I don't know how to properly use a whetstone. I have a Zwilling J.A. Henckels Twin Sharp Duo Knife Sharpener for use on my cheaper knives, but the instructions on the Shun recommend you don't use that kind of sharpener, since this knife is sharpened to a different degree than European knives.

ZOMBIE APOCALYPSE

I'm so impressed with my knife's ability to cut through poultry, ligaments and all, that I'm already planning on how to adapt my knife for the zombie apocalypse. Considering this thing is made like a samurai sword, I'm confident I'll be more well-equipped than my regular knife wielding buddies when we're out of bullets and the zombies are inevitably bearing down upon us.

I purchased this knife in the summer of 2011. Loved it right out of the box with it's wonderful aesthetics and decent edge. I have always used Japanese gyutos and decided to purchase this knife on the Lightning Sale. After about 3 months of use, which included three touch-ups on #4,000 & #8,000 Glass Shaptons, I decided to retire it from work. It would not keep an edge for very long. Also, if are planning on moving from an 8-Inch Chef knife to this, I would advise you not to in a professional kitchen. Eventually, with day-in and day-out use, the natural comfort level with larger knives will happen. Since then, I have been using it only at home with moderate use and it has been great with it's short length, comfortable height and light weight. With all that being said, I would definitely recommend this knife or any Shun to the average home cook, as these knives will keep an edge for a good while in that setting. In a professional kitchen, there is a ton of real Japanese cutlery out there to choose from, Shun not being one of them.

Not wanting to spend a lot of money, this one caught my eye because of the price and the wide slots that will hold three chef's or other wide blade knives. I also appreciate the half moon slot to hold scissors. Most of all, unlike other knife blocks I have used in the past, it is very stable and not tippy at all. I love this knife block! I only have one Wusthof knife because I'm a vegetarian and rarely use the other knives. I have been able to use this for all of my steak knives, paring knives and a few larger knives when I was eating meat. They all fit in this.

Zwilling J.A. Henckels Twin Pro S 12-Inch Honing Steel

Zwilling J.A. Henckels Twin Pro S 12-Inch Honing SteelOh, I can't tell you how happy I am to have this well-made honing steel--it feels so good that I don't even have to force myself to go five strokes on both sides of the blade before I start chopping (as Dinosaur Jr. would have it). This is a very nice and solid piece of equipment, it looks pretty good, and it does what it's supposed to do very well.

Now, for those who say "it's not a sharpening tool!"--you're right. Then again, since I got this thing, and have started using it very regularly, I have not had to sharpen any of my knives, and yes, even blades that seemed all too dull were not beyond salvation. I cannot tell (though I know the definitions) were honing stops and sharpening starts, but I have the feeling that if your knives aren't in too bad a shape they might well benefit from a serious application of the steel. Don't offend the purists and call that 'sharpening'--but as long as your knives cut better as a result, who cares what the purists call it?

One final thing: as with many tools, size counts: 12 inches seems, to me, to be some sort of a minimum length for a honer--this one is long enough, and I certainly wouldn't consider a 10-inch steel.

You'll need one of these bad boys if you want to keep your knives in any sort of sharp condition.

I hone my knives on this steel a couple times before using my knives, and a couple times after using, to maintain a sharp edge. Periodically, every 6 months or so, I break out my Chef's Choice Diamond Sharpener to really sharpen my knives.

I have Wusthof Classic and Henckels Pro-S knives, which work fine with this steel. There may be other knives which have a hardness rating higher than that of this steel. This steel has a hardness rating of 66, so keep that in mind when you purchase your knives. And, Japanese knives must be sharpened at a different angle than German knivesI think it's ~10 degrees vs. 22.5 for ze Germans.

Most of us know the importance of sharp knives for proper food preparation and gracious serving. Of course, I had to learn the hard way by mashing a tomato instead of chopping it, by "sawing" a roast rather than slicing it, and by cutting and pulling off a plump roast turkey leg rather than carving it. Those are just a few of the reasons I'm such a fan of my Henckels Sharpening Steel.

After trying both a stone and steel, the steel is my favorite for ease of use and appearance. This steel is not only utilitarian but handsome with a ribbed handle that's easy to hold and silvertone handle guard and hanging ring. First off, a good way to test whether or not your knives are sharp is to hold a piece of paper by the top corner and then attempt to "slice" it. If knives won't do this head for the steel! You'll be amazed sometimes it takes only a few strokes on the steel to make your knife sharp, sharper, then sharpest.

Remember to place the metal end of the steel on a sturdy surface, such as a butcher block table or cutting board then position the base of the blade on the steel and begin. This Henckels sharpening steel is certainly a cut above any other. Gail Cooke

This 12" steel performs its job admirably, providing a nice long surface to stroke a blade across and developing a distinctive ring characteristic when the blade is struck across correctly.

OK so it is not the same as polishing a surface but it really works amazingly enough. I have a huge crystal bowl I am glad it is not expensive but it is pretty and useful. Recently I had some work done around my apartment and the person who did it put an unsightly chip that would certainly cut a person. I filed it smooth and since it is only about a half inch wide on a 14 inch bowl it barely shows. And this way the bowl still looks pretty. I keep fruit it and sometimes dry flowers. No one knows but me even though I've pointed it out.

My money was very well spent when I bought this. It's saved several glasses and mugs, and I'm sure I'll be able to rescue many more items in the future. Just be sure to use it very carefully. Anywhere that the wand accidentally touches will be scuffed! Also don't expect to have a polished finish; it will be a matt finish.

Bird's Beak Fruit Carving Knife Plastic Handle, 002If you do veggie/fruit carvings, you cannot possibly be proficient without THIS knife. And I don't mean this TYPE of knife; I mean this EXACT knife. Kom-Kom makes the sharpest edge bird's beak knife out there (tried many others), weighs about a feather, and is PERFECT for carving eyes, teeth, etc. in my opinion.

I also love how it makes precise cuts for making flowers and other fine cuts in hard rind fruit (e.g. watermelon, canteloupe, etc.) without any difficulty.

I like it so much I bought a second one just in case they stop making them. At $8, it's a steal.

Kyocera Revolution Series 7-Inch Professional Chef's Knife, White BladeI bought this knife after seeing how they are made on a television show. I have been very pleased with it's performance.

The knife is only for cutting through flesh fruit, vegetables and boneless meat only. Do not expect to use this knife on bone-in meat without chipping the knife.

As far as cutting, it is very sharp. I get clean and easy cuts, including frozen meat. I was running late making dinner one night, pulled out a package of frozen chicken breast and chopped it into slices in no time.

The manufacturer recommends this knife be cleaned and stowed immediately after use if you leave in in the bottom of a stainless steel sink, be prepared for a dull and/or shattered knife (when you forget the knife is in the sink and you drop in a heavy pan). Hand wash only!

My only gripe is the handle. As mentioned in other reviews, it is very smooth with no features to grip it can get slippery with prolonged use.

This knife is very sharp. It is also more fragile than most steel knives. Wife was totally pleased with it until she dropped it and chipped the blade on the ceramic tile kitchen floor.

One of the things she likes best is the way it does not bruise or darken fruits(apples) and vegetables(lettuce) after cutting.

Everyone should own a ceramic knife if not several. It manages to always stay sharp and is my go to knife everyday. I will caution you that it is rather brittle, and cannot withstand being dropped on hard surfaces. I have had one of these knives for several years, and have broken the very tip of it off, but otherwise it has held up very well (I'm very careful with it). I don't, however, but it in the dishwasher so maybe that has helped. I love this product and suggest anyone to try it for themselves.

So, when my father wanted a ceramic knife for Christmas, my sister bought him the Kitchenaid brand from Target; with in the week it broke. So when he wanted a replacement, I was skeptical about buying another one. We searched and compared then finally came up with this one. After a week of using this knife, I was pleasantly surprised and my father was a happy person again. It didn't chip or break in half (like the other one) and his faith in ceramic knives was restored.

Please note, if you have never used one of these knives before, there are cutting restrictions mentioned by the manufacturer. Read over those and these:

-do not cut : frozen items (father cut frozen cheese, knife broke in half), bones, or very hard cartilage.

-great knife for: fresh bread, veggies, and thawed meats.

It took a little while to get use to how lightweight the knife is. It's sharp enough to do surgery! With reasonable care -, e.g., don't chop, stab or pry or drop on a hard surface, it will last a long long time. The ceramic material is not as flexible as steel so keep that in mind. It works brilliantly for dicing, slicing, julienning. I have barely used my mandoline since purchasing the knife. Also be sure to handle the knife properly by using a knuckle as a gauge and keep your finger tip away. I would never let anyone else borrow this knife because they would cut themselves. Let them buy their own. I gave one to my brother and demonstrated proper cutting technique first.

Because it is *so* sharp, one can neatly slice things that normally require a serrated knife: bread, cake, tomatoes.

7" size is very versatile. Highly recommended to the serious cook. By "serious", I mean a person accustomed to using knives in the kitchen.

The only issue I have found when purchasing bamboo cutting boards is that they can be pricey to get a substantial thickness... if the price is inexpensive, the board is probably paper-thin.

I decided to take a gamble and try this three-pack of bamboo cutting boards. I have seen others available on the site at or near the same price-point, but I loved the rounded edges of these boards, and their story of ethical responsibility to the environment and the people who craft them. I was very skeptical about how quality they could actually be because the price was so cheap!

I must say, when these arrived in the mail I was taken-aback by how much heavier the package was compared to what I was expecting; each board was substantially thicker than I expected.

These boards are extremely handsome and worthy of counter-top display if you are tight on drawer space, the corner hole for holding the board doubles nicely as a hole to hang the board up and out of the way too.

I am very pleased with my purchase and will definitely purchase Core Bamboo products again. I have started looking into other products they make and this 'spun' and 'crushed' bamboo line of kitchen products look beautiful. Quite honestly, I also really like having something unique that all my friends do not have!

When I purchased this set of bamboo cutting boards, I was primarily motivated by the price. When they came 2 days later, I couldn't believe how happy I was. I have purchased Core Bamboo products in the past and love them all but this deal is simply the best yet. This set would easily be worth more than double the price Amazon is charging for it.

The quality of the boards is just as good as you would expect of Core Bamboo. They are thick enough to handle being used but thin enough to easily store them when not in use.

The 3 sizes in the set are perfect for just about anything you want to cut and prep. I use the 8 x 6 for cutting apples or prepping cocktails. I use the 11 x 8.5 for cutting veggies and preparing sandwiches and the 13 x 9.5 for carving meats and poultry. I wash them with warm water and soap and they are holding up beautifully! I have owned bamboo cutting boards in the past from other companies and this set is by far the most superior of them all.

Regarding portability, they are the perfect thickness, making them extremely easy to store, whether you live in a big house, small apartment or college dorm.

All in all, this set is a great buy and I highly recommend it to anyone!

While it may be a good value for 3 boards, they're thin, which is good for storage, but the lack of a gulley/grove around the edge to catch drips is a huge disappointment. These boards are great for cutting fruits and veggies, definitely not good for a thick juicy steak. Also had a large juicy tomato that eventually leaked/ran off the board onto the counter. The lack of any kind of friction on the bottom permits the board to slide around the counter top, and that is driving me nuts. I'm going to check the hardware section for something that could be applied to prevent sliding without taking away from the natural beauty of the boards.

I bought a set of these about a month and a half ago. They seemed pretty sturdy at first, and I didn't have any of the problems with then splintering that a few people had described. I noticed a couple weeks ago though that the largest one had warped a little bit, and it was starting to crack where the strips of bamboo were attached together. Today it broke in half while I was cutting some chicken up for dinner. The mid-sized one is starting to show the same cracks, so I'm guessing it's not going to last much longer either. So far the smallest one hasn't started cracking, but I'm sure it'll happen eventually. I definitely wouldn't waste my money on these. If you're going to get bamboo cutting boards, get something thicker and sturdier. Or buy a different material altogether.

Customer review from the Amazon Vine Program I have to admit, I was a little surprised by the size of these cutting boards. I love bamboo cutting boards and have owned many since they became the rage about a decade ago. Usually, the boards I have are clunky and well over an inch thick. The Core Bamboo boards are much thinner than I'd imagined. In fact, they're really not much thicker than 1/2 an inch tops. Despite this, they seem to be incredibly durable.

The set comes with three sizes. One is perfect for herbs, garlic, ginger, and shallots. It's really too small to be useful for much else. The middle board is the one I've designated for vegetables and seafood, and then the larger board is my meat board. For food safety reasons, I always use a woodburning tool and mark the initial on the side of the board that's used for each food classification. So on the medium board, I have a "V" (vegetables) on one side and an "F" on the other for fish. On the meats board there is a "P" for poultry on one side and them "M" for beef and pork on the other. I can't remember where I learned that tip, but I've always used it.

With a price of just over $16, not only are these boards affordable, but getting three-in-one is even better. They take little space when it comes to storage, and are much nicer on knives than glass boards. I'm sold and hope these boards are still around when I need my next set years from now.

A chef's knife is great for many of the daily tasks required in a kitchen. But if you're de-boning meat or fish, then it just won't do. The boning knife fills in as a perfect replacement for this type of job. I've used my Global boning knife for filleting every kind of fish imaginable as well as boning out pork, beef, venison, and poultry. I wouldn't dream of touching another knife for these jobs. The blade has the perfect amount of flex to get in and around joints and curved bones that would be otherwise impossible without this knife. And it still sports the ultra sharp, low maintenance blade and devilishly good looks that is expected from any Global knife. If you fabricate a lot of your own meat, then I have no idea why you don't already have this knife.

This is one of many Global knives I own. I have been using Global knives for over 10 years and have never had any trouble keeping an edge on any of these knives. The light weight of this knife allows me to use it for long periods without any fatigue. I also like the recessed dots on the handle because they offer a good grip. The solid one piece construction makes them very easy to keep clean and sanitary. I also have the rigid boning knife and have found this one to be much easier to use.

Unfortunately it is just too awkward and is not as effective as the plain, old knife. This is just collecting dust along with other handy dandy tools I bought to make my tasks a little easier. Some work, but some, like this--just can't take the place of the things my mother taught me.

The corn zipper is limited to taking off only about 2 rows of corn. For me, it seems a little slow. I also find it awkward. However, your fingers are well protected.

HHI Ceramic Blade Folding KnifeI was intrigued by a knife with a ceramic blade. this was the least expensive one i could find to try i got it very light blade a tad short but enough to evaluate it. fools you into thinking it is regular plastic so i took a razor blade and tried to scratch it but i could not then a tool steel end mill cutter would not touch it i only had for a week before i dropped my cordless drill on it and broke blade it is brittle but till then worked great on things i cut like plastic packing most everything comes in that is almost impossible to open this cut it easy also used as letter and package opener worked great on them too also fruit and meat no problem. Now to buy another one with longer blade now that i know Ceramic blades work within reason.

I've been look at getting a ceramic knife for carrying, I have a couple ceramic kitchen knife. I love them. However, my experience with them and this knife show me that ceramic has its applications. For my needs ceramics are just too brittle. I guess I'll have to stick with steel. It has a fair edge. It will lift a few hairs, but not quite shave. It doesn't have any kind of lock or point to the blade. I gave it four stars, because it works great for its intended purpose. That purpose just doesn't serve me.

It is sharp, it folds, it does what it says it will do. I wanted it for crafts, using it with a cutting board, but because of the way the handle and the blade are set up it is slightly awkward to get the blade flat against the board. The 'point' on the handle next to the blade and the blade being aligned with the top of the handle rather than the bottom prevents getting the full edge of the blade on the board. I have to work at the edge of a table so that the handle can go over the edge of the table making the blade flat against the board.

Don't get me wrong, they don't look awful or anything, but they're black rubber and stainless steel for functional use. There are also very elegant polished stainless cheese knives out there, but those are much more decorative items. So, if you're actually going to use the cheese knives, these are good ones. The handles are comfortable with a good grip, and the blades are moderately sharp out of the box. Decent price too for the set.

The packaging explains which knife is for which kind of cheese, although it is easy to figure out after you throw out the box. They work well, and hold up fine in the dishwasher. I don't use the stand, because I store them against a magnetic strip on the wall. The knives look good in the kitchen because they're colorful, but they're practical, too. The colored coating seemes to keep food from sticking too much to the blades. The only thing that I had a bit of trouble cleaning off was darker juices from red meats. When all is said and done, these knives do a good job under moderate use.

Colorful, practical, and economical.....a great deal for the price. We have a kosher kitchen so the colors make it very easy for us to separate the dairy knives (colors) vs steel for meat.

I had a cheap lettuce knife from the grocery store which broke. Actually, I think the "cheap" on cost more than this on amazon. Anyway, using a lettuce knife is way way easier than tearing by hand. As I am sure you know using a plastic knife avoids black/brown edges on your salads.

I recommend this knife because it is sturdy, and functional. If you eat a lot of salad you gotta have it!

I only bought this knife so my salad lettuce wouldn't brown. What I didn't expect was this: the blad is very wide, so scooping the lettuce into a container is ultra fast. I'm amazed that the amount of waste is just miniscule. I love this knife and it is one of my favorite kitchen gadgets, and I have a ton of them.

Fiesta is just not a name you would normally associate with knives. The familiar china dinnerware, yes. But knives? Not so much. But this cutlery can carry the Fiesta name proudly. Although made in China, the knives seem well balanced and sturdy, with the right amount of heft and balance. The oak block was smoothly finished, with no noticeable burrs or splinters. And each knife comes with its own protective plastic sleeve over the blade. The 'Santoprene' handles are soft, but firm enough to be comfortable, although they seem prone to minor surface imperfections. The knives themselves are not exactly 'scalpel sharp' right out of the package, but this can be remedied very easily with a sharpening steel or stone. For some, this set may seem a bit large for steak knives (they're just a tad over 9 inches), but anyone who's ever tackled a big, meaty t-bone will appreciate the extra length. Last but not least, these knives come with a 25-year warranty. I'm very happy with the purchase, and would not hesitate to recommend them. Yes, you can find steak knives that are less expensive, but you get what you pay for. Chances are, they'll have thinner blades and/or flimsy plastic handles.
